Although phenolics are recognized to be related with health benefits by limiting lipid oxidation, in wine, they are the primary substrates for oxidation resulting in the quinone by-products with the participation of transition metal ions. Nevertheless, high quality Port wines require a period of aging in either bottle or barrels. During this time, a modification of sensory properties of wines such as the decrease of astringency or the stabilization of color is recognized to phenolic compounds, mainly attributed to anthocyanins and derived pigments.The present work aims to illustrate the oxidation of red Port wine based on its phenolic composition by the effect of both thermal and oxygen exposures. A kinetic approach toanthocyanins degradation was also achieved. For this purpose a forced red Port wine aging protocol was performed at four different storage temperatures, respectively, 20, 30, 35 and 40 °C, and two adjusted oxygen saturation levels, no oxygen addition (treatment I), and oxygen addition (treatment II). Three hydroxycinnamic esters, three hydroxycinnamic acids, three hydroxybenzoic acids, two flavan-3-ols, and six anthocyanins were quantitated weekly during 63 days, along with oxygen consumption. The most relevant phenolic oxidation markers were anthocyanins and catechin-type flavonoids, which had the highest decreases during the thermal and oxidative red Port wine process. Both temperature and oxygen treatments affected the rate of phenolic degradation. In addition, temperature seems to influence mostly the phenolics kinetic degradation.  相似文献

Aging is an enological technique usually employed with Vitis vinifera wines for improving and stabilizing wine sensory attributes like red wine color. However, red wines made from non-vinifera grape cultivars are considered not suitable for classic wine aging because they are prone to color loss during processing and storage, mainly due to the major occurrence of non-acylated anthocyanidin 3,5-diglucosides. The recently developed hybrid grape cv. BRS Violeta gives rise to deep red-purplish colored wines characterized by an important contribution of p-coumaroylated anthocyanidin 3,5-diglucosides. In this work, Violeta red wines were subjected to control (storage at 15 °C) and accelerated (storage at 25, 35 and 50 °C) aging for 120 days. Total phenolic content was only significantly decreased by 23% in accelerated aged wines at 50 °C, whereas antioxidant capacity was mainly reduced in the first 20 days of aging (around 35% for all the wines, except for 45% for wine aged at 50 °C) and then remained almost stable. In contrast, total anthocyanin content decreased following expected first-order kinetics and the variation of rate constants with regard to temperature fitted well with an Arrhenius-type equation. The calculated activation energy for disappearance of anthocyanins (47 kJ/mol) was close to the lower limit of the range of values reported for thermal degradation of anthocyanidin 3-glucosides. In addition, half-life values for p-coumaroylated anthocyanidin 3,5-glucosides of Violeta wine aged at 50 °C almost doubled those of their corresponding non-acylated derivatives. The latter result is suggested to be the main reason behind the relatively high resistance of Violeta wine towards the disappearance of anthocyanin under accelerated aging conditions. Finally, chromatic characteristics of Violeta wines did not significantly change their C* values during aging but L* and h* values increased as expected, the latter mainly due to higher increases of the yellow color component (b*) over lower decreases of the red color component (a*). These color changes were more drastic in the accelerated aged wines and the wine aged at 25 °C still maintained interesting color characteristics close to those of the control aged wine that did not change very much.  相似文献

The impact of high hydrostatic pressure (HHP) treatments on the phenolic compounds composition of a red wine was studied after storage in order to evaluate the potential of this technology as an enological practice. Red wines pressurized at 500 and 600 MPa at 20 °C for 5 and 20 min, respectively, showed a lower content of monomeric anthocyanins (13 to 14%), phenolic acids (8 to 11%), and flavonols (14 to 19%) after 5 months of storage, when compared to the unpressurized wine. These results, together with the different degree of tannin polymerization and flavan-3-ol content in the pressurized wines led to propose an effect of HHP in the increase of polymerization and cleavage reactions of proanthocyanidins. The sensorial analysis of pressurized wines showed lower astringency, a higher intensity of cooked fruit aroma and lower intensity of fruity notes, when compared with the unpressurized wine. These effects are associated to those observed during wine aging.Industrial relevanceDuring the last decade, the use of high hydrostatic pressure (HHP) as a non-thermal technology for food preservation and modification has increased substantially. Recently, pressure treatments have shown to influence long term red wine physicochemical and sensorial characteristics, leading to aged wine-like characteristics. Therefore, the use of HHP technology to modify wine composition could benefit the wine industry, especially to improve wines with low aging potential. This work shows that HHP can be potentially used as enological practice, modulating the organoleptic properties of wine by decreasing astringency and increasing pleasant aromas. It seems possible to exploit commercially the production of young red wines with distinct characteristics using this technology, addressing the market and consumer demand.  相似文献

The influence of the application of a continuous pulsed electric fields treatment (PEF treatment) to grape pomace on the evolution of colour and phenolic content of Cabernet Sauvignon red wines has been investigated. Wine from grape treated by PEF presented at the end of alcoholic fermentation higher colour intensity (CI), total polyphenol index (TPI) and total anthocyanic content (TAC) than control wine. This effect was observed even although maceration time for PEF wine was 48 h shorter than for control. Differences remained during malolactic fermentation and maturation. After 4 months of aging in bottle, CI, TPI and TAC of PEF wine were 38%, 22% and 11% higher respectively than the control. HPLC phenolic profiles of wines were qualitatively similar, without detecting a selective effect on any phenol. No significant differences in sensory attributes between wines were detected. Results indicate that PEF is a promising technology in red winemaking for reducing the maceration time and increasing colour and phenolic extraction.  相似文献

The two main phenolic compounds, namely anthocyanins and tannins, and some chromatic characteristics have been determined in 437 samples of red and white wines from northwest of Spain, which were commercialised in two consecutive years (2005 and 2006). The variation range for total polyphenol index (TPI) was 4.1–16.6 and 27.8–91.9 in white and red wines, respectively. Standard parameters were also investigated. The classification successful by Denominations of Origin was near 50% for both red and white wines. Statistical correlations among standard and colour parameters were established to find a simple methodology usually used in winery that permits to provide more complete information for the oenologist. So, a significant correlation was found for TPI or chromatic intensity and volume mass in red wines (0.547–0.583, P < 0.01), while tonality can be estimated from pH (0.601, P < 0.01). Liming soils is a common technique used in Brazil due to their acidity and deficiencies of calcium and magnesium. Therefore, the employments of amendments play a key role on the plant development. Looking for a model of agroecological production, the application of by-products of pyro-bituminous shale, as partial or total substitutive of conventional amendments, to grapevines and its effect on wine phenolic compounds have been evaluated. Field trials were aimed to compare the effect of different doses of conventional and limestone shale from by-products of pyro-bituminous. Applications of 0, 1000, 2000, 3000, 4000 and 0 kg ha 1 of limestone shale combined with 0, 3000, 2000, 1000, 0 and 4000 kg ha 1 of conventional shale were conducted in a two-year field trial, 2010 and 2011. Results revealed that climate conditions had a great influence on phenolic content of wines in both vintages. Hydroxycinnamic acids and stilbenes were the families less affected by the different amendment treatments applied to vines. Among flavonols, quercetin and myricetin were more susceptible compounds to some amendment treatments tested. Anthocyanins were the most affected group elucidating higher concentrations in wines from treated grapevines than those founded in control wines. Amendments treatments enhanced the content of some anthocyanins such as 3-O-glucosides of delphinidin, petunidin and malvidin, acetyl derivatives of petunidin, peonidin and malvidin, and p-coumaroyl derivative of peonidin. Although small differences were found among wines from grapevines with amendments treatments, it seemed that the combined used of conventional and pyro-bituminous shale gave better results.  相似文献

The phenolic and chromatic characteristics of dry red wines made from native Chinese species (Vitis amurensis and its hybrids, and V. davidii) and V. vinifera were evaluated by high-performance liquid chromatography/triple-quadrupole tandem mass spectrometry and spectrophotometer, respectively. V. amurensis and its hybrids wines had higher phenolic percentage of non-coumaroylated 3, 5-O-diglucosidic anthocyanins, V. davidii wines had higher phenolic percentage of coumaroylated 3, 5-O-diglucosidic anthocyanins, kaempferol-3-O-glucoside, and quercetin-3-O-rhamnoside, V. vinifera wines had higher phenolic percentage offlavan-3-ols and 3-O-monoglucosidic anthocyanins. Wines of native Chinese species had relatively higher blue % value and lower red % value. By the use of principal component analysis and Pearson correlation analysis, specific phenolic compounds could be recognized as phenolic fingerprints of different wines, which not only play an important role in wine differentiation, but also explain their chromatic differences.  相似文献

This study provides specific information about the influence of storage in bottle and in 225-L barrels made from oak (new and used for 1 year) and chestnut wood on color indexes, spectrophotometric evaluable polyphenols, anthocyanins, phenolic acids and gustative attributes of three monovarietal red wines (Piedirosso, Cabernet Sauvignon and Merlot). The results of the analysis of variance show that wood type has a significant influence on chromatic characteristics, on vanilline reactive flavans, on low molecular weight phenolics and on astringency of wines. The effect depends on the type of wine. Therefore, both traditional and alternative wood containers could be used as an instrument to regulate the polymerization, oxidation and copigmentation reaction of wine phenolics and the sensory properties of red wine. The maturation in chestnut wood could be an interesting challenge to widen the supply of red wines maturated in wood, but its use needs more care than oak.  相似文献

为探究东亚种红葡萄酒的颜色特征以及酚类物质轮廓,采用分光光度法、酶标仪和高效液相色谱-串联质谱(HPLC-MS/MS)技术分别对3款东亚种、3款欧亚种及2款杂交种(山葡萄×欧亚种)红葡萄酒的颜色和酚类物质组成进行分析,并对其花色苷衍生物进行鉴定。结果表明,与欧亚种红葡萄酒相比,东亚种红葡萄酒的辅色花色苷含量较高(55.63%~55.66%),而聚合花色苷含量较低(19.63%~27.01%),并且花色苷含量较为丰富(399.30~829.95 mg/L),以花色素-3,5-O-双葡萄糖苷为主(>97.50%),酰化花色苷较低(<21.78%)。花色苷衍生物检测结果表明,东亚种红葡萄酒中的花色苷与(表)儿茶素聚合产物和吡喃花色苷的含量极低(痕量水平)。东亚种红葡萄酒在非花色苷酚组成上的突出特点为单体和二聚体黄烷醇的含量极低,因此其对酒体颜色的潜在影响可能较小。  相似文献

The Brachetto variety is the most important aromatic red grape used for the production of sweet sparkling wines in Italy. The phenolic composition and chromatic characteristics were studied in base and red sweet sparkling wines made from this variety. The present work represents the first study on sparkling wines manufactured with Brachetto grapes. The amount of pigments extracted in the base wine was low as a consequence of the necessity for short maceration time (48 h) and low alcohol content (< 3.5% v/v). The second fermentation (prise de mousse) caused a pigment content decrease, accompanied by both a color intensity decrease and a tonality increase. In terms of phenolic compounds and chromatic characteristics, lightly sparkling wines (final bottle pressure < 1.7 bar) agreed with fully sparkling wines (final bottle pressure > 3.0 bar) at the end of the second fermentation and, therefore, the chromatic quality was independent on the winemaking methodology used, excepting for lightness and color intensity.Response surface methodology was applied to predict the effect of two independent variables, namely time and temperature of storing, on the phenolic composition and chromatic properties in both lightly and fully sparkling wines. So, it is possible to evaluate the development of two types of sweet sparkling wines during their ageing in bottle and their commercial shelf-life. A central composite design (CCD) and response surface methodology (RSM) were used for this purpose. Quantitative changes were observed in the color parameters. Although the time variable strongly influenced them, the two sparkling wines were stable enough only at low temperatures after 12 months of ageing. During the wine ageing in bottle, an increase in the formation of polymeric red pigments can be suggested taking into account the losses observed in monomeric anthocyanins. The results obtained showed that the color of fully sparkling wines was more stable than that of lightly ones and, therefore, the shelf-life of the former ones could be longer.  相似文献

In wine making, the redox phenomena are responsible for profound changes in the wine’s chemical composition. Twenty wines set has been selected trying to cover a wide range of behaviors against to oxidation–reduction phenomenon. Free SO2 level was adjusted to the maximum level found to avoid its influence from the wine oxidative trend. Samples of this set of wines were submitted to extreme conditions during 1 month. Samples were taken in different days for sensorial and chemical analysis. It is proved that red wines oxidation velocity is much higher than white wines. Aldehydes were quantified by gas chromatography–negative ion mass spectrometry (GC–NCI–MS) using a previous derivatization procedure. In conclusion, it can be said that the speed at which the sensory characteristics of wine changes are loosely related to the production of relevant odor active aldehydes, particularly to levels of methional and phenylacetaldehyde. In general, red wines produce those aldehydes during oxidation at a much higher speed than white wines, which is in agreement with the observed changes in sensory properties. However, it was not possible to find good correlations between sensory changes and aldehyde production within the red or white subsets.  相似文献

Caffeic acid and gallic acid were tested as inhibitors of the decrease of volatile acetate esters, ethyl esters and terpenes during storage of a white wine and a model wine medium. Wine and model wine samples were analysed by SPME along with GC–MS. At t = 0, no effect on the concentration of any volatile was observed as a result of adding each phenolic acid in any of wine or model wine samples. Many esters, such as isoamyl acetate, ethyl hexanoate, ethyl octanoate, ethyl decanoate, and linalool decreased during storage of Debina-white wine for up to 20 months. Caffeic acid and gallic acid at 60 mg/L inhibited the decrease of these volatiles. Isoamyl acetate, ethyl hexanoate and linalool decreased during storage of the model wine medium containing 0, 20 or 40 mg/L SO2. Caffeic acid and gallic acid inhibited the decrease of three volatiles; SO2 inhibited the decrease of isoamyl acetate and ethyl hexanoate. In some cases, SO2 increased the inhibitory action of two phenolic acids. The inhibitory action of caffeic acid and gallic acid was dose dependent in the range 0–60 mg/L. Caffeic acid was active at 7.5 mg/L while gallic acid at 15 mg/L.Present results indicate that caffeic acid and gallic acid may be taken into account as potent inhibitors of the disappearance of aromatic volatile esters and terpenes in wines at concentrations similar to those existing in wines.  相似文献

Phenolic profile, antioxidant activity, and color parameters of Polish wines, produced from the multispecies hybrid and Vitis vinifera L. grapes were analyzed. A principal component analysis was applied, in order to differentiate the investigated wines in terms of content of phenolic compounds. The white wines turned out to be similar to each other in terms of color parameters and the results of principal component analysis, while the red wines strongly differed in this respect. However, the white wine produced from the multispecies hybrid grapes contained a higher level of phenolic acids and flavonoids, as compared to the white wines obtained from the hybrid cultivars. Out of the red wines, Rondo wine, produced from the multispecies hybrid grapevine was the richest in total phenolic and phenolic acids content. Caffeic acid and quercetin were the predominant phenolics in majority of the wines tested.  相似文献

This study addressed four different labels of activated sodium bentonite during the fining of a young Valpolicella red wine. Preliminary tests determined the bentonite dose (0.15, 0.30 or 0.50 g L?1) that would achieve colloidal stability, and this dose was further applied during laboratory‐scale trials. The bentonites were characterised by physico‐chemical parameters, and the effects of the label and dose on the wine colloidal stability, proteins, colour indices and phenolic compounds were measured. The results demonstrated that 0.50 g L?1 for every bentonite label provided colloidal stabilisation without harshly affecting the colour. Unlike to what happens in white wines the least charged bentonite labels were effective at stabilising the red wine colloidal state by partially reducing its protein content. Simultaneously, the most negatively charged clay samples determined the largest depletions on the total polyphenols, anthocyanins, tannins and polymeric pigments. The differentiated action of clays with different surface charge density among white and red wines may be explained by the interaction mediated by positively charged anthocyanins towards either protein or tannin depletion. Although pioneering, these results may move towards the definition of a safe, allergen‐free, and effective adjuvant for colloidal stabilisation targeted to wine type.  相似文献

吡喃花色苷是近些年发现于果酒(如红葡萄酒)中的新型花色苷衍生物,是酒体最重要的呈色物质之一。吡喃花色苷家族具有第四个吡喃环的基本特征,是在发酵、陈酿过程中由浆果花色苷与葡萄糖发酵代谢的中间产物及(或)浆果中其他酚类成分经环加合反应形成的一系列天然色素物质。本文将系统介绍吡喃花色苷家族及其第二代衍生物家族的种类、分子结构、形成机制、稳定性与色度特征、抗氧化及抗肿瘤等生物活性。多种不同类型的吡喃花色苷家族不仅是重要呈色物质,而且具有较高的稳定性、良好的色泽特征及较强的功能活性,本文为进一步开展吡喃花色苷类衍生物的结构与其稳定性、色泽和功能性质关系的研究及其在葡萄酒产业和食品加工业中的应用提供有益的参考。  相似文献

ABSTRACT:  Phenolic compounds are responsible for the sensory properties of wine as well as the properties beneficial to human health. The objective of this study was to establish the effect of the use of SO2 and pectolitic enzymes in the prefermentative phase, maceration time, and oak aging on color, anthocyanins, tannins, (+)-catechin, (–)-epicatechin, rutin, trans -resveratrol, and quercetin content of Aglianico wine. Color indexes and phenolics were analyzed by HPLC and spectrophotometric methods. The addition of SO2 and pectolitic enzymes before fermentation caused an increase in color intensity, color stability, total phenolics, anthocyanins, (+)-catechin, (–)-epicatechin rutin, trans -resveratrol, and quercetin content in Aglianico wine. Longer maceration times gave wines richer in total phenolics and with better chromatic characteristics. Storage in oak caused a decrease in anthocyanins, (+)-catechin, (–)-epicatechin, trans -resveratrol, and quercetin content but an increase in total phenolic content, and a stabilizing effect on color also occurred.  相似文献

Micro-oxygenation (MOX) was applied to a red wine for 5 months following the end of alcoholic fermentation and then both a non-oxygenated control wine and the micro-oxygenated wine were matured in oak barrels or bottles. The concentration of anthocyanin and anthocyanin-derived compounds and the chromatic characteristics of the control and micro-oxygenated wines after the maturation period were studied. Anthocyanin and anthocyanin-derived compounds composition were determined by liquid chromatography-mass spectrometry; and, together with monomeric anthocyanins, compounds including direct anthocyanin-flavanol adducts, ethyl-linked anthocyanin-flavanol compounds, and pyranoanthocyanins were identified. The results showed that the improvements in the chromatic characteristics obtained by applying the MOX technique to Monastrell wines were maintained after an aging period in bottle or barrel. The color intensity of wines increased during maturation in oak barrels, whereas the color of the bottled wines decreased, although MOX wines always showed higher color intensity than the respective control wines. Bottled wines also showed a higher increase in tint and a lower quantity of compounds resistant to SO2 discoloration than oak matured wines, indicating that the formation of these compounds is favored by the oxidative conditions in oak barrels.  相似文献

The moderate consumption of red wine has been proposed to reduce the incidence of colorectal cancer. Its anti-cancer action my in part be mediated by the actions of polyphenols on colon cancer epithelial cells. We show that a red wine phenolic (50 μg/ml) extract devoid of anthocyanins (removed to reflect polyphenol bioavailability to the large intestine) and the major red wine flavonols quercetin, myricetin, laricitrin and syringetin (50 μM) are capable of inhibiting the proliferation of colorectal epithelial adenocarcinoma cells. This anti-proliferative activity was partly mediated by the direct cytotoxic actions of flavonols and also their ability to cause a significant cell cycle blockage in G2/M. The anti-proliferative effects induced by flavonols were preceded, in most cases, by a strong and significant reduction of cyclooxygenase-2 (COX-2) and cyclin D1 expression. These results indicate that the observed inverse correlation between colon cancer and a moderate red wine intake may be partly mediated by the actions of red wine flavonols on the growth of cancer cells.  相似文献
