氨基酸分析仪在菜用甘薯营养价值评估中的应用

摘    要:选取生产上广泛应用的菜用型甘薯品种10种,利用国际通用的蛋白质氨基酸营养价值评价体系对其氨基酸组成模式及蛋白质营养价值进行评估、比较。结果表明,10种菜用型甘薯必需氨基酸总含量均明显高于FAO/WHO,略低于鸡蛋模式。菜用甘著富含亮氨酸、苏氨酸,甲硫氨酸为第一限制氯基酸。不同品种菜用型甘薯蛋白质含量、氨基酸含量、必需氨基酸组成模式均有明显差异。

Abstract:Amino acid composition model and protein nutrition of commercial leaf-vegetable sweetpotato in 10 strains were evaluated by international standard method.The results indicated that amounts of essential amino acids in all strains are higher than FAO/WHO model while lower than egg model.All leaf-vegetable sweetpotato we selected are rich in Leu and Thr while the Met is the first limiting amino acid.Furthermore,the contents of protein,amino acid and the essential amino acid composition model were different in different strains of leaf-vegetable sweetpotato.
