1前言Li——是科特食品科学公司的系列改性聚葡萄糖产品的商品名。聚葡萄糖是HansRennhard博士在Pferer公司的中心研究实验室发明的,它是由随机交联的葡萄糖组成的多糖。经葡萄糖和少量山梨醇、柠檬酸熔融缩聚而成。反应过程中山梨醇是交联剂,柠檬酸是催化剂。这样所得的聚葡萄糖微酸、无甜味、水溶性好,并含有少量的山梨醇和柠檬酸。Litesse(改性聚葡萄糖)则由聚葡萄糖进一步深加工而来,产品的酸度、苦味由此减低,口味、色泽得到很大改进。LitesseUltla(精炼聚葡萄糖)是进一步提炼而成的新产品,因其溶液无色无味,拓宽了产品…  相似文献

以罗非鱼鱼糜为原料,添加聚葡萄糖,热诱导形成凝胶,通过测定凝胶强度、持水性、白度、水分分布、微观结构、蛋白质二级结构等指标,研究聚葡萄糖对罗非鱼鱼糜凝胶品质的影响。结果表明,随着聚葡萄糖添加量的增加,鱼糜凝胶强度、持水性增加,并在添加量4%时达到最大值;白度变化不明显;水分分布状态测定结果表明,聚葡萄糖的加入可以缩短鱼糜凝胶弛豫时间T2,改变不同种类水的分布状态,增强与水的结合;与对照组相比,添加聚葡萄糖的鱼糜凝胶网络结构更加致密,鱼糜凝胶中肌原纤维蛋白的α-螺旋结构减少,β-折叠结构增加。综合各项指标得出,添加适量的聚葡萄糖可以改善罗非鱼鱼糜的凝胶特性。该研究结果可为改善淡水鱼糜制品的品质提供理论依据。  相似文献

以水溶性膳食纤维聚葡萄糖为原料和3-氯-2-羟丙基三甲基氯化铵(QA-188)为阳离子醚化剂,合成阳离子聚葡萄糖,然后将其与胆汁酸进行吸附反应,并探讨了影响阳离子聚葡萄糖改性反应的因素及改性前后聚葡萄糖对胆汁酸的吸附性能的对比。结果表明:(1)用IR表征目标产物的结构,证实合成了阳离子聚葡萄糖;(2)阳离子聚葡萄糖改性反应的最佳条件为:聚葡萄糖∶醚化剂=40∶9(质量比),反应温度为60℃,p H为9~10,反应时间为3 h;(3)无论改性前后,随着聚葡萄糖用量增加,吸附率均呈先上升后下降趋势,达到一定程度时,其用量对吸附率影响不大。改性后的聚葡萄糖对胆汁酸的吸附率相对于改性前的聚葡萄糖有明显的提高。  相似文献

Inulin and polydextrose are key bulk sugar replacers and have been utilised extensively as functional ingredients due to their fibre and prebiotic claims. This study investigated effects of fat content and bulk mixture concentrations of inulin and polydextrose on rheological properties, mechanical and melting characteristics of sugar‐free dark chocolates sweetened with steviol glycosides. Sucrose was replaced with polydextrose and inulin (0:100, 25:75, 50:50, 75:25, 100:0) at different fat contents (27%, 30% and 33%). Reducing fat content from 33% to 27% had similar effects on the sugar‐free dark chocolates as it did on reference chocolate. Increasing inulin concentrations with simultaneous reduction in polydextrose resulted in consistent increases in Casson plastic viscosity and decreases in Casson yield stress regardless of the fat content. These were explained by microstructural examination of the sugar replacers, which revealed wide variations in network structure. Understanding these factors would help reduce energy load from fat in sugar‐free chocolate confectionery.  相似文献

A calorie-reduced frozen dairy dessert was formulated using aspartame as the sweetener and polydextrose as the bulking agent. Two levels each of polydextrose/corn syrup solids combinations and microcrystalline cellulose were evaluated in a dessert consisting of 4% milkfat and 30.5% total solids. Taste panel data showed that the products were acceptable and that microcrystalline cellulose played an important role in the formula. Four levels of polydextrose/sorbitol combinations and two levels of aspartame were also evaluated in a 2% fat, 29.8% total solids frozen dessert. The taste panel data showed that usage levels between 0.05-0.1% aspartame and a maximum of 12% polydextrose produced an acceptable product.  相似文献

Four bulking agents—white wheat fiber, polydextrose, isomalt and oligofructose—were evaluated for usable energy values using young rats as the test model. The net increase observed in their carcass energy due to bulking agents fed over a 3-wk period was evaluated. Wheat fiber contained 0.9, polydextrose 0.8, isomalt 1.6, and oligofructose 1.5 calories/g. As a partial substitute for sugar, fat and/or flour, these bulking agents could effectively reduce the energy content of foods.  相似文献

The objective of this study was to optimize and develop low-fat soft dough biscuits using carbohydrate-based fat replacers (combinations of polydextrose and guar gum). Central composite rotatable design was utilized to optimize the levels of sugar, composite fat (fat, polydextrose, and guar gum), ammonium bicarbonate, and water. The parameters measured were spread ratio, hardness, stress-strain ratio, and sensory properties. Composite fat and sugar were found to be important determinants of biscuit hardness. The principal effect of fat substitutes on biscuits’ attributes was crisper texture but with higher brittleness. The level of water had a significant effect on spread ratio (p < 0.1), hardness (p < 0.1), and stress-strain ratio (p < 0.05). It was also observed that by varying the level of ammonium bicarbonate in the formulation from 0.5 to 2.5 g/100 g flour, the dimensions and texture of the biscuits were affected. The optimum ingredient levels on 100 g flour basis were found to be sugar 24 g, fat 10.5 g, polydextrose 24.2 g, guar gum 0.3 g, ammonium bicarbonate 2 g, and water 24 mL. It was found from the storage study that low-fat biscuit with 70% fat replacement was more oxidative stable than the control sample.  相似文献

在经反复试验确定的对照冰淇淋配方的基础上,利用低聚果糖和山梨醇配比以取代全部的蔗糖,利用聚合葡萄糖部分取代脂肪;采用多因素正交试验设计无蔗糖低脂肪低热量保健冰淇淋最佳配方。结果表明,选用低聚果糖和山梨醇配比为12 % ∶2 % ,6 % 聚合葡萄糖取代原有的14 % 蔗糖、6 % 人造奶油;添加0 .2 % 柠檬酸钠、0 .6 % 酪蛋白酸钠制得的产品在感官上与对照冰淇淋产品无明显差别,其膨胀率达到100 % 左右;每100 g 产品其脂肪含量降低了56 .17 % ,含热量降低了57 .67 % 。  相似文献

Soft‐type cookies were prepared with up to 35% fat replacement by fat mimetics, namely Litesse (improved polydextrose), C*deLight MD 01970 (maltodextrins), Dairytrim (b‐glucans), pectin and Simplesse Dry 100 (a blend of micropatriculated whey proteins and emulsifiers). Physical, textural and sensory properties of the cookies were measured. All formulations with fat replacement up to 23% showed properties similar to control cookies except hardness. Cookies with 35% fat replacement by Litesse, a combination of Litesse and C*deLight MD 01970 and a combination of Litesse and Simplesse Dry 100 (50% each) presented a greater hardness, but physical properties as well as flavor and general acceptance comparable to the control cookies.  相似文献
