Reverse osmosis process for the concentration of black currant juice was carried using AFC-99 tubular membrane at 30 °C and 45 bar. The contents of selected flavonols and anthocyanins were analyzed after centrifugation; enzyme treatment by Panzym Super E and by Rohapect berry followed by centrifugation; and ultrafiltration black currant juices and juice concentrates. The total soluble solid (TSS) content of the juices increased from the initial 17.6–17.9 °Brix to 24–24.8 °Brix in the case of the centrifuged juice in the concentration process. Similarly, it increased from 14.5–15.5 °Brix to 23.1–23.4 °Brix for the Panzym Super E treated juice, and from 16.1–16.9 °Brix to 22.5–23.1 °Brix for the Rohapect berry treated black currant juices. The ultrafiltered juice had the lowest initial TSS content between 14.1 and 14.9 °Brix and it increased to 22.1–23.1 °Brix. The average permeate fluxes during the concentration process were 7.3 L m−2 h−1 for the centrifuged juice, 11.9 L m−2 h−1 for the Panzym Super E treated juice, 9.2 and 13.1 L m−2 h−1 for the Rohapect berry treated and ultrafiltered juice, respectively. Analysis indicated that the enzymatic treatment resulted in the increase of anthocyanin and flavonol content of the juices. The centrifugation process decreased the amount of anthocyanins and flavonols to some extent. The juice clarified by ultrafiltration had significantly lower concentrations of anthocyanins and flavonols, while the juices treated by Panzym Super E had the highest levels of these flavonoids. This study recommends enzymatic pre-treatment by Panzym Super E, since it improves the permeate flux in reverse osmosis during the concentration process, and results in a juice concentrates highest in anthocyanins and flavonols.  相似文献

Fruit juices (apple, grape, orange, grapefruit, tangerine and lemon) and nectars (apricot, peach and pineapple) were coloured with black carrot juice concentrate and stability of black carrot anthocyanins in these matrices was studied during heating at 70–90 °C and storage at 4–37 °C. Anthocyanin degradation, in all coloured juices and nectars, followed first-order reaction kinetics. During heating, black carrot anthocyanins in apple and grape juices showed higher stability than those in citrus juices at 70 and 80 °C. High stability was also obtained for the anthocyanins in peach and apricot nectars at these temperatures. Black carrot anthocyanins were the least stable in orange juice during both heating and storage. During storage, degradation of anthocyanins was very fast at 37 °C, especially in pineapple nectar. Refrigerated storage (4 °C) markedly increased the stability in all samples. Activation energies for the degradation of black carrot anthocyanins in coloured juices and nectars ranged from 42.1 to 75.8 kJ mol−1 at 70–90 °C and 65.9–94.7 kJ mol−1 at 4–37 °C.  相似文献

The effect of temperature and concentration on rheological behaviour of freeze dried soursop juice concentrates were investigated using a rheometer over a wide range of temperatures (10–70 °C) and concentrations (10–50 °Brix) at shear rates of 0–400 1/s. The Power law is the best fitted model to the rheological data due to the high value of coefficient of determination (R2 = 0.9989). The soursop juice concentrates exhibited shear thinning or pseudoplastic behaviour with n < 1. The consistency coefficients dependency on temperature and concentration were well described by Arrhenius relationship and exponential relationship respectively. The flow activation energy of soursop juice concentrates were 8.32–30.48 kJ/mol. The superposition technique with Power law model sufficiently modelled the overall rheological characteristics of soursop juice concentrates into a single master curve using shift factors based on double shifting steps with R2 = 0.9184. This technique also showed that the soursop juice concentrates increases in viscosity and pseudoplasticity behaviour with concentration.  相似文献

The effect of different Pulsed Electric Fields (PEF) intensities (25 kV/cm and 280 μs, P1; and 25 kV/cm and 330 μs, P2) and conventional HTST treatment (98 °C, 21 s, T) on quality characteristics (pH, °Brix, total acidity, turbidity, hydroxymethylfurfural (HMF), color, microbial flora, pectinmethylesterase (PME) activity, and sensory analysis) of blended orange and carrot juice were investigated. HMF, L* (luminosity) and C* (saturation or chrome) color parameters did not vary with any of the treatments. Total acidity and turbidity were slightly higher after HTST treatment. Sensory characteristics of the PEF-treated juice were more similar to the untreated juice than the HTST-pasteurized juice. Nevertheless, heat pasteurization (98 °C, 21 s) was more efficient in inactivating microbial flora and PME and preventing the growth of microbial flora and reactivation of PME at 2 and 12 °C for 10 weeks. However, the shelf-life of the PEF-treated juice was established as 4 weeks at 2 °C. This appears to be a reasonable shelf-life for this type of foodstuff.  相似文献

The osmotic membrane distillation process was applied in dehydration of red grape juice (Most de Raïm Concentrat Negre) of different concentrations (5–20 °Brix). Experiments were performed using polytetrafluoroethylene (PTFE) hydrophobic membranes of different nominal pore diameter. Red grape juice solution and concentrated calcium chloride solution (50 wt.%) were used as feed and stripping solutions, respectively. The permeate flux, the initial and the final juice concentration, the total phenolic content (TPC) and the antioxidant activity (TEAC) were measured for each single experiment.  相似文献

Osmotic evaporation (or osmotic distillation) was carried out on roselle extract, apple and grape juices. The industrial pilot plant used had a hydrophobic, polypropylene, hollow-fiber membrane with an area of 10.2 m2 and an average pore diameter of 0.2 μm. It was suitable for concentrating vegetable extracts and fruit juices, and controlled various parameters such as temperature, flow velocity, and brine concentration. The final total soluble solids (TSS) contents achieved were 660, 570, and 610 g kg−1 for grape juice, apple juice, and roselle extract, respectively. Temperature and concentration of solutions significantly influenced evaporation flux, which, for roselle extract, was 1.5 kg h−1 m−2 at 610 g TSS kg−1 and 45 °C. The physico-chemical, biochemical, and aromatic qualities of concentrates obtained by osmotic evaporation were much higher than those of thermal concentrates, and close to those of the initial products.

Industrial relevance

Membrane processes are increasingly used to concentrate thermo-sensitive fruit juices and plant extracts. Their capacity to operate at moderate temperatures and pressures means that their energy consumption is low, while they produce good quality concentrates. Nonetheless, the main disadvantage of baromembrane processes is their inability to reach the concentration levels standard for products of thermal evaporation because of limitations resulting from high osmotic pressure. Actually, reverse osmosis membranes and equipment limit the final concentration of fruit juices to about 25–35°Brix. Osmotic evaporation has attracted considerable interest, as it can concentrate juices to as much as 65°Brix. This process, when applied to various juices, better preserves the quality of raw materials. However, because of the geometrical limitations of commercially available membranes and modules, juices must first be clarified. To our knowledge, only a few studies on osmotic evaporation have so far been conducted at a semi-industrial scale and never with roselle extracts.  相似文献

The kinetics of changes in total antioxidant activity as assessed by DPPH radical and brown pigment formation (BPF) in honey heated at different temperatures (50, 60 and 70 °C) for up to 12 days were studied. Antioxidant activity and BPF increased with treatment temperature and time. BPF increased following zero-order kinetics with the activation energy value of 122 kJ/mol−1 at 50–70 °C. However, antioxidant activity variation showed different trends according to heating temperatures following second-order, first-order and zero-order kinetics at 50, 60 and 70 °C, respectively. Heating of honey at 70 °C was found to be more effective than 50 and 60 °C for both two parameters. The results demonstrated that antioxidant activity was correlated with increased browning of the samples.  相似文献

This study was carried out to evaluate the effect of heating and physical conditions of grape seeds on the antioxidant activity of their extracts. Two forms of grape seeds, whole and powdered forms, were heated at four different temperatures −50, 100, 150 and 200 °C. After heating, grape seeds were extracted with 70% ethanol (0.1 g grape seed/10 mL of 70% ethanol), and total phenol contents (TPC), radical scavenging activity (RSA) and reducing power of the extracts were determined. Thermal treatment of grape seed increased the antioxidant activity of extracts. The maximum TPC and RSA of whole grape seed extract (WGSE) were achieved when the seeds were heat-treated at 150 °C for 40 min, while that of powdered grape seed extract (PGSE) were at 100 °C for 10 min, and were greater than that of the non-treated control. Also, the reducing powers of WGSE and PGSE slightly increased at the conditions. According to the GC-MS analysis, several low-molecular-weight phenolic compounds such as azelaic acid, 3,4-dihydroxy benzoic acid, and o-cinnamic acid were newly formed in the WGSE heated at 150 °C for 40 min. There were slight differences in the kinds of phenolic compounds between non-heated and heated GSE. In HPLC analysis, the contents of gallocatechin gallate and caffeine in GSE significantly increased by heat treatment. These results indicated that antioxidant activity of GSE was affected by heating conditions (temperature and time) and physical conditions of grape seeds at the time of heat treatments.  相似文献

Anthocyanin stability of black carrots was studied at various solid contents (11, 30, 45 and 64° Brix) and pHs (4.3 and 6.0) during both heating, at 70–90 °C, and storage at 4–37 °C. Monomeric anthocyanin degradation fitted a first-order reaction model. Degradation of monomeric anthocyanins increased with increasing solid content during heating, while it decreased during storage. For example, at pH 4.3, half-life periods for anthocyanins at 30, 45 and 64° Brix were, respectively, 8.4, 6.9 and 5.2 h during heating at 80 °C and 18.7, 30.8 and 35.9 weeks during storage at 20 °C. At 30–64° Brix, increasing pH from 4.3 to 6.0 enhanced the degradation of anthocyanins during heating. The effect of pH on thermal stability of anthocyanins was also studied at six different pHs (2.5–7.0) in citrate-phosphate buffer solutions and significant decrease in anthocyanin stability was observed at pHs above 5.0. Higher activation energies (Ea) were obtained during heating than during storage with increasing solid contents. At 30–64° Brix, Ea values ranged from 68.8 to 95.1 kJ mol−1 during heating and from 62.1 to 86.2 kJ mol−1 during storage. Q10 values at 20–37 °C were as high as 3.1 at 45° Brix and 3.6 at 64° Brix.  相似文献

A theoretical and experimental study for the drying kinetics of Ataulfo mango slices was carried out. In the study different thicknesses, air drying temperature, maturity degree and non-isotropic mass diffusion were considerate. The 2D temperature and moisture distributions inside the slice were predicted by using a theoretical model. The water effective diffusion coefficient, the convective heat and mass transfer coefficients, the drying curves and the center temperature were getting by the experimental model. A parametric study was carried out in the ranging of air drying temperatures from 50 to 70 °C, slices with thickness of 2–5 mm and maturity degree from 13.2 to 22°Brix. It was found from the experimental results that slices of Ataulfo mango present an isotropic behavior with an uncertainty of 2.47%. The drying rate reduces in 4.5% as 1 mm thickness increase, and decreases in 8.0% for each 1°Brix increased.  相似文献

As furfural (F) and 5-hydroxymethylfurfural (HMF) are essentially formed from sugar dehydration, especially in food submitted to heat, they can be found in beverages, as well as fortified sweet wines. In order to assess the impact of temperature on Madeira winemaking, three traditional varieties of Madeira wines (Malvasia, Sercial and Tinta Negra Mole) were studied to evaluate the F and HMF contents. The wines were produced by two vinification processes, following traditional and modern methodologies, heated at standard conditions (30 °C and 45 °C, for 4 months) and compared with the same wines submitted to overheating conditions (55 °C, for 4 months). The RP-HPLC-DAD methodology used for the control of F and HMF during the process showed no significant changes in the wines maintained at 30 °C (canteiro) and a noticeable but controlled increase in the wines heated at 45 °C (estufagem) where values up to about 150 mg/L of HMF could be found in sweet wines. The strong relation of this compound with the sugar content and baking temperature stood out in the wines submitted to overheating conditions where values higher than 1 g/L could be found for sweeter wines, with HMF level being in general higher than F.The results clearly suggest that the amount of HMF in these fortified wines can be easily controlled when submitted to adequate conditions of heating during estufagem and storage. Furthermore, different temperatures for the baking of sweet and dry wines may be considered.  相似文献

Lane Late orange juice with extended shelf life (3 months at 3 °C) was obtained by high pressure homogenization (HPH) at 150 MPa at 68 °C for 15 s. Residual pectinmethylesterase (PME) inactivation level achieved was 75% but its cloudiness was maintained during storage and its acceptability undistinguishable from that of fresh juice during the assayed period. Juices with entire and reduced (50% and 25%) pulp contents were also homogenized at 150 MPa at different temperatures (63 °C and 58 °C for 15 s) to establish an appropriate shelf life of orange juices according to a desired level of cloudiness. Results showed how cloud stability of pulp reduced samples, even with a residual PME inactivation level above 90%, was not satisfactory (as in the case of entire juices homogenized out of 68 °C). The proposed methodology can easily be implanted by citrus industry to obtain high quality chilled orange juices with prolonged shelf life.  相似文献

Reduction of acrylamide formation in potato chips was investigated in relation to frying temperature and three treatments before frying. Potato slices (Tivoli variety, diameter: 37 mm, width: 2.2 mm) were fried at 150°C, 170°C and 190°C until reaching moisture contents of ∼1.7 g water/100 g (total basis). Prior to frying, potato slices were treated in one of the following ways: (i) soaked in distilled water for 0 min (control), 40 min and 90 min; (ii) blanched in hot water at six different time-temperature combinations (50°C for 30 and 70 min; 70°C for 8 and 40 min; 90°C for 2 and 9 min); (iii) immersed in citric acid solutions of different concentrations (10 and 20 g/l) for half an hour. Glucose and asparagine concentration was determined in potato slices before frying, whereas acrylamide content was determined in the resultant fried potato chips. Glucose content decreased in ∼32% in potato slices soaked 90 min in distilled water. Soaked slices showed on average a reduction of acrylamide formation of 27%, 38% and 20% at 150°C, 170°C and 190°C, respectively, when they were compared against the control. Blanching reduced on average 76% and 68% of the glucose and asparagine content compared to the control. Potato slices blanched at 50°C for 70 min surprisingly had a very low acrylamide content (28 μm/kg) even when they were fried at 190°C. Potato immersion in citric acid solutions of 10 and 20 g/l reduced acrylamide formation by almost 70% for slices fried at 150°C. For the three pre-treatments studied, acrylamide formation increased dramatically as the frying temperature increased from 150°C to 190°C.  相似文献

Heat resistance of Neosartorya fischeri was studied in three different juices (apple, pineapple and papaya). The optimum heat activation temperature and time for the ascospores of the N. fischeri (growth for 30 days at 30 °C) was 85 °C for 10 min. Of the three juices tested, apple juice exhibited maximum 1/k values at 80, 85 and 90 °C (208.3, 30.1 and 2.0 min, respectively). The 1/k values for papaya juice (129.9, 19.0 and 1.9 min) and pineapple juice (73.5, 13.2 and 1.5 min) decreased with acidity and °Brix/acidity (ratio) level. The Z* values for apple, papaya and pineapple juices were 5, 5.5 and 5.9 °C, respectively. The sterilization F values (4-log reduction) for apple, pineapple and papaya juices were 56.3, 38.0 and 7.2 s, respectively. Considering the thermal treatments commercially applied to pineapple (96 °C/30 s) and apple juices (95 °C/30 s), it is concluded that such treatments will not guarantee that less than 1 ascospore in each set of 103 packs survive. Only the treatment applied to papaya juice (100 °C/30 s) will be sufficient because the F value is less than 30 s.  相似文献

The influence of the type of sugar and baking temperature on sugar degradation, hydroxymethylfurfural (HMF) formation and browning was studied in model cookies. The baking process was characterised by the temperature in the cookie and the water content and activity. A reference browning was selected to compare the differently processed cookies. The accumulation of HMF was modelled at three temperatures for three formulas (sucrose (S-CK), glucose (G-CK) or fructose (F-CK)). HMF started to accumulate at aw between 0.5 and 0.7 depending on the temperature and followed a first order kinetic, highly dependent on the baking temperature and type of sugar. Cookies baked at 200 °C accumulated 10–100 times less HMF than those baked at higher temperatures. Below 250 °C, S-CK produced less HMF than G- or F-CK, but the inverse was observed at 300 °C.  相似文献

Chamber drying under controlled temperature and humidity conditions of the red grape varieties Merlot and Tempranillo grown in Andalusia (Spain), and the fortification and maceration of the musts in the presence of skin from both types of grapes, to obtain sweet red wines, has been studied. Changes in colour and in monomeric and polymeric phenols during the vinification process were examined. Chamber drying increased the sugar content to about 31.4 °Brix within 48 h in Merlot grapes and 72 h in Tempranillo grapes. This drying process also causes skin rupture, facilitating the access of phenolic compounds to the pulp. The resulting musts exhibited slight browning and increased red hues, due to a high concentration of anthocyanins; maceration in the presence of grape skins for 24 h provided the best results. The end-product contained highly acceptable tannin, colour and phenolic compounds for marketing as a high quality sweet red wine, in comparison with other commercial sweet red wines.  相似文献

This work evaluates both the effects of a multiple-pass high-pressure homogenization treatment on the microbial inactivation of selected microbial strains (Saccharomyces cerevisiae, Lactobacillus delbrueckii, Escherichia coli) inoculated into commercial fruit juices (orange, red orange, pineapple) as well as the application of this non-thermal technology to the pasteurization of fresh juices (Annurca apple juice). The pressure level ranged from 50 to 250 MPa, the number of passes from 1 to 5 and the inlet temperature from 2 to 20 °C.Preliminary tests in distilled water showed that the efficiency of the multiple-pass treatment significantly depends on both the homogenizing pressure as well as the microbial species. The subsequent extension of the multiple-pass treatment to the inactivation of S. cerevisiae inoculated into three different fruit juices (orange, red-orange and pineapple juice) highlighted that the inactivation induced by the high pressure treatment did not depend on the properties of the tested juices and was not statistically different from inactivation in water (p value < 0.05). These findings were supported by the comparison of two different mathematical models used to fit the inactivation kinetics, whose fitting parameters were not significantly different for water and the fruit juices for any pressure level applied.Three homogenization passes at 150 MPa and 25 °C, which resulted to be optimal for yeast inactivation in fruit juices, were effective for the stabilization of the endogenous microbial load of fresh Annurca apple juice. The treated apple juice showed a minimum shelf-life of 28 days under refrigerated conditions, during which the natural qualities of the fresh juice were completely preserved.  相似文献

The quality of Australian honey samples (processed and unprocessed) was assessed using HPLC techniques. 5-Hydroxymethylfurfuraldehyde (HMF) was used as the main quality indicator. Sampling included four commercially-processed honeys (Australian rainforest, Beechworth, Homebrand and Leabrook) and three unprocessed (Banksia, Grey box and Mallee). All honey samples, except Leabrook and Beechworth, showed an initial HMF content less than the Codex Alimentarius and International Honey Commission standard (40 mg/kg). HMF contents in Leabrook and Beechworth were 50.8 ± 1.34 and 74.9 ± 2.34 mg/kg, respectively. Heating unprocessed honey at 85 °C for 2 min caused significant (? 0.05) increment in HMF contents. The amounts of HMF in Mallee samples increased from 34.0 ± 0.31 to 42.3 ± 0.37 mg/kg after 2 min at 85 °C. All honey samples showed amylase activity above the minimum limit (8 Gothes). The physiochemical properties of honey showed significant variations among samples. The results revealed also that heating was not the only factor influencing HMF formation in honey, but also honey composition, pH value and floral source can contribute to these variations. Consequently, the amount of HMF may be an insufficient sole indicator of honey quality.  相似文献

Honey producers have been heating honeys at mild temperatures below 100 °C chiefly in order to prevent post-bottling crystallization. In this study, we aimed to determine the effects of thermal treatment on the HMF content of honeydew and floral honey during the isothermal heating process at mild temperatures. Water content, formol number, total acidity, pH value and minerals were also determined in both honey types as their characteristics differ with composition, which is able to affect the rate of HMF formation. Potassium content and pH value were found as the distinguishing properties and both were greater in honeydew honey than in floral honey (p<0.01). Honeydew and floral honey samples were heated at 75, 90 and 100 °C for 15-90 min and analysed for HMF content by HPLC-RP. The Arrhenius model was used to calculate reaction rate constants and activation energies which were found to be different for each of the honey types. Heating at 90 °C for up to 90 min in floral honeys and up to 75 min in honeydew honeys did not cause a significant increase of HMF and not exceed the threshold level of 40 mg kg−1. Our results show that the excessive HMF content might be related to primitive storage conditions rather than overheating.  相似文献

The possible mechanism of water transport from feed to osmotic agent side during forward osmosis in situation when feed contains high or low molecular weight compounds and their combination has been presented. The orientation of membrane was found to influence the transmembrane flux. When the feed contains mixture of low and high molecular weight compounds mode I (feed towards the support layer) was found to result in lower flux values as compared to Mode II (feed towards active layer) due to significant external concentration polarization. Forward osmosis resulted in the concentration of betalains content in beetroot juice and anthocyanin content in grape juice from 50.92 mg/L to 2.91 g/L (57.1 fold) and from 104.85 mg/L to 715.6 mg/L (6.8 fold), respectively. Total soluble solids in case of beetroot, grape and pineapple juice were found to increase from 2.3 to 52 °Brix, from 8.0 to 54.6 °Brix from 4.4 to 54 °Brix, respectively.  相似文献
