摘    要:壳聚糖是一种天然高分子化合物,具有无毒、安全、易成膜、抗菌等特性。该文介绍了壳聚糖保鲜果蔬的机理,综述了壳聚糖在果蔬贮藏保鲜中的最新进展,分析了目前研究中存在的问题并对发展方向作出展望,旨在为实现壳聚糖在农业上的生产化应用提供理论依据。

Abstract:Chitosan is a natural high molecular compound with the characteristic of non-toxicity,safety,easy membrane formation and antibiosi.The mechanism of chitosan on fresh keeping fruits and vegetables are introduced.And the application of chitosan application of chitosan on the fruit and vegetable fresh-keeping are reviewed.In addit ion,some suggestions of the development are also presented.amied to provide theory evidence for the yielding application of chitosan in agriculture.
