稻米品质的遗传、生理研究进展

摘    要:本文从不同亚种、品种及粒间稻米品质差异等方面阐述了我国稻米品质的性状表现,在此基础上,综述了近年来在稻米品质遗传、生理研究中所取得的进展,着重分析了稻米主要品质性状的遗传特性、胚乳淀粉及蛋白质的物理结构、稻米品质形成的酶学机理以及环境因子和栽培措施对稻米品质形成的影响。

Abstract:The differences in rice quality among different subspecies, species, and grains are summarized. Furthermore, the progress in genetic and physiological study on rice quality, including inheritance mechanism of rice quality, structure of starch and protein in endosperm, enzymatic mechanisms involved in forming of rice quality, and effects of environment and cultivated practice on rice quality are reviewed in this article.
