泸州老窖窖泥化学成分差异研究

摘    要:系统地研究了泸州老窖不同窖龄、不同层次的窖泥在N,P,K,有机质、水分含量及pH值等方面的差异及规律性。结果表明:1.窖泥中的各种成分与原建窖土壤和封窖泥均有较大差异,其中的全N,全P,全K,速效N,速效P,速效K以及有机质含量均远高于原建窖土壤,而pH值则略低于建窖土壤;2.窖底泥与窖壁泥在许多项目上的差异性与传统的观点有较大差异;3.同一类型窖池不同层次的窖泥成分含量差异较大,窖底泥的有机质、全P,全N,水解性N含量及pH值均明显高于窖壁泥;窖壁上层的pH值和有机质含量均高于窖壁下层;4.同一层次不同窖龄窖泥成分含量也有一定差异,但多数成分变化规律性不明显;5.已连续使用400多年的国宝窖池同其他窖龄池的窖泥成分有明显差异。

Abstract:The discrepancy and change rules of N, P, K, organic substance, water content and pH values in pit mud of different pit ages and in different layer were studied systematically. And the results indicated: 1. evident composition discrepancy among pit mud and pit-building soil and pit-sealing mud, especially the contents of total N, total P, total K, rapid N, rapid P and rapid K, and organic substances in pit mud far higher above those in pit-building soil, however, pH value in pit mud less lower than that in pit-building soil; 2. in many aspects, traditional view of composition discrepancy between bottom pit mud and wall pit mud not in accord with study results; 3. great composition discrepancy in pit mud in different layer of the same pit. The contents of total P, total N, hydrolytic N, organic substances and pH values in bottom pit mud were evidently higher than those in wall pit mud. pH value and organic substances content in wall pit mud of upper layer were also higher than those in wall pit mud of lower layer; 4. definite composition discrepancy also presented in pit mud of the same layer but of different pit ages, however, the composition change rule remained unclear; 5. evident composition discrepancy in pit mud between national treasure pits (more than 400 years consecutive use age) and other pits.
