Antioxidants occurring naturally are much sought‐after for their safety of use for human nutrition and strong preservative properties. The study was performed to determine the antioxidant potential of sour cherry extract and its effect (equivalent of 20 mg and 40 mg GAE kg?1) on the quality of ground pork patties during 8‐day storage. The patties were analysed for antioxidant capacity, oxidation, profile of fatty acids, flavour, colour, sensory properties and aerobic bacteria count. Patties with addition of cherry extract (40 mg GAE kg?1) showed higher antioxidant capacity of 844 ± 149 μmol TE L‐1 on the last day of the storage than the control group where the result was 480 ± 81 μmol TE L‐1. The addition of extract caused lower overall increase in lipid oxidation and prevented loss of redness even on the last day of the storage. Flavour changes resulted from oxidation and decrease in the amount of desirable volatile compounds in storage. The application of the extract from Prunus cerasus combined with vacuum packaging inhibited both oxidation and quality deterioration of pork patties in cold storage. 相似文献

Due to the potential toxic effects of synthetic antioxidants, natural antioxidant sources especially fruits are being preferred now-a-days for use in different meat products. The majority of the antioxidant capacity of a fruit is especially because of numerous phenolic compounds. Many of the phytochemicals present in fruits may help protect cells against the oxidative damage caused by free radicals, thereby reducing the risk of degenerative diseases such as cardiovascular diseases, various types of cancers, and neurological diseases. Various parts of the fruit including their byproducts like skin and seeds have been used in meat products. Plum has been used as plum puree, prunes (dried plum), and plum extracts. Grape skin, seed, peel extracts, and grape pomace; berries as cakes and powder extracts; pomegranate rind powder and its juice; and most of the citrus fruits have proved beneficial sources of antioxidants. All these natural sources have effectively reduced the thiobarbituric acid-reactive substances (TBARS) values and free radical frequency. Thus, lipid oxidation is prevented and shelf life is greatly enhanced by incorporating various kinds of fruits and their byproducts in meat and meat products. There is a great scope for the use of fruits as natural sources of antioxidants in meat industry. Defatted canola meal was extracted with 95% (v/v) ethanol at 80 °C. The extract was fractionated on a Sephadex LH-20 column using methanol as eluate. Seven major fractions were isolated according to UV absorption, content of phenolics and sugars. Antioxidant activity of these fractions was evaluated in a β-carotenelinoleate model system. Fraction IV showed the best antioxidant effect by exhibiting the highest preventive activity against the bleaching of β-carotene. Further separation of this fraction on TLC indicated that it contains several compounds including phenolic acids and trihydroxy phenolic compounds such as flavones and flavonols. 相似文献

The aim of the present study was to evaluate the effect of rosemary (Rosmarinus officinalis L.) powder and vitamin E, as feed additives combined at different levels, on oxidative stability of broiler meat up to 14th day after chilling. A total of 270 1‐day‐old male chicks of Ross 308 strain were randomly assigned to nine dietary groups with three replicates having 10 birds each. Diets were supplemented with 0, 0.5, or 1.0% of rosemary (R) powder and 0, 100, or 200 mg/kg of vitamin E (alpha‐tocopherol acetate; VitE) according to the following treatments: T1 – control basal diet (0R + 0VitE); T2 – 0R + 100VitE; T3 – 0R + 200VitE; T4 – 0.5R + 0VitE; T5 – 0.5R + 100VitE; T6 – 0.5R + 200VitE; T7 – 1.0R + 0VitE; T8 – 1.0R + 100VitE; and T9 – 1.0R + 200VitE. At day 42, two birds of each replicate were slaughtered and the length and weight of cecum was recorded. Carcasses and their economically valuable parts were also weighted and broiler breast refrigerated at 4°C for 14 days. At day 0, 4, 7, and 14 of storage the malondialdehyde (MDA ) content of breast meat was evaluated. After 4 days of storage, meat MDA contents of the T5 (0.43 mg/kg) and T9 (0.41 mg/kg) were lower than control group (T1: 0.55 mg/kg; p < .05). On day 7, groups supplemented with rosemary or VitE alone showed similar MDA contents (p > .05) than control. On day 14, lower (p < .05) MDA contents than T1 were observed in all groups except for broilers fed diet supplemented only with vitamin E. No effects were observed between treatments on the relative weight of the several carcass traits, however, VitE influenced (p < .05) the weight and size of cecum. Based on our findings, the combination of rosemary powder and vitamin E at different levels in diet is useful to limit the lipid oxidation of chilled chicken meat. 相似文献

Volatile constituents of beechwood creosote were determined using gas chromatography (GC) and gas chromatography–mass spectrometry (GC‐MS). The major volatile constituents of creosote were 2‐methoxyphenol (guaiacol; 25.2%) 2‐methoxy‐4‐methylphenol (4‐methylguaiacol; 21.4%), 3‐methylphenol (m‐cresol; 8.3%) 4‐methylphenol (p‐cresol; 7.9%) 2‐methylphenol (o‐cresol; 4.6%) and phenol (2.8%). The antioxidant activity of creosote was evaluated by three different chemical assays. Beechwood creosote exhibited potent inhibitory effects on the formation of conjugated diene hydroperoxides (from methyl linoleate) at concentrations of 500, 750 and 1000 µg ml?1. Creosote had a potent inhibitory effect on the oxidation of hexanal for 40 days at a level of 5 µg ml?1 and also inhibited malonaldehyde (MA) formation from ethyl arachidonate by 92% at a level of 50 µg ml?1. The antioxidative activity of creosote was comparable with that of the well‐known antioxidants α‐tocopherol and BHT in the hexanal assay. 植酸和茶多酚复合抗氧化剂对辐照卤制鸡翅品质的影响 总被引:2,自引:0,他引:2
为减缓辐照卤制鸡翅氧化变质,延长其贮藏期,探讨天然抗氧化剂对提高辐照卤制鸡翅4 ℃条件下贮藏过程中氧化稳定性的作用效果与机制。对比7 种抗氧化剂对·OH和1,1-二苯基-2-三硝基苯肼(1,1-diphenyl-2-picrylhydrazyl,DPPH)自由基的清除率,分析不同植酸和茶多酚复配比例的协同处理效果。结果表明:植酸对·OH表现出较强的清除作用,当达最高质量浓度0.06 g/100 mL时,清除率达63%;茶多酚对DPPH自由基清除作用较强,在最高质量浓度0.06 g/100 mL时,清除率达94%;植酸和茶多酚按1∶1比例(0.01 g/100 mL植酸+0.01 g/100 mL茶多酚)复配时,样品pH值、过氧化值、酸价和硫代巴比妥酸值变化最小,协同抗氧化效果最佳,且样品的感官品质和色泽保持较好;采用电子鼻对卤制鸡翅的总体气味进行检测可知,不添加天然抗氧化剂且无辐照处理组与植酸和茶多酚配比1∶1处理组的差异较大,其结果与理化指标测定结果相一致,说明最佳抗氧化组合为0.01 g/100 mL植酸和0.01 g/100 mL茶多酚配比1∶1,其能较好地保持辐照卤制鸡翅的品质和风味。 相似文献

抗氧化剂是指能够减缓或者消除氧化反应的一类物质,根据来源不同,分为天然和合成两大类,常见的天然抗氧化剂有茶多酚、维生素E、槲皮素、虾青素等。研究发现,合成抗氧化剂存在一定的安全问题,而且单一的天然抗氧化剂活性比较低,因此具有高活性以及低细胞毒性的复配抗氧化剂是最近研究的热点。本文对天然抗氧化剂之间复配的机制及研究进展进行了阐述,以期能够对其发展提供一定的参考价值。 相似文献
