Sutchi catfish (Pangasius hypophthalmus) produced in the freshwater basins of Vietnam, available on the Italian market as frozen or thawed fillets, were studied for their nutritional quality and safety aspects. Proximate composition, mineral content, fatty acid profile, unsaponifiable components of the lipid fraction and drip loss during thawing at 5 °C were determined on the fillets. Fillets were characterised by high moisture levels (80–85%) and low protein (12.6–15.6%) and lipid (1.1–3.0%) contents. Total lipids were characterised by low cholesterol levels (21–39 mg/100 g), high percentages of saturated fatty acids (41.1–47.8% of total fatty acid) and low percentages of polyunsaturated fatty acids (12.5–18.8% of total fatty acids), which were mainly represented by linoleic acid (44–59% of total polyunsaturated fatty acids). The mineral composition was characterised by a high sodium content (222–594 mg/100 g), probably partially due to the sodium tripolyphosphate (E 451) used to retain moisture. As regards safety aspects, the quality of the samples analysed was good, with low residue levels of mercury, organochlorine pesticides and polychlorinated biphenyls.  相似文献

European perch (Perca fluviatilis) harvested from three lakes of Central Italy were studied in different seasonal periods of a year to evaluate their nutritional quality and some safety aspects related to the pollution of the aquatic environment. The lakes considered, located in the Latium region, differed with respect to their volcanic (Bolsena and Bracciano Lakes) or artificial (Salto Lake) origin. Fillets of fish caught in the three lakes were characterised by good protein (17–19%) and mineral contents and low lipid levels (0.6–1.2%) throughout the year. Total lipids were characterised by low cholesterol levels (41.9–74.7 mg/100 g) and high percentages of total n − 3 polyunsaturated fatty acids (27.7–33.8% of total fatty acids), in particular docosahexaenoic acid (14.2–25.3% of total fatty acids). The qualitative analysis of the stomach content of perch confirmed their predatory feeding behaviour. The chemical and nutritional profiles of perch from the three lakes were comparable except for rubidium and cesium levels, which were higher in the muscle tissues of perch from the volcanic lakes. These minerals may represent elements of traceability of the origin of fish. Low levels of organochlorine pesticides and polychlorinated biphenyls, well below the Italian and European action limits, were detected in the muscle tissue of perch from all three lakes.  相似文献

Thirty llamas were used to study the effect of a 90 day feed supplementation on meat quality, chemical composition and muscle fatty acid profile. Treatments were: GR = llama on native pasture until slaughter; GR + SH = like GR, but with overnight free access to barley/alfalfa hay; and GR + SC = like GR, but with overnight free access to a wheat bran/sorghum grain concentrate. The supplementation had no effect on postmortem pH and temperature decline in the Longissimus lumborum muscle (LLM), cooking losses nor Warner–Bratzler shear force values (P > 0.05). Meat from GR + SC llama had higher fat content in LLM (P < 0.05) compared to GR and GR + SH llama. Intramuscular fat from GR + SH llama showed higher (P < 0.01) proportions of polyunsaturated fatty acids, higher (P < 0.05) polyunsaturated fatty acids/saturated fatty acids and desirable fatty acids ratio, lower (P < 0.05) omega-6/omega-3 (n − 6/n − 3) ratio, and higher (P < 0.01) conjugated linoleic acid.  相似文献

Four underutilized Georgia-grown fruit crops, namely loquat (Eriobotrya japonica), mayhaw (Crataegus sp.), fig (Ficus carica), and pawpaw (Asimina triloba), and their leaves were analysed for total polyphenols by Folin–Ciocalteau method, and antioxidant capacity by ferric-reducing antioxidant power (FRAP) and Trolox-equivalent antioxidant capacity (TEAC) assays. Organic acids and phenolic compounds were identified by RP-HPLC. For lipid profile, fruits were separated into two fractions – seed and fruit (i.e., without seed); lipid was extracted using the Folch method and analysed for fatty acids, phytosterols, tocopherols, and phospholipids. The major organic acid identified in all samples was malic acid (177–1918 mg/100 g FW). The predominant phenolic acids in all the fruits were gallic (1.5–6.4 mg/100 g FW) and ellagic (0.2–33.8 mg/100 g FW), and the most abundant flavonoid was catechin (12.2–37.8 mg/100 g FW). Total lipid content varied from 0.1% in mayhaw fruit to 21.5% in pawpaw seed. Linoleic acid was the predominant fatty acid in all of the samples (28.2–55.7%).  相似文献

The objective of this study was to evaluate the lipid bioactive compounds distribution of genetically modified potato (GMP) Spunta compared to that of non-genetically modified potato (NGMP) Spunta. In two lines of GMP Spunta (G2 and G3) as well as in control cultivar the levels and composition of the lipids extracted from the mature tubers were characterised in terms of its fatty acid, sterol, tocopherol distribution as well as lipid classes and unsaponifiables levels. Column chromatography (CC), gas chromatography (GC), thin layer chromatography (TLC) and liquid chromatography (LC) techniques were performed to analyse lipids. NGMP and GMP lines (G2 and G3) were found to contain 0.59%, 0.75% and 0.72% of total lipids (TL), respectively. Amongst TL present in NGMP, the level of phospholipids was the highest (53% of TL), followed by neutral lipids (24% of TL) and glycolipids (23% of TL), respectively. Significant decrease in phospholipids levels was measured in GMP G2 and G3 (from 53% of TL in NGMP to 40% of TL in GMP). Neutral lipids were measured in higher amounts in GMP G2 and G3 (400 and 390 g/kg TL, respectively). Glycolipids were measured in the highest amounts in NGMP (230 g/kg TL) followed be GMP G3 (200 g/kg) and GMP G2, respectively. The predominant phospholipid subclasses in NGMP and GMP Spunta were phosphatidylcholine (43–46%) followed by phosphatidylethanolamine (31–33%). The content of oleic and linoleic acids, which were the main fatty acids of potato tubers, came to 64.5% of all acids. TL from NGMP additionally contained higher amounts of palmitic and stearic, while polyunsaturated fatty acids were found in higher amounts in GMP (31.9% of total FAME). GMP G3 contained the highest amounts of total sterols (29 g/kg oil), followed be GMP G2 (26 g/kg oil) and NGMP, respectively. β-Sitosterol was the ST marker and comprised 43.1–43.7% of total sterols, wherein the next major components were campesterol and △5-avenasterol. α-Tocopherol was the main identified compound (77.5–80% of total tocopherols) in GMP and NGMP Spunta followed by β-tocopherol. Detailed knowledge on the composition of lipids in potato Spunta, in consideration of potential utilisation, is of major importance.  相似文献

Chemical compositions and nutritive value of the edible portions including foot, mantle and viscera of Asian hard clam (Meretrix lusoria) harvested from the coast of Andaman Sea were determined. Proximate compositions varied with portions tested. Edible portions had moisture (76.23–84.22%) and protein (9.09–12.75%) as the major components. Carbohydrate (0.32–7.89%), fat (1.58–6.58%) and ash (1.23–2.58%) were also found at various levels, dependent upon portions. Myofibrillar proteins were observed as the major fraction in foot (40.54%) and mantle (31.65%), whilst non-protein nitrogen constituents were dominant in the viscera (36.85%). All portions contained a large amount of essential amino acids (167.66–187.63 mg/g sample), in which leucine (30.91–36.96 mg/g sample) and lysine (35.24–36.03 mg/g sample) were predominant. They were rich in polyunsaturated fatty acids (46.84–49.18% of total fatty acid) with high level of DHA (13.33–16.47 % of total fatty acids) and EPA (4.75–7.11% of total fatty acids). Cholesterol of 0.07–0.21% wet weight was detected. All portions were also rich in macro- (Na, K, Ca and Mg) and micro- (Fe, Zn, Cu and Cr) minerals. Therefore, Asian hard clam is an excellent source of several nutrients, which could be beneficial for the health of the consumers.  相似文献

In this study a validated procedure for accurate determination of fatty acids in dairy products, with special emphasis on total trans fatty acids (TFA) content is presented. Dairy fat naturally contains 4–6% of trans fatty acids, mainly trans-octadecenoic acids (i.e. vaccenic acid), and 0.3–1.5% of conjugated linoleic acids (CLA). The proposed procedure does not require lipid extraction, and transesterification of lipids could be carried out directly on dairy products. Optimal analytical conditions have been developed to allow accurate determination of TFA content without prior fractionation of cis/trans FAME isomers by thin-layer chromatography. The methodology requires the use of a highly polar open tubular capillary column having at least 100 m length. CLA and other fatty acids from C4:0 (butyric) acid to long-chain polyunsaturated fatty acids (LC-PUFAs) could also be analyzed. Therefore, the methodology presented is versatile and could be used for both targeted analysis (e.g. determination of TFA in dairy products) and determination of the broad fatty acid profile in dairy products.  相似文献

The objective was to assess the effects of trans fatty acids and oxidised lipids, present in dietary fat by-products used in feeds, on cholesterol and oxycholesterols in meat, liver and plasma of rabbits. A palm fatty acid distillate, before and after hydrogenation (trans fatty acid trial), and a sunflower–olive oil blend (70/30, v/v), before and after use in a commercial frying process (oxidised lipid trial), were used in experimental feeds (at 3%, w/w). High trans fatty acid and oxidised lipid diets caused significantly higher cholesterol and oxycholesterol levels in all tissues of rabbit (0.01 < ? 0.05). The content of oxycholesterols in rabbit meat, liver and plasma obtained from trans fatty acid experiments varied from 9 to 34 μg/100 g, 24 to 61 μg/100 g and 60 to 138 μg/dl, respectively, from low to high levels. In the oxidised lipid experiments, content of oxycholesterols varied from 16 to 52 μg/100 g, 14 to 108 μg/100 g and 52 to 269 μg/dl in meat, liver and plasma, respectively. As a consequence, meat products from rabbits fed a diet containing higher levels of trans fatty acids or oxidised lipids may result in higher intakes of cholesterol and oxycholesterols by humans.  相似文献

This study was carried out to determine the proximate composition, fatty acid profile and biometric data for farm fish species Labeo rohita, Cirrhinus mrigala, Catla catla raised under identical conditions. The analysed fish species were found as source of high polyunsaturated fatty acids with low fat high protein. Fat content of the fish fillets was in range 2.57–3.11 g/100 g. Whereas fat content for feed was 14.90 g/100 g. The protein level for the three fish ranged from 20.00–23.57 g/100 g and in feed it was estimated in the range of 67.70 g/100 g. The palmitic acid and stearic acid were the main saturated fatty acids (SFA), oleic acid was the predominant MUFA while the docosahexanoic acid and eicopentanoic acid were the major PUFA. The percentage of DHA exceeded that of EPA in all fish species analysed. The n−3/n−6 ratio ranged from 1.69–1.91. PUFA/SFA ratio was much higher in L. rohita (1.40) due to abundance of n−3 PUFA, particularly DHA.  相似文献

Effects on the fatty acid composition of cod (Gadus morhua) and salmon fillets (Salmo salar) after pan-frying in margarine and olive oil were determined. The fatty acids of the margarine used were 55.5% saturated (SFA), 33.0% mono-unsaturated (MUFA) and 11.5% polyunsaturated (PUFA). The olive oil used contained 15.4% SFA, 76.1% MUFA and 8.5% PUFA. Using margarine or olive oil increased the SFA and MUFA percentages, respectively, in both species. For cod fillets (lean), pan-frying increased the fat content (0.55–4.15 g/100 g and 0.55–2.30 g/100 g before and after pan-frying, with margarine and olive oil, respectively), whereas, for salmon fillets (fat), it decreased (13.91 to 10.57 g/100 g and 15.35 to 12.95 g/100 g before and after pan-frying with margarine and olive oil, respectively). In conclusion, the culinary fat selection affects the total fatty acid content and composition of the prepared fish fillet.  相似文献

This paper presents the centesimal and mineral composition, fatty acid profile of the lipidic fraction, phenolic and anthocyanin contents, and antioxidant activity of Gaylussacia brasiliensis fruit. The results indicated the following composition: moisture (81.30%), lipids (0.62%), proteins (0.56%), carbohydrates (10.74%), dietary fiber (6.53%), and ash (0.25%). The main elements comprising the mineral composition were K, Mg, Ca, and Fe. The fatty acid composition was characterized by a high content of polyunsaturated fatty acids (62.2%) and a high PUFA/SFA ratio (2.92). The G. brasiliensis fruit contained considerable amounts of phenolics (492.87 mgAG/100 g) and anthocyanins (240.43 mg/100 g), which contribute to its high antioxidant activity. This study highlights the potential of this fruit as an important source of both nutritional and bioactive compounds available in the native Brazilian flora.  相似文献

Fatty acids (FA), phytosterols, tocopherols, phenolic compounds, total carotenoids and hydrophilic and lipophilic ORAC antioxidant capacities were evaluated in 16 cultivars of Sacha inchi (SI) seeds with the aim to valorise them and offer more information on the functional properties of SI seeds. A high α linolenic (α-Ln) fatty acid content was found in all cultivars (ω3, 12.8–16.0 g/100 g seed), followed by linoleic (L) fatty acid (ω6, 12.4–14.1 g/100 g seed). The ratio ω6/ω3 was within the 0.83–1.09 range. γ- and δ-tocopherols were the most important tocopherols, whereas the most representative phytosterols were β-sitosterol and stigmasterol. Contents of total phenolics, total carotenoids and hydrophilic and lipophilic antioxidant capacities ranged from 64.6 to 80 mg of gallic acid equivalent/100 g seed; from 0.07 to 0.09 mg of β-carotene equivalent/100 g of seed; from 4.3 to 7.3 and, from 1.0 to 2.8 μmol of Trolox equivalent/g of seed, respectively, among the evaluated SI cultivars. Results showed significant differences (p < 0.05) among the evaluated SI cultivars in the contents of ω3, ω6, antioxidant capacities and other evaluated phytochemicals. SI seeds should be considered as an important dietary source of health promoting phytochemicals.  相似文献

The total lipids and seasonal variations in the fatty acids of the mantle of cuttlefish (Sepia officinalis) captured in the north eastern Mediterranean were investigated and the mantle was found to be a good source of polyunsaturated fatty acids (ω3 PUFAs, in particular). In all seasons, the major fatty acids in the cuttlefish mantle were observed to be palmitic acid (16:0), stearic acid (18:0), eicosapentaenoic acid (EPA, 20:5ω3) and docosahexaenoic acid (DHA, 22:6ω3). A comparison of the saturated fatty acid (29.5–36.8%), monounsaturated fatty acids (7.81–9.84%) and polyunsaturated fatty acids (43.7–49.6%) of the cuttlefish mantle revealed that polyunsaturated fatty acids (PUFA) constituted the highest proportion. The levels of DHA in the cuttlefish mantle in autumn, winter, spring and summer were 27.6%, 28.5%, 29.5% and 23.9%, while those of EPA were 16.8%, 15.4%, 14.7% and 13.9%, respectively.  相似文献

Patagonian toothfish were captured in the Southwestern Atlantic Ocean (FAO Zone N° 41). The fatty acid profile of total lipids and the triacylglycerol and phospholipid content of control and irradiated samples (1 and 5 kGy) stored at −18 °C were analyzed at 0 and 293 days post irradiation. The fatty acids are mainly monounsaturated acids (47 g/100 g total fatty acids), the most abundant one being oleic acid (18:1 n-9). This is followed in order of abundance by saturated fatty acids (26 g/100 g total fatty acids), consisting mainly of palmitic acid (16:0). Polyunsaturated fatty acids were less abundant (17 g/100 g total fatty acids) and consisted mainly of eicosapentaeonic (20:5 n-3) and docosahexaenoic (22:6 n-3) acids. Triacylglycerol content was 563.07 mg/mL oil, whereas phospholipids were 11.21 mg/mL oil. Gamma irradiation did not significantly affect the fatty acid profile or triacylglycerol and phospholipid content of P. toothfish stored for 293 days at −18 °C. The results suggest that the species exhibits a marked stability when subjected to irradiation and prolonged storage in the frozen state.  相似文献

Chemical compositions of roes from three tuna species including skipjack (Katsuwonous pelamis) (SJK), tongol (Thunnus tonggol) (TGL) and bonito (Euthynnus affinis) (BNO) were determined. Tuna roes contained 72.17–73.03% moisture, 18.16–20.15% protein, 3.29–5.68% lipid and 1.79–2.10% ash. Non-defatted and defatted roes from all species contained protein with a molecular weight of 97 kDa as the major component. Glutamic acid and glutamine were the most abundant amino acids (12.18–12.65 g/100 g protein), while K, Na and P were the major elements in defatted-tuna roes. Crude lipids from tuna roes contained phospholipids as the major component (51.22–54.90% of total lipids) with high content of docosahexaenoic acid (C22:6 n-3) (20.53–26.19% of total lipids). Cholesterol contents of crude lipids from the roes of SJK, TGL and BNO were 172, 122 and 94 mg/100 g lipids, respectively. Therefore, tuna roe could be a promising source of valuable nutrients for human food and animal feeds.  相似文献

Eight fish species common to the Pacific Northwest coastal waters were categorised according to total lipids in a ranking from lean fish (e.g. walleye pollock) to oily fish (e.g. herring) species. Comprehensive fatty acid signatures were compared on both the relative proportion of total fatty acids and the proportion of total carcass lipid content. Generally, fish species from the Pacific coast had a relatively high proportion of n-3 highly polyunsaturated fatty acids (n-3 HUFAs), of which more than 80% was accounted for by C20:5n-3 (EPA) and C22:6n-3 (DHA), with species-specific and lower proportions of oleic acid (C18:1n-9) and palmitic acid (C16:0) also dominating. The MUFA contents of fish were lower (P < 0.05) in the lipids of lean and low-fat fish compared to those of fattier species. In contrast, higher (P < 0.05) proportions of polyunsaturated fatty acids (PUFAs) existed in the low-fat species with DHA contents ranging from 18% to 29% in the low-fat fish and from 8% to 10% in the fattier fish, such as herring and capelin. Expressing the same fatty acid content data in terms of absolute amount of fatty acids (e.g. gFA/100 g wet tissue) showed that both EPA and DHA contents in the flesh of pollock and hake were indeed many fold lower than those found in fatty fish, such as herring. The findings confirm that it is important that both the total lipid content and the fatty acid composition of these Pacific fish food sources be considered when making evaluations on the nutritional quality.  相似文献

The fatty acid composition of eggs produced by the autochthonous Styrian hen reared in two rearing systems was determined. Eggs were collected four times during the year. The fatty acid composition was determined by the in situ transesterification method and gas chromatography–flame ionisation detection (GC–FID). Eggs of the Styrian hen from free range contained significantly more α-linolenic, eicosapentaenoic (EPA), docosapentaenoic (DPA) and docosahexaenoic acid (DHA), as well as more total n−3 fatty acids. On the other hand, eggs from caged hens contained significantly more linoleic, arachidonic, as well as total polyunsaturated fatty acids (PUFA) and n−6 PUFA. The n−6/n−3 ratio was better from the nutritional point of view in eggs from free range. The fatty acid content is expressed in wt.%, as well as mg/100 g of yolk and mg/100 g of fresh egg, to better understand how much each of fatty acid is consumed with an edible portion.  相似文献

Twenty male llama of the Kh'ara genotype, reared extensively in the north of Chile, were slaughtered at ages between 2 and 4 permanent teeth (2 to 3.5 years) and analyses were carried out on the Longissimus lumborum muscle, including composition (moisture, fat, protein, ash, cholesterol, amino acids, fatty acid profile and collagen content) and meat quality parameters (pH, color, water holding capacity and Warner–Bratzler shear-force). Llama meat was characterized by a low cholesterol (39.04 mg/100 g) and intramuscular fat (1.56%) content, a total collagen content of 6.28 mg/g, of which 20.28% was soluble collagen. Amino acid composition and fatty acid profile were similar to those found for beef finished on forage. Llama meat showed a low n − 6/n − 3 (4.69) and hypocholesterolemic/hypercholesterolemic (1.55) ratio and acceptable values of DFA (65.78%). Quality parameters in llama Longissimus muscle were within the ranges reported for more traditional meats such as beef and lamb.  相似文献

The present study investigates the antimicrobial activity of various solvent extracts of Eruca sativa (aerial and root) and seed oil against-antibiotic resistant Gram-negative (Escherichia coli, Pseudomoms aeruginosa and Shigella flexneri) and Gram-positive (Staphylococcus aureus and Bacillus subtilis) bacteria. Among the various preparations, seed oil was the most active, exhibiting a maximum zone inhibition of 97% for Gram-positive bacteria and of 74–97% for Gram-negative bacteria. The MIC of the seed oil was found to be 65–75 and 60–70 μg/ml for Gram-negative and Gram-positive bacteria, respectively. Analytical investigation on main volatile and non-volatile components was performed on seed oil. Among the formers allyl isothiocyanate (40 μg/g), 3-butenyl isothiocyanate (260 μg/g), 4-methylsulfinybutyl isothiocyanate (sulforaphane 743 μg/g), 2-phenylethyl isothiocyanate (159 μg/g) and bis(isothiocyanatobutyl)disulphide (∼5000 μg/g) were determined by head space/SPME/GC–MS analysis. Free fatty acids were 1.6% w/w of the oil and overall 25 fatty acids were identified. Erucic and oleic acids were the main fatty acids both in the free (7.8 and 2.1 mg/ml) and esterified forms (50.6% w/w and 14.9% w/w of total fatty acids). Samples of M. longissimus were collected from a total of 203 feral roe deer (n = 118) and wild boar (n = 85) in two regions of Mecklenburg-Western Pomerania (Germany). The muscle lipid saturated fatty acid proportions of roe deer and wild boar ranged between 33 and 49 g/100 g total fatty acids and 31 and 35 g/100 g total fatty acids, respectively. The total n − 3 PUFA proportions in roe deer muscle varied between 8.0 and 14 g/100 g fatty acids, and in wild boar muscle between 2.6 and 6.0 g/100 g fatty acids. The major vitamin E homologue, α-tocopherol, was determined to be between 5.8 and 13.1 mg/kg in roe deer muscles. Lower levels between 1.2 and 4.7 mg/kg were measured in wild boar muscles. The iron and zinc concentrations in roe deer and wild boar muscle ranged from 26.3 to 33.9 mg/kg and from 17.0 to 21.7 mg/kg, and from 13.6 to 39.3 mg/kg and 18.1 to 31.9 mg/kg, respectively.  相似文献
