摘    要:工业染料主要用于纺织品、皮革制品和木制品的染色。由于价格低廉、着色力强、稳定性好,有时被非法作为着色剂使用。如何准确、灵敏和快速地检测食品中的工业染料在食品安全监管中十分重要。为了深入了解工业染料对人体的危害以及食品中工业染料检测方法和研究现状,本文综述了食品中几种工业染料的检测方法,着重阐述了食品中工业染料对人体的毒性作用,并列举了国内外食品中工业染料的检测实例,为食品中工业染料的检测和监管提供了参考与借鉴。

Abstract:Industrial dyes are mainly used for dyeing textiles, leather goods and wood products. Due to its low price, strong tinting strength and good stability, it is sometimes used illegally as a coloring agent. How to accurately, sensitively and quickly detect industrial dyes in food is very important in food safety supervision. In order to deeply understand the harm of industrial dyes to human body and the detection methods and research status of industrial dyes in food, this paper reviewd the detection methods of several industrial dyes in foods, focused on the toxic effects of industrial dyes in foods on humans, and listed the detection examples of industrial dyes in food domestic and foreign. It provides reference and reference for the detection and supervision of industrial dyes in food.
