| 摘 要： | 普鲁兰是一种由出芽短梗霉产生的胞外多糖，具有无毒、黏度低、可塑性强、成膜性好等特点，广泛应用于食品、制药、化工、石油等轻工业领域及其他制造业。本文主要介绍了它的一些结构、特性及生物合成，并对它的生产和在食品加工工业上的应用进行了论述。

| Abstract: | Pullulan, a kind of exopolysaccharides produced by Aureobasidium pullulans, has a number of favorable properties such as nontoxicity, low viscosity, high plasticity, good film-forming etc. , and is widely used in food, pharmaceutical, chemical industry, petrochemistry, light industry and other manufacture industries. This article is mainly introducing its structure, properties and biosynthesis, also discussing its production and its application in food manufacture industry. |
