摘    要:鹰嘴豆是世界第三大豆类,其外形独特,含有丰富蛋白质、不饱和脂肪酸及各种矿物元素等有益于人体健康营养成分,可用作食品或保健食品营养强化剂等;其淀粉含量较低,也可用作减肥食品。

Abstract:Chickpea is the third legume of the world in terms of total production. The shape of the seed is special. Chickpea contains abundant proteins, unsaturated lipids and various minerals, which are beneficial to people's health, so it is commonly used as food or nutritional supplement to health food. Because of its low starch content, it is also used as weight-reducing food.
