纳米基电化学传感器在兽药残留检测中的应用

摘    要:随着生活质量的不断提升, 人们对于畜类食品的安全问题越来越重视。畜类产品中过量的兽药残留会对人体产生危害, 在食品中检测技术的研究进展成为人们关注的焦点。电化学检测技术具有灵敏度高、检测限低、简单经济、检测时间短等优点, 纳米基作为一种修饰材料, 可以为电化学检测提供更多的结合位点, 获得更灵敏的电流响应信号和更高的检测效率。因为纳米材料良好的催化和导电性能以及对待测物质的良好亲和性被广泛应用在兽药残留的检测中。本文综述了兽药的种类、使用的相关规定, 以及添加使用兽药的危害。重点介绍了碳、金属粒子和量子点3种纳米材料所修饰的电化学传感器在食品中兽药残留检测中的应用现状, 最后讨论了电化学传感器在兽药残留检测方面的发展前景。

Abstract:With the continuous improvement of the quality of life, people pay more and more attention to the safety of animal food. Excessive veterinary drug residues in animal products can cause harm to the human body, and the research progress of detection technology in food has become the focus of attention. Electrochemical detection technology has the advantages of high sensitivity, low detection limit, easy to use, and fast detection. As a modified material, nano-based can provide more binding sites for electrochemical detection, and obtain more sensitive current response signals and higher detection efficiency. Nanomaterials are widely used in the detection of veterinary drug residues because of their excellent catalytic and conductive properties and excellent affinity for the substance to be tested. This work reported the types of veterinary drugs, relevant regulations for use, and the hazards of adding veterinary drugs. The application status of electrochemical sensors modified by carbon, metal particles and quantum dots in the detection of veterinary drug residues in food are mainly introduced. Finally, the development prospects of electrochemical sensors in the detection of veterinary drug residues are discussed.
