Sodium chloride is essential in table olive fermentation, storage and packing to guarantee safety and flavor. However, consumers are progressively concerned about sodium intake. In this work, the effect of selected attributes and mineral contents of fermented cracked Aloreña olives as a function of different chloride salt mixtures were studied, using a simplex lattice design with constrains (NaCl + CaCl2 + KCl = 0.110 kg/l). The best fruit colour was observed at half proportions of KCl and NaCl or CaCl2; optimum firmness was around the centre of the triangular coordinates but close to the line connecting CaCl2 and NaCl vertexes; and the best overall quality was obtained in the 0.037 kg/l NaCl and 0.073 kg/l KCl mixture. The concentrations in the fermented olive flesh of the involved elements depended on their initial levels and on the CaCl2 × NaCl and CaCl2 × KCl interactions. Results demonstrate that sodium chloride can be replaced in table olives, at least partially, with potassium or calcium chlorides.  相似文献

This work studies the effects of different sodium (in the range of 4-10%), potassium (0-4%) and calcium (0-6%) chloride salt mixtures on the fermentation profile of Gordal olives processed according to the Spanish style. For this purpose, response surface methodology based on a simplex centroid mixture design with constrain (sum of salt percentages = 10%) was used. All treatments reached appropriate titratable acidity levels, but this parameter could not be related to the initial chloride salt concentration. The presence of CaCl2 led to lower initial and after-fermentation pHs, delayed sugar diffusion into the brine, its maximum concentration and titratable acidity formation. CaCl2 also delayed Enterobacteriaceae and yeast sprang, decreasing their overall growth. This chloride salt also showed a tendency to reduce overall lactic acid bacteria growth. KCl had a similar behaviour to NaCl but, in general, increased overall microbial growth. Thus, a partial substitution of NaCl in Spanish-style green olives with KCl and CaCl2 does not substantially modify the fermentation profile but does produce some changes, which, when properly managed, could help to improve product processing.  相似文献

The shelf life of cracked “seasoned” Manzanilla-Aloreña table olives is short; containers may swell and the fruits become progressively brownish. Respiration of cracked fruits continued for a period longer than 48 h after picking and the carbon dioxide produced may be an initial cause of spoilage. As processing progressed, the microbial loads in the olives increased due to successive washings and, together with the microbial load from the added ingredients, led to relatively high viable counts of yeasts and LAB at packing. During shelf life, this microflora showed an increase in viable counts which could also eventually lead to swelling spoilage. This behaviour was favoured by the presence of residual fermentable substrates and a decrease in potassium sorbate over time in both brine and flesh. At the same time, colour darkened, titratable acidity increased and pH decreased. The application of two additional washings to the cracked olives before packing was favourable because fermentable material and polyphenols were removed; however, fruits with as low as possible respiration rates, stronger washing treatments, ingredients with low or no microbial viable counts and higher preservative concentrations would be necessary to achieve complete stabilization of the product.  相似文献

This work studies the effects of the initial brine concentrations of NaCl, KCl, and CaCl(2) on the mineral content and gustatory and kinaesthetic sensations of fermented green table olives, using a simplex centroid mixture design augmented with interior points. The sodium in the flesh was linearly related to the mixture concentrations while potassium and calcium were linked by quadratic and special cubic models respectively. Acidity, saltiness, hardness, fibrousness, and crunchiness were expressed as linear funtions of the NaCl, KCl, and CaCl(2) initial brine contents but bitterness required quadratic equations. The models can be used to produce table olives with specific mineral contents in the flesh and to predict their corresponding sensory characteristics. PRACTICAL APPLICATION: The study provides the industry with models to estimate the Na, K, and Ca mineral contents in the flesh of fermented Gordal green table olives as well as their sensory characteristics as a function of the NaCl, KCl, and CaCl(2) initial compositions in the brining solution. Therefore, the paper provides tools which are able to support the production of commercial presentations which not only satisfy consumer demand for low Na, but are also K and Ca fortified table olive presentations with specific sensory profiles.  相似文献

The aim of this work was to improve the storage method for cracked table olives. First, a study was carried out of the washing phase in 5% (wt/vol) NaCl brine with ascorbic acid and sodium metabisulphite added to it. Its use removed half the proportion of the initial sugar content in the flesh and markedly decreased the content of polyphenols in the fruits, confirming the effectiveness of this treatment. Washing with 5% NaCl and sodium metabisulphite was selected and applied in storage phase which follows. Storage of the washed cracked olives produced an additional decrease in sugars and polyphenols in the flesh, although the product still retained a fairly high concentration of residual sugars at the end of the storage period. The growth of lactic acid bacteria in this phase was prevented by the high NaCl level (10–13% at the equilibrium) but yeast growth, followed by a decline phase, was found in all storage systems studied. The use of a CO2 atmosphere led to a partial inactivation of yeasts for about 300 h and showed a protective effect on polyphenols. Application of ozone had a favourable effect on initial solubilisation of sugars and polyphenols but caused a negative effect on fresh appearance, colour retention and polyphenol degradation. CaCl2 + MgCl2 treatment led to a significantly faster decline phase of yeasts. A tentative improved process for cracked olive storage may consist of a previous washing of olives for 24 h with a 5% NaCl solution (optionally added with 0.1% sodium metabisulphite), and a subsequent brining in a 15% NaCl solution with 0.25% CaCl2 + 0.20% MgCl2 or in a 15% NaCl brine under CO2 atmosphere.  相似文献

The effect of the mixture of sodium metabisulfite (SM), ascorbic acid (AA), and NaCl on the surface colour of fruits and microbial growth during the storage of cracked Manzanilla-Aloreña table olives was studied. During storage, the green colour of fruits, measured by the hue angle (tang−1(b/a)), decreased rapidly, indicating a degradation in the green and a change towards more reddish tones. The degreening rate (kc) was lower for the highest AA concentration, while the highest final hue angle was found for the highest SM level, indicating different antioxidant mechanisms. Enterobacteriaceae were not enumerated after 20 days of brining. AA, SM, and NaCl, within the concentrations essayed, did not affect yeast growth; however, lactic acid bacteria (LAB) were partially inhibited by the presence of SM and AA, showing the highest growth rate in the absence of both. The maximum population of LAB was reached at levels of SM below 0.75 g/l, intermediate AA (7.5 g/l) and NaCl (70 g/l) concentrations. Appropriate storage conditions could be obtained at the maximum levels of AA (15.0 g/l) and SM (1.5 g/l) and the lowest level of NaCl (60 g/l).  相似文献

This study examined the impact of different mixtures of NaCl, KCl, and CaCl2 on the fermentation profiles of Conservolea natural black olives. Five different combinations of chloride salts were investigated, namely (i) 8% NaCl (control treatment), (ii) 4% NaCl and 4% KCl, (iii) 4% NaCl and 4% CaCl2, (iv) 4% KCl and 4% CaCl2, and (v) 2.6% NaCl-2.6% KCl-2.6% CaCl2. The changes in the microbial association (lactic acid bacteria, yeasts, Enterobacteriaceae), pH, titratable acidity, organic acids, volatile compounds, and mineral content in olive flesh were analyzed. Results demonstrated that all salt combinations led to vigorous lactic acid processes based on the obtained values of pH (3.9-4.2) and titratable acidity (0.70-0.86 g lactic acid per 100 ml brine). Organoleptic evaluation was a critical factor in the acceptability of the final product. Increasing concentrations of CaCl2 or a combination of KCl and CaCl2 rendered the product bitter with low acceptability by the taste panel. Only one combination of chloride salts (4% NaCl and 4% KCl) could finally produce olives with lower sodium content and good organoleptic attributes. The results of this study could be employed by the Greek table olive industry in an attempt to produce natural black olives with less sodium without affecting the traditional taste of fermented olives in order to meet consumers’ demand for low sodium dietary intake.  相似文献

A transient isotachophoresis–capillary zone electrophoresis (tITP–CZE) method was first time developed for determining iodate in table salt. Sensitivity enhancement was accomplished by coupling on-capillary tITP with CZE. The interference of sample matrix was overcome by using electrophoretic buffer containing high concentration of sodium chloride. The optimal terminating electrolyte for tITP was 1500 mmol/L phosphate and the separation buffer of capillary zone electrophoresis was 10 g/L sodium chloride (pH 8.0) containing 20 mmol/L cetyltrimethylammonium chloride (CTAC). Calibration graphs based on peak height and peak area showed good linearity. Use of chromate as the internal standard significantly improved the precision of the quantitative results. The wavelength of UV detection for iodate was set at 218 nm with the detection limits of 3.5 μg/L for iodate. The quantitative results of iodate in table salt measured by the tITP–CZE method were compared with those measured by the redox titration and there was no significant difference between the two means. This study is focused on the effect of sodium chloride alternative salts (KCl, MgCl2 and CaCl2) on porcine muscle proteases (cathepsins, dipeptidylpeptidases and aminopeptidases). In general, KCl exerted a very similar effect to NaCl for all the studied enzymes, while the effect of divalent salts (CaCl2 and MgCl2) was more pronounced. Cathepsins, dipeptidyl peptidase III, dipeptidyl peptidase IV and alanyl aminopeptidase activities were strongly inhibited by all the chloride salts especially by divalent ones. Dipeptidyl peptidase II and leucyl aminopeptidase were little affected and methionyl aminopeptidase was only inhibited by divalent salts. Dipeptidyl peptidase I was strongly activated by low concentrations of the chloride salts except NaCl. Arginyl aminopeptidase was activated by NaCl and KCl and low amounts of MgCl2, while CaCl2 showed a strong inhibitory effect. This is very important as these enzymes play important roles in dry-cured meats and their activity is, in general, regulated by sodium chloride. Thus, reductions in the sodium concentration with subsequent increases of other alternative cations may have relevant consequences on enzyme activity that should be taken into account when processing dry-cured meats.  相似文献

High hydrostatic pressure (HHP) treatments (singly or in combination with natural antimicrobials) were tested for stabilization of Manzanilla Aloreña seasoned olives stored at 25 °C. HHP (5 min) was highly effective on yeast populations at 300 MPa or higher. No viable yeasts were detected in samples treated at 400 MPa for up to three months. Low levels of endospore-forming bacteria were always detected after HHP treatments. Addition of nisin to the brines reduced bacterial counts by 1.4 log cycles but it had no effect on yeasts when tested singly or in combination with HHP treatment (400 MPa, 5 min). Thyme oil had almost no effect on yeast concentrations, but rosemary oil reduced yeast viable counts progressively during storage. Essential oils in combination with HHP (400 MPa, 5 min) significantly (p < 0.05) reduced the concentrations of aerobic mesophilic bacteria. Low-salt brined olives purged with N2 or supplemented with ascorbic acid and then pressurized for 5 min at 450 or 550 MPa were preserved for up to 5 months without spoilage, suggesting that the NaCl content in brines of packed Manzanilla Aloreña table olives could be reduced considerably by application of HHP as a stabilization treatment.  相似文献

Salting, one of the fundamental operations in Spanish cured loin manufacturing, is essential to preserve the product throughout its processing and storage. However, elevated blood pressure has been identified to be the major adverse effect associated with increased sodium intake. The partial replacement of NaCl with other chloride salts such as KCl, CaCl2 and MgCl2 has been proposed as a possible strategy to reduce the sodium content of these products. The aim of this study was to determine the salting time needed to reach the same chloride content as commercial dry-cured loins and, to characterise the first step in dry-cured loin production (salting), in loins salted with sodium partial replaced salts. The results indicated a reduction in the salting time when using KCl as NaCl substitute and an increase in the salting time when adding CaCl2 and MgCl2 to the mixture. Further studies need to be done in order to fully understand the influence of these low sodium mixtures of salts on the following manufacturing steps and the final quality characteristics of the product.  相似文献

The purpose of this study was to evaluate the combined effects of sodium chloride (NaCl) substitutes, including potassium lactate (K-lactate) and calcium ascorbate (Ca-ascorbate), on the physicochemical and sensory characteristics of low-sodium frankfurter sausage (1.2% content of NaCl). Sausages produced with 40% substitution of NaCl with combined K-lactate and Ca-ascorbate showed a higher value of lightness (P < 0.001) than sausages containing 2.0% content of NaCl (control). However, the sensory panels were unable to distinguish a difference in color intensity between the control and treatment groups. Frankfurter sausages produced with 30% K-lactate and 10% Ca-ascorbate exhibited similar water-holding capacity, textural properties, and organoleptic characteristics (P > 0.05) when compared to control sausages. Thus, the use of these salt mixtures is a good way to reduce the NaCl content in meat products while maintaining the quality of meat products. These results may be useful in developing low-sodium meat products.  相似文献

目的 补充标准中氯化钠检测方法的计算过程。方法 依据标准GB 5009.42-2016《食品安全国家标准 食盐指标的测定》和系列标准GB/T 13025《制盐工业通用试验方法》测定食盐中各离子含量, 然后根据产品中所含离子的优先结合次序, 利用质量守恒定律构建氯化钠结果的计算模型。结果 明确了硫酸根离子与钙离子含量差异。根据化合物结合的3种可能性; ①硫酸钙、硫酸镁、硫酸钠、氯化钠; ②硫酸钙、硫酸镁、氯化镁、氯化钠; ③硫酸钙、氯化钙、氯化镁、氯化钠, 正确选择计算方案。结论 本研究便于检测操作者对标准的理解, 为快速、批量计算氯化钠结果提供参考。  相似文献

Aroma is considered as a quality index of olive products. Fermented olives aroma compounds are present both in the fruit matrix and in brine medium. The partition of aroma compounds between fruit matrix and brine medium is deeply different for the two and depends on several factors such as carbon chain length and/or branching, number of polar groups, sodium salt concentration, temperature, etc. In this work, an investigation on volatile compounds quali-quantitative partition in fruit matrix and in brine medium of Greek-style Carolea and Nocellara del Belice table olives has been assessed. Volatile compounds have been extracted by using headspace method for olive fruit and by solvent extraction and distillation for brine medium. Twenty-three volatile compounds in fruit matrix and fifteen aroma molecules in brine medium have been identified by Gas Chromatography and GC/Mass Spectrometry. Results showed that most volatile organic compounds had a major affinity for the fruit matrix depending both on the chemical characteristics of the molecules (chain length and branching, polar or no polar groups, etc.) and on the “salting out” effect due to high NaCl concentration of the brine, which brought aroma compounds to hydrophobic phase of the olive fruit.

Industrial relevance

The study could be potentially helpful to develop analytical methods in order to estimate the quail-quantitative composition during the fermentation process. So that it would be possible to implement automatic analytical procedures in the currently used plants for the industrial production for table olives. Furthermore, this study allow us to identify off-flavours formed by anomalous fermentation process, in order to reveal them (both in the fruit and in the brine) in premature times (just in small traces), so to obtain the fermentation process recovery.  相似文献

An experimental investigation was carried out on Tunisian olive-fruits of Meski, Sayali and Picholine cultivars. α-Tocopherol and fatty acids (FA) contents were analyzed, during both ripening and processing, according to the Spanish style. The relationship between oil, unsaponifiable and α-tocopherol contents was determined only during ripening. A genetic effect on FA composition was observed throughout the sampling periods. The highest oleic acid content was found in Sayali cultivar at green stage (78.5% of total FA). α-Tocopherol was positively correlated with unsaturated FA content (R = 0.71, p < 0.05), and oil amount (R = 0.984; R = 0.976; R = 0.952, p < 0.05 for Picholine, Sayali and Meski, respectively), but it was not correlated with unsaponifiable matter. In processed olive-fruits, the results showed primarily, that processing according to the Spanish style is not restricted to green olive-fruits but can be successfully used in cherry olives with guaranteed quality and nutritional value of processed product (Meski and Picholine) related to FA content. Secondly, both α-tocopherol and FA amounts decreased during processing for all cultivars. This decrease was cultivar dependent. It was more pronounced in the black fruit than in the green one for the same cultivar. During fermentation, pH variation showed the same profile in all cultivars. Final pH values at the end of fermentation depend on the concentration of free FA (acidity) in the brine.  相似文献

The effect of different packing conditions on sorbate stability was studied in Spanish-type green table olives stored for up to one year. The factors studied were preservation treatment (pasteurisation vs. non-pasteurisation), storage temperature (room temperature vs refrigeration), packaging material (glass bottle vs. plastic pouch), storage time, and the presence or not of an antioxidant additive (ascorbic acid). Sorbic acid was stable in pasteurised samples as well as in the refrigerated unpasteurised samples, both in the absence and in the presence of ascorbic acid. In unpasteurised samples stored at room temperature, sorbic acid gradually disappeared, with a concomitant increase in the concentration of trans-4-hexenoic acid, which could be attributable to the action of lactic acid bacteria. Ascorbic acid was always less stable than sorbate. Sorbate addition negatively affected the colour parameters of both fruit and brine. An appreciable off-flavour was detected in the samples in which sorbate had been degraded.  相似文献

An experiment was conducted to test sequential injection of sodium tripolyphosphate (STP; 0.5% meat weight basis, mwb) followed by injection with or without addition of calcium chloride (CaCl2, 500 ppm mwb), and to test the effect of post-injection delay prior to cooking. A second experiment evaluated the impact of injection order and delay time between independent addition of CaCl2 (500 ppm mwb) and STP (0.5% mwb). Turkey was formulated without an added pink generating ligand (NONE), with nicotinamide (NIC; 0.1% mwb), or with sodium nitrite (NIT; 10 ppm mwb). A white colloid was observed in the extracellular space of treatments containing both STP and CaCl2. Addition of CaCl2 decreased nitrosylhemochrome but did not reduce levels of nicotinamide hemochrome or CIE a values. Injection order or delay between injections did not contribute to controlling the pink defect in cooked, intact turkey breast.  相似文献
