几种饮料清除活性氧自由基的ESR研究

摘    要:本文用ESR方法直接检测过硫酸铵(ammonium perfullate简称AP)和N,N,N′,N′-四甲基乙二胺(N,N,N′,N′-tetramethyl ethylenediamine简称TEMED)体系产生的活性氧自由基,然后用几种饮料作清除剂,研究它们对体系中产生的O_2~-·和HO·自由基的清除效果.结果表明茶饮料的清除效果最好。

Abstract:Reactive oxygen radicals generated in ammonium perfullate (AP) and N, N, N', N'-tetramethyl ethylenediamine (TEMED) system measured directly by ESR methods. It was studies that the effect of O2-·and HO·radicals in the system were scavenged by some drinks. The results showed that the effect of tea drink was the most fine.
