The effect of pelvic and Achilles tendon suspension of red and fallow deer carcasses on meat quality parameters were compared. Venison was evaluated from red deer stags (n = 14), bucks (n = 14) and fallow deer does (n = 10) between 12 and 36 months old. Immediately after slaughter, carcasses were split down the dorsal midline and assigned to one of the two hanging methods and pH and core body temperature measured. Twenty-four hours post-slaughter muscles were excised. Venison from fallow deer and red deer stags pelvic-suspended had significantly lower (P < 0.001) cooked shear force values than Achilles hung carcasses. There was no significant difference between hanging technique for other characteristics measured. These data indicated that pelvic suspension should be adopted by the deer industry to increase tenderness of venison.  相似文献

Intact fallow bucks (n = 20) and non-pregnant fallow does (n = 24) (Dama dama), in the body condition score (BCS) of 2, 3 and 4 (lean, prime and fat) and rising 2 year old red deer stags (n = 26) (Cervus elaphus) of the same BCS range (2–4) were used in this study to determine the impact of sex, BCS and method of carcase suspension on consumer perception of venison quality. Consumers were asked to evaluate cooked meat samples (M. gluteus medius) on an unstructured line scale for colour, flavour, tenderness, juiciness and overall liking. Meat from both fallow deer and red deer was preferred by consumers when carcases had hung by the pelvic suspension (PS) method compared with the Achilles tendon (AT) method of hanging (p < 0.001). Consumers also noted a difference in colour between sexes in fallow deer venison, with venison from 36 month-old does being darker (p = 0.015), and preferred venison from does over 18–24 month-old bucks. There was a significant difference in the consumer scores for tenderness in red deer stags of BCSs 2 and 4 (p = 0.05) with panellists determining BCS 4 animals to be more tender; however no tenderness differences were observed for fallow deer does compared with bucks.  相似文献

Thirty-two male fallow deer, half 18- and half 30-month-old, were slaughtered after a 4-month feeding trial on pasture alone or with daily supplement of 500 g (dry matter) concentrate/head (eight each 18- and 30-month-old). The concentrate was composed of 40% maize, 25% sugar beet pulp, 20% alfalfa, 13% soy flakes, 2% minerals and vitamins. Supplemented deer were heavier (49.9 vs 45.0 kg) and their carcasses produced higher dressing proportions (61.5 vs 57.2%) and bigger amounts of first quality cuts. Supplemented feeding improved muscle development and fat deposition. Thirty-month-olds were heavier than 18-month-olds (53.3 vs 41.6 kg) and their carcasses produced higher dressing proportions (60.9 vs 57.7%) and bigger amounts of first quality cuts; older deer carcasses showed better conformation and bigger amounts of fat deposition.  相似文献

The effects of rigor temperature and electrical stimulation on venison quality were assessed using venison longissimus dorsi muscle. In the first trial, effect of rigor temperature (0, 15, 25, 30, 35 and 42 °C) and time post-mortem (at rigor, 3, 7 and 14 days) on drip and cooking losses, % expressible water (water holding capacity, WHC), sarcomere length, protein solubility, meat tenderness and colour were investigated. In the second trial, the effects of rigor temperature (15 and 35 °C), electric stimulation (stimulated or not stimulated) and time (at rigor, 3 and 6 weeks post-mortem) on tenderness and colour were further investigated. Results of the first trial showed no clearly established trends of the effect of rigor temperature and time on the cooking and drip losses and protein solubility except venison muscles that went into rigor at 42 °C tended to have higher drip loss and lower protein solubilities compared to muscles that went into rigor at the other temperatures. Venison water holding capacity (WHC) decreased with the increase in rigor temperature (P < 0.001) and venison became more tender with time post-mortem. Venison colour improved with increasing rigor temperature. During display, samples that went into rigor at 15, 25 and 35 °C had the lowest and those at 0 and 42 °C had the highest rate of change of redness (a*) value with time. In the second trial, tenderness was improved by stimulation (P = 0.01). Redness (a*) values were affected by rigor temperature (P < 0.01) and post-mortem time (P < 0.001) but not by electrical stimulation. It is concluded that venison tenderness can be improved via the manipulation of rigor temperature to obtain acceptable level of tenderness early post-mortem with less damaging effect on colour stability.  相似文献

The effect of the fattening diet, slaughter weight and sex on meat quality was studied in a total of 156 hybrid rabbits. After weaning, rabbits were divided into three groups of 52 animals each (50% male and 50% female), that were allocated for three weeks to one of three commercial diets containing low (14.28%, A), medium (18.04%, B) and high (20.48%, C) fibre content with decreasing energy levels. Animals were slaughtered at 2.0 and 2.3 kg after the consumption of a common pre-slaughter non-medicated concentrate and pH, colour, water-holding capacity (WHC), Warner–Bratzler shear test and sensory analysis were all measured. Meat from animals fed with low fibre and high energy was the least luminous. Rabbits slaughtered at 2.0 kg showed more yellowness than at 2.3 kg at 0 min. In both traits, these differences did not prevail after 15 min of blooming. Globally, meat from males was more coloured than that of the females, both at 0 and 15 min of blooming. No significant differences were found for pH, WHC or shear test for the individual effects. In the sensory analysis, rabbit and grass odours were more intense at 2.0 kg than at 2.3 kg of slaughter weight.  相似文献

Sensory characteristics of longissimus thoracis muscle from three local Spanish beef breed-production systems and their relationships with chemical and instrumental meat quality traits were studied. Young bulls of Bruna dels Pirineus (BP; n = 69), Avileña-Negra Ibérica (A-NI; n = 70) and Morucha (MO; n = 70) breeds were reared in their own production systems. MO breed showed the highest water holding capacity and also the highest thawing loss and haem pigment content (P < 0.001). No differences in moisture and protein contents were found among breeds. A-NI showed the highest intramuscular fat (IMF, P < 0.05) and total collagen (P < 0.001) contents, whereas BP showed the lowest IMF content (P < 0.05) and the highest collagen solubility (P < 0.001). Beef flavour, tenderness and juiciness accounted for the eating quality differences among the three breed-production systems. Meat from A-NI was rated significantly higher (P < 0.01) for beef flavour and tenderness than that from BP and MO animals. Furthermore, MO showed the lowest juiciness (P < 0.001) which could be due to its higher thawing loss. Within the three breeds, thawing loss was negatively correlated with juiciness and, likewise cooking loss with juiciness and tenderness (P < 0.05). The canonical discriminant analysis showed that the three breeds were significantly different (P < 0.05) from each other according to sensory attributes, which justifies their involvement in different protected geographical indications (PGI).  相似文献

A rapid real-time polymerase chain reaction (PCR) technique using SYBR Green detection system, has been developed for the quantification of red deer, fallow deer, and roe deer DNAs in meat mixtures. The method combines the use of cervid-specific primers that amplify a 134, 169, and 120 bp of the 12S rRNA gene fragment of red deer, fallow deer and roe deer, respectively, and universal primers that amplify a 140 bp fragment on the nuclear 18S rRNA gene from eukaryotic DNA. The Ct (threshold cycle) values obtained with the 18S rRNA primers are used to normalize those obtained from each of the cervid-specific systems, serving as endogenous control for the total content of PCR-amplifiable DNA in the sample. Analysis of experimental raw and heat treated binary mixtures of red deer, fallow deer or roe deer meat in a swine meat matrix demonstrated the suitability of the assay for the detection and quantification of the target cervid DNAs in the range 0.1–0.8%, depending on the species and treatment of the meat samples analyzed.  相似文献

Skatole, androstenone and other compounds such as indole cause boar taint in entire male pork. However, female pigs also produce skatole and indole. The purpose of this experiment was to minimise boar taint and increase overall impression of sensory quality by feeding entire male and female pigs with fibre-rich feedstuffs. The pigs have been fed three organic diets for either 1 or 2 weeks prior to slaughter of which two diets contained different fermentable fibre-rich feedstuffs – 10–13.3% dried chicory roots or 25% blue lupines. These two treatments were compared with pigs fed with an organic control diet for either 1 or 2 weeks prior to slaughter. Lupines significantly reduced skatole in blood and backfat for both genders after 1 week. Moreover, lupines showed negative impact on growth rate and feed conversion whilst chicory showed no significant differences in this respect. However, the indole concentration was significantly lower in chicory than lupine fed pigs. From a sensory perspective, chicory and lupine feeding reduced boar taint since odour and flavour of manure related to skatole and urine associated to androstenone were minimised. The level of boar taint in the entire male pigs was most effectively reduced after 14 days by both fibre-rich feeds while lupine had the largest influence on “boar” taint reduction in female pigs.  相似文献

The effects of breed and slaughter weight on chemical composition, fatty acid groups, texture, and sensory characteristics of meat of 141 suckling male kids from 5 Spanish breeds were studied. There was a decrease in texture and lightness and hue angle with the increase of the slaughter weight. Fatty acid composition was correlated with the intramuscular fat content. All the breeds except MO had values of n-6/n-3 ratio below 4, which is the healthy limit recommended, and a low atherogenic index as well as a low intramuscular fat content. A multivariate analysis discriminated light kid, which had the most tender and juicy meat, from heavy kid which had more intense kid and milk odours. Blanca Andaluza and Pirenaica had most tender and juicy meat. The effect of slaughter weight on meat traits should be considered separately for each breed to find the most appropriate meat according to consumers preferences.  相似文献

The effect of muscle type on physico-chemical properties and sensory characteristics of foal meat was investigated. Six muscles: longissimus dorsi (LD), semimembranosus (SM), semitendinosus (ST), biceps femoris (BF), triceps brachii (TB) and psoas major & minor (PM) from twelve foals slaughtered at 15 months from an extensive production system in freedom regimen were extracted for this study. Regarding chemical composition, intramuscular fat content showed significant differences among muscle where PM presented higher values (0.7%) than the other ones. The heme-iron content also presented significant differences ranging between 1.5 and 2.4 mg/100 g fresh meat. ST was the lightest, while TB and PM presented a more intense redness. The muscles that had a greater capacity to hold water were ST and BF, which presented lower drip loss (2 and 2.2%) and cooking loss (17.3 and 17.2%), respectively. Textural traits established the following scale in response to the tenderness: LD > PM > ST > TB > BF > SM. Finally, sensory analyses revealed that color and texture traits (hardness, juiciness and fibrousness) were significantly influenced by muscle type.  相似文献

Effect of production system on carcass and meat quality was investigated in four groups of lambs: i. W-C lambs were weaned between 45 and 60 days of age and then were fattened with concentrate feed until slaughter; ii. W-G-S lambs were weaned and then taken to pasture and wheat stubble; iii. UW-C lambs were fattened with concentrate feed and they suckled their dams until slaughter; iv. UW-G lambs were kept with their dams and were taken to pasture in the day-time. Hot carcass weight was 13.62, 12.52, 14.37 and 13.88 kg (P < 0.001), and dressing percentage was 55.24, 51.77, 57.83 and 55.38% (P < 0.001), for W-C, W-G-S, UW-C and UW-G lambs, respectively. Ultimate meat pH was higher in W-G-S lambs than lambs from W-C and UW-C systems (P < 0.05). W-G-S lambs had higher shear force value in longissimus dorsi muscle (P < 0.05) and lower meat lightness (P < 0.001) than those of other systems. Panellists gave the lowest sensory scores, except juiciness, to meat of W-G-S lambs.  相似文献

Eighty four steers were randomly assigned to three pasture treatments with increasing levels of grain (T1: 0%; T2: 0.6%; T3: 1.2% of live weight) and to an ad libitum concentrate treatment, T4, to study the effects on carcass and meat quality. Animals were slaughtered with 500 kg of average live weight per treatment. Average daily gain increased with increasing levels of energy, determining different slaughter dates. Intermediate treatments showed higher carcass weight than T1. T4 and T3 had a higher weight of valuable cuts than T1 and T4. Pistolas from T4 had a higher fat proportion and lower bone percentage. Increasing levels of energy in diet decreased fat yellowness. After 20 days of aging, T4 had the lowest muscle a values and shear force was higher for T4 than for T1. With pastures finishing strategy, no adverse effects on meat quality were detected and tenderness was enhanced.  相似文献

This study was implemented to evaluate the potential of visible and near infrared reflectance (NIR) spectroscopy to predict sensory characteristics related to the eating quality of lamb meat samples. A total of 232 muscle samples from Texel and Scottish Blackface lambs was analyzed by chemical procedures and scored by assessors in a taste panel (TP). Then, these parameters were predicted from Vis/NIR spectra. The prediction equations showed that the absorbance data could explain a significant but relatively low proportion of the variability (R(2)<0.40) in the taste panel traits (texture, juiciness, flavour, abnormal flavour and overall liking) of the lamb meat samples. However, a top-tail approach, looking at the spectra of the 25 best and worst samples as judged by TP assessors, provided more meaningful results. This approach suggests that the assessors and the spectrophotometer were able to discriminate between the most extreme samples. This may have practical implications for sorting meat into a high quality class, which could be branded, into a low quality class sold for a lower price for less demanding food use. Regarding the chemical parameters, both intramuscular fat and water could be more accurately predicted by Vis/NIR spectra (R(2)=0.841 and 0.674, respectively) than sensory characteristics. In addition, the results obtained in the present study suggest that the more important regions of the spectra to estimate the sensory characteristics are related to the absorbance of these two chemical components in meat samples.  相似文献

The aim of this study was to assess the effect of social dominance on some indicators of welfare, production and meat quality of young bulls. A total of 60 bulls of the Gasconne breed, 9 months old, housed indoors were used. Indices of success order were calculated to reflect social dominance of each bull into three ranking categories (low, middle and high). Blood samples were taken to measure cortisol, lactate, glucose, creatine kinase, non-esterified fatty acid and neutrophil/lymphocyte ratio (N/L). M. longissimus samples were analysed in terms of pH, water holding capacity (WHC), texture, colour and sensorial attributes. Social rank influenced cattle stress response, which had an effect on productive performance but not on meat quality traits, with the exception of the sensory traits. These results emphasize the importance of implementing best management practices during pre-harvest handling of cattle in order to modulate any possible risk factor for social stress.  相似文献

The effect of forage to concentrate ratio: 60-40 [high concentrate group (HC) and 70-30 [low concentrate group (LC)] on growth, slaughtering performance and meat quality were evaluated in twenty organically farmed Podolian young bulls. Meat quality characteristics were measured on three different muscles [Longissimus dorsi (LD), Semimembranosus (SM) Semitendinosus (ST)], vacuum-packaged and chilled stored at 2-4°C for 15 days. The animals in the HC group had higher weight gain than those in the LC group (P<0.05). Slaughter data were not influenced by ration composition. The higher forage to concentrate ratio produced an improvement in fatty acid composition of the three muscles, with a higher polyunsaturated to saturated ratio (P<0.001). Vitamin E and malondialdehyde (MDA) contents were not affected by the feeding treatment. Panel scores for tenderness and flavour (P<0.01) and Warner-Bratzler Shear force (P<0.001) were significantly affected by muscle, the LD muscle being the most tender and the richest in flavour but they not affected by dietary treatment.  相似文献

The influence of the accumulated exudates released from pork loin of itself on the quality characteristics of fresh and freeze-thawed pork during cold storage was investigated. Pork loins were divided into four groups (fresh pork with exudates, fresh pork without exudates, freeze-thawed pork with exudates and freeze-thawed pork without exudates) and stored at 1.0 °C for 7 days. Exudate amount increased due to freeze-thawing and with storage, and most quality traits such as drip loss, cooking loss, tenderness, lightness, redness, and moisture content were affected by freeze-thawing (p < 0.05). Freeze–thaw increased drip loss but decreased moisture content, cooking loss, tenderness, lightness and redness of meat (p < 0.05). Microbial growth was solely affected by exudate removal and the removal of initial exudates decreased microbial growth (p < 0.05). Exudates were positively correlated with total protein content and total plate count but negatively correlated with pH and cooking loss. Therefore, removing meat exudates and avoiding freeze can slow down the quality deterioration of pork during cold storage.  相似文献

Blood loss associated with four combinations of stunning and exsanguination methods was determined as part of studying prevalence of ecchymosis in slaughtered fallow deer (Dama dama). A fifth treatment simulated incomplete severance of the extended neck after captive bolt stunning. Predicted mean weights of blood collected from the five slaughter treatments, including electrical stunning followed by the thoracic stick method of exsanguination, captive bolt stunning followed by the thoracic stick, captive bolt stunning followed by the gash cut method of exsanguination, electrical stunning followed by the gash cut, and captive bolt stunning followed by incomplete severance of the extended neck, were 1458.7, 1072.7, 684.5, 463.7, and 228.5 g, respectively. The overall effect of exsanguination method was highly significant (p < 0.001) with the thoracic stick resulting in the greatest weight of blood collection in the 10 s period immediately after initiation. The overall effect of stunning method on blood loss was not significant, although there was a significant (p < 0.05) stunning method by exsanguination method interaction. Ecchymosis of varying severity occurred in some carcases from all treatment groups. Using the total loin and round ecchymosis scores, when little or no ecchymosis (grades 0 or 1) was compared with some ecchymosis (?grade 2) by logistic regression, castrated bucks were 9.8 times more likely (p = 0.002) and does 4.2 times more likely (p = 0.06) to have some ecchymosis than entire bucks. The results indicate that ecchymosis can be reduced in fallow deer carcases by thoracic stick exsanguination incorporated less than 10 s after stunning.  相似文献

Steers were offered grass silage ad libitum and 6.4 kg concentrates daily for 126 days or silage ad libitum for 35 days, followed by concentrates ad libitum (Experiment 1). Steers were offered grass silage ad libitum and 6 kg concentrates daily for 154 days, concentrates ad libitum or grass silage ad libitum for 112 days followed by concentrates ad libitum (Experiment 2). All treatments received the same total concentrate allowance. In Experiment 1, there was no difference in any measurement of meat quality. In Experiment 2, ad libitum concentrate feeding per se, decreased redness and increased shear force of muscle at 2 days post-mortem. Delaying concentrate feeding decreased fat yellowness, decreased shear force at 7 and 14 days post-mortem and increased muscle redness at 14 days post-mortem. Modifications of the beef production system examined had minor effects on beef quality which are unlikely to be of commercial significance.  相似文献

The effects of stunning on both initial and up to 2 weeks post mortem storage meat quality of Spanish Manchega breed lamb were studied. Twenty-four lambs were distributed into two groups. The first group (US; n =12) were slaughtered without previous stunning. In the second group (ES; n =12) animals were electrically stunned. Meat quality was assessed by examining pH, colour as L*, a*, b* values, water holding capacity (WHC) and shear force (SF). Stunning did not affect any parameter studied in the first 24 h post mortem. There were increasing differences between groups in pH (P<0.001) from 5 days onwards. In general stunning did not have an effect on WHC, SF and colour parameters. Ageing of meat affected SF in the ES group but not in the US one; however, there were no significant differences between treatments at any of the ageing times.  相似文献

Authentic meat products are gaining attention through their unique quality characteristics linked to their origin. Various factors are known to influence the quality of fresh meat. This review describes the different Protected Designation of Origin (PDO) and Protected Geographical Indication (PGI) lamb types and discusses the factors which influences its unique sensory and chemical characteristics. Flavour, aroma, texture and colour play an integral part in the sensory quality of denomination of origin fresh meat products. For authentic fresh sheep meat the sensory (as well as chemical) quality is largely influenced by diet followed by breed, age and gender. However, diet forms the link with the geographical area of origin, which together with the traditional production system and sheep breeds used, lends the product its authentic nature. This review shows how diet linked to origin can affect the quality of the meat and furthermore how other factors such as breed can also have an effect. Research relating to the authentic lamb types were evaluated and the shortcomings highlighted in order to assist with the development of PDO and PGI specifications in the future. © 2016 Society of Chemical Industry  相似文献
