| 摘 要： | 膳食纤维对人体健康具有特殊的生理功能，膳食纤维类食品日益受到消费的欢迎。从豆渣中制备水溶性膳食纤维的研究也日益成熟。所以，本综述了国内水溶性膳食纤维作为一种功能性的食品添加剂在食品中的广泛应用。
