摘    要:本研究应用低场核磁共振(LF-NMR)技术,测定了不同发芽时间糙米的横向弛豫时间T2反演谱,分析了糙米发芽过程的内部水分状态及变化规律。实验表明:浸泡过程糙米存在结合水向自由水迁移趋势,其总含水量、结合水和自由水含量均不断上升,自由水变化幅度更大,糙米含水量与T2信号总幅值存在高相关性(R20.96)。发芽过程总含水量和自由水含量持续波动上升,结合水含量则逐步下降。粳糙米结合水含量高于籼糙米,但籼糙米自由水变化幅度高于粳糙米。LF-NMR技术为糙米发芽过程中各相态水分分布及变化规律提供了直观的参考依据。

Moisture State Change Brown Rice During Soaking and Germination Process by LF-NMR
Abstract:Low field nuclear magnetic resonance (LF-NMR) technology was applied in this study to determine the T2 inversion spectrum of transverse relaxation time of brown rice, and the water distribution and migration rule during germination process were analyzed. The experimental results showed that the migration trend of bound water to free water existed in brown rice. The content of total water, bound water and free water increased constantly during soaking. A greater range of change in free water was observed. High correlation between water content and the total amplitude of T2 were acquired (R2>0.96). During germination process, total water and free water content continued to fluctuate and rise, while bound water content decreased gradually. Bound water content in japonica rice was higher than that of indica rice, but the change in free water of indica rice was larger than that of japonica rice. Overall, LF-NMR technology provides a visual reference for the distribution and variation of water in brown rice during the germination process.
