To investigate the relationship between bioactive compounds and antioxidant property, total phenolic content (TPC), total flavonoid content (TFC), individual and total isoflavone content of soymilk and their correlations with oxygen‐radical‐absorbing capacity (ORAC), ferric reducing antioxidant power (FRAP) and 1,1‐diphenyl‐2‐picrylhydrazyl (DPPH) radical scavenging capacity values were evaluated and compared. Results showed that TPC, TFC, isoflavones (including concentration and profiles) and antioxidation activity significantly varied among ten tested soybean cultivars. Significant correlations were established between DPPH and TFC (r = 0.553, P < 0.01), DPPH and TPC (r = 0.753, P < 0.01), FRAP and TFC (r = 0.599, P < 0.01) and FRAP and TPC (r = 0.616, P < 0.01). Positive linear correlations were found between subtotal, total isoflavones and ORAC. Unlike other isoflavone monomers, aglycone isoflavones correlated positively with DPPH and FRAP significantly. DPPH well correlated with FRAP, whereas neither DPPH nor FRAP correlated with ORAC. Oxygen radical antioxidant capacity (ORAC) and trolox equivalent antioxidant capacity (TEAC) assays were compared to estimate the total antioxidant capacity (TAC) of orange juice, milk, and an orange juice-milk beverage. When the TEAC method was used with this beverage, an increase in the concentration of orange juice corresponded to an increase in TAC, but increasing the percentage of milk did not increase the TAC value. When the ORAC method was applied, it was seen that increased concentrations of juice or milk corresponded to greater antioxidant capacity. An evaluation was also made of the influence of certain compounds (ascorbic acid, gallic acid, β-carotene, lutein, zeaxanthin and albumin) with antioxidant capacity that were present in the samples studied. 相似文献

Twelve commonly consumed culinary herbs were assessed for their potential effect in mitigating oxidative stress and postprandial hyperglycaemia: River Mint, Vietnamese Mint, Fish Mint, Spearmint, Sweet Basil, Thai Basil, Coriander, Lemon Verbena, Vietnamese Perilla, Rice Patty, Sawtooth and Rosemary. The radical scavenging and reducing antioxidant activity of the herbs were quite variable ranging from 31–652 mg Trolox Equivalent to 35–512 mg Ferrous Equivalent per gram dried leaves, respectively. The herbs were largely inactive against pancreatic α‐amylase, but showed strong inhibitions against yeast α‐glucosidase at 100 μg Gallic Acid Equivalent (GAE) per millilitre. Vietnamese Mint is the most potent herbs with the concentration required for 50% inhibition of activity of 6.9 μg Dried Leaves per millilitre. In addition, Vietnamese Mint was the only herb that produced significant inhibition of rat intestinal α‐glucosidases, reducing activity to 29.6% at 100 μg GAE mL?1 compared with control. 相似文献

Dual effect of milk on the antioxidant capacity of green,Darjeeling, and English breakfast teas 总被引:2,自引:0,他引:2
Past studies present contradictory results regarding the effect of milk on the antioxidant capacities of teas, possibly because of the different methods used. Here, we re-address the question by using three complementary assays, ABTS+ free radical scavenging, voltammetry, and lipid peroxidation inhibition, to estimate how milk affects the antioxidant capacities of green, Darjeeling, and English breakfast teas. We observed that milk decreased the antioxidant capacities of Darjeeling (−8.3%), green (−6.0%), and English breakfast (−19.6%) teas, estimated with the ABTS+ method. These inhibitions were four times larger using voltammetry. In contrast, milk enhanced the chain-breaking antioxidant capacity of teas in the lipid peroxidation method by 19%, 12%, and 10%, for green, English breakfast, and Darjeeling teas, respectively. Therefore, milk can have dual effects on the tea antioxidant capacity, an inhibitory effect for reactions occurring in solution or at a solid–liquid interface and an enhancing effect for those in oil-in-water emulsion. The mechanisms responsible for these different milk–tea interactions are discussed. 相似文献

A comparison was made on the use of two spectrophotometric methods, the ferric reducing antioxidant power (FRAP) method and the 2,2'-azinobis-3-ethylbenzotiazoline-6-sulfonic acid (ABTS) method, for the measurement of the total antioxidant capacity (TAC) of plant foods. The correlations of TAC measured by the two methods were highly significant in both water-soluble (r2= 0.90) and water-insoluble extracts (r2= 0.98) from 13 strawberry samples. Also a corresponding comparison of TAC in extracts from 14 plant species showed high correlation coefficients, r2= 0.98 for water-soluble extracts and r2= 0.88 for water-insoluble extracts. The ratio of TAC values obtained with the two methods (ABTS/FRAP) varied between 0.7 and 3.3 for different plant extracts indicating that they contained antioxidants with varying reactivity in the two methods. TACs in six pure antioxidant substances were ranked in the following order by both methods: quercetin > ferulic acid > catechin > rutin > caffeic acid > Trolox = chlorogenic acid. The two methods showed similar TAC values for quercetin, rutin, caffeic acid and chlorogenic acid while ferulic acid and catechin gave higher results with the ABTS method than with the FRAP method, and such differences probably explain the varying ratios of ABTS/FRAP obtained in foods. Regarding storage TAC in water-soluble strawberry extracts stored at -20 or -80 degrees C was stable for at least five months while storage at 4 degrees C decreased the TAC value with 40% during five weeks of storage. The study showed that both the ABTS and FRAP methods can be used for convenient monitoring of the antioxidant capacities in fruit and vegetables, and that different antioxidants had varying reactivity in the two methods. 相似文献

The consumption of antioxidant-rich foods has already been associated with acute significant increases in plasma total antioxidant capacity (TAC) in humans, but there is no consensus among different literature reports. Furthermore, the acute rise in plasma TAC observed after consumption of several non-berry fruits seems not to be necessarily related to the absorption of dietary antioxidants, such as micronutrients and phenolic substances, but is attributed to the relevant increase of endogenous urate in serum. In this study, we first compared the nutritional quality of strawberry fruits from different genotypes, all cultivated in the same experimental field. Significant genotype-to-genotype differences were observed in the antioxidant capacity and in the vitamin C, folate and phenolic contents of the fruits. Second, in order to investigate the individual effects of the selected strawberry genotypes on the post-prandial plasma antioxidant status in humans, we assessed the acute effects of a single dose of strawberries in healthy subjects. The variation of plasma TAC through the FRAP and TEAC assays, and any eventual changes in ascorbate and urate levels in serum, were measured during the three hours following the strawberry intake. The acute intake of strawberries resulted in a significant increase in plasma FRAP values in all the subjects, independently of the individual TAC baseline levels. Interestingly, the lowest increases in plasma TAC and in serum ascorbate levels were associated with consumption of the nutritionally-poorest cultivars. In addition, significant increases in ascorbate, but not in urate, concentrations were observed in serum. These findings suggested that the fructose-dependent hyperuremic effect, observed after the intake of non-berry fruits, is not responsible for the plasma antioxidant changes following strawberry consumption. 相似文献

Juices from fifteen citrus varieties (seven mandarins, four sweet oranges, one lemon, one grapefruit, and two pummeloes) of China were investigated mainly on quality parameters, total carotenoid, phenolic compounds (total phenolics, flavanone glycosides (FGs), and phenolic acids), and antioxidant capacity (ferric reducing antioxidant power (FRAP) assay and 2,2-diphenyl-1-picrylhydrazyl (DPPH) assay). Among the fifteen varieties, Bendizao had the highest content of total carotenoid (10.02 mg/L), Satsuma had the highest content of narirutin (288.12 mg/L), Yinzaocheng had the highest content of hesperidin (533.64 mg/L), and Huyou had the highest content of naringin (348.53 mg/L), neohesperidin (265.25 mg/L) and total FGs (746.08 mg/L). As for total phenolic acids, Liubencheng had the highest content (72.61 mg/L). Hybrid 439 achieved the highest AA content (631.25 mg/L), and the highest total phenolics (1555.49 mg/L) and the greatest inhibition of DPPH radical (61.62%). Hamlin had the highest ascorbic acid equivalent antioxidant capacity (AEAC: 899.31 mg/L) determined by FRAP assay. Correlation coefficients of AA, total phenolics (gallic acid equivalent), FRAP (AEAC), DPPH (I%), total FGs and total phenolic acids indicated that AA played a major role for the antioxidant capacity of citrus juices, and phenolics also played an important role, which may be mainly ascribed to FGs, whilst phenolic acids seemed to play a minimal role. As the heat-induced formation of antioxidants throughout the Maillard reaction is known, this study was undertaken to evaluate the impact of lipid oxidation-derived aldehydes and ascorbic acid in Maillard model systems on the resulting antioxidant activity. For this purpose, various fractions of melanoidin-like polycondensation products were obtained from mixtures of amino acids (glycine, lysine, arginine) and lipid oxidation-derived aldehydes (hexanal, (E)-2-hexenal), in the presence or absence of glucose or ascorbic acid. All fractions showed a significant radical scavenging capacity (DPPH assay) and ferric reducing power (FRAP assay). The activity varied according to the composition of the model system tested, although some similar trends were discovered in both assays applied. The presence of lipid oxidation products in the browning products augmented the antioxidant activity in specific cases. For instance, the combined presence of arginine, hexanal and glucose in heated model systems resulted in a significantly higher antioxidant capacity. With an exception of ascorbic acid-containing model systems, melanoidin-like polycondensation products possessed significantly stronger antioxidant activities than the corresponding unheated initial reactant mixtures. Water-soluble high molecular weight (>12kDa) and nonsoluble fractions comprised the major part of the antioxidants derived from amino acid/lipid oxidation product model systems, with or without glucose or ascorbic acid. 相似文献

Proanthocyanidins were isolated and purified from fruits of elephant apple (Dillenia indica Linn.) and their structural and bioactive properties were examined. Bate‐Smith alcoholysis, FTIR, and 13C NMR spectra revealed that elephant apple proanthocyanidins (EAPs) contained a dominant amount of B‐type procyanidins (PC) with a minor amount of B‐type prodelphinidins (PD) but no A‐type interflavan linkage. 13C NMR spectrum indicated that the cis isomer was dominant in EAPs. The electron spray ionization and matrix‐assisted laser desorption ionization time of flight mass spectra of EAPs showed the clear ion peaks corresponding to B‐type PC dimer to B‐type PD with degree of polymerization of 11. EAPs had strong antioxidant activity, which was evidenced by the high oxygen radical scavenging capacity at 1.06 × 104 μmol TE/g and ferric reducing antioxidant power of 2320 μmol Fe(II)/g. The results suggest that EAPs could be extracted to be used as promising functional food materials. 相似文献

The aim of this study was to examine the contribution of sugar, organic acid, neutral phenol, and anthocyanin fractions and added ascorbic acid to grape and pomegranate‐nectarine juice total phenol, oxygen radical absorbance capacity (ORAC), ferric reducing antioxidant power (FRAP) and 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH) values. Neutral phenol and anthocyanin fractions contributed ≥75% of the total antioxidant capacity (TAC) for both juices. Intrinsic synergy and antagonism among the fractionated constituents occurred inconsistently in each assay. Sugars and organic acids antagonised pomegranate juice neutral phenols and anthocyanins in the DPPH assay by 50% and the grape juice ORAC value by 21%, but were synergistic to the grape juice FRAP value. The added ascorbic acid was dose‐dependently synergistic with pomegranate and grape juice total phenol, DPPH and FRAP assays, but less so in the ORAC assay. Thus, the interactions between grape and pomegranate juice constituents determine TAC and total phenol values, and synergy in these assays could not be attributed solely to polyphenols. 相似文献

In this study four cultivars of lentil originating from Spain were examined: cv Paula, cv Agueda, cv Almar and cv Alcor. Since consumption of these seeds after heat treatment and as sprouts has been popularised, the impact of cooking (up to 30 min) and germination process (in dark, at 25°C, for up to 4 days) on peroxyl radical‐trapping capacity (PRTC) and Trolox‐equivalent antioxidant capacity (TEAC) of the processed seeds was addressed. Also, changes in the content of low‐molecular‐weight antioxidants (LMWA) and soluble proteins in the course of cooking and germination were studied. The analyzed LMWA were: total phenolics, tocopherols (α‐T, β‐T, γ‐T, δ‐T( reduced glutathione, and L ‐ascorbic acid. On the basis of the results obtained, the contribution of LMWA and soluble proteins to the PRTC and TEAC of raw, cooked, and germinated lentil seeds was calculated by multiple mean values for the content of investigated compounds and their relative potential with respect to Trolox. The results showed a very high molar percentage contribution of phenolic compounds and low contribution of tocopherols, glutathione, soluble proteins, and ascorbate (only in germinated seeds) to the total TEAC and total PRTC calculated as a sum of data provided for phosphate‐buffered and 80% methanolic extracts of raw and processed lentil seeds. 相似文献

Raisins of 9 grape genotypes from Xinjiang Province were evaluated for phenolic composition and dietary antioxidant potential by using several assays, including 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging capacity, cupric reducing antioxidant power (CUPRAC), nitrite scavenging capacity (NTSC), potassium ferricyanide reducing power (PFRAP), and hydroxyl radical scavenging capacity (HRSC). Desert king had the highest content of total phenolics, total flavonoids, oligo proanthocyanidin, and total flavanols. Significance analysis demonstrated that Desert king had the highest antioxidant capacity in DPPH, CUPRAC, NTSC, and PFRAP. Citrus myrtifolia Raf. (chinotto) flavedo, albedo and carpel membranes from green and ripe fruits, as well as seeds and leaves, were investigated for the first time for their flavonoid and furocoumarin composition. Twenty-three unique compounds distributed in the different fruit/plant parts were identified and quantified. All samples analysed contained flavanone O-glycosides, flavone C- and O-glycosides and furocoumarins; flavedos and albedos also contained significant amounts of polymethoxyflavones. Flavedo and albedo extracts were found to be richest in flavonoids and furocoumarins, containing up to 1.95 g/kg fresh weight. Flavedo, albedo and carpel membranes from ripe fruits were found to be richer than the corresponding tissues from unripe fruits. The remarkable radical-scavenging activity of all the extracts was tested by DPPH•, ABTS•+ and FRAP methods, revealing that (i) they were particularly efficient in quenching ABTS•+ radical cations (up to 9.8 mM Trolox equivalents), and (ii) flavedo and albedo extracts, on average, showed the highest antioxidant capacity. 相似文献

Food product based on gac fruit (Momordica cochinchinensis Spreng.) arils have a high potential due to the high carotenoids content of this fruit. Drying is a key preparation step for carotenoids extraction from gac fruit in a economically viable process. The impact of different drying technics, temperature, final product moisture content on the carotenoid content, hydrophilic and lipophilic antioxidant activity (evaluated with three methods) and color of the gac arils is discussed based on laboratory scale experimental tests. The results highlight an optimal temperature between 50 °C and 60 °C to conserve the color, the carotenoid content and the antioxidant activity. Also, these properties are better preserved by limiting the drying to dry based moisture content between 15% and 18% while the advantages of drying for further processing and for refrigerated conservation for a few months are achieved. 相似文献

Extracts from 11 vegetables of Indonesian origin were screened for flavonoid content, total phenolics, and antioxidant activity. The flavonols myricetin, quercetin, and kaempferol and flavones luteolin and apigenin were quantified by HPLC. Flavonoid content in mg/100 g fresh weight (fw) was apparently initially reported for Cosmos caudatus H.B.K. (52.19), Polyscias pinnata (52.19), Pluchea indica Less. (6.39), Nothopanax scutellarius (Burm.f.) Merr (5.43), Talinum triangulare (Jacq.) Willd. (3.93), Pilea melastomoides (Poir.) Bl. (2.27), and Etlingera elatior (Jack) R.M.Sm (1.18). The flavonoid content of the vegetables studied were mainly quercetin and kaempferol and ranged from 0.3 to 143 mg/100 g fw, with the highest level found in Sauropus androgynus (L) Merr. C. caudatus H.B.K. had the greatest total phenols among the vegetables analysed, with 1.52 mg GAE/100 g fw. P. indica Less. and C. caudatus H.B.K. had the highest antioxidant activity as measured by ferric cyanide reducing power, DPPH (2,2-diphenyl-1-picrylhydrazyl) and ABTS (2,2′-azino-bis-(3-ethylbenzthiazoline-6-sulphonic acid) scavenging, and inhibition of linoleic acid oxidation. Therefore, S. androgynus (L) Merr, C. caudatus H.B.K., and P. pinnata were identified as potentially rich sources of dietary flavonoids and antioxidants. 相似文献
