BACKGROUND: A heat‐stable amylase‐modified potato starch (MPS) was prepared and used as a fat replacer in reduced‐fat emulsion sausages. The effects of fat level (50, 150 and 300 g kg?1) and MPS addition (20 and 40 g kg?1) on energy, colour, sensory, and textural properties of emulsion sausages were investigated. RESULTS: The addition of 20 or 40 g kg?1 of MPS in reduced‐fat sausage (50–150 g kg?1 fat) reduced total energy (15.1–49.4%), increased lightness, but lowered redness of the products (P < 0.05). The 150 g kg?1 or 50 g kg?1 fat sausages containing 20 g kg?1 MPS had a similar hardness to the 300 g kg?1 fat control (P > 0.05). Sensory evaluation indicated that the presence of MPS in reduced‐fat sausages increased (P < 0.05) the product's tenderness. CONCLUSION: Overall, the 150 g kg?1 fat emulsion sausages with 20 g kg?1 MPS were comparable to the 300 g kg?1 fat control sausage in colour, texture profile, and sensory properties, but was lower in energy, suggesting that the MPS can be used as a potential fat replacer in sausage products. The effect of several fruit dietary fibres on the sensory properties of conventional and reduced‐fat cooked‐meat sausages is studied. Fruit fibres were assayed at 15 and 30 g kg?1 concentrations. The energy value reduction of the final products was close to 30%. Instrumental measurements of colour and texture were performed. Sensory properties were estimated by hedonic tests. A correlation principal component analysis was performed. The results of textural analysis showed that the differences between batches were mainly related to the fat content. However, sensory analysis indicated that the most appreciated batches were those manufactured with orange fibre, although their colour was more yellow than the remainder. As a consequence, it is possible to manufacture conventional and hypocaloric cooked sausages containing fruit fibres mainly at a concentration of 15 g kg?1 of fibre and obtain a sensorial acceptable product. Two types of lemon albedo (raw and cooked) at 5 concentrations (0% to 10% in 2.5% increments) were added to dry‐cured sausages, and compositional, textural, and sensory analyses were conducted on finished products. The addition of albedo provided an improvement in nutritional properties from fiber addition and may have beneficial effects due to the presence of active biocompounds as evidenced by a decrease in residual nitrite levels and delayed oxidation (based on CIE redness values). Products with sensory properties similar to control sausages were those that contained 2.5% raw albedo and 2.5%, 5%, and 7.5% cooked albedo.  相似文献

The aim of this work was to study the effect of the addition of lemon albedo in bologna sausages. Two types of albedo (raw and cooked) and five concentrations (0%, 2.5%, 5%, 7.5% and 10%) were added to sausages. Chemical, physicochemical and sensory analyses were made. The addition of albedo to bologna sausages represents an improvement in their nutritional properties and may have beneficial effects, possibly due to the presence of active biocompounds which induce a decrease in residual nitrite levels. The formulations which gave products with sensory properties similar to conventional sausages were sausages with 2.5% and 5% raw albedo and 2.5%, 5% and 7.5% cooked albedo.  相似文献

BACKGROUND: This aim of this study was to evaluate the effects of feeding turkeys with docosahexaenoic acid (DHA) and vitamin E on the fatty acid profile, proteolytic enzyme activities and oxidative status of raw breast meat and cooked brine‐injected breast meat. Four treatments were investigated: T1, basal diet (control); T2, basal diet plus 15 g kg?1 DHA; T3, basal diet plus 100 mg kg?1 vitamin E; T4, basal diet plus 5.4 g kg?1 DHA plus 100 mg kg?1 vitamin E. A sensory analysis of cooked brine‐injected breasts was conducted in order to assess the sensory characteristics of these products and relate them to the expected nutritional benefits. RESULTS: Among the four treatments tested, no differences were observed in enzyme activities. No activities of cathepsin B, cathepsins B + L and catalase were detected in cooked brine‐injected breast meat. Glutathione peroxidase activity was reduced and superoxide dismutase activity was similar to that measured in raw meat. The diets supplemented with DHA increased eicosapentaenoic acid and DHA levels in comparison with the control in both raw and cooked products. The increase in n‐3 polyunsaturated fatty acids (PUFAs) led to a reduction in n‐6/n‐3 PUFA ratio to values between 1.01 ± 0.11 and 2.94 ± 0.47. In cooked brine‐injected breast, treatment with 15 g kg?1 DHA (T2) induced a considerable fishy flavour, while treatment with 5.4 g kg?1 DHA plus 100 mg kg?1 vitamin E (T4) induced a slight fishy flavour. However, fishy odour in T4 did not differ significantly from that of the control. CONCLUSION: By feeding turkeys with 5.4 g kg?1 pure DHA plus 100 mg kg?1 vitamin E, the nutritional quality is improved through the introduction of a natural antioxidant and the reduction in n‐6/n‐3 PUFA ratio. With this treatment the sensory characteristics were similar to those of control samples, except for the fishy flavour, which could probably be masked by modifying the technological process. BACKGROUND: To ameliorate the detrimental effects of freezing and thawing, blends of κ‐carrageenan (κ‐C) and xanthan gum (XG) were added to frozen/thawed mashed potatoes (F/TM potatoes). Product was tested by textural and rheological measurements, other quality parameters and sensory analyses. The effects of variation in levels of κ‐C (1.5–4.5 g kg?1) and XG (0.5–2.5 g kg?1) concentrations were studied. RESULTS: Instrumental measurements and sensory analyses indicated that 4.5 g kg?1κ‐C and 2.5 g kg?1 XG provided better thickening. κ‐C provided the appropriate texture, while XG imparted creaminess to the product, which could be associated with an increase in the amount of XG–water interactions. Addition of κ‐C had a major impact on textural properties, gel strength and viscoelastic behaviour, whereas XG influenced steady properties, colour, water‐holding capacity (WHC) and overall acceptability (OA). CONCLUSION: The OA of F/TM potatoes was mostly improved by addition of cryoprotectant blends, which is ascribed to improvement of F/TM potatoes texture by retarding starch retrogradation, increasing WHC, and enhancing the principal characteristics determining consumer acceptance. Creaminess was the most crucial factor for OA of the products. Addition of both polysaccharides at a low concentration (each cryoprotectant at 1.5 g kg?1) is recommended. BACKGROUND: A combined technological approach was applied in the development of healthier dry fermented sausages: a partial substitution of the pork back fat by pre‐emulsified linseed oil and a partial replacement of sodium chloride with calcium ascorbate at two different levels, leading to low amounts of salt (14gSalt and 10gSalt, with 14 g and 10 g NaCl per kg of mixture, respectively). RESULTS: The developed products (14gSalt and 10gSalt) showed adequate results for aw (0.85 and 0.87) and pH (4.98 and 5.21), and low lipid oxidation values (1.4 × 10?4 and 1.5 × 10?5 g malondialdehyde (MDA) kg?1). The lipid modification led to a significantly higher supply of ω‐3 (23.3 g kg?1) compared to the control (3.2 g kg?1). Simultaneously, reductions of 38% and 50% in sodium content and a calcium supply of 4 and 5.2 g kg?1 were achieved in the 14gSalt and 10gSalt formulations, respectively, compared to the control products (26 g salt and 0.87 g kg?1 Ca). Instrumental analysis of colour and texture and sensory studies demonstrated that the organoleptic quality of the new formulations was similar to that of traditional products. CONCLUSIONS: The developed dry fermented sausages showed healthier properties than traditional ones owing to their reduced sodium and higher calcium content and a significant supply of ω‐3 fatty acids. © 2012 Society of Chemical Industry  相似文献

BACKGROUND: The influence of monoacylglycerol Rimulsoft Super(V) and L ‐glutamic acid added to wheat flour dough was studied. Properties of the doughs were evaluated on the basis of chemical analysis and rheological measurements on a farinograph. Bakery products made from these doughs were subsequently subjected to sensory analyses. RESULTS: It was found that L ‐glutamic acid influenced the water absorption in dough more (50.0 g kg?1; water absorption 56.6%) than monoacylglycerol Rimulsoft Super(V) (50.0 g kg?1; water absorption 55.0%). Farinograph measurements showed that doughs with the addition of L ‐glutamic acid resembled flour containing high‐quality gluten, but dough with the addition of monoacylglycerol Rimulsoft Super(V) corresponded to ‘weak’ flour. Sensory analyses revealed that, in comparison with the control sample of French loaf, the saliva‐absorbing capacity increased in the French loaf with the highest addition of L ‐glutamic acid (30.0 g kg?1). Deterioration in quality and texture in French loaf with addition of L ‐glutamic acid (8.0 g kg?1, 30.0 g kg?1) was noted. No other statistically significant differences were found. The effect of the addition of lemon albedo on the functional properties of emulsions was studied by using a model system. Oil/water (O/W) model emulsion systems were prepared by the addition of two types of lemon albedo (raw and dehydrated) at five concentrations (0.0%, 2.5%, 5.0%, 7.5% and 10%) to mechanically deboned chicken meat. The emulsion capacity, stability, viscosity and flow properties of the prepared model emulsions were analyzed. In addition, the colour parameters of cooked emulsion gel were determined. The addition of lemon albedo increased the emulsion capacity (EC) and the highest EC value was reached with 5% of albedo added. However, further increase in the albedo concentration caused an inverse trend in the EC values. A similar trend was observed in the emulsion stability (ES) values. Dehydrated albedo (DA) addition caused higher EC and ES values than did raw albedo (RA). DA increased the L, a and b values of the cooked emulsion gels. Emulsion viscosity (EV) values were positively correlated with an increase in albedo concentration and the highest EV value was obtained from the emulsions with 10% albedo. Albedo addition did not change the flow properties of the emulsions and, in addition, increased the pseudoplasticity. As a consequence, the use of lemon albedo might be a potential dietary fiber source to enhance the functional and technological properties for frankfurter-type meat products.  相似文献

The objective of this study was to evaluate the effect of dietary olive leaves versus α‐tocopheryl acetate on lipid and protein oxidation of raw and cooked longissimus dorsi muscle from pigs fed diets supplemented with fish oil. Enrichment of pork with the very long chain n‐3 fatty acids increased ( 0.05) lipid oxidation in both raw and cooked chops during refrigerated storage, and decreased ( 0.05) the sensory attributes of the cooked chops, but had no effect (> 0.05) on protein oxidation of both raw and cooked chops. Dietary olive leaves or α‐tocopheryl acetate had no effect (> 0.05) on the fatty acid composition but decreased ( 0.05) lipid oxidation while exerting no effect (> 0.05) on protein oxidation in both raw and cooked chops during refrigerated storage. In addition, dietary olive leaves at 10 g kg?1 feed and α‐tocopheryl acetate at 200 mg kg?1 feed exerted ( 0.05) a beneficial effect on the sensory attributes of cooked n‐3‐enriched chops.  相似文献

BACKGROUND: The objective of this study was to develop a low‐fat (LF) mayonnaise containing polysaccharide gums as functional ingredients. Xanthan gum (XG, 15 g kg?1), citrus fiber (CF, 100 g kg?1) and variable concentration of guar gum (GG) were used to formulate the optimum ratios of polysaccharide gums as fat replacers. The fat content in LF mayonnaise was reduced to 50% if compared with full‐fat (FF) mayonnaise, and the products still maintained ideal rheological properties. RESULTS: The rheological parameters showed that there were no (P > 0.05) differences in yield stress, viscosity and flow behavior index between XG + 10 g kg?1 GG, CF + 5 g kg?1 GG and FF control. LF mayonnaises had lower caloric values and higher dietary fiber content than the FF counterpart. Scanning electron microscopy (SEM) micrographs illustrated that the network of aggregated droplets in LF treatments contained a large number of interspaced voids of varying dimensions. Furthermore, in a comparison of sensory evaluation of LF treatments with commercial and our FF mayonnaises, there were no (P > 0.05) differences in any sensory scores among XG + 10 g kg?1 GG control. CONCLUSION: This study shows that XG + 10 g kg?1 GG and CF + 5 g kg?1 GG could be used in LF mayonnaise formulations based on its multiple functions on processing properties. The contents of lead and cadmium in five major brands of six types of cooked beef sausages consumed in Iran were determined by a graphite furnace atomic absorption spectrometer (GFAAS) after hydrogen peroxide/nitric acid digestion. The metal content in the samples, expressed in µg?kg?1 wet weight, varied from 24.0 to 158.7 with an average of 53.5 for lead and from 2.2 to 13.5 with an average of 5.7 for cadmium. The highest lead and cadmium concentrations were obtained from a German sausage (158.7?µg?kg?1; brand B) and hot dog (13.5?µg?kg?1; brand D), respectively. The results indicate that the sausages from Iran have concentrations below the permitted levels for these heavy metals. The daily dietary intakes and the percentage contribution of the two considered metals to the provisional tolerable weekly intake (PTWI) were calculated for sausages.  相似文献

The antioxidant properties of tert-butylhydroquinone (0·5 g kg?1 + 20 g kg?1 ascorbic acid—TBHQ-AS) and an extract of rosemary (2·5 g kg?1) alone and in combination were determined by their addition as solutions to cooked fish flakes stored at - 20°C. Oxidation was measured by following changes in free fatty acids, thiobarbituric acid number, fatty acid composition and sensory evaluation. The order of effectiveness in inhibiting oxidation was TBHQ-AS > combination > rosemary > untreated control ?70°C > untreated control -20°C. Sensory evaluation indicated that green aroma and flavor notes were associated with the rosemary extract, while fish oil notes were associated with untreated samples.  相似文献

Nowadays is it a common practice to add vegetable protein in the production of meat products. Because of the possible substitution of high-quality raw meat with vegetable protein without the labelling the product package and because of the allergenic potential of many vegetable proteins, it is important to develop accurate methods for its detection. The objective of the study was to compare histochemical, immunochemical (ELISA, ALERT gliadin screening test) and immunohistochemical methods for the detection of wheat protein in meat samples and sausages. Histochemical methods were useful for the detection of flour in meat samples, but the immunohistochemical method was better for the detection of wheat protein. ALERT gliadin screening test detected gliadin from 10?mg?kg?1, while an immunohistochemical method detected wheat protein concentrations from 1?g?kg?1 and an ELISA method detected wheat protein concentrations from 4?g?kg?1. ALERT gliadin screening test showed results within 1 day, whilst an ELISA detection method took 2 days, and an immunohistochemical procedure took 5 days at the soonest, all including sample preparation. This study also focused on optimisation of an immunohistochemical method for samples of cooked sausage. In addition, three samples were sufficient for wheat protein detection at a concentration of 1?g?kg?1 (and greater) with a confidence level greater than 95%.  相似文献

BACKGROUND: When sucrose is eliminated from products to meet consumers' demand for calorie‐free products and substitutes are used, sweetness becomes an important characteristic. The objective of this study was to compare sensory properties of four sucrose substitutes: aspartame, acesulfame K, sodium saccharin and sodium cyclamate in water solutions. RESULTS: The lowest concentrations of sweeteners such as 0.35 g kg?1 for aspartame and acesulfame K showed an equi‐sweet level relative to approx. 55 g kg?1 aqueous sucrose solution, whereas 2.3 g kg?1 sodium cyclamate and 0.4 g kg?1 sodium saccharin relative to approx. 65 g kg?1. Aspartame had almost the same sweetness potency as acesulfame K, whereas the remaining sweeteners differed completely. The four sweeteners showed their specific sensory profiles. Besides the characteristics of sweetness and bitterness, metallic and astringent attributes plus warming and cooling effects were found. CONCLUSIONS: Of the four sweeteners, aspartame and sodium cyclamate can be considered as the best sucrose substitutes due to their similar sensory profiles to the sucrose. The data showing the interdependence between sweetness intensity of the sweeteners and sucrose are useful as a quick and easy indicator of the sweetener amount having equi‐sweet levels relative to sucrose. A study was conducted in which melon seed meal (MSM) replaced fat at levels of 0, 330, 660 and 1000 g kg?1 in four batches of chicken sausage. The chemical, storage and sensory properties of the sausages were determined in a meat processing laboratory. MSM increased both the ash and protein contents but decreased the ether extract content. The highest ether extract content (257.5 g kg?1) was obtained for batch 1 (control) while the lowest value (241.5 g kg?1) was recorded for batch 4. Differences of refrigeration weight loss were statistically significant (P < 0.05) while the results recorded for cooking weight loss did not show any particular trend. Cassava (Manihot esculenta Crantz) leaves form the main source of protein in a diet consisting of processed cassava roots as sole staple food in konzo‐affected areas of the Democratic Republic of Congo. Pounded cassava leaves were hydrolysed and analysed by HPLC before and after cooking to assess amino acid profiles and protein quality. An average of about 58% loss of total protein content was observed in five different cooked samples. The protein content in cassava leaves was high, an average of 285.9 g kg?1 dry weight in the raw and 119.2 g kg?1 dry weight in the cooked samples, but of poor quality, with sulphur amino acids as the most limiting amino acids. Lysine and leucine were also limiting amino acids in some of the raw samples. Lysine, histidine, leucine and isoleucine were limiting amino acids in the cooked samples besides the sulphur amino acids. The consumption of cassava leaves does not compensate the dietary deficiency of sulphur amino acids in the roots that are the staple food in konzo‐affected areas. Sulphur amino acids are essential for detoxification of the residual cyanogens remaining in insufficiently processed cassava roots. Cereals and legumes, as sources of sulphur amino acids and lysine respectively, should be promoted as part of the diet in those areas to prevent the paralytic neuro‐toxico‐nutritional disease konzo among the poor population. Low‐salt restructured silver carp products were obtained using mechanically deboned fish meat from filleting wastes of silver carp (Hypophthalmichthys molitrix). The additives used were NaCl at three levels (0 (control), 10 and 20 g kg?1) and microbial transglutaminase (MTGase) also at three levels (0 (control), 3 and 6 g kg?1). The fish meat was massaged with the additives at <15 °C for 1 h. The massaged fish paste was then packed into steel stainless tubes and cooked at 40 °C for 30 min followed by 90 °C for 15 min. Changes in mechanical properties (texture profile analysis and punch test), solubility, electrophoretic profile and expressible water were evaluated. Hardness was in the range from 26.3 to 52.4 N, cohesiveness varied from 0.185 to 0.318 and springiness varied from 0.418 to 0.768. Increasing the amount of both additives improved the mechanical and functional properties of the restructured silver carp products. MTGase activity was associated with a decrease in protein solubility and a decrease in the myosin band (SDS‐PAGE). Increasing NaCl decreased the amount of expressible water. The results indicated that it is feasible to obtain low‐salt restructured silver carp products with improved mechanical and good functional properties using 3 g kg?1 MTGase and 10 g kg?1 NaCl. © 2002 Society of Chemical Industry  相似文献

Bing cherries were coated with sodium caseinate‐ or milk protein concentrate‐based edible coatings. Besides the proteins (100 g kg?1), the coating formulations also included glycerol (about 300 g kg?1 protein) and either beeswax or a stearic–palmitic acid blend at a concentration of 0, 100 or 300 g lipid phase kg?1 of protein. All coatings, especially those containing 300 g kg?1 stearic–palmitic acid blend, successfully reduced water loss of the fruits. The edible coatings had a beneficial effect on the sensory quality of the cherries, and there were significant (p < 0.05) effects of the coating treatments on soluble solids, titratable acidity and pH. Thua nao, a traditional, proteolytic, fermented soybean condiment of northern Thailand, was prepared from cooked whole soybeans by natural flora fermentation. The microbial flora during the fermentation was dominated by Bacillus species. The formation of volatile compounds during the fermentation was studied. In addition, the volatile compounds of two samples of commercial dried thua nao and two samples of commercial Japanese natto were analysed. Fermentation led to a large increase in the concentration of total volatile compounds, from 35 µg kg?1 wet weight in cooked soybeans to 3500 µg kg?1 wet weight in 72 h fermented material. The major volatile compounds in fermented beans were 3‐hydroxybutanone (acetoin), 2‐methlybutanoic acid, pyrazines, dimethyl disulphide and 2‐pentylfuran. Sun drying of 72 h fermented material resulted in the loss of 65% of total volatiles, including important aroma compounds. The commercial dried thua nao samples had low concentrations of total volatile compounds (380 µg kg?1 wet weight). It is suggested that improved drying/preservation methods are needed to retain aroma compounds in the traditional products. The natto samples were devoid of aldehydes, aliphatic acids and esters, and sulphur compounds, whereas the thua nao samples contained a diversity of these compounds. Previous investigators have reported these compounds in natto and it is not possible to suggest the existence of systematic differences between the volatile compounds in traditional thua nao prepared with an undefined, mixed microbial flora and those in natto fermented with Bacillus subtilis. © 2001 Society of Chemical Industry  相似文献
