以新鲜胭脂萝卜为原料,结合泡菜和成菜的加工方法,用辣椒、生姜、大蒜等进行调味,研究出了胭脂萝卜干的最佳生产工艺参数及最佳调味料配方。实验结果表明,最佳发酵工艺参数为:胭脂萝卜的添加量50%、食盐的添加量8%、泡菜原汁的添加量20%,在此条件下发酵的胭脂萝卜的感官评分为93分;最佳干燥工艺参数为:干燥温度60℃,干燥时间3h,鼓风,在此条件下干燥的胭脂萝卜的感官评分为93分;调味料最优配方中辣椒、生姜、大蒜、八角茴香粉、芝麻、花椒、白砂糖最优添加量分别为0.65%、0.03%、0.09%、0.03%、0.10%、0.05%、0.03%,在该条件下制备的胭脂萝卜干的感官评分为95分。研制的胭脂萝卜干呈玫瑰红色,具有胭脂萝卜干特有的香气,口感脆嫩,味道可口。 相似文献

猪肝醡是云南名特畜产品,目前对它的研究为空白。在实验中对猪肝醡的配方、加工工艺和产品的质量进行研究。将传统猪肝醡的盐含量降低到5%~8%、辣椒含量降至6%,同时添加多种辅料,将不影响产品的原有风味;在加工过程中接入2%混合发酵剂,产品发酵成熟时间大大缩短,发酵7 d后产品基本具有了猪肝醡的特有色泽、香味,但到了发酵后期,产品的风味发生了改变,具有酸香味,必须适量添加,添加量过高则不易控制发酵速度,影响产品的质量、风味;猪肝醡的质量可靠、安全。成品中的p H值是3.3~4.8,乳酸菌的菌落总数是4.4×10~6~1.01×10~8个/g。猪肝醡中最佳的食盐添加量为6%~7%,辣椒含量6%,可添加多种辅料;添加1%~1.5%混合发酵剂的可缩短发酵成熟时间;猪肝醡的质量可靠、安全。 相似文献

目的开发草鱼调理制品最佳麻辣配方并研究其贮藏品质。方法以草鱼为主要原料,感官评价为主要判别依据,通过单因素和正交试验优化原味配方(料酒、姜粉、食盐、味精和白砂糖)的添加量,再利用单因素和正交试验优化麻辣调味料(花椒、辣椒和胡椒)的添加量,最后对产品在–18℃条件下的贮藏品质变化情况进行研究。结果产品最佳原味配方为料酒1.6%,姜粉0.2%,食盐1.5%,味精1.0%,白砂糖2.0%; 3种麻辣调味料的最适添加量为花椒0.3%,辣椒0.4%,胡椒0.3%;鱼肉调理制品在–18℃冻藏条件下品质保持良好,货架期至少可保持2个月,添加聚赖氨酸后产品的品质得到了更好地保持。结论本配方鱼肉调理制品麻辣鲜香且货架期长,为鱼肉调理制品的开发和贮藏保鲜提供了参考。 相似文献

为实现我国传统发酵鱼制品鲊鱼的工业化生产,采用固态发酵方法,研究了米粉添加量、食盐添加量、发酵温度和发酵时间对自然发酵鲊鱼品质的影响,并采用正交实验对发酵工艺进行了优化。结果表明,米粉添加量、食盐添加量、发酵温度和发酵时间对鲊鱼品质存在显著影响,将鱼肉100g、米粉45g、食盐2.0g、配以适量的水、生姜、辣椒等辅料,混合均匀后,装入玻璃瓶,压实并密封后,于25℃的温度下发酵60h,可获得总酸度为1.01%,水溶性固形物含量4.60%,水溶性蛋白质含量28.40mg/g,游离氨基酸含量2.62mg/g,发酵风味浓郁、酸香可口的鲊鱼制品。 相似文献

Since grapevine ( Vitis spp .) rootstock material is being traded increasingly as disbudded woody material a lack of distinctive morphological features on such material necessitates an alternative and reliable means of identification. Methods described here were developed for rapid and efficient extraction of DNA from woody samples rich in phenolic compounds and polysaccharides, and for subsequent identification of varieties by RAPD PCR. Using these methods, and with the application of only one selected RAPD primer, we were able to differentiate sixteen rootstock varieties, including the seven varieties most commonly used in Germany. Problems commonly encountered with reproducibility of RAPD patterns were avoided by choosing primers with a dinucleotide sequence and a high G/C content that allowed a rather high annealing temperature of 45°C. Methods described here should also be useful for other horticultural crops, especially those with woody tissues rich in phenolic compounds and polysaccharides. 相似文献

The characterization of the aromatic profile of several apricot cultivars with molecular tracers in order to obtain objective data concerning the aromatic quality of this fruit was undertaken using headspace–solid phase microextraction (HS–SPME). Six apricot cultivars were selected according to their organoleptic characteristics: Iranien, Orangered, Goldrich, Hargrand, Rouge du Roussillon and A4025. The aromatic intensity of these varieties measured by HS–SPME–Olfactometry were defined and classified according to the presence and the intensity of grassy, fruity and apricot like notes. In the six varieties, 23 common volatile compounds were identified by HS–SPME–GC–MS. Finally, 10 compounds, ethyl acetate, hexyl acetate, limonene, β-cyclocitral, γ-decalactone, 6-methyl-5-hepten-2-one, linalool, β-ionone, menthone and (E)-hexen-2-al were recognized by HS–SPME–GC–O as responsible of the aromatic notes involved in apricot aroma and considered as molecular tracers of apricot aromatic quality which could be utilized to discriminate apricot varieties. 相似文献

The advent of the functional barrier concept in food packaging has brought with it a requirement for fast tests of permeation through potential barrier materials. In such tests it would be convenient for both foodstuffs and materials below the functional barrier (sub-barrier materials) to be represented by standard simulants. By means of inverse gas chromatography, liquid paraffin spiked with appropriate permeants was considered as a potential simulant of sub-barrier materials based on polypropylene (PP) or similar polyolefins. Experiments were performed to characterize the kinetics of the permeation of low molecular weight model permeants (octene, toluene and isopropanol) from liquid paraffin, through a surrogate potential functional barrier (25 μm-thick oriented PP) into the food simulants olive oil and 3% (w/v) acetic acid. These permeation results were interpreted in terms of three permeation kinetic models regarding the solubility of a particular model permeant in the post-barrier medium (i.e. the food simulant). The results obtained justify the development and evaluation of liquid sub-barrier simulants that would allow flexible yet rigorous testing of new laminated multilayer packaging materials. 相似文献

This paper describes the second part of a project undertaken to develop certified mussel reference materials for paralytic shellfish poisoning toxins. In the first part two interlaboratory studies were undertaken to investigate the performance of the analytical methodology for several PSP toxins, in particular saxitoxin and decarbamoyl-saxitoxin in lyophilized mussels, and to set criteria for the acceptance of results to be applied during the certification exercise. Fifteen laboratories participated in this certification study and were asked to measure saxitoxin and decarbamoyl-saxitoxin in rehydrated lyophilized mussel material and in a saxitoxin-enriched mussel material. The participants were allowed to use a method of their choice but with an extraction procedure to be strictly followed. The study included extra experiments to verify the detection limits for both saxitoxin and decarbamoyl-saxitoxin. Most participants (13 of 15) were able to meet all the criteria set for the certification study. Results for saxitoxin.2HCl yielded a certified mass fraction of <0.07 mg/kg in the rehydrated lyophilized mussels. Results obtained for decarbamoyl-saxitoxin.2HCl yielded a certified mass fraction of 1.59+/-0.20 mg/kg. The results for saxitoxin.2HCl in enriched blank mussel yielded a certified mass fraction of 0.48 +/- 0.06 mg/kg. These certified reference materials for paralytic shellfish poisoning toxins in lyophilized mussel material are the first available for laboratories to test their method for accuracy and performance. 相似文献
