Abstract:Food allergens have become a global food safety hazard. The most direct and effective way for dealing with food allergic reaction is to avoid eating and contacting all kinds of food containing allergenic ingredients. Therefore, the development of rapid and sensitive detection method of food allergens is significant for the prevention and control of food allergic reactions. Food allergen detection can be mainly divided into two categories, including nucleic acid- and protein-based detection technology. Compared with traditional detection methods such as polymerase chain reaction and liquid chromatography-tandem mass spectrometry, biosensing detection platforms have attracted more and more attentions in the field of rapid detection of food allergens due to their advantages of simple operation, high throughput, high sensitivity, and on-site portability. This review summarized the established biosensing technology for detection of food allergens in recent years, including electrochemical sensors, optical sensors, and other new sensors, and discussed their applications in food allergen detection. Moreover, we also explored the challenges and further prospects for biosensing technology in food allergen analysis.
