In Experiment 1, beef strip loins (n = 15) were halved and assigned to needle (N) or needle-free (NF) injection enhancement with a phosphate plus salt solution (PS) to determine effects on color, water-binding, and palatability. Pump yields tended (P = 0.08) to be higher for NF injection. Needle-injected steaks were darker (P < 0.05) on day 1 only. The NF treatment had greater instrumental tenderness and intensity of off-flavors but less cooking loss and beef flavor (both < 0.05). In Experiment 2, strip loins (= 28) were halved and assigned to one of four treatments: (1) N, or (2) NF injection with PS; (3) N, or (4) NF injection with a calcium lactate solution (CL) to determine effects on water-binding and palatability. Needle-free injection resulted in a greater incidence (< 0.05) of off-flavors and abnormal texture. The PS solution resulted in greater (< 0.05) instrumental, myofibrillar, and overall tenderness; greater juiciness; greater incidence of off-flavors and abnormal texture; and less (< 0.05) connective tissue and cooking losses than CL. The PS and NF combination had the highest pumped yields and least cooking losses (both < 0.05). Enhancing beef strip loins with PS and NF injection has potential to improve yield, tenderness, and juiciness but harm texture and flavor.  相似文献

Forty-eight British cross heifers were used to examine the effects of ovariectomization (OVX v. intact; INT) and ractopamine-HCl inclusion (0 or 0.41 mg/kg of BW day− 1; NORAC or RAC) for the final 31 days on performance, meat yield, and tenderness of select muscles. Ractopamine supplemented heifers had heavier BW (P ≤ 0.05) and greater dressing percent than NORAC. Dressing percent was also greater (P < 0.01) for INT v. OVX. LM area tended to be larger for RAC (P = 0.07) and was larger for INT (P = 0.05). Neither ractopamine inclusion nor sex class affected (P > 0.08) organ weights or percent intramuscular fat. Ractopamine inclusion increased (P ≤ 0.05) subprimal weight for the shoulder clod and bottom round. However, ractopamine inclusion and sex class had minimal effects on subprimal yields or slice shear force. Heifers receiving ractopamine had increased BW, DP, carcass weight and select subprimal weights without impacting meat quality. Ovariectomization did not influence the affects of ractopamine supplementation.  相似文献

Additive genetic Angus-Brahman differences, heterosis effects, and least squares means for six carcass and six meat palatability traits were estimated using data from 1367 steers from the Angus-Brahman multibreed herd of the University of Florida collected from 1989 to 2009. Brahman carcasses had higher dressing percent (P < 0.0001), lower marbling (P < 0.0001), smaller ribeye area (P < 0.0001), and less fat over the ribeye (P < 0.0001) than Angus carcasses. Brahman beef was less tender (P < 0.0001), had more connective tissue (P < 0.0001), and it was less juicy (P < 0.001) than Angus beef. Heterosis increased hot carcass weight (P < 0.0001), dressing percent (P < 0.017), ribeye area (P < 0.0001), fat over the ribeye (P < 0.0001), and kidney, pelvic, and heart fat (P < 0.01) in Angus-Brahman crossbred steers. Results indicated that crossbred animals with up to 50% Brahman showed limited negative impact on meat quality while maximizing meat yield due to heterosis.  相似文献

Carcass and meat quality traits of 60 Nellore young bulls fed diets without crude glycerin (CG); with CG replacing corn (CGc; 10% of dry matter — DM) in the concentrate; and with CG replacing soybean hull (CGsh; 10% of DM) in the concentrate were evaluated. Diets were evaluated at two concentrate levels (CLs). The CL did not affect cold carcass weight (CCW; P = 0.6074), cold carcass dressing (CCD; P = 0.9636), rib fat thickness (RFT; P = 0.8696) and longissimus muscle area (LMA; P = 0.7524). Animals fed diets with CGc or CGsh showed meat with greater deposition of monounsaturated fatty acid (MUFA; P = 0.0022) and CLA (18:2 cis-9, trans-11) contents (P = 0.0001) than animals fed diets without CG. The inclusion of 10% of CG in diets CGc or CGsh does not affect the carcass and meat quality traits; however, it increases the MUFA and CLA contents in beef, although these changes are very small in nutritional terms.  相似文献

This study aimed to investigate differential allele expression (DAE) and polymorphism and parent-of-origin effects on expression of genes related to beef traits. CAST, related to meat tenderness, and DGAT1 and leptin, related to fat deposition, were evaluated. In bovine fetal tissues CAST was expressed twice as much (P < 0.05) in muscle of homozygous GG than in heterozygous AG. Leptin was expressed about one-tenth as much (P < 0.05) in heterozygous TpCm (allele T of paternal origin and allele C of maternal origin) than in homozygous CC. No DAE was observed. The evidence of polymorphism effect on expression of CAST and parent-of-origin effect on leptin contributes to a better understanding of events controlling the expression of genes of economic interest in cattle. Furthermore, if the parent-of-origin effects observed in fetal tissues are confirmed in adult tissues and associated to phenotypic variation, this parental origin criterion may be considered in marker-assisted selection of beef traits.  相似文献

Beef steaks (M. longissimus dorsi) were stored in modified atmosphere packs (MAP) (80% O2:20% CO2) with gas headspace to meat ratios of 2:1, 1:1 and 0.5:1 for 14 days at 4 °C. The pH, surface colour, texture and microbiology of beef steaks were unaffected (P > 0.05) by varying the gas headspace to meat ratio. APLSR (ANOVA-partial least squares regression) and jack-knife uncertainty testing indicated that lipid oxidation (TBARS) was significantly positively correlated with days 10 (P < 0.05) and 14 (P < 0.001) of storage. Chemical and sensory detection of lipid oxidation in beef steaks were in agreement on day 14 of storage. The sensory quality and acceptability of beef steaks were similar in gas headspace to meat ratios of 2:1 or 1:1 and unacceptable in 0.5:1. Results indicate that pack size and gas volume can be reduced without negatively affecting fresh beef quality and shelf-life.  相似文献

Effect of production system on carcass and meat quality was investigated in four groups of lambs: i. W-C lambs were weaned between 45 and 60 days of age and then were fattened with concentrate feed until slaughter; ii. W-G-S lambs were weaned and then taken to pasture and wheat stubble; iii. UW-C lambs were fattened with concentrate feed and they suckled their dams until slaughter; iv. UW-G lambs were kept with their dams and were taken to pasture in the day-time. Hot carcass weight was 13.62, 12.52, 14.37 and 13.88 kg (P < 0.001), and dressing percentage was 55.24, 51.77, 57.83 and 55.38% (P < 0.001), for W-C, W-G-S, UW-C and UW-G lambs, respectively. Ultimate meat pH was higher in W-G-S lambs than lambs from W-C and UW-C systems (P < 0.05). W-G-S lambs had higher shear force value in longissimus dorsi muscle (P < 0.05) and lower meat lightness (P < 0.001) than those of other systems. Panellists gave the lowest sensory scores, except juiciness, to meat of W-G-S lambs.  相似文献

Previous research on lactate-induced color stability in ground beef did not address the potential influence of packaging. The objective of the present study was to examine the effects of lactate on the color stability of ground beef patties stored in different modified atmosphere packaging (MAP) systems. Ground beef patties with either 2.5% potassium lactate or no lactate were packaged in vacuum (VP), high-oxygen MAP (HIOX; 80% O2 + 20% CO2), carbon monoxide MAP (CO; 0.4% CO + 19.6% CO2 + 80% N2), or aerobic packaging (PVC) and stored for 0, 2, or 4 days at 2 °C. Lactate-treated patties were darker (< 0.05; lower L∗ values) than control patties. Surface redness (a∗ values) was greater (< 0.05) for lactate patties than the controls when stored in PVC, HIOX, and VP. However, lactate’s effects on a∗ values were not evident when packaged in CO (> 0.05). The color-stabilizing effect of CO could have masked lactate’s effect on surface redness. While lactate patties in PVC and VP demonstrated lower (< 0.05) discoloration than controls, no differences (> 0.05) existed between controls and lactate samples in CO and HIOX. Our results indicated that the effects of lactate on ground beef color are dependent on packaging.  相似文献

These studies investigated the potential application of analysis of stereoisomers of α-tocopherol to discriminate between beef from animals raised at pasture or fed concentrates containing synthetic vitamin E. Muscle α-tocopherol levels were affected (P < 0.05) by diet with mean values of 2.63, 1.14, 2.43 and 1.77 μg g−1 muscle for beef from animals receiving pasture only (P), a barley-based concentrate with synthetic vitamin E (C), winter silage followed by summer pasture (SiP) and winter silage followed by summer pasture with concentrate (SiPC), respectively. Stereoisomeric analysis of α-tocopherol permitted discrimination between beef from the P/SiP, C and SiPC animals. In a comparison of Irish and non-Irish beef, Brazilian beef had higher (P < 0.05) α-tocopherol (8.13 μg g−1) than beef from Austria, England, France, Germany, the U.S. and Ireland (mean 2.51 μg g−1). Stereoisomeric analysis of α-tocopherol in non-Irish beef revealed supplementation with synthetic vitamin E in all samples, including the samples marketed as pasture-fed beef.  相似文献

The effect of using potassium lactate, sodium metasilicate, acidified sodium chlorite, or peroxyacetic acid as a single antimicrobial intervention on ground beef instrumental color, sensory color and odor characteristics, and lipid oxidation was evaluated. Prior to grinding, beef trimmings (90/10) were treated with 3% potassium lactate (KL), 4% sodium metasilicate (NMS), 200-ppm peroxyacetic acid (PAA), 1000-ppm acidified sodium chlorite (ASC), or left untreated (CON). Ground beef under simulated retail display was measured at 0, 1, 2, 3, and 7 of display for instrumental color, sensory characteristics, TBARS values, and pH to evaluate the impact of the treatments. The KL, NMS, PAA, and ASC were redder (a; < 0.05) than CON. All treatments were scored by sensory panelists to have a brighter (< 0.05) red color than CON during days 1–3 of display. All treatments had less (< 0.05) lipid oxidation than CON on days 0, 3, and 7 of display. These results suggest that the use of these antimicrobial compounds on beef trimmings prior to grinding may not adversely affect, and may improve bulk packaged ground beef quality characteristics.  相似文献

One-hundred-and-twenty-four young bulls of three Continental beef cattle breeds were used to study the effect of pre-slaughter stress by unfamiliar sounds on carcass traits and quality characteristics of beef aged for three different periods. Stress due to unfamiliar noises had a moderately negative effect on carcass and meat quality. Carcasses from group Stressed had higher (P < 0.05) values of pH0, pH24, a*, and Warner-Bratzler shear force, and lower (P < 0.05) values of L*, b* and pressure losses than from Unstressed animals. There were significant differences (P < 0.05) among breeds in L*, a* and pressure losses. The ageing time had a significant effect on chromatic variables, WBSF and pressure losses. The cooking losses were not significantly affected by any of the three factors discussed. These results emphasize the importance of implementing appropriate management practices during pre-slaughter handling of cattle in order to reduce any possible risk factor for stress, as well as the different sensitivity of the breeds to similar stimuli.  相似文献

Physical, chemical and sensory characteristics of meat were compared between non-domestic eland (Taurotragus oryx) bulls (n = 6) and domestic Fleckvieh (Bos taurus) bulls (n = 6) which were finished under controlled conditions of feeding and management. Musculus longissimus lumborum from eland were darker and less yellow in colour, with a higher pH24 and lower contents of intramuscular fat and total collagen, compared to cattle. Contents (mg/100 g muscle tissue) and proportions (g/100 g of FA determined) of SFA and MUFA were higher (P < 0.01) in cattle. Although the proportion of total PUFA were higher (P < 0.001) in eland, contents of PUFA were similar between species. Meat from cattle was consistently scored higher (P < 0.05) for sensory texture characteristics, juiciness, flavour, and overall acceptance. We concluded that bulls of eland provided low-fat meat with a beneficial fatty acid composition from a human nutrition perspective, but with lower sensory scores, compared to bull beef.  相似文献

Two animal growth studies and a companion digestibility study were conducted to evaluate the effect of differing ratios of forage to concentrate and the addition of yeast culture (Saccharomyces cerevisiae) on NH3 emissions from the manure of growing dairy heifers with corn silage (CS) as the sole forage. Flux chamber methods were used to measure NH3 volatilization from the barn floor or by laboratory procedures. In experiment 1, 24 Holstein heifers (159 ± 3.3 kg of initial body weight; BW) were fed either a low-concentrate diet (LC; 77% CS, 23% concentrate) or a high-concentrate diet (HC; 33% CS, 67% concentrate) in a randomized design. Manure (feces and urine mixture) from heifers consuming the LC diets volatilized similar amounts of NH3 as manure from HC heifers (314.0 vs. 174.4 ± 36.1 μg/cm2 per min). In experiment 2, 24 older heifers (227.9 ± 27.1 kg of BW) were used. Manure from HC heifers released slightly less NH3 from the barn floor, confirming the results from the initial study. Finally, a digestibility study was undertaken using four 9-mo-old heifers (234 ± 15 kg of initial BW) and four 14-mo-old heifers (409 ± 20 kg of initial BW), allocated to 4 treatments consisting of an HC or LC diet with or without yeast culture addition. Emissions per unit of manure (mg of NH3/g) from heifers in both age groups were greater for the HC diets; however, total emissions per day were equal. Yeast culture addition had no effect on cumulative daily emissions. In these 3 experiments, NH3 emissions from HC heifers were not different from those from LC heifers.  相似文献

Effectiveness of multiple antimicrobial interventions on ground beef microbial, instrumental color and sensory attributes through display was evaluated. Beef trimmings were inoculated with Escherichia coli (EC) and Salmonella typhimurium (ST) then treated with either: (1) 3% potassium lactate followed by 4% sodium metasilicate (KN); (2) 4% sodium metasilicate followed by 3% potassium lactate (NK); (3) 200-ppm peroxyacetic acid followed by 3% potassium lactate (PK); (4) 200-ppm peroxyacetic acid followed by 4% sodium metasilicate (PN); or control (CON). Trimmings were ground, packaged and sampled on days 0–7 of display for EC, ST, coliforms, aerobic plate count, instrumental color and sensory characteristics. Only PK reduced (< 0.05) all bacterial types evaluated. The PN treatment remained (< 0.05) redder (a*), contained more (< 0.05) oxymyoglobin and had less (< 0.05) discoloration than CON by days 3–7 of display. A randomized complete block design with three replications was utilized to evaluate the effects (P < 0.05) of various fumigation concentrations of sulfuryl fluoride (SF) (0, 12, 24, 36 and 72 mg/L) on the fluoride, sulfuryl fluoride, and volatile flavor compound concentrations in dry cured ham. Fluoride and SF concentrations increased (P < 0.05) in dry cured hams as SF fumigation concentration increased, but all samples contained fluoride and SF concentrations below the legal limits of 20 and 0.01 ppm, respectively. Minimal differences existed (P > 0.05) in the presence and concentration of aroma active compounds, but oxidation compounds were slightly more prevalent (P < 0.05) in the 72 mg/ml treatment when compared to the control. A triangle test (n = 54) indicated that consumers could not discern (> 0.75) between hams that were fumigated with SF at 0 and 36 mg/ml. This study revealed that there were minimal aroma/flavor differences among the ham treatments between 0 and 36 mg/ml, and that dry cured ham that was fumigated with SF was safe and met legal requirements for consumption.  相似文献

The influence of dietary lecithin at doses of 0, 4, 20 or 80 g/kg fed to finisher gilts for six weeks prior to slaughter on growth performance, carcass quality and pork quality was investigated. M. longissimus lumborum (loin) was removed from 36 pig carcasses at 24 h post-mortem for Warner–Bratzler shear force, compression, collagen content and colour analyses. Dietary lecithin increased dressing percentage (P = 0.009). Pork chewiness and collagen content were decreased by dietary lecithin (P < 0.05, respectively), suggesting that improved chewiness may be due to decreased collagen content. However, dietary lecithin had no effect on shear force, cohesiveness or hardness (P > 0.05, respectively). Dietary lecithin reduced loin muscle L* values and increased a* values (P < 0.05, respectively) but no changes on b* values (P = 0.56). The data showed that dietary lecithin improved dressing percentage and resulted in less chewy and less pale pork.  相似文献

Two experiments were conducted to assess the effects of succinate and pH on cooked beef color. In experiment 1, ten strip loins (M. longissimus lumborum) were divided in half and assigned to either non-enhanced control or 2.5% succinate. Each half-loin was cut into steaks, packaged in vacuum or 80% oxygen, and stored at 1 °C for 0, 6, or 12 days. Steaks were cooked to either 66 °C or 71 °C. Succinate increased (P < 0.05) steak pH, raw a* values, and interior cooked redness when packaged in high oxygen. In experiment 2, to assess the role of succinate in raw and cooked color, succinate or ammonium hydroxide was added to ground beef patties to result in a common meat pH (5.9). At a similar pH, succinate had greater metmyoglobin reducing activity and internal cooked redness compared with ammonium hydroxide (P < 0.05). In addition to ingredient-based changes in muscle pH, succinate may influence color by regenerating reducing equivalents.  相似文献

Chemical and mineral composition and the intramuscular fatty acid (IMF) profile of the Longissimus dorsi muscle (LM) of 60 purebred Hereford, 1/4 Braford and 3/8 Braford steers finished either in a feedlot or on improved pastures of the Pampa biome were evaluated. Pastures were improved with the introduction of Lolium multiflorum, Trifolium repens, and Lotus corniculatus. On average, beef from pasture-fed steers presented higher concentrations of the fatty acids C18:3n − 3 (P < 0.001), C20:3n − 3 (P = 0.035), total n − 3 (P < 0.001) and lower n − 6/n − 3 ratio (P < 0.001) in the IMF, and higher Mg and lower K content in muscle relative to those finished in the feedlot. C12:0 concentration in IMF was higher (P = 0.027) for 3/8 Braford than the purebred Hereford steers, whereas purebred Herefords presented lower C14:1 (P = 0.003) and higher C18:0 (P = 0.022) concentrations than the two Braford groups. The meat composition of purebred Hereford and Braford steers was not substantially different; however, beef produced exclusively on improved pastures presented higher concentration of components that are considered beneficial to human health, such as n − 3 fatty acids, and a lower n − 6/n − 3 ratio.  相似文献

The objective of this study was to use proteomics to identify alterations of proteins that are related to tenderness. The longissimus dorsi (LD) were removed from ten beef carcasses at 24 h postmortem, and the two with the highest (HSP; average kg of force = 6.57) and lowest star probe values (LSP; average kg of force = 3.75) at 14 days postmortem were identified. Two-dimensional PAGE was used to compare the sarcoplasmic fraction of the LD from HSP and LSP steaks. A series of spots identified as phosphoglucomutase 1 (PGM1) were identified. Only the most alkaline isoform was identified as being unphosphorylated. The least phosphorylated isoform (isoform 5) had a greater density of the total protein (P < 0.05) and phosphorylated protein (P < 0.05) in the samples from HSP steaks compared to the samples from LSP steaks. This study illustrates the importance of identifying posttranslational modifications of proteins in the search for biomarkers.  相似文献

This paper describes the influence of different factors on sous-vide cooked pork. Pork cheeks were cooked at different combinations of temperature (60 °C or 80 °C), time (5 or 12 h) and vacuum (vacuum or air packaged). Weight losses were lower and moisture content higher in samples cooked for a shorter time (P = 0.054) and at a lower temperature (P < 0.001). Samples cooked at 60 °C showed more lightness (L*) and redness (a*) (P < 0.001). Lipid oxidation showed an interaction between cooking time and temperature (P = 0.007), with higher TBARs values for samples cooked for 12 h at 60 °C and lower for those cooked for 12 h at 80 °C. Samples cooked at 80 °C for 12 h showed lower (P < 0.05) values for most textural parameters than all the other types of samples. Vacuum packaging showed no influence on any of the studied variables. For the treatments evaluated, cooking temperature × time combination seems to be more important than vacuum packaging in the textural and colour parameters of pork cheeks.  相似文献
