中国白酒的蒸馏技术(上篇)

摘    要:1998年8月,在成都市府南河交汇处水井街酒坊发掘到埋藏数百年的酿酒遗址和成套的酿酒器具文物。从灶台直径的大小表明该作坊已具有相当的生产规模。甑径达到的数量级说明蒸馏器的设计技术和运行操作技术均已达到较高的水平,它形成的传统工艺绝大多数被沿用至今。研究表明,这些技术虽是源于实践经验的总结,却包含了丰富的科学哲理,为发展今天的酿酒技术提供了有力的实践佐证。

Abstract:In August1998,liquor-making site and complete liquor-making apparatus buried for several hundred years were unearthed at Shuijing Street liquor workshop(Located at Hu'nan River interjunction in Chengdu).The diameter size of hearth suggested that the workshop was in possession of comparatively large production scale.The steamer diameter size suggested that the design techniques and distilling operation techniques of distillatory vessels at that time had achieved advanced stage.Most of the techniques have continued to use up to present.And the research indicated that these techniques,although developed through the summarization of production expe-rience,were science-oriented,which provided powerful evidence for the development of liquor-making techniques nowadays.(Tran.by YUE Yang)
