The effect of adding xanthan gum and locust bean gum at low concentrations (0.15% w/w) on the freeze/thaw stability of white sauces prepared with native starches from four different sources (corn, waxy corn, potato, and rice) was investigated. Linear viscoelastic properties were taken as structural indicators and these and syneresis as indicators of the freeze/thaw stability of the sauces. The pasting properties of the starch in the sauce system were also studied. Both hydrocolloids reduced the structural changes occurring after thawing, xanthan gum being more effective than locust bean gum. In corn and potato sauces, the most affected by the freeze/thaw cycle, the appearance of syneresis and the increase in viscoelastic functions were significantly reduced by both hydrocolloids. In general, the addition of hydrocolloids affected peak, hot peak and cold peak viscosities and reduced relative total setback. The results regarding the possible effects of hydrocolloid addition to white sauce systems are discussed in molecular terms.  相似文献

以糯玉米品种渝糯7号和普通玉米品种农大108为材料,研究了不同的反应程序和淀粉浓度对其快速黏度测定(RVA)谱特征值的影响,同时比较了糯玉米和普通玉米淀粉在不同反应程序和淀粉浓度条件下的差异。结果表明:(1)玉米淀粉的RVA特征值在不同反应程序下发生了改变,但其没有改变糯玉米和普通玉米之间的差异,在不同反应程序下,相对于普通玉米淀粉,糯玉米淀粉的峰值黏度和沉降值较高,而谷值黏度、终值黏度、回复值、峰值时间和糊化温度较低。(2)糯玉米和普通玉米淀粉的RVA特征值受到浓度影响,随着淀粉浓度的增加,峰值黏度、谷值黏度、沉降值、终值黏度和回复值随之增加,峰值时间略有降低,浓度太低时淀粉不能糊化,在能糊化条件下则随着浓度的增加而降低。在低浓度条件下,糯玉米淀粉的峰值黏度高于普通玉米,而在较高浓度(11%)条件下,糯玉米淀粉的峰值黏度则低于普通玉米淀粉。  相似文献

Waxy and normal corn starches with different moisture contents, 5.1-16.9% and 4.8-15.9%, respectively, were prepared and treated in methanol containing 0.36% HCl at 45 °C for 1 h. Recovery of all the treated starches was found to be above 90%. Peak viscosity, gelatinization temperature and enthalpy change of gelatinization of waxy and normal corn starches decreased after treatment and this decrement was found to be more in treated starches having lower initial moisture content. The weight-average degree of polymerization and chain length (CL) of waxy and normal corn starches decreased upon acid-methanol treatment. The decrement ratio of molecular weight of modified starches was found to be negatively correlated with the initial moisture content of the starches. The decrement ratio of normal corn starch was higher than waxy corn starch with similar moisture content of starch. The content and CL of long chain fraction of amylopectin for waxy corn starch slightly decreased after treatment, while no obvious trend was found among starches with different moisture contents. CL of amylose for acid-methanol-treated normal corn starch decreased and this change was found to be higher in starches with lower initial moisture contents. Results demonstrated that the initial moisture content of starch granules strongly influenced the functional properties and degradation of starch treated by acid in methanol.  相似文献

The effects of heat–moisture treatment (HMT; moisture content of 25%, at 100°C for 24 h) on starch chain distribution and unit chain distribution of amylopectin in normal rice, waxy rice, normal corn, waxy corn, normal potato, and waxy potato starches were investigated. After HMT, starch chain distribution (amylose and amylopectin responses) of waxy corn and potato starches were identical to those of untreated starches, whereas the chromatographic response of waxy rice starch showed a slight decrease, but with a slight increase in peak tailing. This result indicated that HMT had no (or very limited) effect on the degradation of amylopectins. Analysis of unit chain distribution of amylopectins revealed that waxy characteristics affected the molecular structure of amylopectin in untreated starches, i.e., the CL of normal‐type starches was greater than that of waxy‐type starches. After HMT, the CL and unit chain distribution of all starches were no different than those of untreated starches. The results implied that changes in the physico‐chemical properties of HMT starches would be due to other phenomena rather than the degradation of amylopectin molecular structure. However, the thermal degradation of amylopectin molecules of waxy starches could occur by HMT at higher treatment temperatures (120 and 140°C).  相似文献

Waxy corn starch pastes (10%) were stored at 5 °C for up to 35 days, and the powder specimens of retrograded starches thus obtained were added to wheat flour for bread baking at a level of 5%. The effect of retrograded starch on the staling of bread was determined. The loaf which contained retrograded waxy corn starch, which was prepared by storing the 10% paste at 5 °C for 7 days, showed an increase in specific volume and the results of the sensory evaluation showed that it was very acceptable. During the storage of bread, the increase in firmness and decrease in degree of gelatinization were suppressed by adding retrograded waxy corn starch. The moisture content of bread crumbs did not relate to firmness. Added retrograded waxy corn starch decreased the final viscosity of flour. The crystalline region of retrograded waxy corn starch used for bread baking included longer chains from amylopectin which in raw starch occurred in the amorphous region.  相似文献

The Effects of hsian‐tsao leaf gum (HG) on the rheological/textural properties of non‐waxy starches were studied. Pronounced interactions between starch and HG were observed. The rheological properties, including pseudo‐gel viscosity in the rapid visco‐analyser test, storage and loss moduli in the dynamic rheological test, as well as firmness in the texture analyser test, of the mixed gels generally improved with increasing gum concentration to a certain level, then deteriorated with further increase in gum concentration. The critical gum concentration for the development of optimal rheological properties depended on the starch type and concentration. Within the concentration range studied, mixed systems with wheat starch could generally reach the highest pseudo‐gel viscosity, firmness, and storage modulus if the starch/HG ratio was appropriate, followed by those with corn and tapioca starch. Rheological Examination of the influence of Hydrocolloids on the Freeze-thaw-stability of Starch Gels. On thawing, frozen food containing starch often exhibits synaeresis, which is clearly related to structural changes. In order to determine the extent of synaeresis generated by freeze-thaw-cycles (FTC), rheological measurements were conducted with potato starch, waxy rice starch and 4 different maize starches. The relative growth of the storage modulus due to an FTC was defined as a measure of the freeze-thaw-stability (FTS). A value of less than 1 indicates an adequate FTS. Comparison of different maize and waxy maize starches revealed no correlation between FTS and amylose content. Potato starch, which exhibits very poor FTS, was chosen as a medium to examine the influence of hydrocolloid addition on the freeze-thaw-properties. First no or only little improvement of FTS was detected when examining tara gum, l-carrageenan and locust bean gum. Maximum FTS was achieved with mixtures of 5%-gels containing 10% of hydrocolloids as either l-carrageenan or locust bean gum. On the basis of the viscoelastic data, the mechanism by which hydrocolloids improve the FTS was deduced as a combination of network coupling and exclusion effect.  相似文献

The fine structure of high-amylose corn starches has been studied after dispersion of the starch and fractionation into their components amylose and amylopectin. The resulting amylopectin fraction reported in the literature possesses anomalous properties with regard to the waxy and normal amylopectin. However, the experimental results obtained by different authors for determining the structure lead to controversal explanations. Therefore, using an enzymic method, which permits the direct examination of the constitutive chains of the starch, the fine structure of the amylopectin of an amylomaize starch (64% amylose) has been investigated and compared with those of waxy and normal starches. The pullulanase – debranched chains are fractionated by gel permeation and their linearity are checked under the action of β-amylase. The inner chains of the amylopectin fraction are studied after debranching of the β-limit dextrins. The results show the identity between amylopectins from waxy and normal starches. The amylopectin fraction of amylomaize has its own structure with longer inner chains than those of waxy-maize amylopectin.  相似文献

Barley starch was oxidized to different levels and the morphological, physicochemical and structural of the resultant oxidized barley starch were determined and compared with oxidized corn starch at the same oxidation level. The amylose content in oxidized starches decreased with increasing oxidation level, and the extent of decrease was similar for both starch types. No evidences of alteration in morphology and X‐ray diffraction pattern were noted after oxidation. The crystallinity of barley starch increased with increasing oxidation but corn starch displayed a reduced crystallinity at 5% NaOCl. The onset and peak gelatinization temperatures of oxidized starches as measured by differential scanning calorimetry showed a slight increase up to 3% NaOCl and then decreased at 5% NaOCl, whereas gelatinization enthalpy gradually decreased with increasing oxidation level. The melting temperature of retrograded oxidized starches increased with increasing oxidation. Both amylose and amylopectin were degraded during oxidation, but a higher degradation in both components as determined by high‐performance size‐exclusion chromatography (HPSEC) was noted for barley starch than for corn starch. Results of amylopectin chain‐length distribution showed that the proportions of A and B1 chains significantly increased while that of B2+ chains significantly decreased. These results suggest that differences in the structure of barley and corn starches affected their responses to oxidation. Barley starch seemed to be more susceptible to oxidation with more significant reduction in pasting temperature, viscosity, and molecular size than corn starch.  相似文献

This study was carried out in order to compare the functional characteristics of isolated starch from five tuber crops, yam, taro, sweet potato, yam bean and potato, as well as effect of guar gum (GG) and locust bean gum (LBG) on pasting and thermal properties of tuber starches. The results showed that total amylose content of five tested starches ranged from 17.85% to 30.36%. The results of pasting behaviour showed that potato starches exhibited the highest peak viscosity and yam starch presented a stable curve with little breakdown viscosity. Addition of GG and LBG resulted in a significant increase in peak, final viscosity, breakdown and setback viscosity for all tuber starches ( P  < 0.05), but a slight decrease in pasting temperature. The gelatinisation enthalpy (Δ H ) for starches with GG and LBG was slightly lower than those of the starches alone in yam and sweet potato, but not in taro and yam bean.  相似文献

This study examined the steady flow and dynamic rheological behaviors of hydroxypropylated sweet potato starch (HPSPS) pastes mixed with guar gum (GG), locust bean gum (LBG), and xanthan gum (XG) at different concentrations (0, 0.3, and 0.6%). The HPSPS–gum mixtures had higher shear‐thinning fluid characteristics than the control (0% gum) at 25°C. The addition of the gums resulted in an increase in the consistency index (K) and apparent viscosity (ηa,100). The dynamic moduli (G′, G″) and complex viscosity (η*) values of the HPSPS–gum mixtures were higher than those of the control, and they increased with an increase in gum concentration. In particular, the presence of XG at 0.6% in the HPSPS–gum mixture systems gave rise to the greatest viscoelastic properties among the gums examined at different concentrations. The tan δ (ratio of G″/G′) values (0.35–0.57) of the HPSPS–GG and HPSPS–XG mixtures were much lower than those of the control (0.82) and HPSPS–LBG (0.88–1.06), indicating that the elastic properties in the HPSPS–gum mixture systems were strongly affected by the additions of GG and XG. These steady flow and dynamic rheological parameters indicated there were synergistic interactions between the HPSPS and gums. The synergistic effects of the gums and modified starch were hypothesized by considering the molecular incompatibility and molecular interactions between the gums and HPSPS.  相似文献

以4种不同链/支比含量的玉米淀粉为原料,酸解处理不同时间,以酸解玉米淀粉的形貌特性、冻融稳定性、膨胀度、溶解度、晶体性质为指标衡量不同酸解时间对玉米淀粉结构性质的影响。结果表明:4种玉米淀粉酸水解程度的顺序为:蜡质玉米普通玉米淀粉G50G80。酸解后,同品种的4种玉米淀粉的析水率随着酸解天数的增加而增加;溶解度增加,膨胀度降低。酸解并未改变淀粉的晶型,随着酸解时间的延长,蜡质玉米淀粉和普通玉米的相对结晶度先增大后保持不变,G50和G80的相对结晶度随着酸解时间的增加而增大。表明酸解对低直链淀粉(蜡质玉米淀粉和普通玉米淀粉)的结构、性能影响最大。  相似文献

The extent of corn starch dispersibility and the relative molecular solubility of amylose and amylopectin in methyl sulfoxide (DMSO) were determined. Granular corn starches with <l, 25, 53, and 70% amylose were dispersed in 0–100% DMSO (in water) solutions at 30°C for 30 min. Maximum dispersibility for all starches (98%) was obtained when 90% DMSO/10% water was used; regular (normal) dent corn starch was equally dispersed in solutions with 88–94% DMSO. Molecular solubility, the presence of individual molecules of amylose and amylopectin, of starches was also measured (after centrifugation and filtration) by high performance size-exclusion chromatography (HPSEC). Starches were dispersed in 90% DMSO and heated for 10 min at temperatures of 35–120ºC. At low temperatures, high coefficients of variation resulted from additional DMSO solubilization after treatment. At 120ºC, 70% amylose starch was >90% solubilized, while waxy starch was only 47% solubilized. When starches were treated for 18–89 h in 90ºC DMSO, solubility stopped increasing after 67 h. High amylose starch (70%) was mostly solubilized, but 53% amylose, waxy and regular starches could only be fully solubilized after exposure to shear. Amylopectin molecules appeared more susceptible to shear induced depolymerization than amylose. The percent amylopectin in the high amylose starches reflected that as determined by iodine binding analysis and the manufacturer; while the percent amylopectin in regular starch was too low (manufacturers: 75%, HPSEC: 65%). Undispersed components were mostly amylopectin. Since amylose is fully solubilized, however, the HPSEC can be used to quickly determine percent amylose in starch.  相似文献

We present for the first time the interactions of starch and cassia gum – a novel galactomannan recently approved for use in food processing. Viscoelastic, pasting and microstructural characterization of various starches (waxy; high amylose; normal; cross-linked waxy corn starch; potato starch) containing different levels of the cassia gum was carried out. Significant changes were observed in the morphology of granule remnants formed during gelatinization in the starch pastes prepared with and without the addition of cassia gum. The freeze-dried starch–cassia gum pastes presented a shrunken and tight arrangement of the starch granule remnants, when studied by scanning electron microscopy. A significant reduction in the granule remnant size was also calculated using laser diffraction particle size analysis. The extent of interaction with cassia gum differed significantly among the various starch types. All the unmodified corn starches recorded an increase in peak viscosity at all levels of the cassia gum addition. An increase in the final viscosity of these starches was also observed by the addition of cassia gum, with high amylose and normal corn starch showing the maximum. Similarly, the extent of breakdown and setback viscosity also differed among the different starch types. Ranges of dynamic rheological measurements (temperature, time and frequency sweeps) were performed within the viscoelastic zones. Rheological parameters, such as storage modulus (G′), loss modulus (G″) and the gelatinization temperature (Tgel), of the corn starches during the heating cycle were observed to increase, when cassia gum was present at lower levels. The starch–gum systems also exhibited higher tan δ values during both the heating and the cooling cycles, indicating the dominance of the viscous modulus. The G′ and G″ of all the corn starch gels containing cassia gum showed higher values throughout the frequency sweep range. However, the increase in G′ and G″ of different starches was not always consistent with the increase in cassia gum levels. The changes in rheological behaviour during storage of the starch gels, aged on the plate of the rheometer and then studied through time sweeps at 5 °C and frequency sweeps at 25 °C, suggested that the starch gels containing cassia gum had less pronounced changes in the rheological parameters than had their control counterparts.  相似文献

The apparent viscosities of dilute solutions of guar and locust bean gums have been measured. The intrinsic viscosity [n] of guar gum solution is greater than that of locust bean gum solution, but the interaction coefficient k of guar gum solutions is less than that of locust bean gum. Addition of glucose, sucrose, or glucose syrup increases the apparent viscosity of the gum solution. The intrinsic viscosity of the gum solution is decreased but the interaction coefficient is increased.  相似文献

Xanthan and locust bean gums are polysaccharides able to produce aqueous solutions with high viscosity and non‐Newtonian behaviour. When these solutions are mixed a dramatic increase on viscosity is observed, much greater than the combined viscosity of the separated polysaccharide solutions. In this work the influences of different variables on the viscosity of solutions of mixtures of xanthan/locust bean gum have been studied. Total polysaccharide concentration, xanthan and locust bean ratio on mixture and temperature at which the gum was dissolved (dissolution temperature) for both xanthan and locust bean gums have been considered. Under these different operational mixture conditions shear rate and time have also been considered to describe the rheological behaviour of the solutions studied. The high viscosity increase observed in these mixtures is due to the interaction between xanthan gum and locust bean gum molecules. This interaction takes place between the side chains of xanthan and the backbone of the locust bean gum. Both xanthan molecule conformation in solution – tertiary structure – and locust bean gum structure show great influence on the final viscosity of the solution mixtures. Xanthan conformation changes with temperature, going from ordered structures to disordered or chaotic ones. Locust bean gum composition changes with dissolution temperature, showing a dissolved galactose/mannose ratio reduction when temperature increases, ie the smooth regions – zones without galactose radicals – are predominantly dissolved. The highest viscosity was obtained for the solution mixture with a total polysaccharide concentration of 1.5 kg m−3 and a xanthan/locust ratio of 2:4 (w/w) and when xanthan gum and locust bean gum were dissolved at 40°C and 80°C, respectively. © 1999 Society of Chemical Industry  相似文献

The flow properties of the fluid portion of fruit fillings were assessed to investigate the effects of gums. Results indicated that the shear rate–shear stress relations of the fluid portion of commercial fruit fillings and the model fillings made of waxy corn starch, fructose, citrate buffer, and a gum which could be guar gum, locust bean gum, CMC, xanthan gum or κ-carrageenan, fit well into the Herschel–Bulkley equation for pseudoplastic fluids. The fluid portion of the commercial fruit fillings was characterized with a yield stress between 39–51 Pa, a consistency index between 52–104 Pa·sn, and a flow index (n) around 0.4. In addition, the shear rate–shear stress relations could be fitted into a modified Herschel–Bulkley equation with a flow index fixed at 0.4. Addition of guar gum, locust bean gum and CMC increased while xanthan gum and κ-carrageenan decreased the consistency and flow indices in the modified Herschel–Bulkley equation. The effect of gum addition on the apparent viscosity of model fillings varies with the type of gum, amount of addition, and shear rate.  相似文献

Starch was isolated from green Cavendish bananas after sodium hydroxide treatment, and its physical properties as they affected its potential acceptance as a food ingredient were measured and compared with those of corn, waxy corn, waxy corn diphosphate, acetylated waxy corn diphosphate, potato, and tapioca starches. Banana starch granules had a moisture content of 15.5%, an amylose content of 19.5% on a dry weight basis, and were highly irregular in shape and size, with the mode of characteristic length falling at 15 μm. The gelatinization range was 70.1 °C to 74.6 °C. Scanning electron micrography showed that in water the granules underwent surface cracking at 65 °C and progressively greater swelling, deformation, and erosion between 70 °C and 90 °C. At 95 °C, 6% banana starch paste in a Brabender Amylograph had a viscosity four times that of corn starch paste of the same concentration, and viscosity decreased rather slowly with stirring. The paste was somewhat longer than that of corn starch, but appreciably shorter than tapioca starch paste. Gelled banana starch was nearly as strong as corn starch, and also was nearly as opaque and reflective.  相似文献

为考察直链淀粉含量对淀粉/瓜尔胶复配体系性质的影响,以不同直链淀粉含量的玉米淀粉(蜡质玉米淀粉、普通玉米淀粉和高直链玉米淀粉)为原料,加入瓜尔胶,研究复配体系的糊化、流变及凝胶特性。结果表明:瓜尔胶与直链淀粉之间的相互作用是引起淀粉复配体系黏度和稠度系数增加、成糊温度和流体指数降低的主要原因。动态流变实验结果表明淀粉中直链淀粉含量不同对复配体系的动态模量的影响也不同。在糊化过程中,随着直链淀粉含量增加,直链淀粉分子与瓜尔胶间的相互作用增强,阻碍了直链淀粉分子间的聚集重排,使得复配体系硬度值减小,3种玉米淀粉形成了质地更为柔软的凝胶。  相似文献
