甲壳类水产品因其丰富的营养价值而广受欢迎,但其可引起严重的过敏反应;致敏原的存在是制约甲壳类水产食品消费市场进一步发展的主要因素之一。美拉德反应广泛发生于水产品等食品加工及贮藏过程中,可影响食物的致敏性。本文首先对美拉德反应方法进行系统介绍;同时,从结构和抗原表位的角度阐述甲壳类水产品致敏原的研究进展;在此基础上,着重对甲壳类水产品致敏原经美拉德反应处理后致敏性变化及其作用机理进行综述。旨在为美拉德反应用于甲壳类水产品致敏性控制与消减提供参考。 相似文献

Food allergens have a notable potential to induce various health concerns in susceptible individuals. The majority of allergenic foods are usually subjected to thermal processing prior to their consumption. However, during thermal processing and long storage of foods, Maillard reaction (MR) often takes place. The MR is a non-enzymatic glycation reaction between the carbonyl group of reducing sugars and compounds having free amino groups. MR may sometimes be beneficial by damaging epitope of allergens and reducing allergenic potential, while exacerbation in allergic reactions may also occur due to changes in the motifs of epitopes or neoallergen generation. Apart from these modulations, non-enzymatic glycation can also modify the food protein(s) with various type of advance glycation end products (AGEs) such as N?-(carboxymethyl-)lysine (CML), pentosidine, pyrraline, and methylglyoxal-H1 derived from MR. These Maillard products may act as immunogen by inducing the activation and proliferation of various immune cells. Literature is available to understand pathogenesis of glycation in the context of various diseases but there is hardly any review that can provide a thorough insight on the impact of glycation in food allergy. Lipid oxidation and the Maillard reaction are probably the two most important reactions in Food Science. Both include a whole network of different reactions in which an extraordinary complex mixture of compounds are obtained in very different amounts and produce important changes in food flavor, color, texture, and nutritional value, with positive and negative consequences. This article analyzes the interactions between both reactions, with special emphasis in nonenzymatic browning development, by discussing the influence of lipid oxidation products in the Maillard pathway and vice versa, as well as the existence of common intermediates and polymerization mechanisms in both reactions. The existing data suggest that both reactions are so interrelated that they should be considered simultaneously to understand the products of the Maillard reaction in the presence of lipids and vice versa, and should be included in one general pathway that can be initiated by both lipids and carbohydrates. 相似文献

d ‐psicose (Psi), a rare ketohexose, improves food properties of proteins through the Maillard reaction (MR) much more than d ‐fructose (Fru). This encouraged us to investigate the improvement of food properties of proteins through MR with various rare ketohexoses (d ‐psicose, Psi; d ‐tagatose, Tag; and d ‐sorbose, Sor). The food properties of egg white protein (EWP) after reaction with Psi, Tag, Sor and Fru were studied. Psi‐EWP (43.3 μmol TE g?1) and Tag‐EWP (43.4 μmol TE g?1) had the highest antioxidant activity, followed by Sor‐EWP (38.4 μmol TE g?1) and Fru‐EWP (38.9 μmol TE g?1). MR enhanced the breaking stress of heat‐induced EWP gels by 224–267%. The breaking stress was higher in Psi‐EWP (81.1 kN m?2), Tag‐EWP (80.0 kN m?2) and Sor‐EWP (77.8 kN m?2) than in Fru‐EWP (71.6 kN m?2). Furthermore, the foaming capacity was highest in Psi‐EWP and Sor‐EWP. Rare ketohexoses improved food properties of EWP more than Fru. Overall, Psi offered the greatest functional improvement. 相似文献
