Changes in proximate, amino acid and fatty acid composition of farmed, commercially important rainbow trout (Oncorhynchus mykiss) after conventional and microwave cooking were analysed. Rainbow trouts cooked in microwave ovens had statistically significant higher total protein, total fat, and ash than electrical oven‐cooked samples. The amounts of essential and nonessential amino acids were not different between cooking methods, but the difference between raw and cooked samples was significant. Lysine, leusine, methionine, threonine, valine, arginine and histidine were found most in microwave‐cooked rainbow trouts whereas isoleucine, tyrosine and phenylalanine were found most in electrical oven‐cooked samples. As total saturated fatty acid and total monounsaturated fatty acids amount were not statistically different between the cooking methods, the difference between raw and cooked fillets was found statistically significant (P < 0.05). There was no statistically significant difference between raw and cooked fillets in total n‐3 and n‐6 contents.  相似文献

The influence of three precooking methods (steaming, oven‐baking and microwave‐cooking) on the chemical composition and lipid quality of silver carp fillets was evaluated. The changes in protein, fat and moisture were found to be significant for all the treatments (P ≤ 0.05). The iron content in the samples subjected to steam‐cooking increased; however, the other precooking methods did not change the mineral contents (P ≥ 0.05). The free fatty acid content of the fillets did not change by the different precooking methods, while thiobarbituric acid (TBA) values increased for oven‐ and microwave‐cooked fillets and remained constant in the steam‐cooked samples. Conjugated diene and browning colour formation levels significantly increased in the oven‐baked fillets. Oven‐baking and microwave‐cooking marginally affected the fatty acid composition of the silver carp. On comparing the raw and precooked fillets, steam‐cooking was found to be the best precooking method on retaining nutritional constituents.  相似文献

The effects of baking, broiling, deep frying and cooking in a microwave oven on the proximate, mineral and fatty acid composition of grouper (Epinephelus morio), red snapper (Lutjanus campechanus), Florida pompano (Trachinotus carolinus) and Spanish mackerel (Scomberomorus maculatus) were determined. The lipid content of low fat species was not significantly changed by cooking, but lipid was lost from fatty fillets during cooking. The fatty acid composition of all fillets was not significantly changed by baking, broiling or microwave cooking. Deep fried fillets absorbed the major fatty acids in the cooking medium, and as the fillet lipid content increased the extent of absorption of fatty acids from the cooking medium decreased. Sodium, potassium and magnesium levels were decreased when low fat species were cooked, but these minerals were not lost when raw fillets containing higher lipid levels were cooked. Cooking did not significantly affect the concentration of the microelements, zinc, copper, iron and manganese.  相似文献

Distinct proteolytic activity was observed in the incubated muscle tissue of arrowtooth flounder. Absorbance measurements of the TCA filtrates indicated maximum proteolytic activity between 55°C and 60°C, and minimum activity below 40°C. Instron puncture tests of raw, baked, steamed, deep-fat fried and microwaved samples of arrowtooth demonstrated that rapid inactivation of the protease(s) by microwave cooking significantly improved textural properties. Myxosporean parasites tentatively classified as Kudoa thyrsitis were identified in all but one of the arrowtooth samples. However, no clear relationship between parasite density and textural deterioration of the cooked fillets was observed.  相似文献

Deep‐fried instant noodles were cooked in a microwave oven at 557 W (medium power) and 657 W (full power). The microwave cooking times were determined based on textural parameters and the qualities of microwave oven cooked noodles at medium power and full power were compared with those of products cooked using a conventional gas stove for 9.1 min (CON). Heating in the microwave increased the temperature of the noodle block faster than the cooking water, led to an increased degree of gelatinisation of instant noodles, and reduced the cooking times to 8.5 min (medium power) and to 7.5 min (full power). Cooking in the medium power microwave resulted in high water absorption and weak hardness values. Cooking in the full power microwave resulted in higher hardness and tensile strength than the medium power microwave and sensory evaluated organoleptic scores were comparable to the CON, despite having a significantly higher rancidity.  相似文献

A study was conducted to determine the effect of two microwave oven and two electric oven cooking rates on retention of thiamin and cooking losses with broiler chickens. Thiamin was determined by a microbiological turbidimetric assay of raw and cooked meats. Broilers cooked in the microwave oven retained more thiamin than broilers cooked in the electric oven. There was no difference in thiamin retention between broilers cooked in the microwave oven at 800 and 1600 watts. Broilers cooked in the electric oven at 204°C retained more thiamin than broilers cooked at 121°C. Broilers cooked in a 1600 watt microwave oven had the greatest weight loss. No difference in weight loss occurred between broilers cooked in an 800 watt, 121°C or 204°C oven.  相似文献

The influence of microwave cooking and traditional cooking methods such as baking, grilling and frying on the nutritional composition of eels (Anguilla anguilla) was studied. All methods reduced moisture and increased the protein and fat content. Although the potassium and sodium content of fish cooked by different methods decreased significantly (P = 0.000), the calcium and magnesium content increased. The zinc content of the fish was not affected by cooking. The manganese and iron content significantly increased only in fried fish. The copper content was increased by grilling and microwave cooking. The proportion of saturated fatty acids and monounsaturated fatty acids in cooked fish decreased. Omega‐3 polyunsaturated fatty acids were increased by all cooking methods. The grilling and microwave‐cooking methods were the most suitable considering the n3/n6 ratio and eicosapentaenoic acid levels. The increase in the docosahexaenoic acid level of fried fish enhanced its nutritional value.  相似文献

Pork roasts, obtained from pigs experimentally infected with Trichinella spiralis, were cooked at 50% power in four microwave ovens. The attainment of consistently well done roasts is the primary requisite for development of safe cooking methods. BACKGROUND: The effects of rosemary extract on the fatty acid profile of sea bream fillets cooked by different methods (oven baking, grilling and pan frying) as well as the effects of different reheating methods (microwave and conventional oven) on the fatty acid composition of fish after frozen storage for 4 months were investigated. RESULTS: The proportion of saturated fatty acids increased only slightly in fried samples but significantly in oven‐baked and grilled samples, while the proportion of polyunsaturated fatty acids (PUFAs) increased significantly in fried samples but only slightly in oven‐baked and grilled samples. The proportion of monounsaturated fatty acids remained relatively constant after cooking. Of the fatty acids analysed, the most significant increases (P < 0.05) were observed in C18:1n‐9 and C18:2n‐6 and the most significant decreases (P < 0.05) in C14:0, C16:1, C20:5n‐3 and C22:6n‐3. Although sea bream fillets fried in sunflower oil showed an increase in PUFAs, the lowest eicosapentaenoic and docosahexaenoic acid contents were found in fried samples. CONCLUSION: Sea bream fillets treated with rosemary extract showed slower oxidation than untreated fish. Neither conventional nor microwave reheating after frozen storage for 4 months had a detrimental effect on the fatty acid profile and its stability. The stability of fish oils high in polyunsaturated fatty acids (PUFA) in fresh fish of low, medium and high fat content was investigated using microwave oven cooking. Cooked and uncooked portions of butterfish, mullet, mackerel and sardines were extracted, the lipid recovered and fatty acid composition determined. The effect of cooking was minimal with no detectable difference in total lipid between cooked and uncooked samples. Most important, PUFA were virtually unaffected by the overall cooking and the cooked fish retained their original PUFA composition and content.  相似文献

Power and cooking time combinations necessary to devitalize trichinae in pork roasts were determined using three power levels in each of two microwave ovens. The combinations obtained for an oven listed as producing 700 watts were: 100% power, 19.8 min/kg; 70%, 24.2 min/kg; and 30%. 55.0 min/kg. Those for a listed 625 watt oven were: 100% power, 24.2 min/kg; 70%, 26.4 min/kg; and 30%, 55.0 min/kg. Inadequate doneness in many roasts cooked with the safe combinations would necessitate additional cooking time before procedures could be recommended. Post-cooking temperatures during a 20-min standing period may either increase or decrease with no predictability.  相似文献

Loin sections of pork muscle were heated to 75 or 85°C internal temperatures in microwave or conventional electric ovens. Cooking losses and time, percentage moisture and total vitamin B6 were determined. Cooking time was longer, total cooking loss less and moisture content greater for pork cooked in an electric oven than for that cooked in a microwave oven. Differences in vitamin B6 due to type of oven or internal temperature were small and not significant when calculated on a cooked weight basis. When calculated on a dry weight basis samples cooked in the conventional oven contained more vitamin B6 than did those cooked by a microwave oven.  相似文献

Broccoli and green asparagus were cooked using boiling water, steam, microwave oven and combi oven with overheated steam and combination of hot air with overheated steam (only broccoli). Vegetables were analysed for chlorophylls a and b, carotenoids, total polyphenols, antioxidant activity, colour parameters and sensory properties. Cooking in the combi oven with overheated steam was an effective method to achieve the highest levels of polyphenols and antioxidant activity, but it negatively influenced the contents of chlorophylls in both vegetables and carotenoids in asparagus. Boiling and cooking in the combi oven with overheated steam or hot air and steam ensured the best and comparable sensory properties of broccoli. Asparagus showed a lower susceptibility to heat treatments than broccoli as none of the treatments applied caused significant differences in colour redness and yellowness, polyphenol content and sensory properties of this vegetable.  相似文献

The flavour of cooked meat and the acceptability of frozen meat, especially those of lamb meat, are affected to a great extent by methods of cooking such as boiling or roasting. These methods of cooking degrade meat protein as an activity of proteolytic enzymes during storage. Amino acids contents, especially essential ones, decreased during freezing and storage in both selected muscles (Longissimus dorsi muscle and Biceps femoris muscle) under investigation. Beef (Semitendinosus muscle) was cooked in natural convection, forced convection and steam assisted hybrid oven and saturated steam oven at different oven temperatures until the geometric center of samples reached different end temperatures. Heterocyclic amine (HCA) compounds formation, soluble protein degradation kinetics, cook value, changes in fat content, surface colour and overall acceptance of cooked beef were determined. Soluble protein degradation of beef was considered as first order reaction kinetics and the reaction rate constants, k, were determined in the range of 0.014-0.052 min?1. In steam assisted hybrid oven had higher reaction rate constants compared to that of the convection ovens. The effect of cooking temperature on soluble protein degradation for natural convection, forced convection and steam assisted hybrid oven followed the Arrhenius type of equation with activation energies of 12.45, 14.57 and 60.16 kJ/mol, respectively. Lower HCAs contents, shorter cooking times, lower cook values and lower fat retention were obtained by steam assisted hybrid oven cooking. Steam assisted hybrid cooking could be considered as an alternative cooking method to obtain a healthier product without compromising the eating habits of conventional methods due to better appearance (moderate burned surface) than saturated steam oven samples and a product retaining the most of the nutritional values.  相似文献

Pork chops (1.3, 2.5 or 3.8 cm thick) cooked to an internal temperature of 17 or 77°C by conventional oven, convection oven or flat grill contained no motile trichinae, whereas chops cooked to 66°C sometimes contained motile trichinae. Chops cooked by either charbroil or deep fat fry and pretreated in a microwave oven sometimes had motile trichinae even after cooking to an end point of 77°C. Chops, which had been frozen for 18 hr at -23°C and were thawed by microwave to 0°C then deep fat fried to an end point temperature, sometimes had infectious trichinae as confirmed by tests with rats and mice. Additional research is underway to verify the thermal death times and temperatures for T. spiralis larvae.  相似文献

Pork patties were subjected to traditional frying, cooking in a microwave oven (microwaves  +  grill), hot air cooking in a cyclojet (Electrim JI-9101 RP, Taiwan) and cooking in a steam-convection (combi) oven (hot air  +  30% steam) (BECK FCV 4 EDS, BECK GmbH, Jagsthausen, Germany). Products cooked in the combi oven (BECK FCV 4 EDS) were characterized by the smallest cooking loss, the highest retention of water and the lowest content of fat compared to other samples. The content of hydroxymethylfurfural in fried and cyclojet-cooked patties was almost twofold higher than in microwave and combi oven-cooked samples. The intensity of lipid oxidation was also higher in fried and cyclojet-cooked meat than in the other two products. The intensity of meat flavor was the strongest in the combi oven-cooked patties. All products were characterized by a low intensity of fatty flavor. The highest scores for overall acceptability were given to the combi oven-cooked patties, whereas the lowest scores were given by the panelists to the microwave-cooked patties.

PRACTICAL APPLICATIONS


Pork patties are an important meat product both in catering production for direct consumption and in convenience food industry when intended for refrigerated or frozen storage. As cooking is a main stage in preparation of patties for consumption, it is essential to use a method of cooking that ensures the high nutritional and sensory quality of products. Most often, pork patties are subjected to deep frying or traditional frying; however, several other cooking methods can be used. The present work shows that the combi oven cooking enables production of patties of desirable nutritional and sensory characteristics and low content of unfavorable compounds.  相似文献

Trimmed top rounds from 9 Angus steers were flaked and formed into restructured steaks containing 15, 20, or 25% fat. The steaks were cooked in a microwave oven (MW) on a preheated browning dish or broiled in a conventional oven (CO). Microwave cooking required less time and energy. Decreased time and energy for cooking also related to increased fat levels. Cooking losses and penetration hardness values were greater for the MW steaks. Cooking losses increased and penetration hardness values decreased with increasing fat level. MW steaks appeared more well-done and were harder, less moist, and more resistant to chewing. As fat level increased softness and moistness scores also increased. Consumer panelists found all steaks to be equally acceptable, suggesting the potential for the development of portion- and fat-controlled restructured steaks for microwave cooking.  相似文献

ABSTRACT: Ground pork patties were processed from pork hams to achieve fat levels of 5%, 10%, 15%, 20%, and 25%. Each patty was cooked in a microwave oven to 75 °C from a thawed state. As fat levels increased, cooking time decreased. Total cooking loss and drip loss were highest for 25% fat patties and lowest for 5% fat patties. High-fat patties (20% and 25%) had greater reductions in dia than did 5% to 15% fat patties, but had less change in patty thickness. Shear force values decreased as fat levels increased. Visual evaluations also indicated a greater presence of air pockets in high-fat patties. In raw patties, low-fat samples were darker (had lower L * values) and were redder (had higher a * values) than patties with more fat. However, these differences were relatively smaller when the patties were cooked. As fat levels increased, flavor, tenderness, juiciness, and oiliness ratings increased.
