中红外光谱技术在白酒检测中的应用

摘    要:采用两种检测技术中红外光谱法和传统化学分析法,检测100个浓香型原酒中常规理化指标。分析数据结果得出,两种检测方法酒精度的平均绝对差值为0.06%vol;总酸的平均绝对差值为0.04 g/L,平均相对误差为5%;总酯的平均绝对差值为0.39 g/L,平均相对误差为8%。乙酸乙酯的平均绝对差值为0.06 g/L,平均相对误差为3%;丁酸乙酯的平均绝对差值为0.04 g/L,平均相对误差为13%;乳酸乙酯的平均绝对差值为0.08 g/L,平均相对误差为5%;己酸乙酯平均绝对差值为0.08 g/L,平均相对误差为5%。得出结论中红外光谱技术可快速检测酒类产品中的各项指标,为实际生产提供指导意见。

Abstract:In the experiment,the routine physiochemical indexes of 100 Nongxiang base liquor samples were detected by two methods,including mid-infrared spectroscopy and traditional chemical analysis method,respectively.The collected data showed that the absolute difference value of alcoholicity by the two methods was 0.06%vol;the absolute difference value of total acid was 0.04 g/L,and the relative error was 5%;the absolute difference value of total ester was 0.39 g/L,and the relative error was 8%;the absolute difference value of ethyl acetate was 0.06 g/L,and the relative error was 3%;the absolute difference value of ethyl butyrate was 0.04 g/L,and the relative error was 13%;the absolute difference value of ethyl lactate was 0.08 g/L,and the relative error was 5%;the absolute difference value of ethyl caproate was 0.08 g/L,and the relative error was 5%.It was concluded that mid-infrared spectroscopy could be used for rapid detection of Baijiu products,and could provide guidance for actual production.
