摘    要:鱼翅是由某些种类的鲨鱼或鳐鱼的鳍或尾端部分经过一系列加工而制成。文章对鱼翅的产地来源及交易现状、营养学研究现状、加工方法及商品形式进行了介绍,并对鱼翅的分类学现状、伪鱼翅的种类以及真伪鱼翅的鉴别方法进行了研究。可为鱼翅的深入研究提供理论基础和研究方向。

Abstract:Shark f in are made from the f in or cauda of some kinds of shark or ray.This paper introduces the origin,trade condition,nutrition,processing method and commodity forms of shark fin.It also researches the classification and identification of genuine and fake shark fin.All these can serve as theory bases and direct the further study of shark fin.
