摘    要:以添加微量元素锌的营养液培养苦荞芽菜,探讨对苦荞芽菜品质的影响。采用原子吸收光谱法、分光光度法、滴定法、氨基酸测定仪等方法,分析营养液加锌后培养苦荞芽菜的品质变化。与未加锌的对照相比,加锌后苦荞芽菜对锌的吸收增加,总糖、叶绿素、维生素C、可溶性蛋白的含量增加;还原糖、脂肪、粗纤维的含量降低;氨基酸含量也有所增加,且氨基酸配比更合理。试验结果表明:通过添加锌营养液培养,能极大地改善苦荞芽菜的品质。

Abstract:The effect of Zn-added nutrient fluid on the quality of Tratary Buckwheat Bud was investigated in this experiment.Quality index change of Tratary Buck wheat But was analysed by the contrast with the check without zinc using atomic-absorption spectrophotometry,spectrophotometry,titration and amino acid analyzer.It was showed that as the result of the supplement of Zinc for nutrient fluid.The absorption of Zn was enhanced;the contents of total sugar,chlorophyll,vitamin C and soluble albumens were increased;the contents of reducing sugar,fat and gross fiber were decreased;and the contents of amino acid were also increased and the ratio of binding-amino acid and free-amino acid was meliorated.The results indicated that Zn-added nutrient fluid helped to greatly improve the qualities and nutrients of Tratary Buckwheat Bud.
