非晶化淀粉研究进展

摘    要:淀粉是一种天然多晶聚合物,随着对淀粉结晶结构研究深入,人们发现淀粉颗粒在某些条件下淀粉结构有序性被破坏,具有非晶化现象。非晶化淀粉颗粒称为非晶颗粒态淀粉,其颗粒结构发生较大变化,具有较高酶降解性、反应活性等,使淀粉更适于改性和深加工。该文对非晶颗粒态淀粉研究概况、结构、性质等作相关阐述,并对其今后研究进行展望。

Abstract:The starch granule is a kind of multi-crystal system,the people found the crystalline structure of starch could be destroied in certain conditions along with the developments of research on the crys- talline structure of starch and took on noncrystalline structure.The structure of noncrystalline starch had great changes,it also had higher enzyme degraded activity and chemical reaction activity,was modified and deep processed easily.This paper summarized the progress of research on the noncrystalline starch, its structure and properties,prospect its research orientations in the future.
