真菌毒素是由曲霉菌、青霉菌和镰刀菌等丝状真菌在适当的环境条件下产生的有毒次生代谢产物,是谷物、水果、坚果等食品中常见的污染物,可引起广泛的毒性效应,主要表现为致癌性、致突变性、肝毒性、肾毒性、免疫毒性、神经毒性、致畸性等,对人类和动物的健康构成威胁。近些年来,由于自然气候的改变及检测技术的创新发展,一些新出现的真菌毒素逐渐引起大家的广泛关注,如已报道的交链孢毒素、新兴镰刀菌毒素等。这些尚未得到监管,并且如何产生、浓度水平和毒理数据有限的真菌毒素被定义为“新兴”真菌毒素。本文综述了两大类12种新兴毒素的结构性质、检测分析技术进展及在食品中的污染状况,以期为真菌毒素污染的全面评估及防控提供思路。 相似文献

真菌毒素污染是影响全球食品安全问题的重要因素之一。真菌毒素是真菌产生的次级代谢产物,对人体、动植物皆可产生危害。自然条件下,真菌毒素分子可与葡萄糖、丙二酸或谷胱甘肽等极性较强的基团结合,生成结合型真菌毒素。由于毒素结构发生改变,现有的常规检测手段不能有效地检测其存在,因此称其为隐蔽型真菌毒素(masked mycotoxins)。已有文献报道,隐蔽型真菌毒素往往与其原型同时存在于粮食中,而隐蔽型毒素在进入人和动物体内后,经水解、氧化还原等代谢过程,可释放出有毒的毒素原型分子,给食品安全、人和动物健康造成严重隐患。因此对隐蔽型真菌毒素的形成机制、污染状况和毒理研究应尽快展开。本文综述了国内外近几年以来几种常见隐蔽型真菌毒素的最新研究进展,为隐蔽型真菌毒素的研究提供有价值的参考。 相似文献

河南省粮食及其制品中真菌毒素污染情况调查 总被引:1,自引:0,他引:1
目的了解河南省市售粮食及其制品中真菌毒素污染的种类和程度。方法 2018—2019年采集河南省市售粮食及其制品,采用同位素稀释超高效液相色谱-串联质谱(UPLC-MS/MS)法测定16种真菌毒素含量,检测结果按照GB 2761—2017《食品安全国家标准食品中真菌毒素限量》进行评价分析。结果 100份玉米面、玉米渣及玉米粒中伏马菌素、玉米赤霉烯酮、黄曲霉毒素、脱氧雪腐镰刀菌烯醇是主要污染真菌毒素,检出率范围为0.0%~95.7%;220份小麦粉、面条和馒头中脱氧雪腐镰刀菌烯醇检出率分别为78.0%(124/159)、64.3%(18/28)和87.9%(29/33);其他真菌毒素含量较低或未检出。结论河南省粮食及其制品中存在不同程度的真菌毒素污染问题,尤其是玉米及其制品中伏马菌素有较高的检出率,应及时开展溯源调查,尽快采取相应控制措施。 相似文献

真菌侵染是造成水果腐烂和水果及其制品中真菌毒素残留的根本原因。全球由于真菌侵染而腐烂的水果损失约占新鲜水果的20%~30%,而真菌毒素也成为危害人体健康的潜在风险。本文首先综述了水果制品中常见的6种真菌毒素的来源、稳定性及毒性,包括展青霉素、赭曲霉毒素A、黄曲霉毒素B1、交链孢酚、交链孢酚单甲醚、细交链孢菌酮酸、赭曲霉毒素A和黄曲霉毒素B1展青霉素,并分析了各种真菌毒素在不同种类水果制品中的污染状况。其次,重点从控制霉菌生长、产毒和毒素消减3个层面,综述了目前在水果采前、采后和加工3个环节真菌毒素的防控措施,并提出真菌毒素防控领域尚需进一步开展的研究,明确安全、无污染和精准的绿色防控手段为防控真菌毒素污染的发展方向,采取传统控制手段结合生物防控等新技术有望实现对真菌毒素的有效控制。 相似文献

In the present investigation, fresh and dried tomato samples from markets and packinghouses located in Apulia region (southern Italy) were analysed for Alternaria toxins. All samples proved to be contaminated by tenuazonic acid (TeA); in particular, dried tomatoes were contaminated in the range 425–81,592 µg/kg, while fresh tomatoes were in the range 11–4560 µg/kg. The second most abundant toxin was alternariol monomethyl ether (AME), followed by tentoxin (TEN) and alternariol (AOH). Overall dried tomatoes were more contaminated than fresh ones, although this seemed not directly related to the presence of sodium chloride, utilized in the drying process. Five representative Alternaria isolates within those collected from samples proved to be one Alternaria arborescens (A215) and four Alternaria alternata. Within the latter species, one strain belonged to morphotype tenuissima (A216), and three to alternata (A214, A217 and A218). They were confirmed to produce TeA, AOH, and AME in vitro. This study demonstrates the possible risk for consumers’ health related to the consumption of contaminated fresh and dried tomatoes, and thus the need for suitable control strategies. 相似文献

The aim of the project was to produce updated information during 2005–14 on the Fusarium species found in Finnish cereal grains, and the toxins produced by them, as the last comprehensive survey study of Fusarium species and their toxins in Finland was carried out at the turn of the 1960s and the 1970s. Another aim was to use the latest molecular and chemical methods to investigate the occurrence and correlation of Fusarium species and their mycotoxins in Finland. The most common Fusarium species found in Finland in the FinMyco project 2005 and 2006 were F. avenaceum, F. culmorum, F. graminearum, F. poae, F. sporotrichioides and F. langsethiae. F. avenaceum was the most dominant species in barley, spring wheat and oat samples. The occurrence of F. culmorum and F. graminearum was high in oats and barley. Infection by Fusarium fungi was the lowest in winter cereal grains. The incidence of Fusarium species in 2005 was much higher than in 2006 due to weather conditions. F. langsethiae has become much more common in Finland since 2001. F. graminearum has also risen in the order of importance. A highly significant correlation was found between Fusarium graminearum DNA and deoxynivalenol (DON) levels in Finnish oats, barley and wheat. When comparing the FinMyco data in 2005–06 with the results of the Finnish safety monitoring programme for 2005–14, spring cereals were noted as being more susceptible to infection by Fusarium fungi and the formation of toxins. The contents of T-2 and HT-2 toxins and the frequency of exceptionally high DON concentrations all increased in Finland during 2005–14. Beauvericin (BEA), enniatins (ENNs) and moniliformin (MON) were also very common contaminants of Finnish grains in 2005–06. Climate change is leading to warmer weather, and this may indicate more changes in Finnish Fusarium mycobiota and toxin contents and profiles in the near future. 相似文献

Mycotoxins are secondary fungal metabolites produced by certain types of filamentous fungi or molds, such as Aspergillus, Fusarium, Penicillium, and Alternaria spp. Mycotoxins are natural contaminants of agricultural commodities, and their prevalence may increase due to global warming. According to the Food and Agriculture Organization of the United Nations, approximately 25% of the world's food crops are annually contaminated with mycotoxins. Mycotoxin-contaminated food and feed pose a high risk to both human and animal health. For instance, they possess carcinogenic, immunosuppressive, hepatotoxic, nephrotoxic, and neurotoxic effects. Hence, various approaches have been used to assess and control mycotoxin contamination. Significant challenges still exist because of the complex heterogeneous nature of food and feed composition. The potential of antigen-based approaches, such as enzyme-linked immunosorbent assay, flow injection immunoassay, chemiluminescence immunoassay, lateral flow immunoassay, and flow-through immunoassay, would contribute to our understanding about mycotoxins' rapid identification, their isolation, and the basic principles of the detection technologies. Additionally, we address other emerging technologies of potential application in the detection of mycotoxins. Deoxynivalenol (DON) is the most important of the trichothecenes in terms of amounts and occurrence in wheat. This compound was shown to be associated with a glomerulonephropathy involving an increase of immunoglobulin A in humans. This study assessed the occurrence of DON in wheat flour and the exposure of Brazilian teenagers, adults and elderly to this mycotoxin due to intake of wheat flour-based products. DON extraction in wheat flour was carried out by solid phase extraction and the quantification was performed by ultra-high proficiency liquid chromatography with diode-array detection. A total of 77.9% of all samples were positive for DON, with concentrations ranging from 73.50 to 2794.63 µg kg?1. The intake was calculated for the average and 90th percentile of the contamination levels of DON in foods based-wheat for teenagers, adults and elderly in Brazil, and compared with the provisional maximum tolerable daily intakes (PMTDI). Females of all age groups were exposed to DON at higher levels when compared to males in regard of consumption of breads and pastas. Teenagers were the main consumers of foods derived from wheat flour, with maximum probable daily intakes of 1.28 and 1.20 µg kg?1 b.w. day?1 for females and males, respectively. This population is at an increased risk of exposure to DON due to consumption of wheat flour-based foods in Brazil. 相似文献

Aspergillus niger has been recently found to produce fumonisin B2 (FB2). Thirty-one strains belonging to four Aspergillus species isolated from grape were evaluated for FB2 production on agar plates. Four out of eight strains of A. niger produced FB2 (29–293 µg g?1). None of the strains of A. uvarum (n = 7), A. tubingensis (8) and A. carbonarius (8) produced detectable amounts of toxin. The capability to produce FB2 was also confirmed by some A. niger strains artificially inoculated on grape berries. Natural occurrence of FB2, at levels of 0.01 and 0.4 µg ml?1, was found in two samples of must collected in Apulian cellars in 2007. This is the first report of FB2 contamination in must. These findings suggest that there is a potential risk of exposure to FB2 in the grape–wine chain for consumers and that A. niger may represent the major fumonisin-producing species among black Aspergilli occurring on grapes. 相似文献

For the Fusarium trichothecene mycotoxins T-2 and HT-2, a combined (T-2 + HT-2) temporary tolerable daily intake (tTDI) of 0.06 µg kg?1 body weight day?1 was proposed at the European level in 2001 (Opinion of the Scientific Committee on Food). In the near future, maximum levels for these trichothecenes will be regulated by the European Commission as announced in EU (VO) 1881/2006. For the implementation of these maximum levels, more data on occurrence and behaviour of T-2 and HT-2 toxins in primary agricultural products as well as during cleaning treatment and food processing are needed. In the current work, we determined the T-2/HT-2 concentrations in four oat cultivars (Aragon, Dominik, Ivory, Pergamon) from ten different agricultural sites in Germany, grown in cultivar studies in 2007. The grains were de-hulled, oat meal was prepared, and bread with 20% oat meal and 80% wheat flour was baked. In the cereal-processing chain, samples were taken at various steps and subsequently analysed for their T-2/HT-2 content. We employed liquid chromatography-mass spectrometry (LC-MS) and an immunological screening method (enzyme-linked immunoabsorbant assay (ELISA)) for T-2/HT-2 determination. Detection limits were between 1 and 10 µg kg?1 in different matrices. T-2/HT-2 concentrations determined by ELISA in oat samples from ten different agricultural sites in Germany were between 9 and 623 µg kg?1. The median and 90th percentile were 48 and 191 µg kg?1 T-2/HT-2, respectively. One site showed six times higher T-2/HT-2 levels than the other sites, where concentrations ranged from 322 to 623 µg kg?1. In 80% of the samples the cultivars Pergamon and Ivory had the lowest concentration of T-2 and HT-2 toxins. Using LC-MS for T-2/HT-2 determination, cleaning of the raw material did not lead to significant reductions of T-2 and HT-2 levels, whereas de-hulling led to a reduction of over 90%. Boiling of oat meal produced from cleaned raw material to yield ‘porridge’ resulted in varying T-2/HT-2 levels in experimental replicates. No major reduction of T-2/HT-2 levels in cooked porridge was obtained. Standardized baking experiments using 20% oat meal showed that T-2 and HT-2 toxins are relatively stable during the baking process, probably due to their temperature stability. 相似文献

Peanut, sorghum and maize samples were collected from the wholesale market in Mysore, India, over a period of one year (October 1984 to September 1985). The samples were analysed for the natural occurrence of T-2 toxin (T-2), diacetoxyscirpenol (DAS) and zearalenone by thin-layer chromatography, dermal toxicity test and gas chromatography. Of the total number of peanut samples analysed, 6.9% were positive for the toxic trichothecene(s) (T-2, up to 38.89 mg kg?1; DAS, up to 2.03 mg kg?1); 4.8% of total sorghum samples analysed contained T-2 up to 15 mg kg?1. Zearalenone was not found in any of the samples tested, and no toxins were detected in any of the maize samples. Samples marketed during winter and summer periods were contaminated with the toxins. All the toxin-positive samples except one peanut sample were found in produce stored for more than a week. 相似文献
