The effect of modified atmosphere packaging (MAP 1: 70% CO2/30% N2 and MAP 2: 50% CO2/30% N2/20% O2) and vacuum packaging (VP), on the shelf-life of chub mackerel (Scomber japonicus) fillets stored under refrigeration was studied. Quality assessment was based on sensory analysis and biochemical indices determination. Increase in total volatile basic nitrogen (TVBN) and trimethylamine nitrogen (TMAN) followed the order: MAP 1 < MAP 2 < VP < air (control samples). The presence of oxygen into the fish package (air or MAP) resulted in an increase in the 2-thiobarbituric acid (TBA) values in comparison with samples packaged in the absence of oxygen. The most effective MAP used was MAP 1 which contributed to a considerably slower rate of fish spoilage. Based primarily on odour scores it was observed that raw chub mackerel fillets stored in the presence of air remained acceptable up to ca. 11 days, VP and MAP 2 samples up to ca. 15–16 days, while MAP 1 samples up to ca. 20–21 days of storage. On the other hand, flesh texture and flesh colour of all packaged samples received scores above or equal than the acceptability limit up to ca. 13–14 days of storage.  相似文献

The storage stability of eviscerated Indian mackerel (Rastrelliger kanagurta) irradiated at a dose of 1.5 kGy and held under melting ice was examined. Packaging in polyethylene pouches prior to irradiation gave a shelf-life of 25 days, while, nonpackaged, irradiated fish remained in acceptable condition up to 20 days. The nonpackaged irradiated fish has less irradiation odor and better appearance as compared with packaged irradiated fish during the course of ice storage. Uni-radiated and nonpackaged mackerel kept in ice were acceptable only for 14 days. The results suggest that pre-irradiation packaging was not essential for commercially adequate extension in shelf-life of the iced fish.  相似文献

The effects of pressure (400, 500 and 600 MPa), dwell time (1 and 5 min) and temperature (25 and 75 °C) on microbial quality and protein stability of soymilk during 28 days of storage (4 °C) were evaluated under aerobic and anaerobic conditions. After processing and during storage, there were significant differences in total bacterial count (TBC), numbers of psychrotrophs (PSY) and Enterobacteriaceae (ENT), and protein stability between untreated (control) and pressurized samples (P < 0.05). Pressure applied at an initial temperature of 75 °C resulted in a greater suppression in growth of PSY compared to TBC. No ENT was detected in pressurized samples throughout the storage period tested. Dwell time had no significant effect on log reduction of TBC at 25 or 75 °C (P > 0.05). Pressure at 400 MPa (5 min), 500 and 600 MPa (1 and 5 min) produced 100% sub-lethal injury in surviving bacterial populations irrespective of temperature. After 28 days of refrigerated storage, both aerobic and anaerobic pressurized samples had better or similar stability as the control on day one of storage. Soymilk control samples were spoiled after 7 days whereas pressurization increased soymilk shelf-life by at least 2 weeks. Pressure (600 MPa) at 75 °C for 1 min not only significantly reduced initial microbial populations and increased the microbial shelf-life but also extended the protein stability of soymilk (P < 0.05).  相似文献

ABSTRACT:  The effects of modified atmosphere packaging (MAP) (30:40:30 O2:CO2:N2 and 5:95 O2:CO2) on the quality of 4 ready-to-cook seafood products were studied. In particular, the investigation was carried out on hake fillets, yellow gurnard fillets, chub mackerel fillets, and entire eviscerated cuttlefish. Quality assessment was based on microbiological and sensorial indices determination. Both packaging gas mixtures contributed to a considerable slowing down of the microbial and sensorial quality loss of the investigated seafood products. Results showed that sensorial quality was the subindex that limited their shelf life. In fact, based primarily on microbiological results, samples under MAP remained acceptable up to the end of storage (that is, 14 d), regardless of fish specie. On the other hand, results from sensory analyses showed that chub mackerel fillets in MAP were acceptable up to the 6th storage d, whilst hake fillets, yellow gurnard fillets, and entire cuttlefish became unacceptable after 10 to 11 d. However, compared to control samples, an increase in the sensorial shelf life of MAP samples (ranging from about 95% to 250%) was always recorded.
Practical Application: Modified atmosphere packaging (MAP) is an inexpensive and uncomplicated method of extending shelf life of packed seafood. It could gain great attention from the fish industrial sector due to the fact that MAP is a practical and economic technique, realizable by small technical expedients. Moreover, there is great attention from the food industry and retailers to react to the growing demand for convenience food, thus promoting an increase in the assortments of ready-to-cook seafood products.  相似文献

This research investigated the effect of gamma irradiation on anthocyanin extraction from grape pomace, and on inhibition of microbial growth and anthocyanin content during subsequent storage. The combination of four variables was investigated: (1) irradiation at doses from 0 to 9 kGy; (2) packaging under vacuum; (3) addition of a low dose of sodium metabisulfite during irradiation; and (4) extraction in the presence of SO2. Results indicate that the irradiation at 6 kGy, packaging in the presence of 0.1% sodium metabisulfite and extraction in the presence of 2000 ppm of SO2 yielded the highest value of anthocyanins, and improved shelf-life of grape pomace.  相似文献

 Whole fish and fillets of horse mackerel (Trachurus trachurus) and mediterranean hake (Merluccius mediterraneus) were assessed for quality (physical, chemical and sensory attributes) changes throughout 12 months of frozen storage at −18 °C. The pH, expressible water (EXW), quantities of trimethylamine (TMA), dimethylamine (DMA), formaldehyde (FA), the total volatile base nitrogen (TVB-N) the thiobarbituric acid number (TBA), peroxide value (PV) and amount of free fatty acids (FFA) increased, while sensory attributes (odour, taste, texture) decreased during the frozen storage period. A comparison of quality scores between whole fish and fillets of horse mackerel and mediterranean hake showed that there were no significant differences (P>0.05) in attribute scores. There were, however, significant differences (P<0.05) in pH, EXW, TMA, DMA, FA, TVB-N, TBA, FFA and PV. Received: 19 April 1996/Revised version: 7 September 1996  相似文献

Mackerel fillets were salted with NaCl and/or KCl to determine the most acceptable level by sensory evaluation. Additionally, the effects of ascorbic acid, vacuum packaging, and cold storages on lipid oxidation were determined for the salted mackerel fillets. Appropriate level of NaCl was ≤2%. Fifty percent replacement of NaCl by KCl reduced NaCl level with minimal impact on sensory quality. The higher the level of ascorbic acid (0–0.5%, weight basis), the higher the antioxidant effect observed with thiobarbituric acid value and peroxide value. There was no significant difference in sourness (α = 0.05) between the salted mackerel samples treated with and without ascorbic acid (0.25%). Vacuum packaging and storage at ?18 °C along with ascorbic acid was most effective in retarding lipid oxidation in the salted mackerel. Vacuum‐packaged sample with ascorbic acid stored at 2 °C was least oxidised, followed by vacuum packaging without ascorbic acid and then ascorbic acid without vacuum.  相似文献

This study was conducted to evaluate the inactivation effect of X-ray treatments on Escherichia coli O157: H7, Salmonella enteric (S. enterica), Shigella flexneri (S. flexneri) and Vibrio parahaemolyticus (V. parahaemolyticus) artificially inoculated in ready-to-eat (RTE) shrimp. A mixed culture of three strains of each tested pathogen was used to inoculate RTE shrimp. The shrimp samples were inoculated individually with selected pathogenic bacteria then aseptically placed in sterile plastic cups and air-dried at 22 °C for 30 min (to allow bacterial attachment) in the biosafety cabinet prior to X-ray treatments. The inoculated shrimp samples were then placed in sterilized bags and treated with 0.1, 0.2, 0.3, 0.5, 0.75, 1.0, 2.0, 3.0 and 4.0 kGy X-ray at ambient temperature (22 °C and 60% relative humidity). Surviving bacterial populations were evaluated using a non-selective medium (TSA) with the appropriate selective medium overlay for each bacterium; CT-SMAC agar for E. coli O157: H7, XLD for S. enterica and S. flexneri and TCBS for V. parahaemolyticus. More than a 6 log CFU reduction of E. coli O157: H7, S. enterica, S. flexneri and V. parahaemolyticus was achieved with 2.0, 4.0, 3.0 and 3.0 kGy X-ray, respectively. Furthermore, treatment with 0.75 kGy X-ray significantly reduced the initial microflora on RTE shrimp samples from 3.8 ± 0.2 log CFU g−1 to less than detectable limit (<1.0 log CFU g−1).  相似文献

The effects of vacuum packaging followed by high-energy electron beam irradiation on the shelf-life of fillets of rainbow trout (Oncorhynchus mykiss) were examined. Samples were irradiated at doses of 0.25, 0.50, 0.75, 1.0 and 2.0 kGy. The control and treated packs were stored at 3.5 °C for up to 28, 42, 70 and 98 days (control - 0, 0.25, 0.50 and >0.50 kGy respectively). The content of seven biogenic amines (putrescine, cadaverine, spermidine, spermine, histamine, tyramine and tryptamine) were determined. Putrescine, cadaverine and tyramine showed very good correspondence with the irradiation dose and organoleptic properties. Samples of good quality contained less than 10 mg/kg of each of these amines. The polyamines spermidine and spermine did not show statistically significant changes with the irradiation dose and the time of storage. With few exceptions, histamine was not detected in the samples treated with radiation. Tryptamine was not detected in any of the samples.  相似文献

The effects of vacuum packaging followed by E‐beam irradiation treatment on the shelf life of common carp (Cyprinus carpio) fillets were studied by measuring biogenic amines and sensory analysis. Samples were irradiated at doses of 0.10, 0.50, 1.0 and 2.0 kGy. Putrescine, cadaverine, histamine and tyramine showed very good correspondence with the irradiation dose and the time of storage. Spermine, spermidine, tryptamine and phenylethylamine did not show statistically significant changes with the time of storage. According to the sensory assessment and biogenic amines index (BAI), the shelf life of unirradiated common carp fillets was found to be approximately seven days. The 1 and 2 kGy irradiation doses extended the shelf life of samples up to 66 and 77 days, respectively. High values of correlation coefficients (r < ?0.86) between BAI and sensory evaluation indicated that BAI could be considered as a quality indicator of common carp fillets.  相似文献

Extra-cold storage (?30 and ?40°C) of mackerel (Scomber scombras) mince and fillets showed lower free fatty acid formation. Extra-cold storage (-30°C) of white hake (Urophycti tenuis) fillets produced fish with better quality based on sensory and chemical indices. The colder the storage temperature, the less firm the hake mince and fillets. Ascorbic acid accelerated cohesiveness development of mackerel mince and fillets. Over time, the quality of the hake and mackerel decreased according to sensory and chemical indices. They became tougher and generally more cohesive.  相似文献

为开发鲈鱼调理食品,解决其贮藏时间短的问题,以本实验室开发的调理啤酒鲈鱼片为对象,通过普通包 装(对照组)、真空包装和气调包装,测定其在4 ℃和-3 ℃条件下贮藏过程中的菌落总数、挥发性盐基氮(total volatile basic nitrogen,TVB-N)含量、硫代巴比妥酸(thiobarbituric acid,TBA)值、pH值、电导率、汁液流失 率,结合感官评价,探究不同包装方式的调理啤酒鲈鱼片在4 ℃和-3 ℃条件下的品质变化规律。结果表明:不同 包装方式的调理啤酒鲈鱼片在4 ℃或-3 ℃贮藏过程的汁液流失率、TVB-N含量、TBA值、电导率和菌落总数均随 贮藏时间的延长而呈增长趋势,-3 ℃ 贮藏过程增长较缓慢;pH值在贮藏初期降低而贮藏后期增高;感官评分呈 降低趋势。综合各项指标变化规律,调理啤酒鲈鱼片采用气调和真空包装的货架期优于普通包装,采用气调包装优 于真空包装,其货架期在4 ℃下可达12 d,比普通包装和真空包装分别延长8 d和4 d;货架期在-3 ℃下可达50 d, 较普通包装和真空包装分别延长35、15 d。与4 ℃贮藏相比,气调包装调理啤酒鲈鱼片在-3 ℃条件下能明显保持 产品的品质并延长货架期,可满足当前冰鲜流通和消费的需求,为调理啤酒鲈鱼片的开发提供技术依据。  相似文献

The combined effect of γ‐irradiation and refrigeration on the shelf‐life of vacuum‐packaged sea bream (Sparus aurata) fillets was studied by monitoring the microbiological, chemical and sensory changes of non‐irradiated and irradiated fish samples using low‐dose irradiation doses of 1 and 3 kGy. Fish species such as sea bream and sea bass are very popular in the Mediterranean countries due to their high quality characteristics, and their preservation is a constant challenge given their extreme perishability. Irradiation (3 kGy) dramatically reduced populations of bacteria, namely, total viable counts (3 vs 7 log cfu g?1) for the non‐irradiated samples, Pseudomonas spp (<2 vs 7.6 log cfu g?1), H2S‐producing bacteria typical of Shewanella putrefaciens (<2 vs 5.9 log cfu g?1), Enterobacteriaceae (<2 vs 6.0 log cfu g?1) and lactic acid bacteria (<2 vs 3.5 log cfu g?1) after 10 days of storage. The effect was more pronounced at the higher dose (3 kGy). Lactic acid bacteria, Enterobacteriaceae and H2S‐producing bacteria typical of Shewanella putrefaciens showed higher sensitivity to γ‐radiation than did the rest of the microbial species. Of the chemical indicators of spoilage, Trimethylamine (TMA) values of non‐irradiated sea bream increased very slowly, whereas for irradiated samples significantly lower values were obtained reaching a final value of 7.9 and 6.3 mg N per 100 g muscle at 1 and 3 kGy respectively (day 42). Total volatile basic nitrogen (TVB‐N) values increased slowly attaining a value of 67.3 mg N per 100 g for non‐irradiated sea bream during refrigerated storage, whereas for irradiated fish, lower values of 52.8 and 43.1 mg N per 100 g muscle were recorded (day 42). Thiobarbituric acid (TBA) values for irradiated sea bream samples were higher than respective non‐irradiated fish and increased slowly until day 21 of storage, reaching final values of 1.1 (non‐irradiated), 2.0 (1 kGy) and 2.2 mg malonaldehyde kg?1 muscle (3 kGy), respectively (day 42). Sensory evaluation showed a good correlation with bacterial populations. On the basis of overall acceptability scores (sensory evaluation) a shelf‐life of 28 days (3 kGy) was obtained for vacuum‐packaged sea bream, compared with a shelf‐life of 9–10 days for the non‐irradiated sample. Fresh cod fillets (Gadus morhua) were sprayed with a 10% acetate buffer (pH 5.6), packed with an industrial gas-flushing packaging machine under modified atmospheres (50% CO2-45% O2-5% N2, 2cm3/1g gas/ product ratio) and stored at 7oC for 12 days. Control cod fillets were directly packed and stored under the same conditions. A reduction of the aerobic plate counts was observed immediately after the cod fillets had been sprayed. During storage under modified atmospheres, there was complete inhibition of H2S-producing bacteria and Enterobacteriaceae in the treated cod fillets. Production of total volatile bases and trimethylamine (TMA) was inhibited in treated fillets for 10 days' storage under modified atmospheres. Inhibition of TMA production can be attributed to growth inhibition of H2S-producing bacteria, inhibition of the trimethylamine oxide (TMAO)-dependent metabolism of TMAO-reducing bacteria and the stable pH during storage. The shelf-life, at 7oC, of treated cod fillets, based on cooked flavour score, was almost 12 days, ca 8 days more than shelf-life of the control fillets.  相似文献

Commercial-sized meagre fillets were stored on ice at 4 °C for 18 days, in order to evaluate the loss of quality and freshness that occurs over this period of time. Physicochemical (pH, thiobarbituric acid (TBA), total volatile basic nitrogen (TVBN), trimethylamine (TMA), water activity, water-holding capacity, colour, texture and fatty acid profile), sensory and microbiological analyses were carried out at 0, 4, 7, 11, 14 and 18 days of storage. As part of the sensory analysis, attributes associated with fillet appearance, odour and texture were examined. Variations in pH, TBA, TVBN and TMA were observed throughout the storage period, although only TBA displayed a significant correlation with time (r = 0.96). L and b values increased, and the chroma and hue values decreased, reflecting the colour changes experienced by the fillets over time. With regards to the texture profile, hardness was significantly correlated with time (−0.68). All the sensory analysis attributes exhibited significant variations and correlations close to 1.00 with storage time, which is a reflection of the fillets’ loss of freshness. The correlation coefficients between aerobic mesophilic and psychrophilic bacteria, enterobacteria and coliform counts on the one hand and storage time on the other were also very high (0.99–1.00). A regression analysis using the acceptability limit set by the ICMSF standard (1986) for total aerobic mesophilic counts (7 log cfu/g) yielded a shelf-life for meagre fillets of 9 days. The TBA, sensory and microbiological analyses displayed very strong correlations with storage time, and they may be considered suitable indicators for evaluating meagre fillet spoilage during refrigerated storage.  相似文献

Physicochemical changes of ω − 3-enhanced farmed rainbow trout (Oncorhynchus mykiss) fillets developed by dietary modification with flaxseed oil and α-tocopheryl acetate (α-TA) were determined during storage at 2 °C. Trout were fed experimental diets for 120 days followed by processing to obtain boneless skinless fillets. The dietary modification increased concentration of total ω − 3 fatty acids in the fillets, which enhanced chances for lipid oxidation during storage. The fillets were vacuum or non-vacuum packed and stored at 2 °C for 10 or 12 days. Dietary α-TA resulted in higher (P < 0.05) concentration of α-tocopherol in fillets during storage; however, it did not retard (P > 0.05) lipid oxidation. Vacuum packaging resulted in much lower (P < 0.05) TBARS and higher (P < 0.05) retention of α-tocopherol during storage than non-vacuum packaging. However, α-tocopherol unlike vacuum packaging better protected ω − 3 FA in the fillets during storage.  相似文献

Salmon fillets were frozen either by pressure shift freezing (PSF, 200 MPa, − 18 °C or 100 MPa, − 10 °C) or by air-blast freezing (ABF, − 30 °C, 1 m/s or 4 m/s) or direct-contact freezing, and then stored at − 20 °C for 6 months. The influence of these treatments on the microstructure of Salmon fillets was studied. The equivalent diameter of the intracellular ice crystals were 14.69 ± 4.11, 5.52 ± 2.11, and 30.65 ± 6.31 μm for the samples subjected respectively to PSF at 100, 200 MPa and ABF (− 30 °C, 4 m/s) after 2 days of storage. Smaller and more regular intracellular ice crystals were observed in fillets frozen by PSF (200 MPa) compared with PSF (100 MPa), ABF and direct-contact frozen ones. Significant differences were observed between the size of the ice crystals obtained after conventional freezing process and PSF. Large and extracellular ice crystals were observed in fillets frozen by ABF (1 m/s) and direct-contact frozen. Minimal changes in the size of ice crystals were observed during a 3 months storage.

Industrial relevance

This paper compares different freezing methods and subsequent frozen storage with respect to their effect on microstructures of salmon fillets. Pressure shift freezing at 200 MPa was superior to conventional freezing regarding small and regular ice crystal formation. Interestingly, during frozen storage for up to 3 months the high quality product obtained via pressure freezing at 200 MPa could be retained. For longer storage periods lower pressures (100 MPa) seem sufficient to achieve stable ice crystals.  相似文献

以感官特性、菌落总数、汁液流失率、pH值、挥发性盐基氮(total volatile basic nitrogen,TVB-N)值及硫代巴比妥酸(2-thiobarbituric acid,TBA)值为评价指标,研究竹叶抗氧化物结合不同包装方式对鲜罗非鱼片保鲜效果的影响。结果表明,竹叶抗氧化物对鲜罗非鱼片具有良好的抗菌和抗氧化作用,0.1 g/100 m L竹叶抗氧化物处理的罗非鱼片比对照组货架期延长了4~6 d;竹叶抗氧化物结合真空包装或气调包装均能够明显抑制微生物生长繁殖,降低TVB-N值和TBA值,减缓感官品质的下降速率,延长货架期;冰藏条件下各组鲜度指标均明显优于冷藏条件,冰藏条件下0.1 g/100 m L竹叶抗氧化物结合真空包装或气调包装处理的罗非鱼片保鲜效果提高明显,货架期增加至18 d。研究表明,竹叶抗氧化物结合真空包装或气调包装在鲜罗非鱼片保鲜方面具有应用的潜力。  相似文献

In the present study the combined effect of an O2 absorber and oregano essential oil (0.4% v/w) on shelf life extension of rainbow trout fillets (Onchorynchus mykiss) stored under refrigeration (4 °C) was investigated. The study was based on microbiological [TVC, Pseudomonas spp., Lactic Acid Bacteria, H2S-producing bacteria including Shewanella putrefaciens, Enterobacteriaceae and Clostridium spp.), physicochemical (pH, PV, TBA, TVBN and Drip loss) and sensory (odor, taste) changes occurring in the product as a function of treatment and storage time. Aerobically-packaged rainbow trout fillets stored at 4 °C were taken as control samples. Results showed that TVC exceeded 7 log cfu/g on day 4 of storage for control samples, day 7–8 for samples containing oregano oil, day 9 for samples containing the O2 absorber and day 12–13 for samples containing the O2 absorber and oregano oil. Pseudomonas spp., Enterobacteriaceae and LAB were only partially inhibited by the O2 absorber and/or the oregano oil. In all cases the inhibition effect was more pronounced when the combination of O2 absorber with oregano essential oil was used. pH decreased from an initial value of 6.65–6.09 and subsequently increased to 6.86 due to formation of protein decomposition products. % Drip loss ranged between 7% and 11–12% at the end of the product shelf life. PV values ranged between 11.4 and 27.0 meq O2/kg oil while malondialdehyde (MDA) ranged between 9.6 and 24.5 mg/kg. TVBN ranged between 10.6 and 54.6 mg/kg at the time of sensory rejection. Sensory shelf life was 4 days for the control samples, 7–8 days for samples containing oregano oil, 13–14 days for samples containing the O2 absorber and 17 days for samples containing the O2 absorber plus oregano oil.  相似文献

建立鲈鱼片在空气和真空包装条件下基于脂肪氧化指标的货架期预测模型。将鲈鱼片经空气和真空包装后分别置于微冻(-2 ℃)、冰温(0 ℃)和冷藏(4 ℃)下贮藏,测定各温度下鱼片的酸价(AV)、过氧化值(POV)和硫代巴比妥酸(TBA)值,并进行感官评价。结果表明:真空包装可以有效的延缓鱼片在贮藏期间脂肪的氧化,且腹部鱼片比背部氧化更显著。基于空气和真空包装条件下鱼片脂肪氧化指标建立的鲈鱼货架期预测模型具有较高的拟合精度,预测值和实测值之间的相对误差均在±10.60%以内,且真空包装组所建立的三个值的预测模型平均相对误差较小,但普通包装组所得的货架期模型平均相对误差也在允许的范围内,这表明该模型能够很好地预测鲈鱼的剩余货架期。本研究结果为不同包装方式下鲈鱼剩余货架期的预测提供了理论依据。  相似文献
