金花茶天然抗氧化五谷代餐粉加工工艺

摘    要:以金花茶粉、燕麦粉、荞麦粉为主要原料,辅以红枣粉、木糖醇为辅料研制配方,以感官评分为指标,通过单因素试验和正交试验对金花茶天然抗氧化五谷代餐粉的配方进行优化,在此基础上对配方进行重复试验验证,并用效应计算法计算得出配方的理论值为83.240,试验值为80.880,与理论值的偏差为2.360。试验标准偏差为0.2775,方差为0.077。结果表明,金花茶天然抗氧化五谷代餐粉的最佳配方是金花茶粉0.2 g(0.76%)、燕麦粉5 g(19.08%)、荞麦粉5 g(19.08%)、红枣粉10 g(38.17%)、木糖醇6 g(22.91%),所得配方产品口感品质极佳。

Abstract:Using gold tea powder,oat powder and buckwheat powder as the main raw material,supplemented by red jujube powder and xylitol,auxiliary materials formula was developed.Using sensory score as the indicator,gold scented tea natural antioxidant corn meal powder formula was optimized by single factor test and orthogonal test.On the basis of the formula for repeat test and the effect of calculation method,calculation formula of the theoretical value was 83.240,the test value was 80.880,and the theoretical value of deviation was 2.360.The test standard deviation was 0.2775 and the variance was 0.077.The results showed that the best formula was 0.2 g(0.76%)of golden flower tea,5 g(19.08%)of oat powder,5 g(19.08%)of buckwheat powder,10 g(38.17%)of red date powder and 6 g(22.91%)of xylitol powder.The formula product had excellent taste and quality.
