不同花生品种储藏期间霉菌活动差异性初探

摘    要:研究了三种常见花生品种在25℃,RH 80%-85%条件下储藏期间的吸湿特性、所含霉菌数量、种群、代谢活性的差异及花生脂肪酸值含量的变化.结果表明:花生储藏期间霉菌带菌量变化、霉菌在花生中代谢活动强度的变化均与花生的吸湿特性有关,其中花育16品种吸湿性最强、带菌量增速最快、代谢活性最高.花生品种在这些特性上的差异与花生颗粒形状、大小等物理性状无关,而与花生品种的蛋白质、脂肪含量数据相一致.容易受到霉菌侵害的花生品种具有高蛋白质、低脂肪含量的特征.

Abstract:The moisture absorption,the flora and number of mould,the microbe activity value as well as the fatty acid value in three peanut cultivars stored at 25℃ and RH 80%~85% were investigated.Results:The changes of mould number and microbe activity value are related with the moisture absorption of peanut.Peanut cultivar'Huayu 16'has the hishest moisture absorption among the tested cultivars,and displays the highest increase of microbial activity value and the fastest increase of microbe number during storage.These differences are relative with peanut protein and fat contents,and are independent of peanut kernel shape and dimension.Therefore,the peanut of high protein and low fat content would be easier attacked.
