The purpose of this study was to identify the food habits of pregnant adolescents and their perception about which, of her cultural concepts, have higher influence. 54 subjects between 12 and 19 years old from Guadalajara City were included and socioeconomic, dietetic data, as food frequency consumption and cultural concepts about feeding were also explored. Chi square was used for identifying association between variables. The fat intake was lower in late vs. Early and middle stage of adolescence (57 vs. 71 g/d, p = 0.05). The iron, calcium and zinc intake was also deficient in the early/middle stage; meanwhile, the folic acid consumption was very low in the late stage of adolescence. Corn tortillas were the most consumed cereal and food (93-96%); junk food and sodas (62 and 55%) prevailed in the early/middle stage. About local costumes, "tacos", "pozole" and burgers were the most referred (74.1%). They also mentioned that fat (36.7%), junk food (30%), chili (26.7%), sodas (23.3%), processed meals (26.7%) and salt (10%) were harmful. They also believed that vegetables (77%), fruits (60 %), milk (21%), broths (17%), and meat (12.5%) were beneficial; and, 96% considered that chicken and bean broths were nutritious (myth). There were some prohibited foods (taboos) during pregnancy: chili (48%), junk food (20%), and salt (16%). Prejudices were more common among later adolescents (60.9%) (p = 0.03). The erratic food habits and the conceptual confusion of these adolescents cause a low intake of nutrients and place them in a nutritional risk.  相似文献

Data from a household expenditure survey of 1,200 Manaus families performed by the Amazonas State Government in 1973-74 are analyzed by income group. The per cent frequency of families buying different foods and the daily per capita consumption of each were calculated. The daily per capita intakes of energy, protein, vitamin A, thiamine, riboflavin, nicotinic acid, ascorbic acid, calcium, phosphorus, iron and zinc were estimated and their adequacy evaluated. In contrast to the south and northeast of Brazil, the main bulk of the diet was derived from cereals and fish. The quantities of eggs, meats, fruit and vegetables consumed per person, increased 50-100% as income improved, whereas fish consumption decreased 30%. The nutrients quantitatively most deficient were zinc, vitamin A, calcium, thiamine and riboflavin, with 60-80% of low and middle income families not achieving safe levels of intake for zinc and vitamin A. The beneficial effect of income on the adequacy of calcium, thiamine and riboflavin intake was quantitative. For zinc and vitamin A, increased income was associated with a qualitative improvement in the diet, principally due to the increased consumption of meat and liver. These results are discussed in relation to existing clinical evidence of deficiency states in the region.  相似文献

In order to identify risk of inadequate intake of calories and nutrients during pregnancy, 75 pregnant adolescents (14 to 18 years old) apparently healthy, from low socioeconomic level, in their first prenatal control (12 weeks) were studied by two 24 hour recalls and a food frequency questionnaire at each trimester. Nutritional status was assessed by body mass index (pregestation weight/height) and classified according to American Medicine Institute reference. Paired t-test, frequency distribution and ANOVA were used for statistical analysis. Low weight was found in 34.6% of adolescent at the first visit and 5.3% were overweight. Even though, caloric intake was below recommendation, significant increases were observed between first and second trimester for energy, carbohydrates, niacin and zinc (p < 0.001) and for fat, proteins, riboflavin, thiamin, vitamin C, calcium and iron (p < 0.05). From second to third trimester, differences (p < 0.05) were significant only for vitamin A. Between first and third trimester, differences were significant (p < 0.05) for energy, proteins, carbohydrates, niacin, riboflavin, zinc and for thiamin, vitamin A and calcium (p < 0.05). A high proportion of pregnant adolescent did not reach recommendations for energy, folate, calcium and zinc. Food intake pattern did not change significantly among trimesters. Mean total weight gain was 9.2 kg and 0.412 +/- 0.4 g/week. Newborn's mean weight was 3.221 +/- 418 grams. It is concluded that adolescents are at high nutritional risk and deficiency of dietary intake should be followed. Attention should be addressed from the preconceptional period to postpartum in order to improve maternal and fetal conditions.  相似文献

Preoccupation to define the nutritional status of Puerto Rican families migrating to the United States, motivated the present research. A total of 526 families residing in the South Bronx, New York, and four communities in Puerto Rico, were therefore studied. Results in regard to nutrient intake suggest that the mothers' diets appear to be adequate in the South Bronx as well as in Puerto Rico, except in iron consumption, in the latter. Furthermore, the data show an apparent tendency to overconsumption of certain foods in both the South Bronx and Puerto Rico, particularly of the protein group, as well as a high consumption of sugar and carbonated beverages in Puerto Rico. Dietary data were corroborated through nutritional anthropometry, conforming a tendency for overweight and obesity among the women studied. Detailed information on the dietary changes occurred during the last five years, is provided. Educational programs such as EFNEP, availability of new foods, and the food preferences of children in their homes, seem to be influencing factors in the dynamics of food modifications within societal groups in transition.  相似文献

This paper, using the nutrient density concept and the development of Food-Based Dietary Guidelines (FBDG), explores the nutritional adequacy of food patterns based on the main staples around the world--maize, wheat, rice and potato. The nutritional adequacy of the vitamins A, C, folates and the minerals iron, zinc and calcium in diets composed by these staples is analyzed. Projected diets modified by the addition of foods high in vitamins and minerals, based on food table composition information, are analyzed for changes in nutritional adequacy, in order to cover the nutritional requirements of all family members. This theoretical exercise shows that diets diversified by the addition of relatively small quantities (27-70 g) of foods like fruits, vegetables, legumes and meat improve substantially the nutritional adequacy of the vitamins A, C, folates, iron and zinc. In the case of calcium, the addition of a dairy source becomes essential. From the practical point of view, the implementation of the food based approach requires a national effort in order to support the production of nutrient rich foods and to promote consciousness of nutrient bioavailability, so that people may obtain all nutrient potential from foods. Simultaneously, the need of fortification programs at the national level is recognized. This is the case for critical nutrients, where requirements might be above the potential in available foods. A similar situation occurs in the case of vulnerable groups like pregnant women and infants, who need supplementation to ensure nutritional adequacy of their diets. In conclusion, the use of FBDG is a good alternative for improving the nutritional adequacy of diets based predominantly on staple foods. However, food fortification and supplementation programs directed to vulnerable groups are necessary and complementary practices to the FBDG implementation.  相似文献

Evolution of food and nutrient intake patterns in urban San José, Costa Rica, during the last decade, was studied comparing data from the last two national surveys (1978, 1982) and 1987 data obtained from 5 families previously included in the 1982 survey. Total food and nutrient intake was found to be similar to the 1982 results, although the pattern was altered, with a substantial decreased contribution of milk products to both energy and protein intakes. A small but constant decrease in the intake of more than half of the foods registered was also observed. Nevertheless, the nutritional adequacy of energy (from 100 to 78%), retinol (from 83 to 69%), riboflavin (from 94 to 63%), iron (from 106 to 69%) and niacin (from 103 to 81%), were found to be significantly lower than in previous years. The findings herein reported suggest that the effects of the economic crisis initiated in 1980 on food availability, could well be showing a time lag.  相似文献

The objective of this study was to evaluate the changes of dietary intake and quality of the diet in patients undergoing gastric bypass and sleeve surgery. In 36 women with severe and morbid obesity it was assessed their nutrient intakes and dietary quality before and 6 months after bariatric surgery through three-day food records. Vitamin and mineral intakes from supplements were strictly controlled. Energy and nutrient intakes were significantly decreased 6 months after surgery bypass compared to the pre-surgery period with the exceptions of calcium and vitamin C. No differences were observed between groups. The Dietary quality index was also similar in both groups. Dietary intakes of calcium, iron, zinc, copper, folic acid, vitamin C, and vitamin E were below 100% of adequacy from at the 6th month after the surgery. Nevertheless, by considering both diet and supplements supply, nutrient adequacy of all but calcium and folic acid was above 100% in both groups. Gastric bypass patients presented greater values. In conclusion, these patients present an important reduction of their energy and nutrient intakes, with no major impact of the type of surgery. Supplement characteristics are crucial to cover nutritional needs.  相似文献

This study deals with the development of a method to identify typical food dishes, successfully applied in the State of Sonora, Mexico. The State was divided into six regions considering the size of the territory and existence of different physical, economic and sociocultural conditions, and how they influence the consumption patterns. A list of 66 regional food dishes was prepared by interviewing housewives from different parts of Sonora who now lived in the city of Hermosillo. From this list, 47 dishes were identified as regionally consumed, and a State-wide survey was performed to determine their frequency of consumption. Based on the categories of "very frequently", "frequently" and "less frequently", a group of 15 dishes (2 per region, plus 3 dishes throughout the State) was selected. A questionnaire was used to obtain the different ways they had of preparing them. The "typical recipe" for each dish was also determined, using the mode as statistical parameter. Samples of these food dishes were prepared at the laboratory following the selected home recipes for proximal analysis and determination of their vitamin A, thiamine, riboflavin, niacin, calcium, phosphorus and iron content. The results showed that a portion of "gallina pinta" contributed more than 25% of the daily recommended intake established by the National Institute of Nutrition "Salvador Zubirán" (INNSZ) for an adult man for energy, protein, iron, niacin and 24.3% thiamine and 21.0% calcium. The objective of this study was to evaluate the energy intake of obese and normal nutritional status preschoolers, from four to five years old, attending several day care centres (JUNJI), in the eastern area of Santiago. The sample comprised 85 normal nutritional status and 35 obese children, representative of a population of 450 children. The food intake was evaluated twice a week and on one weekend day. At the day care centre, food intake was measured by food weighing and at the home; it was measured by food-recording. FAO 2001 energy requirements were used to calculate the energy requirements of the children. In both obese and normal nutritional status, energy intake was similar in the educational institution and home, although this energy intake corresponds to there meals time at JUNJI and only one serving at home. In respect to energy requirements of preschool children, both obese and normal nutritional status boys are at energy balance during the week (90 versus 110%). In the corresponding female groups, energy intake exceeds their energy requirement (116 and 111% respectively). In conclusion, energy intake at home, is greater and of minor quality, situation that worsens over the weekend in all preschoolers, independently of their nutritional condition (energy adequacy > 114%).  相似文献

The objective was to assess food consumption among children attending non-profit nurseries in the Federal District, Brazil.A representative sample was obtained and stratified by income. Food intake among 678 children, between 4 and 82 months old, was analyzed in nine nurseries using the 24-h dietary recall and direct food weighing methods. In children under 13 months old mean intake was above AI between 93.6 to 100% for carbohydrates, proteins, vitamins B1, B2, B12, B6, and zinc. In children from 7-12 months 56.5% presented iron consumption below EAR. Calcium intake was above AI for 35.4% of children over 1 year old. For vitamins with EAR values, the prevalence of inadequate consumption was 53.2% for vitamin E, and 90% for folate for children over 12 months old. Iron and zinc intake was above UL for 6.4% and 32.5% of children under 1 year old, and 1.5% and 5.3% for the remaining children, respectively. Lipid percentage distribution range among children between 13 and 47 months old was within the acceptable range for only 16.2%. Nonetheless, children between 36 and 82 months of both genders presented mean intake below energy requirements. Inadequate consumption observed for some nutrients points to the need for improvements in the standard of meals and nutritional assistance offered to children enrolled in charitably run nurseries in the Federal District.  相似文献

ABSTRACT: BACKGROUND: Food Frequency Questionnaires (FFQs) are commonly used in epidemiologic studies to assess long-term nutritional exposure. Because of wide variations in dietary habits in different countries, a FFQ must be developed to suit the specific population. Sri Lanka is undergoing nutritional transition and diet-related chronic diseases are emerging as an important health problem. Currently, no FFQ has been developed for Sri Lankan adults. In this study, we developed a FFQ to assess the regular dietary intake of Sri Lankan adults. METHODS: A nationally representative sample of 600 adults was selected by a multi-stage random cluster sampling technique and dietary intake was assessed by random 24-h dietary recall. Nutrient analysis of the FFQ required the selection of foods, development of recipes and application of these to cooked foods to develop a nutrient database. We constructed a comprehensive food list with the units of measurement. A stepwise regression method was used to identify foods contributing to a cumulative 90% of variance to total energy and macronutrients. In addition, a series of photographs were included. RESULTS: We obtained dietary data from 482 participants and 312 different food items were recorded. Nutritionists grouped similar food items which resulted in a total of 178 items. After performing step-wise multiple regression, 93 foods explained 90% of the variance for total energy intake, carbohydrates, protein, total fat and dietary fibre. Finally, 90 food items and 12 photographs were selected. CONCLUSION: We developed a FFQ and the related nutrient composition database for Sri Lankan adults. Culturally specific dietary tools are central to capturing the role of diet in risk for chronic disease in Sri Lanka. The next step will involve the verification of FFQ reproducibility and validity.  相似文献

ABSTRACT: BACKGROUND: The food group intake patterns of low income Hispanic and African American preschool children are not well documented. The aim of this study was to perform a food group intake analysis of low income minority preschool children and evaluate how macronutrient and micronutrient intake compares to Dietary Reference Intakes (DRI). METHODS: A cross sectional study design using three-day food diaries analyzed by dietary analysis software (Nutrient Database System for Research) was used. Children were recruited from well-child clinics at Children's Healthcare of Atlanta at Hughes Spalding and North Dekalb Grady Satellite Clinic, Atlanta, GA. Low-income, African American and Hispanic preschool age children (n = 291) were enrolled. A total of 105 completed the 3-day food diaries were returned and analyzed. Chi-squared tests were used to assess demographic variables. The mean percentage of intake per day of specific food groups and sub-groups were obtained (servings of given food group/total daily servings). Food intake data and proportion of children meeting DRIs for macro- and micronutrients were stratified by race/ethnicity, nutritional status, and caloric intake, and were compared using t-tests. Regression models controlling for age, BMI and sex were obtained to assess the effect of total caloric intake upon the proportional intake of each studied food group. RESULTS: The mean age of African American children was 2.24 [PLUS-MINUS SIGN] 1.07 years and Hispanic children 2.84 [PLUS-MINUS SIGN] 1.12 years. African Americans consumed more kcal/kg/day than Hispanics (124.7 [PLUS-MINUS SIGN] 51 vs. 96.9 [PLUS-MINUS SIGN] 33, p < 0.05). Hispanics consumed more fruits (22.0 [PLUS-MINUS SIGN] 10.7% vs. 14.7 [PLUS-MINUS SIGN] 13.7%, p < 0.05), while African Americans consumed more grains (25.7 [PLUS-MINUS SIGN] 7.8% vs. 18.1 [PLUS-MINUS SIGN] 6.4%, p < 0.05), meats (20.7 [PLUS-MINUS SIGN] 9.0% vs. 15.4 [PLUS-MINUS SIGN] 6.1%, p < 0.05), fats (9.8 [PLUS-MINUS SIGN] 5.4% vs. 7.0 [PLUS-MINUS SIGN] 5.8%, p < 0.05), sweet drinks (58.7 [PLUS-MINUS SIGN] 17.1% vs. 41.3 [PLUS-MINUS SIGN] 14.8%, p < 0.05) and low-fat dairy products (39.5 [PLUS-MINUS SIGN] 19.3% vs. 28.9 [PLUS-MINUS SIGN] 12.6%, p < 0.05). Among Hispanics, the proportional intake of fruits, fats and grains varied by total caloric intake, while no difference by total caloric intake was found for the dietary patterns of African Americans. Micronutrient intake also differed significantly between African American and Hispanic children. CONCLUSIONS: Food group intake patterns among low-income children differ by ethnic group. There is a need for more research to guide program design and target nutritional interventions for this population.  相似文献

Food consumption data of Flemish women of reproductive age collected in 2002 showed a large deficit for ALA and n-3 LC PUFA compared to the recommendations (mean ALA and EPA + DHA intake 1.4 g/day and 209 mg/day, respectively) and indicated a need to tackle the problem of low n-3 PUFA intake. Another recent Belgian study demonstrated that enrichment of commonly eaten food items with n-3 PUFA provides the opportunity to increase the n-3 PUFA intake up to 6.5 g/day and decrease the n-6/n-3 ratio. Since a large supply of n-3 PUFA supplements and n-3 PUFA enriched foods exists on the Belgian market, this study aimed at assessing the influence of these products on the n-3 LC PUFA intake for Flemish women of reproductive age. It was found that n-3 supplements are consumed by 5% of the Flemish women. Of all the n-3 PUFA enriched foods on the Flemish market, margarines and cooking fat are most frequently consumed by young women. The results indicated that a big gap remains between the EPA&DHA intake (mean = 276 mg/day) and the recommendation. Seafood remains the most important source of EPA&DHA. Only 11.6% of the population sample reached an intake level of 500 mg EPA&DHA per day. The study showed that other strategies will be needed to increase the EPA&DHA intake in the long term.  相似文献

Changes in household food availability from 1988-1997 obtained in a representative sample of Metropolitan Santiago were assessed; and related to observed changes in the epidemiological profile. We evaluated expenditures in food and beverages from the IV and V Household Expenditure Surveys conducted every 10 years by the National Institute of Statistics to calculate the Consumer Price Index. Food items were similarly grouped and expenditures from both surveys adjusted to concordance by assigning prices according to of food; the units consumed outside and at home were determined. Food expenditures increased, leading to greater food availability in all households and income categories; the increment was largest in the poorest quintiles. Apparent consumption of processed cereals, pastries and baked goods, poultry and pork, processed dairies, beverages and juices, dressings and mayonnaise, pre cooked meals and meals consumed "out of home" increased. Fish, vegetables and fruits increased slightly with a concomitant decrease in legumes. The present dietary pattern is also characterized by a greater availability of animal food products and processed foods; increased energy density, fat and saturated fat energy, sugars and high glycemic index foods; lower in phytochemicals, antioxidants, dietary fiber and omega-3 fatty acids. These changes are probably having a significant impact on the epidemiological and nutritional profile of the country; as manifested by an epidemic increase in obesity and chronic disease burden related to diet and physical inactivity.  相似文献

A nutritional survey was conducted in an urban public maternity hospital, Hospital Gineco-Obstétrico Isidro Ayora (HGOIA), located in Quito, Ecuador. Seventy-four primiparas in the third trimester of pregnancy were recruited to assess the influence of sociedemographic factors on food patterns and nutrient intake, and the interrelationship between prenatal nutrient intake, maternal weight gain and pregnancy outcome. Results of the regression analysis indicated that maternal education was the factor most strongly associated with nutrient intake, followed by monthly per capita income. Maternal nutrient intake was next analyzed and compared with the WHO (1974, 1985) and NRC (1980) recommended daily allowances. Results also indicated the average daily intake of energy, protein, phosphorus, vitamins C and A, thiamine, riboflavin, and niacin met or exceeded the recommended daily allowances. Dietary calcium and iron intake, however, were below recommendations. Sodium and fat intake were both relatively high. Higher dietary fat intake was associated with increased birth weight, while lower protein intake was associated with increased risk of delivering a low-birth weight baby. Maternal weight gain during the third trimester predicted baby birth weight and height but not head circumference.  相似文献

From the nutritional point of view, soybeans can play a significant role in at least three aspects: as a source of supplementary and complementary protein, as a source of calories, and as a source of nitrogen. The protein role is probably the most important for food systems of developed and underdeveloped populations, while the role as a source of protein and calories applies more to food systems of developing populations. Soy protein efficiently supplements cereal grain protein, because it corrects the lysine deficiency of cereals. In some cases, for example with maize, it also corrects the tryptophan deficiency. On the other hand, the essential amino acid pattern of soybean protein complements that of other protein sources, for example cereal grains, cottonseed flour, and, in general, lysine deficient protein sources. This makes feasible the preparation of foods of optimum protein quality and of a high protein content. Because of its quality, soybean protein can replace animal protein without a significant decrease in nutritive value, for example as milk and meat extender; for diets low in quantity and quality of protein and deficient in calories, soybeans, as full-fat flour, provide both. Because of cultural eating habits, it is difficult to conceive the use of soybeans as complete substitutes of common beans; therefore, efforts should be made to use soy protein in combination with common foods used by populations to whom soybeans are foreign food. Examples of the nutritional benefits derived from the use of soybean protein as flour or protein concentrate or as full-fat soybean flour are given, particularly for foods consumed in Latin American countries. Besides the role soybeans play in human foods, they also play a significant role in the animal industry as a very important component of diets. The efficiency of the swine and poultry industry would be lower if it were not for the nutritional contribution of soybeans.  相似文献

One hundred and ninety-eight 24 h-recall questionnaires from pregnant attendees of the public health services in Rio de Janeiro, Brazil, were analyzed, using 5 different Food Composition Tables. The differences in calculated intakes were as high as 88% (793 to 1494 micrograms RE). The differences were significant at the 5% level using Fishers test. The INCAP table was considered more adequate because it gives more attention to the different conversion factors for carotenoids. However, the INCAP Table does not include several foods frequently consumed in Brazil, neither does it show values for culinary preparations and industrialized foods. This study shows that there is a need to improve the tools to evaluate vitamin A intake if we wish to assess nutritional risk in populations.  相似文献

Nutrient composition in foods is necessary for the determination of nutrient intake. Food composition tables used for dietary studies in Mexico do not have information of zinc, iron and copper; when present the values have been extrapolated from laboratory analysis carried out with foods in other countries and regions of the world. In this study zinc, iron, and copper content of 104 plant foods and 32 animal foods was determined. The procedure used was atomic absorption spectrophotometry for the minerals. Foods were grouped into cereals, vegetables, fruits, legumes and animal foods. Zinc content ranged from 0.018 mg/100 g for strawberry to 9.193 mg/100 g for beef. Iron content ranged from 0.113 mg/100 g for yogurt to 19.82 mg/100 g for a commercial cereal which had minerals added during processing. In some foods copper was not found and the highest content was 3.371 mg/100 g in beef liver. This study has provided information on zinc, iron and copper content of the most commonly consumed foods in Mexico.  相似文献

Food consumption and nutritional status were evaluated on 419 children having meals at school located in the surrounding of Santa Fe (Argentina). The protein, energy and calcium content of the meals were analyzed. Anthropometrical evaluation was made by the following indicators: weight to age, height to age and weight to height. Biochemical evaluation to a sample of the children, was made by urea/creatinine and calcium/creatinine indicators. Recommended protein consumption is achieved but a biological efficiency loss is detected, probably due to an insufficient energy intake. School meals provide about 50% of the daily energy requirements. Regarding calcium consumption, the dinner cover about 15% of the recommendations but they achieve 47-49% with the cup of milk. As in the case of energy, the calcium daily intake is insufficient as we can see by the calcium/creatinine indicator which shows that a 60% of the people are below of the normal values. All these results suggest that is necessary to increase the energy intake and calcium consumption to improve the nutritional status.  相似文献

The aim of this study was to compare plasma concentrations of vitamin A in 710 women after delivery, with a simplified Food Frequency Questionnaire (FFQ). Vitamin A was determined in plasma, by HPLC. The FFQ included 55 foods, and was based on the typical diet of the low socioeconomic families in the Southeast of Brazil. For calculation purposes, first were identified all potential sources of retinol and carotenoids; the portion sizes being assigned to each food item on the basis of a previous study in the same area. Daily, weekly and monthly frequencies of consumption of foods with high, moderate and low concentrations of vitamin A were grouped according to the IVACG recommendations (1) in usual pattern of food consumption (UPF) scores. Pregnant women were allocated by these scores in 3 different categories (high, moderate and low) according to their risk of developing vitamin A deficiency. The categories of risk were based on the safe level of vitamin A intake of 800 RE/day (5600 RE/week) (7) and the basal requirement of 370 RE/day for pregnant women (8). 1.3% of the women had plasma concentrations of vitamin A < or = 0.70 mumol/l, 10.2% between 0.71-1.05 mumol/l and 88.5% > 1.05 mumol/l. According to the score categories, 49.5% of the women were at low risk for vitamin A deficiency, and 50.5% were at moderate risk. There was a weak statistically significant correlation between the plasma concentrations of vitamin A and the score categories (r = 0.11; p = 0.005). Our results indicate that the FFQ does not provide a very precise information on vitamin A status, probably because of the day to day variation in vitamin A intake, and the insensitivity of plasma concentrations to consumption of vitamin A. However, by using a simple score based on the FFQ, we were able to predict that the majority of the mothers were not at high risk for vitamin A deficiency.  相似文献
