Vegetable Oils Replace Pork Backfat for Low-Fat Frankfurters   总被引:6,自引:0,他引:6  
Low-fat frankfurters (10% fat, 12.5% protein) with olive, corn, sunflower or soybean oils, compared to control (29.1% animal fat, 10.4% protein) had 67% lower total fat, 40–45% lower saturated fatty acids, 50–53% lower calories, reduced cholesterol and 20% higher meat protein. Although they had darker red color they were 6–7.2% lower in processing yield and had higher purge accumulation, were firmer and less juicy. The type oil had no effect (P>0.05) on these characteristics but affected fatty acid composition. Frankfurters with olive oil had 41.8% higher monounsaturated fatty acids and those with seed oils 5–7 times higher polyunsaturated fatty acids. Soybean oil increased lin-olenic acid content and negatively affected overall acceptability and shelf-life.  相似文献

Frankfurters containing 15% fat and 25% added water were produced using conventional practice or minced meat batters were mixed for 30 min (extended mixing, EM) at 2 or 16°C with all or 30% of the formulation water. EM had minimal effects on yield, purge, and texture. Products were darker and less yellow than non-EM frankfurters. The lower mixing temperature resulted in firmer (P < 0.05) frankfurters. However, mixing temperature did not affect other properties. Time of water addition affected most properties. Frankfurters from treatments mixed with 100% of formulation water were firmer, darker, redder, less yellow, and required more extension to fracture.  相似文献

ABSTRACT: High- and reduced-fat Greek fermented sausages were produced with 30% and 20% total fat in the initial formulation. The same products were manufactured with a partial replacement of pork backfat with 20% olive oil. The influence of the modification of the lipid fraction on the oxidation process was evaluated after 2 mo of storage. The reduction of fat increased thiobarbituric acid (TBA) values, total aldehydes, and typical lipid oxidation compounds (hexanal, 2-hexenal, 2-octenal). A significant decrease in oxidation was detected in batches containing olive oil, particularly in the sausages with the highest olive oil content. This addition decreased, in both fat level products, TBA values and hexanal, 2-hexenal, 2,4-hexadienal, benceneacetaldehyde, tt,2,4-nonadienal, and pentadecanal. The addition of olive oil significantly increased monounsaturated fatty acids content.  相似文献

Optimizing Quality of Frankfurters Containing Oat Bran and Added Water   总被引:1,自引:0,他引:1  
Chicken frankfurters fat content was decreased by using various levels of oat bran and added water and evaluated for quality. Frankfurters with higher levels of oat bran had less expressible moisture and required higher shear stress to break. There were no difference in springiness among frankfurters made with different levels of oat bran; however, those with higher oat bran were rated less juicy and more grainy by taste panelists. The addition of water increased intensities of strain, springiness and juiciness, but decreased shear stress and hardness values. Contour plots showed optimum formulation at <2% oat bran 20% of added water.  相似文献

Different organogel formulations used as beef fat (BF) replacement (0%, 20%, 40%, 60%, and 80%) were utilized to optimize the mechanical properties of frankfurters. Organogels, made of canola oil (CO), included different concentrations of ethyl cellulose (EC) and sorbitan monostearate (SMS). They consisted of: 8% EC + 1.5% SMS referred to as organogel‐I (OG‐I), 8% EC + 3.0% SMS (OG‐II), and 10% EC + 1.5% SMS (OG‐III), which were found promising in a previous study when used at 100% replacement. Replacement of BF with organogels at all levels could bring down the very high hardness values (texture profile analysis and sensory) of frankfurters prepared using CO by itself, relative to the BF control. OG‐I and OG‐II quantity had no significant effect on hardness and springiness, being similar in many cases to the BF and lower than the CO control. Shear force values of all organogel treatments were not significantly different from one another, and were between the BF and CO controls. Smokehouse yield showed a pattern of decreasing losses with increasing organogel replacement level. Sensory analysis revealed that using CO by itself significantly increased hardness, but structuring the oil (via organogelation), brought it down to the BF control value in all OG‐I and OG‐II formulations. Juiciness was significantly reduced by using liquid oil but increased with raising the amount of organogels. Oiliness sensation increased with higher organogel substitution and was actually higher than the beef control. The study demonstrates the potential use of vegetable oil structuring in replacing the more saturated BF in emulsion‐type meat products.  相似文献

以低脂低盐鸡肉法兰克福香肠为研究对象,探讨不同添加量(0.5%、0.75%、1%、1.25%、1.5%、1.75%)的海藻膳食纤维对其食用品质的改善效果。结果表明,随着海藻膳食纤维添加量的增加,低脂低盐鸡肉法兰克福香肠的蒸煮损失、L*值和b*值显著降低(P<0.05),而乳化稳定性、弹性、回复性、脆性和感官评价(致密性、多汁性、风味和总体可接受性)显著增大(P<0.05),且1.5%为最佳添加量(P<0.05)。扫描电镜结果表明海藻膳食纤维能够促进鸡肉蛋白凝胶形成致密的三维网状结构。因此,海藻膳食纤维能够提高低脂低盐肉糜体系的持水性和凝胶特性,进而改善产品的食用品质,为低脂低盐肉制品的开发提供技术指导。  相似文献

将1 g/100 mL氧化绿原酸添加到以猪血浆蛋白水解物作为乳化剂所制备的水包油型乳状液中,以此获得高稳定性的植物油预乳状液。然后将该预乳状液以15%、30%、45%和60%的比例替代猪脂肪加入到法兰克福香肠中,探讨替代脂肪比例对香肠品质特性的影响。测定香肠的蒸煮损失、质构、色度以及水分迁移规律,同时测定肉糜的乳化稳定性和流变特性。结果表明,随着预乳状液替代比例的增加,香肠的蒸煮损失显著降低(P<0.05),硬度、咀嚼性、L*值和b*值显著增加(P<0.05),而弹性、黏结性、感官评价无显著变化(P>0.05)。低场核磁研究结果发现,预乳状液替代比例的增加能够显著缩短香肠的弛豫时间(P<0.05),说明其能增强蛋白质网络对水分子的束缚能力。与此同时,随着预乳状液替代比例的增加,肉糜的乳化稳定性显著增加(P<0.05)。另外,肉糜的流变学测定结果表明,随着预乳状液替代比例的增加能够显著提高肉糜在加热终点的储能模量(G’)和损失模量(G′′),而且显著降低了相位角正切值(tanδ)(P<0.05)。在法兰克福香肠的制作中猪脂肪能够被预乳状液部分替代,而且对香肠的感官无显著影响,尤其以45%的替代量为最佳。  相似文献

以奶油干酪为基料,研究不同比例橄榄油替代黄油在再制奶油干酪中的应用。测定干酪的质构、色度、油脂析出性及感官评定,并进行比较分析。实验结果表明,25%替代水平的干酪在质地和色度方面都与对照组无显著性差异(P>0.05);在油脂析出性和感官评分方面,添加25%橄榄油的干酪均优于对照组。综上,2 5%替代水平的干酪样品与对照组在各项指标上相似度最高,是最合适的替代比例。  相似文献

ABSTRACT: Commercially produced sliced ham and all-pork frankfurters were obtained from a national meat processor and irradiated at 1.6 kGy. The samples were evaluated for color, lipid oxidation, odor, flavor, and the production of volatiles over an 8-wk storage period. Irradiation processing did not affect color values for the ham or frankfurters. Lipid oxidation as measured by 2-thiobarbituric acid-reactive substances (TBARS) did not increase for either the ham or frankfurters. Irradiation processing increased off-odor scores for the ham but not for frankfurters. On the other hand, off-flavor scores were not significantly different for ham but were higher in frankfurters after irradiation processing. Dimethyl disulfide content increased as a result of irradiation in both the ham and frankfurters but decreased during the 8-week storage period. Irradiation processing resulted in the formation of new volatile compounds in the ham samples including heptane, trans -1-butyl-2-methylcyclopropanone, 2-octene, and toluene, which were not present in nonirradiated ham. In the case of frankfurters, irradiation treatment resulted in the formation of 2-butanone, which was not present in the nonirradiated frankfurters. Most volatile compounds that were affected by irradiation processing of either the ham or frankfurters were increased when compared with nonirradiated controls. Although color and lipid oxidation (TBARS) did not seem to be affected by irradiation processing at 1.6 kGy, changes in odor, flavor, and the production of volatiles are of concern if irradiation is to be used to control microbial growth in ready-to-eat pork products.  相似文献

橄榄油真伪鉴别问题一直是食品真伪鉴别及食品安全的难题。试验以橄榄和其它6种常见油料为主,建立了PCR-CE-SSCP法鉴定橄榄油真伪的新方法。通过利用自行设计的uni4通用引物,用常规PCR对叶绿体上一段71bp大小基因进行扩增,并用基因分析仪分析得出7种油料的SSCP图谱,结果表明,采用PCR-CE-SSCP法能够区分橄榄及其它6种常见油料,可用于橄榄油真伪鉴别。  相似文献

Virgin olive oil samples of Ayvalik and Memecik olive varieties from the Aegean region of Turkey were evaluated for their acidity, peroxide, and color values, and the volatile compounds were investigated by using solid phasemicro extraction/gas chromatography/mass spectroscopy (SPME/GC/MS). The acidity of all the samples were found to be between 0.35–1.0% oleic acid and peroxide values of the oil samples ranged between 14–52 meq/O2 kg of oil. The Y, R, and B values of the samples were between 70–73.60, 1.30–4.70, and 0–3.60, respectively. The SPME/GC/MS results have shown that hexanal (5.66–15.48%), 3 hexen 1 ol (3.12–12.1%), cis 3 hexenol (6.15–13.49%), and 9 octadecenoic acid (5.99-16.01%) were observed as the characteristic volatiles for Ayvalik variety, while trans 2 hexanal (8.65–38.09%) and 3 hexen 1 ol acetate (0.97–7.43%) were observed as the characteristic volatiles for Memecik variety.  相似文献

拉曼光谱是一种非弹性的散射光谱,基于拉曼散射效应,对与入射光频率不同的散射光谱进行分析以得到分子振动、转动方面信息,由于不同物质具有不同的特征光谱,因此拉曼光谱具有优秀的指纹能力,具有快速、灵敏检测和识别橄榄油的优势。橄榄油是所有植物油中唯一可不经提炼而直接以原始液态食用的名贵植物油,具有多种生理活性,有益人体健康。因其具有较高的商业价值从而有人铤而走险掺假伪造,如何快速有效识别橄榄油成为质量检测部门及相关企业着重关注的问题。本文从橄榄油的品质鉴定如不饱和度、碘值、游离脂肪酸、氧化稳定性和掺假鉴别两方面综述其应用研究现状,指出其存在问题并展望未来的发展趋势。  相似文献

采用同步荧光光谱仪,在激发波长250~720 nm,波长间隔Δλ=15 nm时,采集20种食用植物油和掺杂的特级初榨橄榄油的荧光光谱图,分析比较了各种植物油脂的同步荧光光谱图。结果表明,同步荧光光谱法能够将特级初榨橄榄油与其他17种植物油明显地区分开来。在橄榄油掺杂鉴别中,其中14种植物油掺兑量在1%的情况下,同步荧光光谱图与特级初榨橄榄油有着明显的差异。同步荧光光谱法对橄榄油掺假鉴别,无需复杂的样品前处理,本方法简便、快速、灵敏,适合快速筛查。  相似文献

油茶籽油和橄榄油中主要化学成分分析   总被引:3,自引:10,他引:3  
采用气相色谱法,研究比较了油茶籽油和橄榄油中脂肪酸组成、角鲨烯和β-谷甾醇含量的差异.结果表明,油茶籽油和橄榄油样品中均分离并鉴定出8种脂肪酸组分,主要含有棕榈酸、棕榈烯酸、硬脂酸、油酸、亚油酸、亚麻酸、花生酸和顺-11-二十碳烯酸.油茶籽油和橄榄油中脂肪酸组成接近,但各脂肪酸含量略有差别.油茶籽油和橄榄油中角鲨烯含量差异较大,油茶籽油样品角鲨烯含量最高为0.156 g/kg,最低的只含有0.077 g/kg,平均值为0.117 g/kg.而橄榄油样品角鲨烯含量最低的有4.511 g/kg,而最高的达到8.401 g/kg,平均值为5.78 g/kg,橄榄油中角鲨烯含量为油茶籽油中的近50倍.油茶籽油和橄榄油中β-谷甾醇含量差异不大,油茶籽油中β-谷甾醇含量高于橄榄油.油茶籽油中仅有1个样品含量最低,为1.08 g/kg,其他样品含量都在2.0~3.5 g/kg区间,平均值为2.422 g/kg,而橄榄油样品中β-谷甾醇含量较高的2个样品分别有2.05 g/kg和2.09 g/kg,其余样品含量均在1.0 ~2.0 g/kg之间,平均值为1.534 g/kg.油茶籽油样品中β-谷甾醇含量为橄榄油样品的1.58倍.  相似文献

基于多元素含量分析结合化学计量学技术对特级初榨橄榄油和精炼橄榄油进行等级鉴别。结果表明,采用主成分分析可成功区分特级初榨橄榄油和精炼橄榄油,建立可靠的橄榄油等级鉴别的正交偏最小二乘法判别分析模型,结果与主成分分析一致,且各等级橄榄油组内聚类效果明显;聚类分析也有效鉴别了两种等级橄榄油。筛选出区分两个等级橄榄油的8 种特征性元素,分别为Al、Fe、Cu、Ba、V、Sc、La、Zn。因此,采用多元素含量分析结合化学计量学技术可用于特级初榨橄榄油和精炼橄榄油的鉴别。  相似文献

以1,1,1,2-四氟乙烷作萃取溶剂,利用亚临界萃取技术,考察了提取橄榄果渣油提取回收最佳实验条件.采取单因素和三因素三水平正交实验,研究了不同原料粒度、萃取温度和时间对提取率的影响.结果表明当原料粒度为60目,温度为30℃,时间为45 min时萃取效果最好,提取率为93.75%.  相似文献

ABSTRACT: The effects of beef fat (25%) substitution with rendered beef fat, canola oil, palm oil, or hydrogenated palm oil at varying meat protein levels (8%, 11%, and 14%) were studied in emulsified beef meat batters. There was no significant difference in fat loss among meat batters made with beef fat, rendered beef fat, or palm oil. Hydrogenated palm oil provided the most stable batters at all protein levels. Increasing meat protein to 14% resulted in high fat loss in batters prepared with canola oil, which did not occur in the other formulations. This indicates that the physicochemical characteristics of fat/oil affect emulsion stability. Cooked batter hardness was higher (P < 0.05) when protein level was raised; highest in hydrogenated palm oil batters when compared at similar protein levels. As protein level was raised springiness values were increased in all the meat treatments. Springiness was higher in the canola oil treatments. Light microscopy revealed fat globule coalescence in canola oil meat batters prepared with 14% protein, as well as the development of fat channels and more protein aggregation; both seem to result in lower emulsion stability. Hydrogenated palm oil batters showed fat particles with sharp edges as opposed to the round ones seen in all other treatments.  相似文献
