Montepulciano is one of the most famous and important red-berried grapes of Italy. This article presents and discusses a comparative study of aroma profile and phenolic content of the Montepulciano wine from the Marches and the Abruzzo regions. The volatile composition of wines was determined by using headspace solid phase microextraction (HS-SPME) coupled with gas chromatography-mass spectrometry (GC-MS). The PDMS fibre was chosen. The dominating esters in Montepulciano wines were ethyl hexanoate, ethyl decanoate, and ethyl octanoate, whereas phenyl ethanol and 3-methyl-1-butanol were dominating alcohols.Phenolic compounds, namely gallic acid, p-coumaric acid, trans-ferulic acid, caffeic acid, trans-resveratrol, (+)-catechin and (−)-epicatechin, were examined using HPLC-MS with direct injection of wine samples. The total phenolic content of the analysed wines was in the range of 30.4-61.9 mg l−1. The presence of high amounts of esters seems to characterise the volatiles of Montepulciano wines from the Marches, whereas a high level of alcohols was found in Montepulciano wines from Abruzzo. Moreover, multivariate chemometric techniques, such as cluster analysis and principal component analysis, supported this thesis. Headspace solid phase microextraction and gas chromatography-mass spectrometry were used to analyse 20 commercial wine samples (Montepulciano monovarietal red wines) from the Marches (10 samples) and Abruzzo (10 samples).  相似文献

Concentrations of trans-resveratrol, catechin and epicatechin were analyzed in musts and wines produced from seven red and four white grape cultivars from various wine growing regions of Turkey. Phenolics were quantified using an HPLC method optimized for the separation of wine phenolics. Wine samples contained higher phenolics levels than the corresponding musts. With the exception of Semillion, white wines and musts contained lower concentrations of phenolics than red wines and musts. However, the white cultivar Semillion had the highest concentrations of catechin and epicatechin among all wine and must samples. Semillion wine catechin and epicatechin were 13.7 and 11.8 mg/L, respectively. The highest level of trans-resveratrol among the white cultivars was found in Narince wine (1.93 mg/L). Within the red wine and must cultivars, Bo?azkere, Öküzgozü, and Cabernet contained the highest concentrations of flavan-3-ols and trans-resveratrol. Catechin was the major phenolic in all wines and most musts. Epicatechin was the major phenolic in 6 of the 11 must samples, but none of the wine samples. trans-Resveratrol was generally found in lowest concentrations in both wines and musts.  相似文献

The effects of pectolytic enzyme addition and mash heating prior to fermentation on the phenolic component of Okuzgozu red wine during the winemaking and ageing processes were investigated. In general, the highest concentration of total phenolics was found in the mash-heated wines, whereas the total flavan-3-ol and total anthocyanin contents in all of the wines, decreased notably during the winemaking and ageing processes. As determined by HPLC, hydroxycinnamic acids were the major phenolic acids in the red wines. After 6 months in the bottle, the enzyme-treated wines had lower phenolic acid concentrations than had the control and mash-heated wines, but no significant (p < 0.05) differences were found in the concentration of total phenolic acids between the control and mash-heated wines. All of the phenolic acid levels decreased with the winemaking and ageing processes whereas only gallic acid increased. The wines treated by the pectolytic enzyme addition had a lower monomeric flavan-3-ol content than had the other wines, and the amount of monomeric anthocyanins extracted did not increase with the addition of enzymes.  相似文献

Polyphenol content, antioxidant activity, reducing power, colour and changes during storage over nine months in bottles and after accelerated browning were studied in selected Hellenic varietal white wines. The following phenolic compounds were identified in the wines: Caftaric, coutaric, fertaric, ferulic, caffeic, p-coumaric and gallic acids, (+)-catechin and (−)-epicatechin. The results showed that the contents of most of the phenols diminished with time, with the exception of caffeic, ferulic and p-coumaric acids. Antioxidant activity increased with storage whereas reducing power remained significantly unaffected. Accelerated browning did not significantly alter the concentrations of tartaric acid esters but it increased the concentrations of the hydroxycinnamic and gallic acids. (+)-Catechin concentration was not affected while (−)-epicatechin decreased. Antioxidant activity did not show any significant change but reducing power was reduced after the end of the browning test. As for the absorbance at 420 nm, it remained unchanged during storage, but it was significantly increased after accelerated browning.  相似文献

In this paper, the influence of winemaking techniques and cultivars on the resveratrol content, total phenolic content and antioxidant potential of red wines was studied. Wines were made from the cultivars Merlot, Cabernet Sauvignon, Pinot Noir and Prokupac. Applied winemaking technologies included thermovinification and separation of must from pomace. The analysis of trans- and cis-resveratrol in wines was performed by HPLC, while the total phenolic content and antioxidant potential was determined by spectrophotometric methods. The total resveratrol content in analysed samples ranged from 0.35 to 4.85 mg/l; Merlot wines had the highest average resveratrol content, while the lowest was found for native cultivar Prokupac. Although the resveratrol content depended on grape variety, correlation between the winemaking technology applied and the resveratrol level in wines was not observed. The total phenolic content (TPC) varied from 544.4 to 1410.4 mg/l expressed as gallic acid equivalents, and the antioxidant potential, assayed by DPPH in terms of SC50 (mean scavenging concentration), ranged from 0.58 to 2.91 μl/ml. Obtained results showed that thermovinificated wine samples had higher amount of phenolic compounds. Significant negative correlation was observed (p < 0.05) between the total phenolic content and SC50, but there was no significant correlation (p > 0.05) between the resveratrol content and SC50 or TPC. This study could contribute to the establishment of optimal conditions for producing red wines which contain more beneficial phenolic compounds.  相似文献

The application of high hydrostatic pressure (HHP) in winemaking for substitution of the use of sulphur dioxide is still at a very early stage of development, since knowledge about the effect on physicochemical and sensorial characteristics of the wine during storage is very scarce. In this work, the evolution of colour, antioxidant activity and total phenolic compounds of SO2-free red wines treated by HHP and aged in bottles was followed for 12 months. The pressurised wines were compared with wine samples prepared with addition of 40 ppm of SO2 and without any of these two treatments. After 12 months, the pressurised wines presented higher values of CIELab parameters (a, b, and L) and a lower monomeric anthocyanin content (45–61%) when compared to the unpressurised ones. The pressurised wines showed also a better global sensorial assessment, with the pressure treatments imparting aged-like characteristics to the wines. The wine deposits of pressurised wines had higher total phenolic content, namely proanthocyanidins (3- to 10-fold). The results demonstrate that HHP can influence long term red wine physicochemical and sensorial characteristics, hypothesised to be due to an increase of condensation reactions of phenolic compounds, forming compounds with higher degree of polymerisation that became insoluble in wine along storage.  相似文献

The phenolic compounds content and antioxidant activity of pomace from the vinification of grape varieties widely produced in Brazil (Cabernet Sauvignon, Merlot, Bordeaux and Isabel) were investigated with a view to their exploitation as a potential source of natural antioxidants. Cabernet Sauvignon grape pomace was found to have the highest content of total phenolic compounds (74.75 mg gallic acid equivalent (GAE)/g), the highest antioxidant activity (determined using the 2,2′-azino-bis(3-ethylbenzothiazoline-6-sulfonate) (ABTS) and 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical scavenging methods; 485.42 and 505.52 μMol Trolox equivalent antioxidant capacity (TEAC)/g, respectively), and the highest reducing power (determined using the FRAP method; 249.46 μMol TEAC/g). The Bordeaux variety showed the highest oxidation inhibition power (41.13%), determined using the β-carotene/linoleic acid method and the highest content of total anthocyanins (HPLC; 29.17 mg/g). Catechin was the most abundant non-anthocyanic compound identified in the grape pomace (150.16 mg/100 g) for all varieties. In this study, pomaces of the red wine vinification of Cabernet Sauvignon and Bordeaux varieties showed the highest potential as a source of antioxidant compounds and natural colourants, respectively.  相似文献

Anthocyanins in aged Cabernet Sauvignon red wines were studied by HPLC–MS. The major anthocyanin in 6, 7, and 8 year old red wine extracts was the dimer vitisin A produced by condensation of malvidin-3-O-glucoside mediated by pyruvic acid. In aged wine, the content of malvidin-3-O-glucoside decreased with age with a concomitant increase of vitisin A. The latter is accompanied by several condensation products with molecular weight up to 1500 m/z. Differential pulse voltammetry indicated that aged wines have lower antioxidant capacity than young wine (400 mV), but higher than malvidin-3-O-glucoside (483 mV). Tafel’s plots showed that the electrochemical process occurring in aged wines is different from young wines. Six, seven and eight year old wines show similar behaviour with plots of 234, 177 and 188 mV/dec, respectively. These values are higher than the expected 120 mV/dec corresponding to a first electronic transfer but smaller compared to the 523 mV/dec corresponding to young wine.  相似文献

Mid-infrared spectroscopy combined with appropriate software was used in an attempt to differentiate Greek red wines of different varietals origin, including the cultivars Agiorgitiko (Nemea-Peloponnesus), Xinomavro (Naousa-Central Macedonia) and Merlot from Greece. Extract of wine phenolic components were investigated by attenuated total reflectance Fourier transform infrared (ATR-FTIR) spectroscopy. The wine extracts were obtained by solid-phase extraction with C-18 columns and elution by methanol containing 0.01% hydrochloric acid. Libraries of spectra were created using sample from each wine variety. Spectra of unknown wine extracts were recorded and compared with those of the wine libraries and the rate of affinity (the match value) was measured automatically using the appropriate software (OMNIC ver. 7.3). The spectral region 1800–900 cm−1 was used to ‘fingerprint’ wine on the basis of grape variety. This simple and fast method of analysis showed that wines from different grape varieties can be differentiated between them.  相似文献

The Brachetto variety is the most important aromatic red grape used for the production of sweet sparkling wines in Italy. The phenolic composition and chromatic characteristics were studied in base and red sweet sparkling wines made from this variety. The present work represents the first study on sparkling wines manufactured with Brachetto grapes. The amount of pigments extracted in the base wine was low as a consequence of the necessity for short maceration time (48 h) and low alcohol content (< 3.5% v/v). The second fermentation (prise de mousse) caused a pigment content decrease, accompanied by both a color intensity decrease and a tonality increase. In terms of phenolic compounds and chromatic characteristics, lightly sparkling wines (final bottle pressure < 1.7 bar) agreed with fully sparkling wines (final bottle pressure > 3.0 bar) at the end of the second fermentation and, therefore, the chromatic quality was independent on the winemaking methodology used, excepting for lightness and color intensity.Response surface methodology was applied to predict the effect of two independent variables, namely time and temperature of storing, on the phenolic composition and chromatic properties in both lightly and fully sparkling wines. So, it is possible to evaluate the development of two types of sweet sparkling wines during their ageing in bottle and their commercial shelf-life. A central composite design (CCD) and response surface methodology (RSM) were used for this purpose. Quantitative changes were observed in the color parameters. Although the time variable strongly influenced them, the two sparkling wines were stable enough only at low temperatures after 12 months of ageing. During the wine ageing in bottle, an increase in the formation of polymeric red pigments can be suggested taking into account the losses observed in monomeric anthocyanins. The results obtained showed that the color of fully sparkling wines was more stable than that of lightly ones and, therefore, the shelf-life of the former ones could be longer.  相似文献

The influence of co-winemaking technique on the phenolic profiles, color and antioxidant capacity of wines made from red grape varieties cultivated in La Mancha region (Spain) was investigated. Co-winemaking red wines were obtained by pre-fermentative blend of grapes (1:1, w/w) from the predominant Cencibel (Tempranillo) variety in this region and the minor varieties Bobal, Moravia Agria, Moravia Dulce, Tortosí and Rojal, together with a three varieties blend (1:1:1, w/w/w) of Cencibel, Bobal and Moravia Agria grapes. The phenolic profiles obtained in co-winemaking wines showed more quantity of different compounds than single-variety wine of Cencibel used as reference. The best results were obtained using Bobal, Moravia Agria and Moravia Dulce varieties for co-winemaking, especially an improvement of color characteristics. All co-winemaking wines significantly increased the total resveratrol content as compared to the Cencibel reference wine, although cis-isomers largely predominated in all wines. Moravia Agria and Rojal varieties produced co-winemaking wines with decreased antioxidant capacity, whereas Bobal and Moravia Dulce varieties increased it, even when the co-winemaking wine from Moravia Dulce contained less total polyphenols than Cencibel reference wine. Co-winemaking technique can be suggested as a way to widen the offer of wines to consumers, incorporating characteristic properties of minor grape varieties. In addition, this enological technique has the benefit of avoiding the disappearance of native species, thus improving the biodiversity of La Mancha region.  相似文献

Different dehydrated waste grape skins from the juice industry were added into aged and young red wines as an innovative way of compensating for colour loss before bottling. After addition of grape skins, colour intensity of wines increased a mean 11% and a maximum of 31% with predominance of the red component. Total polyphenols mean increase was 10% with a maximum value of 20%. Analysis of low molecular weight phenolic compounds by HPLC–DAD showed a significant (p < 0.05) content increase of the bioactive compounds gallic acid, (+)-catechin, (−)-epicatechin, and (E)-resveratrol. Anthocyanins content also increased at an average of 50 mg/l. The volatile profile of wines analysed by SBSE–GC–MS was only moderately influenced by the treatments. Mixtures of dehydrated waste grape skins were useful to improve the colour and polyphenol profile of red wines, considering them a useful tool for correcting colour loss before bottling.  相似文献

The combination of mid infrared (MIR) spectroscopy and multivariate analysis was explored as a tool to classify commercial wines sourced from organic (ORG) and non-organic (NORG) production systems. Commercial ORG (n = 57) and NORG (n = 115) red and white wine samples from 13 growing regions in Australia were analysed using a MIR spectrophotometer. Discriminant models based on MIR spectra were developed using principal component analysis (PCA), discriminant partial least squares (DPLS) regression and linear discriminant analysis (LDA). Overall, the LDA models based on the PCA scores correctly classified on average, more than 75% of the wine samples while the DPLS models correctly classified more than 85% of the wines belonging to ORG and NORG production systems, respectively. These results showed that MIR combined with discriminant techniques might be a suitable method that can be easily implemented by the wine industry to classify wines produced under organic systems.  相似文献

Chamber drying under controlled temperature and humidity conditions of the red grape varieties Merlot and Tempranillo grown in Andalusia (Spain), and the fortification and maceration of the musts in the presence of skin from both types of grapes, to obtain sweet red wines, has been studied. Changes in colour and in monomeric and polymeric phenols during the vinification process were examined. Chamber drying increased the sugar content to about 31.4 °Brix within 48 h in Merlot grapes and 72 h in Tempranillo grapes. This drying process also causes skin rupture, facilitating the access of phenolic compounds to the pulp. The resulting musts exhibited slight browning and increased red hues, due to a high concentration of anthocyanins; maceration in the presence of grape skins for 24 h provided the best results. The end-product contained highly acceptable tannin, colour and phenolic compounds for marketing as a high quality sweet red wine, in comparison with other commercial sweet red wines.  相似文献

Eleven red wines imported from foreign country and 40 domestic fruit wines, including 15 red wines, 4 white wines, 7 plum wines, and 14 other fruit wines, sold in the supermarkets in Taiwan were purchased and tested to determine the occurrence of biogenic amines and histamine-forming bacteria. The levels of pH, total soluble solids (TSS), titratable acidity (TA), reducing sugar (RS), total sugar (TS), sulphites, methanol (milligram per liter of pure ethanol), ethanol and Pb in all samples ranged from 3.0 to 4.1, 6.8 to 24.4 °Brix, 0.3 to 1.7 g/100 mL, 0.2 to 17.6 g/100 mL, 1.6 to 28.4 g/100 mL, <2 to 260.5 mg/L, <1 to 2559 mg/L, 5.0 to 15.6 g/100 mL and <1 to 46.2 μg/L, respectively. The levels of TSS, TA, RS, and TS in plum wine samples were significantly higher than those of the other wines samples, whereas the pH value in plum wine samples was lower than that of the other wines samples. The average content for each of the nine biogenic amines in all samples was less than 5.2 mg/L. However, higher levels of histamine and spermine were detected in domestic fruit wine samples than the imported red wine samples. Five histamine-forming isolates isolated from domestic red wine and jackfruit wine, capable of producing 13.0 mg/L to 69.1 mg/L of histamine in trypticase soy broth (TSB) supplemented with 2 g/100 mL l-histidine (TSBH) or MRS broth supplemented with 2 g/100 mL l-histidine (MRSH), were identified as Bacillus pumilus (one strain), Bacillus sp. (two strains) and Acetobacter pasteurianus (one strain) by 16S rDNA sequencing with PCR amplification, and Zygoascus hellenicus var. hellenicus (one strain) by internal transcribed spacer sequencing with PCR amplification. To our knowledge, this is the first report to demonstrate the occurrence of histamine-forming bacilli bacteria, acetic bacteria and yeast in fruit wine.  相似文献

Resveratrol, a naturally occurring compound of various fruits such as grapes, is thought to possess chemopreventive properties. The levels of resveratrol in grapes and grape products including wine, varies from region to region and from one year to another. This paper reviews the resveratrol content in red wine based on relevant published data. Red wine contains an average of 1.9 ± 1.7 mg trans-resveratrol/l (8.2 ± 7.5 μM), ranging from non-detectable levels to 14.3 mg/l (62.7 μM) trans-resveratrol. In general, wines made from grapes of the Pinot Noir and St. Laurent varieties showed the highest level of trans-resveratrol. No region can be said to produce wines with significantly higher level of trans-resveratrol than all other regions. Levels of cis-resveratrol follow the same trend as trans-resveratrol. The average level of trans-resveratrol-glucoside (trans-piceid) in a red wine may be as much as 29.2 mg/l (128.1 μM), i.e., three times that of trans-resveratrol.  相似文献

The purpose of this work was to examine the relationship of the total polyphenol index (TPI) as measured spectrophotometrically and individual phenols as determined by HPLC to antioxidant activity in red wines made from two Vitis vinifera grape varieties grown in NW Spain (viz. Mencía and Brancellao) during bottled storage in the dark for 12 months. Antioxidant activity was determined by using various methods based on inhibition of the coupled oxidation of the β-carotene/linoleic acid mixture. Also, free radical scavenging activity was determined with 2,2-diphenyl-1-picrylhydrazyl (DPPH). Antioxidant activity as measured by DPPH after storage for 3 months was higher in Mencía wines than in Brancellao wines (4.5 ± 0.60 vs. 3.7 ± 0.30 mmol/L trolox equivalents). Beyond 3 months of storage, radical scavenging activity increased in both types of wine (from 4.5 ± 0.60 to 6.0 ± 0.80 mmol/L in Mencía wines and from 3.7 ± 0.30 to 4.7 ± 0.71 mmol/L trolox equivalents in Brancellao wines). The significant correlation found between antioxidant activity and TPI in all wines (r > 0.88) is indicative of the significance of condensation and polymerisation products to the total antioxidant activity of the wines. The relatively high correlation of total flavonols (r = 0.89) and acylated anthocyanins (r = 0.70) as measured by HPLC with to the overall antioxidant capacity suggests that these two polyphenol classes can substantially influence the antioxidant properties of these wines. The linoleic acid/β-carotene assay exposed a higher antioxidant capacity in Brancellao wines than in Mencía wines after 3 months of storage (6.0 ± 0.80 vs. 4.7 ± 0.70). Most of the studied wines lost an average 45% antioxidant activity during bottled storage. Antioxidant activity as measured with the linoleic acid/β-carotene assay was closely correlated with both hydroxycinnamic acids (r = 0.90) and flavanols (r = 0.71 and 0.61 for monomeric and polymeric forms, respectively).  相似文献

Forty-two wines produced from grapes grown in Idaho were examined in this study. The samples examined were from four monovarietal wines (12 Cabernet Sauvignon, 9 Merlot, 7 Riesling, 14 Chardonnay). Wine samples represented twelve wineries that obtain their fruit from vineyards located within Idaho’s Snake River Valley. Titratable acidity, pH, specific gravity, colour measurements (lightness, chroma, and hue), % haze, total anthocyanins, total phenolics, total tannins, antioxidant capacity, and individual stilbene measurements were performed. The antioxidant capacities (ORAC values) of Idaho wines ranged from 3.1 (Merlot wine) to 87.0 (Cabernet Sauvignon wine) μmol of Trolox/ml (mean = 38.5 μmol of Trolox/ml). Mean ORAC values of Merlot wines (mean = 27.6 μmol of Trolox/ml) were lower than the other three styles (mean for Cabernet Sauvignon wines = 41.0 μmol of Trolox/ml, mean for Chardonnay wines = 42.8 μmol of Trolox/ml, and mean for Riesling wines = 39.4 μmol of Trolox/ml). Free stilbene levels (four different stilbenes) were examined by direct-HPLC/DAD/ESI-MS/MS method. Piceid and resveratrol (both trans- and cis-) were found in the samples. Stilbene levels ranged from 0.97 (Riesling wine) to 12.88 (Cabernet Sauvignon wine) mg (expressed as trans-resveratrol)/l. This is the first paper to report the current chemical composition of Idaho wines.  相似文献

The phenolic profiles of Queensland red wines (two Cabernet Sauvignons and one Shiraz) from different stages of wine-making were studied. Samples were taken at crush, after the primary and malolactic fermentations, post-oaking, and post-bottling, and then extracted and separated into aqueous and organic fractions using liquid–liquid extraction and solid-phase extraction, and analysed by HPLC-DAD-MS. About 75% of the phenolic compounds were extracted into the aqueous fraction, with malvidin-3-glucoside and derivatives as the main components. The major non-anthocyanin phenolic compounds (∼25%) included gallic acid, syringic acid, ethyl gallate, caftaric acid, coutaric acid, caffeic acid, coumaric acid, catechin, and quercetin. The polymerisation of anthocyanins was shown to occur progressively throughout the wine-making process. Most of the 25 identified phenolic compounds had highest concentrations during the fermentation stage, and stabilised or slowly decreased thereafter. There were weak and insignificant correlations (P > 0.05) between individual phenolic compounds and the total antioxidant activities (ORAC). Four groups of phenolic compounds (anthocyanins, hydroxybenzoic acids, flavanols and hydroxycinnamic acids) each showed some correlation with the total antioxidant activity, as did the total polyphenol content, suggesting that the antioxidant properties of red wine are due to a complex mixture of phenolic compounds that vary in composition throughout the wine-making process.  相似文献
