This article reviews the recent developments in novel freezing and thawing technologies applied to foods. These novel technologies improve the quality of frozen and thawed foods and are energy efficient. The novel technologies applied to freezing include pulsed electric field pre-treatment, ultra-low temperature, ultra-rapid freezing, ultra-high pressure and ultrasound. The novel technologies applied to thawing include ultra-high pressure, ultrasound, high voltage electrostatic field (HVEF), and radio frequency. Ultra-low temperature and ultra-rapid freezing promote the formation and uniform distribution of small ice crystals throughout frozen foods. Ultra-high pressure and ultrasound assisted freezing are non-thermal methods and shorten the freezing time and improve product quality. Ultra-high pressure and HVEF thawing generate high heat transfer rates and accelerate the thawing process. Ultrasound and radio frequency thawing can facilitate thawing process by volumetrically generating heat within frozen foods. It is anticipated that these novel technologies will be increasingly used in food industries in the future.  相似文献

ABSTRACT

Fresh foods are perishable, seasonal and regional in nature and their storage, transportation, and preservation of freshness are quite challenging. Smart storage technologies can online detection and monitor the changes of quality parameters and storage environment of fresh foods during storage, so that operators can make timely adjustments to reduce the loss. This article reviews the smart storage technologies from two aspects: online detection technologies and smartly monitoring technologies for fresh foods. Online detection technologies include electronic nose, nuclear magnetic resonance (NMR), near infrared spectroscopy (NIRS), hyperspectral imaging and computer vision. Smartly monitoring technologies mainly include some intelligent indicators for monitoring the change of storage environment. Smart storage technologies applied to fresh foods need to be highly efficient and nondestructive and need to be competitively priced. In this work, we have critically reviewed the principles, applications, and development trends of smart storage technologies.  相似文献

冷冻贮藏对食品保藏和运输具有重要意义,冷冻食品加工行业发展势头良好,与食品冷冻相关的理论与技术也有长足的进展。本文介绍了与食品冷冻过程相关的传递、玻璃化转变和冰结晶理论的现状和进展,指出由食品物料及其在冷冻过程变化的特殊性所引起的建立系统的食品冷冻理论的复杂性;综述了超声强化冷冻、高压冷冻、冷冻蛋白技术、CAS冻结系统和冰温技术的简要原理,及其在食品行业的应用进展。  相似文献

The presence of Listeria spp. was investigated in a total of 3685 food samples obtained from different industries and markets of Northern Spain in the last 4 years. The samples analyzed include fresh raw products (meat, milk and poultry) and treated products (cooked and cured meats, frozen vegetables and smoked salmon). Occurrence of Listeria spp. varied from 8.1% in soft cheese to 76.3% in raw poultry samples. The highest incidence of L. monocytogenes also occurred in raw poultry (36.1% positive samples). Despite this high incidence of contamination, these kinds of products carry a low risk of listeriosis transmission because of the heat treatment prior to consumption. On the other hand, the ready-to-eat products (RTE) tested in this study showed incidences that could pose serious health problems, taking into account that the storage conditions may allow for rapid growth of the pathogen. It was also found that up to 75.5% of the L. monocytogenes strains isolated in this study belonged to serogroup 1, mainly serotype 1/2a, while the clinical cases observed in Navarra in the same period of time belonged mainly to serotype 4b/4bx.  相似文献

杨梅贮藏是公认难题,长时间贮藏更难。以浙江红杨梅作为实验原材料,首次利用液浸式超速冷冻技术进行速冻保鲜,研究了杨梅液浸式超速冷冻技术的最佳工艺,分析了不同成熟度的杨梅果实其品质比较,以及不同速冻温度下杨梅果实的冻结规律曲线、感官品质、汁液流失率、可溶性固形物、相对电导率、△E值、质构特性等各项指标的变化规律。结果表明:选择九成熟的浙江红杨梅作为原材料,采后立即预冷,用0.07mm的PVC保鲜袋进行真空包装后,在-45℃下进行液浸式超速冷冻12min,于-18℃冰箱中冻藏90d之后,杨梅果实感官品质良好,说明该技术便于产业化。研究不仅对杨梅较长期保鲜具有重要意义,而且对浆果型果蔬保鲜具有重要理论意义和参考价值。   相似文献

Fat is present in bakery foods, as a natural component of ingredients or it is added in the formulation for rheological, technological and sensorial reasons. However the presence of fat can lead to oxidation problems during the shelf life of the products, also affected by cooking temperatures. The control of the oxidative status deals with two issues: the insurance of food safety for consumers and economic aspects for companies. This work points out the possibility to use hexanal as unique index for oxidation status and it suggests a fast solid phase microextraction (SPME) method to analyze it.  相似文献

目的 调查分析和评估云南省2012~2016年婴幼儿食品和即食食品中蜡样芽胞杆菌污染状况。方法 本研究的样品包括2012年到2016年采集自云南省16个地州的1014份婴幼儿食品和3361份即食食品。按照GB 4789.14-2014《食品安全国家标准 食品微生物学检验 蜡样芽胞杆菌检验》第一法平板计数法进行检验, 并用国际上现有的限量标准进行评估分析。结果 婴幼儿食品中蜡样芽胞杆菌的平均检出率分别为18.1%(2012)、5.5%(2013)、18.2%(2014)、2.5%(2016), 超标产品的比例分别为1.1%(2012)、1.9%(2013)、1.7%(2014)。即食食品的平均检出率分别为7.6%(2012)、1.3%(2013)、13.9%(2014)、6.5%(2015)、10.1%(2016)。结论 建议对婴幼儿食品中的蜡样芽胞杆菌以102 CFU/g为临界值进行污染评估、对普通即食食品针对儿童与成人分别以103~105 CFU/g和大于105 CFU/g 2个值作为临界值进行评估。  相似文献

Fresh fruits and vegetables are important parts of the human diet. The consumer demand for fruits and vegetables is increasing due to their rich nutritional value, appealing taste, and healthy perception. However, due to their highly perishable nature, appropriate preservation technologies must be developed to meet the consumer’s demand for healthy, additive-free, microbiologically safe, and high quality fresh fruits and vegetables. The preservation technologies based on modification or control of pressure alters the normal atmospheric pressure of the preservation environment. The materials to be preserved are subjected to either very high or low pressure to extend their shelf life. The mechanism, advantages, and limitations of pressure modification-based preservation methods such as high hydrostatic pressure, hyperbaric treatment, vacuum cooling, hypobaric storage, and vacuum packaging focusing on their applicability to fresh fruits and vegetables have been reviewed. This review suggests that these technologies have potential to extend the shelf life and achieve a better preservation of the quality of fresh fruits and vegetables.  相似文献

ABSTRACT

Intellectualization is an important direction of drying development and artificial intelligence (AI) technologies have been widely used to solve problems of nonlinear function approximation, pattern detection, data interpretation, optimization, simulation, diagnosis, control, data sorting, clustering, and noise reduction in different food drying technologies due to the advantages of self-learning ability, adaptive ability, strong fault tolerance and high degree robustness to map the nonlinear structures of arbitrarily complex and dynamic phenomena. This article presents a comprehensive review on intelligent drying technologies and their applications. The paper starts with the introduction of basic theoretical knowledge of ANN, fuzzy logic and expert system. Then, we summarize the AI application of modeling, predicting, and optimization of heat and mass transfer, thermodynamic performance parameters, and quality indicators as well as physiochemical properties of dried products in artificial biomimetic technology (electronic nose, computer vision) and different conventional drying technologies. Furthermore, opportunities and limitations of AI technique in drying are also outlined to provide more ideas for researchers in this area.  相似文献

Canned and jarred baby foods (74), canned and jarred adult foods (63) and 70 coffees sold in Belgium, Italy, Portugal, Spain and The Netherlands were analysed for their furan content using a validated automated headspace GC–MS procedure. Seven balsamic vinegars from Italy and Spain were also analysed. All 74 baby food samples contained detectable furan, with an average level of 37 ng/g. A total of 54 of 63 canned and jarred foods contained detectable furan with an average level of 24 ng/g. Levels of furan in coffee as consumed were very variable and reflected different preparation methods and coffee strengths. Over 50% of Italian samples contained more than 200 ng/g, whereas over 20% of Belgian coffees contained less than 21 ng/g furan. Some brews made from fine grained coffee contained much more furan than did brews made from normal or coarse grained coffee. Although furan was low in most instant coffees, two Italian products “instant espresso” and “instant mocha” contained about 150 ng/g furan. Balsamic vinegars from Spain contained 159–662 ng/g of furan; however, other samples from Spain and Italy contained only 6–25 ng/g.  相似文献

传统发酵食品风味独特,营养丰富,历史悠久,生产方式多采用自然接种,部分食品的生产工艺已有数千年的历史,其最终质量与发酵过程中存在的多种微生物密切相关。研究表明,运用现代分子生物学技术,可从基因水平上揭示微生物的多样性和群落结构的动态变化,系统阐明其发酵机理。该文综述高通量测序技术在传统发酵食品微生物群落中的应用研究,对聚合酶链式反应-变性梯度凝胶电泳(PCR-DGGE)、实时荧光定量聚合酶链式反应(RT-FQPCR)、宏基因组、宏转录组测序等研究方法的原理、操作方法及其研究成果进行了总结,并对各分析技术优缺点进行了比较,旨在为传统发酵食品的微生物群落研究提供参考。  相似文献
