| 摘 要： | 目的 分析2016~2018年我国食品安全的整体情况及存在的主要食品安全风险。方法 对2016~2018年全国食品安全监督抽检结果进行收集汇总, 分析监督抽检完成情况及发现的主要食品安全问题。结果 2016~2018年全国共完成食品安全监督抽检7219865批次, 总体合格率为97.6%。抽检样品共覆盖34个食品类别, 其中食用农产品的合格率为98.6%, 粮、油、肉、蛋、乳等日常消费量较大的食品合格率普遍较高, 但蔬菜制品、淀粉及淀粉制品和餐饮食品的合格率偏低。结论 2016~2018年我国的食品安全形势总体平稳, 存在的问题主要是食品添加剂滥用、微生物污染和农兽药残留超标
