低压静电场对灵武长枣低温贮藏品质及呼吸强度的影响

摘    要:以2/3着色度的灵武长枣为试材,在低温(0℃)耦合低压静电场不同场强的贮藏条件下,通过各处理果实硬度、总酸、VC、可溶性固形物、超氧化物歧化酶和呼吸强度等理化指标测定分析,探究低压静电场对灵武长枣采后保鲜品质和呼吸强度的影响。结果表明,300 mV低压静电场保鲜的果实硬度和可溶性固形物含量高于对照组;总酸含量和VC含量下降速度减缓;超氧化物歧化酶活性变化发生改变,由单峰变为双峰,且高峰延迟15 d出现,较好地保持超氧化物歧化酶活性,其活性值(47.45 U/g)显著低于对照组(57.44 U/g)。整个贮藏期枣果呼吸强度得到明显抑制,整体趋于平缓,呼吸高峰出现延迟15 d。与同温度下普通冷藏保鲜相比,0℃和300 mV的低温低压静电场可显著维持果实的贮藏品质。

Abstract:The effect of low voltage electrostatic field on the quality change and respiratory effect of Zizphus jujuba Mill cv.Lingwu Changzao under low temperature conditions after harvesting was studied,to explore the feasibility of lowvoltage electrostatic field in the direction of storage and preservation of fruit after harvest,to provide new methods for fruit preservation,and to provide theoretical and technical support for the development of low-voltage electrostatic field cold chain logistics technology.Measure fruit firmness,total acid content,VC content,total soluble solid,activity of SOD and respiratory intensity every 15 d from the sample enters the cold storage.The results showed that under the condition of 0℃and 300 mV,the overall change trend of the activity of the superoxide dismutase of the fruit during storage changed from single peak to repeated rise and decrease of the twin peak curve,greatly reducing the breathing strength,delaying the occurrence of respiratory peaks,and effectively slowing down the aging of the fruit in the storage process.
