食醋功能研究进展(上)

摘    要:食醋,尤其是酿造醋,作为一种常用的食品调味品,不仅含有丰富的营养成分,且具有独特的药理作用。食醋用于医疗历史悠久,现代研究表明它具有缓解疲劳、调节血糖、脂质代谢、抗氧化、促进食欲等作用。主要回顾食醋药用历史,综述有关食醋功能的研究,以期拓宽食醋产品的开发和应用。

Abstract:Vinegar,especially brew vinegar,a commonly used food condiment,is characterized by higher nutritional contents and special pharmacological function.Vinegar has long history in medicinal use.research on vinegar function showed that a has such functions as promoting recovery from fatigue,modulating blood glucose and lipid metabolism,antioxidation.stimulating he appctitc etc.This paper mainly revicwed the use of vinegar in traditional medicine history.summarized relevant study on vinegar funetion in order that we can increase the exploitation and application of vinegar.
