摘    要:目的将危害分析与关键控制点(hazard analysis critical control point,HACCP)体系运用于进口冰鲜水产品冷链物流中的质量安全控制。方法对进口冰鲜水产品冷链物流过程各步骤进行危害分析,确定冷链物流中的关键控制点以及关键限值。结果在危害分析的基础上,确立关键控制点的监控措施、纠偏措施以及验证方法,进而建立进口冰鲜水产品冷链物流完整的HACCP计划书。结论将HACCP体系运用于进口冰鲜水产品冷链物流中将有效防止进口冰鲜水产品冷链物流"断链"造成的食品安全风险。

Abstract:Objective To apply hazard analysis and critical control point (HACCP) system to the quality and safety control of import fresh fishery products in the cold chain logistics. Method Hazards in import fresh fishery products from all steps of cold chain logistics were analyzed, and then the corresponding critical control points and critical limit values were identified. Results On the basis of hazard analysis, specific monitoring measures, corrective actions and verification methods were set up. An implemented HACCP plan table was established for import fresh fishery products in cold chain logistics . Conclusion The application of HACCP system in cold chain logistics process of import fresh fishery products would effectively minimize the risk of import fresh fishery safety caused by disconnection of cold chain logistics process.
