Proteolytic and lipolytic changes were studied throughout ripening of five batches of León cow's milk cheese, a traditional variety made in the north of Spain. Total soluble nitrogen, non-protein nitrogen, oligopeptides nitrogen, amino nitrogen and ammonia nitrogen fractions increased slightly during the ripening process. The final values of these nitrogen fractions indicate that this cheese undergoes a very slight proteolysis as much in extent as in depth. This weak protein degradation is corroborated when the caseins and their degradation products were quantified by electrophoresis. β-Casein stayed practically intact throughout the ripening process and only 10% of αs-casein became degraded. The content of total free amino acids increased progressively but in a slightly increased way during ripening, reaching final average values of 592 mg (100 g)−1 of total solids. The most abundant free amino acid at the end of ripening was lysine, followed by leucine, glutamic acid, tryptophan, valine and phenylalanine. The acidity index of the fat values increased during ripening by a factor of 4.39. The final values of this parameter are in the range of those observed in other cow's milk cheeses ripened by bacteria. The content in total free fatty acids underwent an increase throughout ripening reaching final average values of 6669 ppm. The most abundant free fatty acid at the end of ripening was oleic acid followed by butyric and palmitic acids. The high content of short-chain fatty acids is outstanding, specially that of butyric acid.  相似文献

采用气相色谱法对驼、牛、羊乳3 种乳中脂肪酸(fatty acids,FA)种类及含量进行比较。结果表明,3 种乳脂肪酸种类和含量差异显著。驼乳检测出33 种脂肪酸,棕榈酸相对含量最高((23.73±2.17)%);驼乳的多不饱和脂肪酸(polyunsaturated fatty acids,PUFA)相对含量((4.09±0.54)%)显著高于牛乳和羊乳;牛乳中检测出29 种脂肪酸,棕榈酸相对含量最高((27.44±2.45)%);羊乳检测出34 种脂肪酸,且油酸相对含量最高((30.89±3.57)%)。3 种乳中羊乳单不饱和脂肪酸(monounsaturated fatty acids,MUFA)含量最高((35.26±3.86)%)。此外,结合主成分分析和相关性分析方法,对驼乳的脂肪酸含量进行进一步分析,结果显示,驼乳的饱和脂肪酸(saturated fatty acids,SFA)∶MUFA∶PUFA为1∶0.60∶0.08,驼乳更接近联合国粮食及农业组织/世界卫生组织推荐SFA∶MUFA∶PUFA为1∶1∶1。PUFA与短链脂肪酸(short-chain fatty acids,SCFA)、长链脂肪酸(long-chain fatty acids,LCFA)呈负相关,与n-6 FA相关性最大(0.978);SCFA与LCFA呈正相关,n-6 FA与n-3 FA呈正相关。  相似文献

Sweetpotato [ Ipomoea batatas (L.) Lam.] cv. 'Beauregard' roots were cooked using three different heat-processing techniques (baked in a conventional oven, baked in a microwave oven, and boiled). Total phenolic content, individual phenolic acids, and antioxidant capacity were determined using Folin-Denis assay, HPLC (high-performance liquid chromatography), and DPPH (1,1-diphenyl-2-picrylhydazyl) assay, respectively. The skin tissue (raw or processed) contained the highest concentration of total phenolics. All heat-processing methods resulted in a significant loss in total phenolic content and antioxidant capacity of the skin tissue. However, compared with the other processing methods, conventional oven baking resulted in greater losses in antioxidant capacity of skin tissue. Total phenolic content ranged from a low of 1.58 mg chlorogenic acid equivalent g−1 dry tissue weight in boiled pith tissue to a high of 17.7 mg chlorogenic acid equivalent g−1 dry tissue weight in raw skin tissue. The antioxidant capacity was highest in raw skin tissue (22.9 mg Trolox equivalent g−1 dry tissue weight). Chlorogenic acid was the principal phenolic acid found in all sweetpotato tissues. Caffeic acid and three isomers of dicaffeoylquinic acid (diCQA) were also identified and quantified.  相似文献

Consumers are oriented towards fresh-cut vegetables that provide phytonutrients useful for preventing stress-related diseases. The aim of this work was to evaluate the cut operations on the quality changes of lamb's lettuce ( Valerianella olitoria L.) cv. Trofy during storage at 4 °C for 8 days. Results showed that chlorophyll and carotenoids reduction was observed after 8 days of storage. In both treatments, total carotenoids after 8 days decreased from 20 to 16 mg g−1 FW. Free and total phenols increased with storage in both treatments. Total phenols were 23% higher in control (32 μmol g−1 FW) compared to cut leaves (25 μmol g−1 FW) after 8 days of storage. Anthocyanins increased after 8 days and reached 30 mg 100 g−1 FW without significant difference between treatments. Ascorbic acid (AsA) and dehydroascorbic (DHA) acid increased in cut leaves compared to control. After 1 day AsA concentration was 3 300 nmol g−1 FW in cut leaves, while in control leaves was 1 500 nmol g−1 FW. Analogously AsA + DHA was higher in cut leaves, 4 100 nmol g−1 FW, while in control leaves the mean was 3 000 nmol g−1 FW. After 5 days of storage the values of AsA returned to initial values, while AsA + DHA were lower.  相似文献

The phenolic compound content and profiles of three wild fruits found in Zimbabwe were tentatively identified using the traditional colorimetric methods and high-performance liquid chromatography (HPLC). The fruits assayed were: Ximenia caffra , Artobotrys brachypetalus and Syzygium cordatum . Ximenia caffra fruit peels contained the highest amounts of total phenolics amounting to 1205 μg g−1 in fresh weight, flavonols amounting to 27 μg g−1 and phenolic acids on HPLC tentative identification showed higher concentrations compared with the profiles of the other fruits. Syzygium cordatum fruit peels contained the least amounts of phenolics amounting to 20 μg g−1, flavonols amounting to 8 μg g−1 and phenolic acids' HPLC profiles showed low concentrations. Comparing the peels and pulps of all the fruits, we detected more total phenolics in the peels of X. caffra as high as 1205 μg g−1 and the pulps had 228 μg g−1, more flavonols and phenolic acids while the peels of S. cordatum fruits contained the least with a total phenolic acid content of 20 μg g−1, and had more flavonols in the pulps than the peels, 11 μg g−1 and 8 μg g−1, respectively. Ximenia caffra contained 1.2% and about 1% dry weight condensed tannins in peels and pulps, respectively. In S. cordatum we detected 0.2% and 0.3% dry weight condensed tannins in the peels and pulps, respectively.  相似文献

In this study, some gross chemical compositions and fatty characteristics of herby cheeses were investigated. In the present study, the cheeses used as materials were collected from 10 different plants. The cheeses were made from sheep milk, cow's milk or a mixture of them, and stored in brine at 7–8°C and analysed for some proximate chemical compositions and fatty acid composition after 150 days of ripening. Capric acid, palmitic acid, oleic acid, short-chain fatty acids, medium-chain fatty acids, long-chain fatty acids, saturated fatty acids, monounsaturated fatty acids, polyunsaturated fatty acids and other fatty acids as g in 100 g fatty acids were determined.  相似文献

目的:比较分析普通牛、羊乳粉和有机牛、羊乳粉的脂质特点。方法:以普通牛乳粉、普通羊乳粉、有机牛乳粉和有机羊乳粉为研究对象,采用氯仿-甲醇法提取乳粉中的脂质,氨丙基硅胶固相萃取小柱分离得甘油三酯和磷脂,利用猪胰脂酶专一水解甘油三酯分子的1,3位脂肪酸得Sn-2甘油一酯,磷脂酶A2水解磷脂得Sn-2脂肪酸,然后通过气相色谱分析甘油三酯和磷脂的脂肪酸组成和含量及其位置分布,超高液相色谱联用质谱分析甘油三酯构型,高效液相色谱测定磷脂分子组成及含量和胆固醇含量。结果:羊乳粉脂质含量、甘油三酯含量和磷脂含量均高于牛乳粉,且普通乳粉较有机乳粉高;乳粉中饱和脂肪酸主要为棕榈酸,单不饱和脂肪酸主要为油酸,且普通羊乳粉含量显著高于其余三种乳粉(P<0.05);n-6系列多不饱和脂肪酸普通羊乳粉中含量最高,n-3系列多不饱和脂肪酸在有机羊乳粉中含量最高。四种乳粉Sn-2位脂肪酸为饱和脂肪酸,且月桂酸、肉豆蔻酸和棕榈酸更倾向于分布在甘油三酯Sn-2位上,棕榈酸也更倾向于分布在磷脂Sn-2位上。四种乳粉的中链甘油三酯(Medium Chain Triglycerides,MCT)主要由Ca-Ca-Ca(Ca:C10:0)和Ca-Ca-La(La:C12:0)组成,羊乳粉较牛乳粉高;中长链甘油三酯(Medium-and Long-chain Triglycerides,MLCT)含量较高的为Ca-Ca-P(P:C16:0)、Ca-Ca-O(O:C18:0)和La-M-P(M:C14:0),羊乳粉MLCT含量显著高于牛乳粉(P<0.05);LCT含量最高的为O-P-O(O:C18:0)。结论:羊乳粉的脂质比牛乳粉更易被吸收。与普通乳粉相比,有机乳粉安全更有保障,且有机乳粉含有更高的n-3 PUFA,营养价值更高。  相似文献

The aim of the study was to determine Se concentration in selected products of animal origin (dairy products, pork, beef, chicken, giblets, fish, eggs) and to estimate the degree to which these products cover daily Se requirement in humans. Selenium concentrations were determined using the spectrofluorometric method. Mean Se concentration in the milk, yoghurt, kefir, and probiotic drinks was 0.020 μg mL−1, 0.010 μg mL−1, 0.012 μg mL−1 and 0.012 μg mL−1, respectively. Selenium concentration in cheese ranged 0.022–0.088 μg g−1 wet weight. The average selenium content of meat ranged from 0.064 (beef) to 0.094 (chicken) μg g−1 w.w. The mean Se content of giblets (liver: 0.307–0.401 μg g−1 w.w.) was significantly ( P  < 0.05) higher than in meat. The concentration of Se depends on fish species and in our study it ranged from 0.136 ± 0.023 (flounder) to 0.282 ± 0.024 μg g−1 w.w. (mackerel). The results obtained show that the analysed food provides 22.8% of the daily selenium requirement. Considering that animal products account for 40–45% of the diet daily selenium intake averages 33–37 μg.  相似文献

Changes in chemical composition in Saanen goat colostrum were studied 3, 12, 24, 48, 72, 120 and 168 h after parturition. The concentrations of dry matter, fat, ash, lactose, protein and IgG at 3 h of lactation were 21.23%, 7.73%, 1.57%, 1.93%, 10.24% and 72.01 mg/mL respectively. Saanen goat colostrum contained very high concentrations of Ca, P and Mg, and very low concentrations of Zn, Fe, Cd, As, Pb and Hg. In Saanen goat colostrum, the total concentrations of 17 amino acids and 8 essential amino acids were 5796.6 mg/100 mL and 2567.7 mg/100 mL respectively. The concentrations of saturated fatty acids were 75.21%, and medium chain saturated fatty acids (C80, C100) were 19.84%.  相似文献

This research was carried out to determine the effects of vitamin E supplementation on inter- and intramuscular fatty acid composition in meat of Awassi lambs. Lambs were divided into two groups, control (CG) and experimental (VG), at the beginning of the fattening period. The CG and VG lambs were fed the same concentrate and hay. The VG also received a supplement of 45 mg vitamin E (DL-α tocopheryl acetate) per lamb per day for the 75-day fattening period prior to slaughter. After slaughtering, carcasses were stored at 4 0.5C for 24 h. Then , M. longissimus dorsi (LD) muscles were excised from carcasses, and the intra- and intermuscular fats from LD muscles were used as study material. Results showed that vitamin E supplementation had no significant effect on fatty acid composition in intra- and intermuscular fats (P < 0.05). Fatty acid content in intramuscular fats were different than those in intermuscular fats (P < 0.01) except for lauric (C12), linoleic (C18:2) and linolenic (C18:3) acids (P < 0.05). Total saturated fatty acids in the intramuscular fats were lower than in intramuscular fats (P < 0.01). In addition, the majority of fatty acids, both intramuscular and intermuscular, in Awassi lambs were oleic (C18:1), palmitic (C16 and stearic (C18) acids.  相似文献

Yogurt and bio-yogurt were manufactured from ewe's milk using a starter culture and a probiotic culture. Incubation was carried out at 37°C and 42°C until pH 4.6 was reached and the yogurts were stored at 4 +1°C for 14 days. Analysis after 1, 7 and 14 days showed that incubation temperature and storage time significantly influenced overall properties of the samples. During the storage, whey separation and pH decreased, but titratable acidity, lactic acid and volatile fatty acid contents increased. Viable bacterial counts in all bio-yogurts were above 107 cfu g−1 at the end of storage.  相似文献

Free long-chain fatty acids were infused into the abomasum of lactating dairy cows to determine postruminal effects on feed intake, production and composition of milk, nutrient digestibilities, and metabolites in blood. Four Holstein cows averaging 120 DIM and fitted with ruminal cannulas were used in a 4 x 4 Latin square design with 14-d periods. Treatments were abomasal infusions of 1) control, 168 g/d of meat solubles (carrier for fatty acids), 2) control plus 450 g/d of mostly saturated fatty acids (C16:C18 = .75), 3) control plus 450 g/d of a mixture of saturated and unsaturated fatty acids (C16:C18 = .40), and 4) control plus 450 g/d of mostly unsaturated fatty acids (C16:C18 = .11). Production of milk and milk components, DMI, and intake of digestible energy decreased linearly as unsaturation and chain length of infused fatty acids increased. Percentages of fat, CP, and SNF in milk and total tract apparent digestibilities of DM, OM, ADF, NDF, energy, and fatty acids were not affected significantly by treatments. Infusing fatty acids decreased proportions and yields of short- and medium-chain fatty acids and increased proportions and yields of unsaturated C18 fatty acids in milk fat. Increasing unsaturation and chain length of infused fatty acids linearly decreased proportion and yield of palmitic acid but increased proportions and yields of polyunsaturated C18 fatty acids in milk fat. Infusing fatty acids increased concentrations of NEFA and cholesterol in blood plasma. The profile of fatty acids reaching the intestine may be an important determinant of responses to supplemental fats fed to lactating dairy cows.  相似文献

Conjugated linoleic acid (CLA) concentrations, fatty acid composition and cholesterol content of some Turkish dairy products (butter, processed cheese, Kaymak and cream) were determined by capillary gas chromatography. The CLA and cholesterol content of some Turkish dairy products ranged from 1.50–5.60 mg/g fat and 148.30–369.04 mg/g fat, respectively. The most abundant saturated fatty acids in the dairy products investigated were palmitic acid (C16:0), stearic acid (C18:0) and myristic acid (C14:0). In all dairy products, C18:1 cis-9, 12 unsaturated fatty acid content (23.12–32.78 g/100 g) was considerably higher than others. In all samples studied, there was no correlation between CLA content of products and the linoleic acid content, or any other unsaturated fatty acid. A positive correlation between cholesterol and fat content of dairy products was observed.  相似文献

An headspace solid phase microextraction-gas chromatography (HS-SPME-GC) method, previously developed and validated, was applied to the determination of the methyl anthranilate (MA) content of 75 Italian citrus honeys (11 of lemon, 44 of orange and 20 of Citrus spp.). Twenty-four samples were purchased on the local market and 51 were provided by CRA-API ( Consiglio Nazionale per la Ricerca e Sperimentazione in Agricoltura-Istituto Nazionale di Apicoltura e Bachicoltura ) (Bologna, Italy). All the samples had a MA content above the limit of detection (LOD) (0.149 μg g−1) of the analytical method. The concentration range was between 0.46 and 2.52 μg g−1 and the overall average MA content was 1.19 μg g−1. The honeys with the highest mean MA content were the orange honeys followed by Citrus spp. and lemon (1.29 ± 0.461, 1.12 ± 0.511 and 0.92 ± 0.39 μg g−1, respectively). No significant differences were measured between commercial and authenticated samples.  相似文献

Antioxidant activity of a soy enriched apple bar (SEAB) prepared from the pulp of culled apples and soy protein isolate (3%) was determined using a ferric reducing antioxidant power (FRAP) assay. The antioxidant activity was 8500 μM g−1 FRAP and phenol content was 175 mg 100 g−1. The soy enriched apple bar had 20 fold protein and 1.6 fold higher antioxidant activity than the plain apple bar. No significant change in antioxidant activity and total phenols was recorded during storage at ambient (22–31C) or low (4±1C) temperatures. The pectin, protein and ascorbic acid contents decreased while nonenzymatic browning and total sugars increased significantly with increase in storage periods. The product was organoleptically acceptable and microbiologically safe after 180 days of storage. A shelf stable soy enriched apple bar with high antioxidant activity, phenol content and sensorial quality can be an ideal source of dietary antioxidants.  相似文献

In the lipid fraction of camel (Camelus dromedarius) milk the percentage of saturated fatty acids (SFAs) was 62.8% with a content of palmitic acid of 28.5%. The unsaturated fatty acid (UFA) fraction was dominated by oleic and palmitoleic acids. Enzyme digestion and chemical degradation methods were used to determine the intramolecular fatty acid (FA) composition and then the intermolecular FA distribution in the three sn-positions of the triacylglycerols of the camel milk. FAs showed a specific preference for a particular position: in all samples studied, SFAs were prevalently esterified in the sn-2 position, while UFAs occupied mainly the sn-1 and sn-3 position. As the carbon chain lengthened from 8 to 16 the percentages of SFAs decreased in the sn-2 position and increased in the outer positions. Such data indicated that the length of the carbon chain could be a discriminating factor in the acylation process of SFAs.  相似文献

Comparative studies of milk and nondairy imitation milks showed that their proximate compositions were similar. Qualitative and quantitative studies revealed that saturated fatty acids were abundant in milk, while unsaturated fatty acids (C 18:1 and C 18:2 ) were predominant in nondairy imitation milks. This was confirmed by the higher melting points of the fat fractions of milk compared with those of nondairy imitation milks. Finally, lipid peroxidation level of samples were low as determined by the 2-thiobarbituric acid test.  相似文献

Organic acids, fat hydrolysis, volatile compounds and sensory characteristics of a new brine cheese which combines characteristics of Halloumi and Feta cheeses during its ripening in whey brine (100g NaCl L−1) were studied. Thermotolerant protease of Mucor miehei as a coagulant enzyme and a mixture of thermotolerant starter cultures Enterococcus faecium 0165 (0.5% w/w) and Lactobacillus casei 80 10D were used. Good quality new Halloumi-type cheese was produced with higher proteolysis than traditional Halloumi cheese kept in whey brine. The volatile compounds identified comprised alcohols, aldehydes, ketones, acids, esters, hydrocarbons and sulphur compounds. Ethanol was the dominant volatile compound determined. Lactic acid was the dominant acid produced; its concentration increased during ripening, reaching a maximum value of 9929 mg kg−1 at day 30. Acetic acid was also found in high amounts, which increased during cheese ripening. Lipolysis of cheese was not intense. The most abundant acids of the mature cheese were palmitic, oleic and acetic acid. The Halloumi-type cheese scored higher in the sensory analysis when fresh than did the mature cheese.  相似文献

Saturation recovery Magnetic Resonance Imaging (MRI) has been used to study the dependence of the water proton NMR longitudinal relaxation rate (T1−1) on Mn2+ concentration in pork which had been cured with 53, 102, and 193 mg g−1 NaCl solutions. Those data are discussed in the context of meat swelling, determined independently by gravimetric water uptake. The utility of manganese ions as a paramagnetic tracer to probe the ability of brined pork to bind Mn2+ ions was further demonstrated in a two-dimensional inter-diffusion experiment which visualized perfusion of a given manganese ion concentration through a cylindrical sample of 102 mg g−1 NaCl cured pork.  相似文献

对家畜乳尤其是特种家畜乳脂肪甘油三酯(triacylglycerols,TAGs)进行系统鉴定和研究。采集荷斯坦牛、山羊、蒙古马和双峰驼原奶样品31 份,用超临界流体色谱-四极杆飞行时间质谱(supercritical fluid chromatography-quadruple time-of-flight mass spectrometry,SFC-Q-TOF-MS)检测鉴定TAGs组成,并进行主成分分析(principal component analysis,PCA)。结果表明:4?种家畜乳共鉴定出145?种TAGs,相对分子质量为470~888,酰基链总碳数为24~54,双键数为0~9;由14?种碳数4~20、双键数0~3的脂肪酸构成。牛、山羊、马和骆驼乳分别鉴定出60、66、74?种和44?种TAGs。马、骆驼、牛和山羊乳不饱和TAGs相对含量依次为82.2%、61.1%、51.7%和43.8%;马乳含亚麻酸的TAGs高达45.43%;骆驼乳TAGs脂肪酸组成最简单,至少含肉豆蔻酸、棕榈酸、硬脂酸和油酸中的一种;驼乳脂肪O-P-O相对含量最高,为5.04%,山羊乳脂肪最低,仅为1.8%;山羊乳主要TAGs都由饱和脂肪酸组成。4?种家畜乳的基峰色谱图差异明显,对TAGs进行PCA?4?种家畜乳样品以物种聚类明显分离,距离远近符合物种分类学,提示TAGs可建模判别家畜乳的物种。  相似文献
