舟山海域4种低值鱼酶解蛋白亚铁螯合物自由基清除活性与抑菌活性研究

摘    要:对马鲛鱼、带鱼、鳀鱼、梅童鱼碱性蛋白酶酶解蛋白亚铁螯合多肽自由基清除活性和抑菌活性进行研究,结果表明:4种低值鱼酶解蛋白亚铁螯合多肽(Low value fish enzymatic hydrolysates protein ferrous chelatingpeptides,LEFP)均出现不同程度的清除羟自由基、超氧阴离子、二苯基苦基苯肼(DPPH)等自由基的活性;4种低值鱼酶解产物亚铁螯合多肽对超氧阴离子的清除作用均较弱;羟自由基清除活性较强的是梅童鱼酶解蛋白亚铁螯合多肽;DPPH自由基清除活性较强的是马鲛鱼酶解蛋白亚铁螯合多肽;4种低值鱼酶解产物亚铁螯合多肽对待测菌株有不同程度的抑菌作用。其中带鱼酶解蛋白亚铁螯合多肽对3个被测菌株都表现出明显的抑菌活性,而马鲛鱼酶解蛋白亚铁螯合多肽则没有明显的抑菌活性。

Abstract:Radical scavenging activities and antioxidant properties of alkali protease enzymatic hydrolysates protein ferrous chelates peptides(EFP)from four kinds of low value fish(Spanish mackerel,Hairtail,Anchovy,Light maigre) of Zhoushan sea area were studied.The results showed that four kinds of low value fish enzymatic hydrolysates protein ferrous chelating peptide(LEFP)all appeared different degree radical scavenging activities.Superoxide anion scavenging effect were all weakly.Light maigre EFP showed the stronger scavenging activity on hydroxyl radical and spanish mackerel EFP showed the stronger scavenging activity on DPPH radical.Four kinds of LEFP had different degrees of bacteriostasis.Hairtail EFP showed obvious antibacterial activity on three tested strains but spanish mackerel EFP was not antibacterial activity.
