The aim of this study was to investigate the effect of freeze‐drying, hot air‐drying and vacuum‐drying at 70, 90 and 110 °C, on dried lemon pomace polyphenols and antioxidant capacity. The total phenolic content and antioxidant capacity were higher in lemon pomace dried by hot air or under vacuum than those dried by freeze‐drying and increased as the temperature increased. The highest total flavonoid content was recorded in the pomace dried under vacuum at 70 and 90 °C. Lemon pomace dried by freeze‐drying had the highest neohesperidin content, whereas pomace dried under vacuum at 70 °C had the highest rutin and p‐coumaric acid content. The highest gallic acid content was recorded in the pomace dried by hot air at 110 °C. The results of this study indicate that drying technique should be carefully selected according to the bioactive compounds aimed to be extracted.  相似文献

Freeze, spray, vacuum, microwave vacuum‐ and microwave freeze‐drying were applied to Bifidobacterium animalis subsp. lactis INL1. Freeze and microwave freeze‐drying showed the highest survival after drying. When a storage test (25 °C; oxygen) was performed, these cultures were the most sensitive ones at aw = 0.23, but the addition of lactose improved their stability after 8 weeks. Flow cytometry was useful to assess viability after drying but not during storage. Our results show that dehydration technologies other than freeze‐drying might be suitable alternatives that deserve further investigation for the preservation of sensitive probiotic bacteria. Microwave drying rendered cultures of comparable characteristics to their conventional counterparts, requiring significantly shorter drying times.  相似文献

With the aim to develop natural preservatives displaying also chemopreventive activity, different Commiphora myrrha (Nees) Engl. extracts were studied. Myrrh essential oils, obtained by steam distillation and microwave‐assisted hydrodistillation, and several other extracts, obtained by sequential procedures with petroleum ether (PE), ethanol, ethyl acetate and butanol, have been screened for their antioxidant (DPPH· scavenging assay) and antiproliferative activity (on both nontumour and colon cancer cell lines) without previous purification. Considering that the colon cancer cell lines were more sensitive to PE and ethanol extracts, the latter of which showed the highest antioxidant activity (EC50 = 0.160 ± 0.008 mg mL?1), both have been selected for further antibacterial/antifungal activity tests using an antimicrobial diffusion test and a growth inhibition test on salads. Results showed that the ethanol extract possessed the higher antibacterial and antifungal activity. Compared to untreated product, fresh‐cut salads treated with these two myrrh extracts displayed a significant lower bacterial growth. Although further investigation is required, these promising results offer hints as how to improve the shelf life of fresh‐cut salad.  相似文献

The rice starch mixtures with varying amylose contents (AC) of 0.12–19.00% weight were prepared by mixing waxy and nonwaxy rice starches. The 5% rice bran oil shortening was added in the starch paste. After gelatinisation, thin slabs of starch pastes were aged at 4 °C for 24 h. The aged slabs were dried by freeze‐drying to obtain 25% moisture content. A microwave oven set to 600 J s?1 for 90 s was then used for puffing. The crucial factors affecting the snack purchase were texture and nutrition. The relative crystallinity and retrogradation enthalpy (?Hr) of freeze‐dried pellets increased with increasing the AC. From using a differential scanning calorimeter (DSC), endotherms of pellets were shown only when AC > 0.12%. An amylose–lipid complex was shown in pellets with AC ≥ 9.00%. Relationships between the AC and all puffed product properties were linear. Increasing AC provided greater hardness, fracturability, bulk density, but lower expansion ratio. From the sensory evaluation, the panellists preferred the puffed products with 9.00% AC. Increasing the AC gave higher crispness, hardness, brittleness, air cell opacity and density, but resulted in less puffiness. Thus, the microwave drying has the potential to puff a healthy expanded snack but giving the desirable properties depends on AC.  相似文献

Tropical fruits are rich in antioxidant and anticancer phytochemicals, but their nutraceutical potential could be enhanced by drying technologies. Mango cv. Ataulfo, papaya cv. Maradol and pineapple cv. Esmeralda ripe pulps were freeze‐dried (?42 °C, 0.12 torr, 48 h) and their physicochemical and phytochemical profile, radical scavenging and antiproliferative capacity evaluated. The content of soluble solids, phenolic compounds and ascorbic acid was higher in mango (16.1oBrix, 9.9 mg GAE per g and 9.6 mg g?1) than in papaya/pineapple, but the later had more flavonoids (0.45 ± 0.05 mg QE per g). A fruit‐specific phenolic profile was detected by HPLC‐ESI‐QTOF‐MS, being shikimic (mango), chlorogenic (papaya), and protocatechuic (pineapple) acids the most abundant. Mango was the strongest radical scavenger and showed antiproliferative capacity (IC50, μg mL?1) in RAW 264.7 (100.7), HeLa (193.1) and L929 (138.5) cell lines. Papaya and pineapple extracts showed no antiproliferative activity. Freeze‐dried mango is a ready‐to‐eat functional food with better cancer preventing properties than papaya or pineapple.  相似文献

Three different combined microwave (MW) drying methods were compared, namely microwave‐assisted vacuum drying (MWVD), microwave‐assisted freeze drying (MWFD), microwave‐enhanced spouted bed drying (MWSD), in terms of drying rate, drying uniformity, product colour, rehydration ratio, retention of βcarotene and vitamin C, and energy consumption. The drying rate of MWVD and MWSD were much faster than that of MWFD. The largest drying rate was obtained in MWSD with 3.5 W g?1. In general, the colour of MWSD products was very uniform. Rehydration ratio of MWFD carrot pieces was almost the same as the freeze‐dried (FD) products and better than MWVD and MWSD products. In addition, the highest retention of carotene and vitamin C was observed in MWFD carrot pieces. No significant differences were observed in carotene and vitamin C between MWVD and MWSD products. However, the energy consumption in MWFD was the highest.  相似文献

Antioxidant properties of aqueous extracts from Lentinus edodes treated with UV‐B irradiation were examined in vitro systems including DPPH, ABTS and oxygen radical absorbance capacity (ORAC) assays and in riboflavin‐photosensitised oil‐in‐water (O/W) emulsions. Changes in total phenolics, total flavonoids and vitamin C were also analysed. Lentinus edodes receiving 25 kJ m?2 UV‐B treatment showed high radical scavenging ability based on DPPH and ABTS assays compared with samples with 0, 50 and 75 kJ m?2, while those with 50 kJ m?2 had higher antioxidant capacities than other samples from ORAC assays. Samples with 25 kJ m?2 UV treatment had significantly 7.1% higher total phenolic content, 12.0% higher total flavonoid content and 8.0% higher vitamin C content than UV‐B‐untreated sample (< 0.05), respectively. In O/W emulsions under riboflavin photosensitisation, 25 and 50 kJ m?2 UV treatment significantly increased the oxidative stability compared with other samples based on headspace oxygen content and lipid hydroperoxide analyses (< 0.05). Aqueous extracts of UV‐B‐treated mushrooms possessed enhanced antioxidant properties compared with untreated mushrooms.  相似文献

ABSTRACT

This paper focuses on the effects of three thermal drying methods (microwave‐, oven‐ and sun‐drying) and one nonthermal drying method (freeze‐drying) on the AOP of leaves of Vitex negundo and Vitex trifolia, which are consumed traditionally as herbal tea. Microwave‐drying and freeze‐drying were found to be able to maintain the AOP of the leaves but oven‐drying and sun‐drying resulted in deterioration of AOP. Microwave‐drying has the advantage of short drying time and low water activity. AOP of Vitex herbal tea leaves that are microwave‐dried and freeze‐dried were not affected by storage up to 30 days.

PRACTICAL APPLICATIONS

Tea, one of the most widely consumed beverages apart from water, has long been known for its health‐promoting benefits in terms of its antioxidant properties due to its high phenolic content. Much of such studies, however, focus on green tea (Camellia sinensis). Although V. negundo and V. trifolia have been consumed traditionally as herbal tea, understanding of its antioxidant properties remains scarce. Drying serves as a vital part of tea processing, affecting its antioxidant content and appearance which in turn affects the commercial value of the tea. This study therefore serves as an important work in providing insights into the antioxidant properties of Vitex species and the best drying method of its leaves as herbal tea for commercial purpose. In addition, this study also provides insights into the effect of different drying methods on the storage of the leaves which is of value to the tea processing industry.  相似文献

Bitter melon, Momordica charantia L. (Cucurbitaceae), aqueous extracts are proposed to have health‐promoting properties due to their content of saponins and their antioxidant activity. However, the optimal conditions for the aqueous extraction of saponins from bitter melon and the effects of spray drying have not been established. Therefore, this study aimed to optimize the aqueous extraction of the saponins from bitter melon, using response surface methodology, prepare a powder using spray drying, and compare the powder's physical properties, components, and antioxidant capacity with aqueous and ethanol freeze‐dried bitter melon powders and a commercial powder. The optimal aqueous extraction conditions were determined to be 40 °C for 15 min and the water‐to‐sample ratio was chosen to be 20:1 mL/g. For many of its physical properties, components, and antioxidant capacity, the aqueous spray‐dried powder was comparable to the aqueous and ethanol freeze‐dried bitter melon powders and the commercial powder. The optimal conditions for the aqueous extraction of saponins from bitter melon followed by spray drying gave a high quality powder in terms of saponins and antioxidant activity.  相似文献

Bitter gourd (Momordica charantia), a commonly consumed vegetable in South Asia, eastern‐South Asia, China, Japan, Korea peninsula, Caribbean Sea isles etc., is used as an adjunct in the management of diabetes mellitus. In this study, in order to find the effective ways of producing bitter gourd freeze‐dried powder, the concentrated juice of bitter gourd was produced through enzymatic process (EP), ultra filtration (UF), reverse osmosis and vacuum concentration technology. Results indicated that total saponins, total sugar and pH value in bitter gourd juice were almost unchanged after EP and after UF (P ≥ 0.05). However, UF decreased the turbidity and improved transmittance of juice (P < 0.05). When compared with the vacuum concentration alone, the combined process of reverse osmosis followed by vacuum concentration had 3.33 folds of production efficiency and 1.725 times of vitamin C content in concentrated juice. With freeze‐drying microscope system, the eutectic point of the freeze‐dried product of bitter gourd juice was detected to be ?37.5 °C, which was important to optimise lyophilisation parameters. The freeze‐drying microscope system was more accurate than the conventional electric resistance method in detecting the eutectic point of freeze‐dried product.  相似文献

Purple‐fleshed sweet potato (PFSP) with high anthocyanin level was attractive to health concern. Three drying methods, namely microwave‐assisted freeze‐drying (MWFD), microwave‐assisted vacuum drying (MWVD) and microwave‐assisted spouted bed drying (MWSBD), were compared in the drying of PFSP granules. Product’s texture, colour, anthocyanin level and energy consumption were investigated. Drying periods varied among drying methods. MWSBD needed the least time to finish the drying process. Different drying methods had a significant effect (P < 0.05) on texture and anthocyanin level. Maximum penetration force of MWSBD treated sample was lowest (14.99 N). Anthocyanin level of MWSBD products was not as high as that of MWFD products, but colour and appearance were fine. MWFD products owned good crispness through sensory evaluation. Energy consumption of MWFD was about two times higher than that of MWVD. Final results indicated that MWSBD may be an alternative way to MWFD with measurements to maintain the anthocyanin level.  相似文献

In this study, the effects of convective, microwave and microwave–convective drying methods on the drying characteristics, colour, total phenolic content and antioxidant capacity of goldenberry fruits were investigated. To select the most appropriate thin‐layer drying model for drying treatments, nine mathematical drying models were fitted to the experimental data. Based on the statistical tests used for evaluation, the Midilli et al. and Wang and Singh models were considered the best models to describe the drying behaviours of goldenberry fruits in all drying methods. The colour values (L*, a* and b*) of fresh fruit were decreased by drying. Compared with the fresh sample, the dried samples exhibited a 64–75% and 65–75% decrease in total phenolic content and antioxidant capacity, respectively. Among the different drying treatments, the values closest to those of fresh samples with respect to colour values, total phenolic content and antioxidant capacity were achieved with the 160 W microwave drying method.  相似文献

The study focuses on the impact of icing systems with aqueous (AQ batch), ethanolic (ET batch) and ethanolic‐aqueous (ET‐AQ batch) extracts of alga Fucus spiralis on the microbial and biochemical quality of chilled hake (Merluccius merluccius). After a 13‐day storage, comparison with fish kept under traditional ice proved a significant (P < 0.05) antimicrobial effect against aerobes, psychrotrophs, proteolytic and lipolytic bacteria, derived of the presence of F. spiralis ethanolic extracts in the icing medium (ET and ET‐AQ batches). Additionally, an inhibitory effect of both ethanol extracts was also obtained concerning lipid oxidation development (i.e. secondary and tertiary lipid oxidation compounds). Additionally, lipid damage assessment showed lower mean values in tertiary oxidation compound formation in hake belonging to the ET‐AQ batch throughout the whole storage period. Present research indicates that ET‐AQ ice condition can lead to a marked quality and safety enhancement as well as to profitable commercial value increases.  相似文献

The flowers of daylily (Hemerocallis fulva (L.) L.) are called “Jinzhen” which are commonly used as vegetables or seasoning in East Asia. In this study, we evaluated the chemical profile changes with different processing method after harvest. Five different drying methods including solar drying, vacuum freeze drying, steam drying, and hot air drying method were investigated regarding their impact on the chemical constituents in daylily. The major phenolic compounds were tentatively characterized with ultra‐high performance liquid chromatography tandem high‐resolution mass spectrometric with multistage fragmentation techniques (UHPLC‐HRMSn). The UHPLC‐UV fingerprinting and UHPLC‐HRMSn‐based metabolomic approaches were used for identifying the difference between different processing methods. The quercetin 3‐O‐rutinoside, 5‐O‐caffeoylquinic acids are obviously higher in freeze‐dried and steam‐dried samples. Colchicine was believed to be one of the toxic constituents found in daylily fresh flowers; however, no colchicine was found in any the daylily samples investigated.

Practical applications

The drying process is particularly important for handling and distribution of daylily flowers after harvest and it can also prolong the shelf life. However, the drying process may result in degradation of nutrients and quality loss in food. Steamed sunlight dried or hot air drying methods preserve most of the phenolic composition of fresh daylily samples. The purpose of this study was to analyze the phenolic compounds in daylily using ultra‐high performance liquid chromatography tandem high‐resolution mass spectrometric with multistage fragmentation techniques and to evaluate the drying processing method by fingerprinting and metabolomic approaches.  相似文献

This study reports the effect of different extraction and drying techniques in the recovery of curcumin, where the impact of the pre-treatment step on turmeric rhizome using high-pressure homogenization (HPH) was evaluated. Soxhlet extraction (SE) and ultrasound-assisted extraction (UAE) followed by drying (oven drying, vacuum drying, and freeze drying) were applied to HPH-treated and control (non-HPH) samples. The HPH treatment condition of 100 MPa for 10 cycles demonstrated the lowest particle sizes in the turmeric suspensions and the highest curcumin content in the aqueous supernatant. It was also found that HPH treatment increased the release of curcumin from the freeze-dried turmeric extracts obtained from SE (+76.2%) and UAE (+57.5%). Besides, freeze drying was the best drying method demonstrating higher antioxidant activity of extracts than other thermal drying methods. The total phenolic content was increased by about 65.5% upon HPH treatment on turmeric extract obtained from UAE followed by vacuum drying.  相似文献

Ultrasound‐assisted extraction (UAE) at 33 and 42 kHz has been investigated in the extraction of polyphenols from peels of two potato varieties, cream‐skinned Lady Claire (LC) and pink‐skinned Lady Rosetta (LR), commonly used in snack food production. Extraction efficacy between the UAE‐untreated (control) and the UAE‐treated extracts was assessed on the total phenolic content and antioxidant capacities (DPPH and FRAP). Application of UAE showed significantly higher recovery of phenolic compounds compared to solid–liquid extraction process alone. Lower ultrasonic frequency (33 kHz) was more effective in recovering polyphenols compared to 42 kHz ultrasonic treatment. The liquid chromatography‐tandem mass spectrometry revealed that chlorogenic acid and caffeic acid were the most prevalent phenolics in LR peels, whereas caffeic acid was dominant in LC peels. Peleg's equation showed a good correlation (R2 > 0.92) between the experimental values and the predicted values on the kinetics of UAE of phenolic compounds.  相似文献

Tomato peels were firstly dried by different methods (hot air, freeze‐drying, and fluidized bed drying) to evaluate the recovery of lycopene, β‐carotene and DPPH radical scavenging activity. Comparison of the results showed that hot air drying at 50 °C was a suitable method and alternative to freeze‐drying to preserve carotenoids compounds and antioxidant activity in tomato peels. Then, ethanol/ethyl acetate (1:1) extracts from tomato peel, previously dried at 50 °C by hot air, were submitted to heat (100 °C) and light treatment (1000 lumen) to evaluate their stability as natural food dyes. Heating of the extracts caused a progressive reduction of total carotenoids, up to about 30% after 250 min of treatment, whereas the colour at the end of heat treatment showed small changes, with an overall colour difference (?E) equal to 7. Fluorescent lighting treatment showed an almost total degradation of carotenoids in the extracts after 48 h combined with a fading colour.  相似文献

Mung bean (MB) and adzuki bean (AZB) sprouts were hydrolysed with Flavourzyme® at four different concentrations for 6 h. Nongerminated beans subjected to each enzyme concentrations were set as the control. For both bean sprouts, the highest amounts of free amino group, total free amino acids and total phenolic content (TPC) were obtained with 7% (w/w) Flavourzyme®. Each bean sprout hydrolysate was subjected to freeze‐drying in absence and presence of 5% maltodextrin (w/v). The addition of maltodextrin resulted in a decrease in the free amino group, TPC, surface hydrophobicity and hygroscopicity in resulting freeze‐dried powders. Gallic acid, p‐coumaric acid and vitexin were identified in all freeze‐dried powders, while catechin and rutin were detected only in freeze‐dried AZB hydrolysate powder. Freeze‐dried AZB hydrolysate powder contained higher antioxidant activities. DPPH radical scavenging activity of all samples measured using electron spin resonance spectrometry was higher than that obtained by the colorimetric method.  相似文献

The present study is aimed to evaluate the effect of three different drying methods, including shade drying (SD), freeze drying (FD) and hot air dying (HAD), on the chemical components, antioxidant and cytoprotective activities of aqueous-methanol extracts from A. fragrans leaves. The total phenolic and flavonoid content were determined by spectroscopic methods, whereas the chemical profile of different extracts was determined by ultra-high-performance liquid chromatography coupled with a tandem mass spectrometry (UHPLC-MS/MS). A total of thirteen compounds were characterised and 9 phenolic compounds have been quantified. Two dihydrochalcone glycosides named confusoside and vacciniifolin were found to be the most abundant phenolic compounds in the SD extract of A. fragrans leaves, which also showed the strongest antioxidant and cytoprotective activities. The results showed that shade drying is an efficient method for preserving the chemical constituents and maintaining the antioxidant and cytoprotective activities of A. fragrans leaves.  相似文献

Carqueja (Pterospartum tridentatum) is an endemic species and various bioactive compounds have been identified in its aqueous extract. The aim of this study was to protect the natural antioxidants from the aqueous extract of carqueja by encapsulation in Ca–alginate microbeads and Ca–alginate microbeads containing 10% and 20% (w/v) of inulin. The microbeads produced by electrostatic extrusion technique had an average diameter from 625 μm to 830 μm depending on the portion of inulin. The sphericity factor of the hydrogel microbeads had values between 0.014 and 0.026, while freeze dried microbeads had irregular shape, especially those with no excipient. The reduction in microbeads size after freeze drying process (expressed as shrinkage factor) ranged from 0.338 (alginate microbeads with 20% (w/v) of inulin) to 0.523 (plain alginate microbeads). The expressed radical scavenging activity against ABTS and DPPH radicals was found to be between 30% and 40% for encapsulated extract, while the fresh extract showed around 47% and 57% of radical scavenging activity for ABTS and DPPH radicals, respectively. The correlation between antioxidant activity and the total phenolic content were found to be positive (in both assay methods, DPPH and ABTS), which indicate that the addition of inulin didn't have influence on antioxidant activity. The presence of inulin reduced stiffness of the hydrogel, and protected bead structure from collapse upon freeze‐drying. Alginate–inulin beads are envisaged to be used for delivery of aqueous P. tridentatum extract in functional food products.  相似文献
