This study evaluated effects of feedlot backgrounding strategies (40, 70 or 100% alfalfa hay diets) or pasture grazing on moisture, protein, total lipids, ash, cholesterol concentration, and lipid profiles of the longissimus dorsi muscle (LM) of pasture finished Angus heifers. Ninety six calves were allocated to the strategies over a 114-day period, followed by pasture grazing over 132 days. At the end of the backgrounding stage, the concentration of omega-3 (n-3) fatty acids was highest in the Pasture group and this difference persisted (P < 0.032) until the end of the 132 day pasture finishing phase. Similarly, the n-6/n-3 ratio was lowest in the Pasture group at the end of backgrounding and after pasture finishing. Backgrounding diets based on 70 and 100% hay or pasture grazing showed greater (P < 0.041) conjugated linoleic acid (CLA) concentration in the lipid fraction than 40% hay. Results suggested that residual effects of backgrounding strategies could be detected in intramuscular fat of pasture finished heifers.  相似文献

Fifty-six spring calving Holstein–Friesian dairy cows (body weight = 607 kg and body condition score = 2.75), destined for culling, were randomly assigned to one of four experimental treatments. Cows were confirmed non-pregnant by rectal palpation. The experiment was split into two periods: over-wintering period (OWP) and spring finishing period (SFP). Animals were assigned to one of four treatments: a control group (C) was slaughtered after am milking on day 0; three dietary treatments, two of which were dried pre-experiment; ad libitum grass silage (GS + G); 75% grass silage and 25% straw (GS + S); and one with the extended lactation concept applied, cows were offered grass silage plus 6 kg concentrate DM/cow/day and milked twice daily (EXTLAC). EXTLAC cows were dried-off 1 week prior to turnout. The OWP lasted 84 days. Subsequent to the OWP cows were turned out to pasture (SFP). All cows were finished to a pre-defined carcass specification; >272 kg cold carcass weight, P + carcass conformation class and 3 carcass fat class. Over the entire experimental period, average daily gain (ADG) was lower (P < 0.001) for the EXTLAC treatment compared with the two other dietary treatments. The GS + G treatment finished 33 and 38 days (P < 0.001) earlier than the GS + S and EXTLAC treatments, respectively. Total feed utilized on a DM basis was 1.9, 2.0 and 2.5 tonnes/cow for the GS + G, GS + S and EXTLAC dietary treatments, respectively. All finishing treatments resulted in a significant improvement in carcass weight, as well as carcass quality traits, compared to the C group. A significant improvement occurred in muscle redness between the C group and treatments offered a finishing period prior to slaughter.  相似文献

Steers were offered grass silage ad libitum and 6.4 kg concentrates daily for 126 days or silage ad libitum for 35 days, followed by concentrates ad libitum (Experiment 1). Steers were offered grass silage ad libitum and 6 kg concentrates daily for 154 days, concentrates ad libitum or grass silage ad libitum for 112 days followed by concentrates ad libitum (Experiment 2). All treatments received the same total concentrate allowance. In Experiment 1, there was no difference in any measurement of meat quality. In Experiment 2, ad libitum concentrate feeding per se, decreased redness and increased shear force of muscle at 2 days post-mortem. Delaying concentrate feeding decreased fat yellowness, decreased shear force at 7 and 14 days post-mortem and increased muscle redness at 14 days post-mortem. Modifications of the beef production system examined had minor effects on beef quality which are unlikely to be of commercial significance.  相似文献

Thirty-nine steers were distributed into a 2 × 2 factorial arrangement of treatments to determine the effect of corn grain particle size (cracked [CC] vs ground [GC] corn) and soybean meal treatment (solvent extracted soybean meal [SS] vs lignosulfonate treated soybean meal Soypass™ [SP]) on carcass and meat quality traits. When CC diet was supplemented with SS carcass quality grade score tended to decrease (P = 0.09). GC had no effect on meat quality, while SP only increased the intramuscular fat content when added to CC (P = 0.01). The CC diet supplemented with SP increased the proportion of saturated fatty acids (P = 0.01). Despite the positive effects on carcass quality, the lack of improvement in meat quality and the more saturated fatty acid profile would not justify the use of processed corn or treated soybean meal in the finishing diet of steers.  相似文献

This paper details current production trends for sheep and beef cattle production in New Zealand and gives some insight into the opportunities for improvement based on New Zealand research at Massey University. Further it outlines some of the challenges the industries face in the near future. The New Zealand climate favours pasture growth and this is the key to sheep and beef cattle production with over 95% of the diet being grazed pasture or crop. Exports are the focus of the industry with 95% of sheep meat and wool, and 80% of beef exported. There have been considerable gains in production over the last 20 years but there still remains a huge opportunity for further intensification through breeding sheep at an earlier age, increasing the weight of lambs weaned per ewe per year and improving beef production systems. These improvements need to occur within a framework of minimal environmental footprint and produce products that are in demand in the high end international markets.  相似文献

Three hundred and six Limousin young bulls (7 ± 1 months of age, initial body weight 273 ± 43 kg) were used to evaluate the effect of crude glycerine supplementation on animal performance, carcass characteristics and meat quality. Animals were assigned to three different diets: Control (0% of crude glycerine), G2 and G4 (2 and 4% of crude glycerine, respectively). The diets were administrated ad libitum for 240 days (final body weight 644 ± 24 kg). Average daily weight gain, average daily feed intake, the gain:feed ratio, ultrasound measures in vivo, carcass characteristics, pH, water holding capacity, drip losses, and cooking losses were not affected (P > 0.05) by diets. Diet decreased C16:0 (P < 0.01) and C16:1 (P < 0.05) contents in meat. The G4 meat showed lower C12:0, C14:0, C17:0, C18:0, C18:1, C18:2, C18:3, c9,t11-c18:2, C20:0 and C20:4 levels (P < 0.05) than control. Glycerine increased desirable fatty acid percentages (P < 0.05) in intramuscular fat.  相似文献

Eighty four steers were randomly assigned to three pasture treatments with increasing levels of grain (T1: 0%; T2: 0.6%; T3: 1.2% of live weight) and to an ad libitum concentrate treatment, T4, to study the effects on carcass and meat quality. Animals were slaughtered with 500 kg of average live weight per treatment. Average daily gain increased with increasing levels of energy, determining different slaughter dates. Intermediate treatments showed higher carcass weight than T1. T4 and T3 had a higher weight of valuable cuts than T1 and T4. Pistolas from T4 had a higher fat proportion and lower bone percentage. Increasing levels of energy in diet decreased fat yellowness. After 20 days of aging, T4 had the lowest muscle a values and shear force was higher for T4 than for T1. With pastures finishing strategy, no adverse effects on meat quality were detected and tenderness was enhanced.  相似文献

Twenty-one Brown Swiss × Limousin young bulls reared on pasture were housed for a short finishing period (60 days). CA group (concentrate-ad libitum group) received concentrate and straw ad libitum for the whole finishing period. CR group (concentrate-restricted group) received 4 kg of concentrate/animal per day and ad libitum alfalfa hay throughout the 60 days. CRA group (concentrate-restricted/ad libitum group) received the same diet as CR group for the first 30 days and the same diet as CA group for the last 30 days. CA and CRA groups presented higher fatness values. Myoglobin concentration in muscle was highest in CA group (P < 0.05) and carotene content in subcutaneous fat was highest in CR group (P < 0.01), while Warner–Bratzler shear force and sensory traits were unaffected (P > 0.05). It is concluded that, in this type of young animal, 4 kg concentrate plus ad libitum alfalfa hay for a 60-day finishing period, despite lower fatness, provides carcasses and meat with acceptable quality characteristics, similar to those obtained from ad libitum fed animals for the same period.  相似文献

Carcass and meat quality traits of thirty-six feedlot beef heifers from different genetic groups (GG) fed at two concentrate levels (CL) were evaluated using 12 - Nellore (NE), 12 - ½Angus x ½Nellore (AN) and 12 - ½Simmental x ½Nellore (SN) animals. Six heifers of each GG were randomly assigned into one of two treatments: concentrate at 0.8% or 1.2% of body weight (BW). Heifers fed concentrate at 0.8% of BW had greater (P < 0.05) dressing percentage. None of the proximate analysis components of the beef were affected (P > 0.05) by either CL or GG. Heifers from the AN group had higher (P < 0.05) carcass weights, 12th rib fat thickness and lower dressing percentage (P < 0.05) compared to the other groups. NE heifers had greater WBSF values (P < 0.05) than the other genetic groups. Data suggest that the concentrate level can be reduced without compromising meat quality traits.  相似文献

An increase in the intake of the n-3 series polyunsaturated fatty acids (PUFA) is recommended by nutritionists for the human diet and beef is a significant source of these fatty acids. Enhancing the n-3 PUFA content of beef is important in view of the generally saturated nature of fatty acids in ruminant meats and the potentially negative effect this can have on human health. This study examined the effects of breed and diet on the fatty acid composition of beef M. longissimus. Ninety-six steers were used, 48 Aberdeen Angus cross (AA) and 48 Holstein-Friesian (HF). At 6months of age, 3 groups were identified, to be slaughtered at 14, 19 and 24months, respectively. Each group consisted of eight steers of each breed fed on a concentrate or a grass silage diet, rich in n-6 and n-3 PUFA, respectively. The intake of the concentrate diet was restricted so that steers of each breed grew at a similar rate on each diet. The early maturing AA produced heavier, fatter carcasses with better conformation. Animals fed grass silage had higher carcass fatness and conformation scores and higher levels of neutral lipid and total lipid in muscle than those fed concentrate. When all animals were pooled, a decline in PUFA% as total muscle lipid increased was evident. Feeding a grass silage diet rich in α-linolenic acid (18:3n-3) increased levels of this fatty acid in muscle neutral lipid by a factor of about 3.0 compared with the concentrate diet, as well as enhancing the synthesis of the n-3 series long-chain C20-22 PUFA in the phospholipid fraction, including docosahexaenoic acid (DHA, 22:6n-3). In contrast, both levels and proportions of linoleic acid (18:2n-6) and the n-6 series C20-22 PUFA were higher in animals fed the concentrate diet. The proportions of 18:1trans and conjugated linoleic acid (CLA) in muscle neutral lipid were higher in animals fed concentrate compared with silage in all 3 groups. This was partly due to increased consumption of 18:2n-6. The ratio of PUFA to saturated fatty acids (P:S) in muscle was reduced by feeding grass silage, partly as the result of increased fat deposition. However, the increase in levels of n-3 series fatty acids with silage-feeding resulted in beneficially low n-6:n-3 ratios in muscle in all age groups (approximately 1.2 compared with 12.0 in the concentrate diet). Subtle breed differences in PUFA amounts and proportions were noted. Holstein-Friesians had higher proportions of PUFA and higher P:S ratios compared with AA, partly due to a higher proportion of phospholipid in total lipid. In phospholipid itself, HF in the 19 and 24months groups had higher proportions of most n-3 PUFA. In all age groups the ratio of DHA to its precursor, 18:3n-3 was higher in HF.  相似文献

Post-slaughter muscle energy metabolism meat colour of South African production systems were compared; steers (n = 182) of Nguni, Simmental Brahman crossbreds were reared on pasture until A-, AB-, or B-age, in feedlot until A–AB-age. After exsanguination carcasses were electrically stimulated (400 V for 15 s). M. longissimus dorsi muscle energy samples were taken at 1, 2, 4 and 20 h. Post-mortem samples for meat quality studies were taken at 1, 7 and 14 days post-mortem. Production systems affected muscle glycogen, glucose, glucose-6-P, lactic acid, ATP, creatine-P glycolytic potential (P < 0.05), with the muscles of feedlot carcasses having a faster glycolysis rate than pasture carcasses. Energy metabolites correlated (0.4 < r < 0.9) with meat colour (CIE, L*a*b*), (0.3 < r > 0.5) water holding capacity, drip loss, and Warner Bratzler shear force. Muscle energy only affected muscle contraction of the A-age-pasture system (shortest sarcomere length of 1.66 μm vs 1.75 μm highest WBS of 6 kg vs 5 kg 7 days post-mortem).  相似文献

Carcass and meat quality traits of 16 pregnant and 5 non-pregnant cows fed at 1.2 times maintenance and 16 pregnant and 6 non-pregnant fed ad libitum were evaluated. Pregnancy did not affect final body weight (FBW; P = 0.0923), cold carcass yield (CCY; P = 0.0513), longissimus muscle area (LMA; P = 0.8260), rib fat thickness (RFT; P = 0.1873) and shear force (WBSF; P = 0.9707). A lower FBW (P = 0.0028), LMA (P = 0.0048) and RFT (P = 0.0001) were observed in feed restricted cows. However, no differences were found for CCY (P = 0.7243) and WBSF (P = 0.0759) among feeding level groups. These data suggests that carcass and meat quality traits are not affected by pregnancy status in Nellore cows. Moreover, although cows experiencing feed restriction did have reduced deposition of subcutaneous fat and lean tissue, there were no major impacts on meat quality traits.  相似文献

Effect of muscle stretching on meat quality of biceps femoris from beef   总被引:3,自引:0,他引:3  
The objective of this study was to examine the effect of muscle stretching on meat quality and ultrastructure of biceps femoris (BF) from beef. After slaughter, the right side of the carcasses were suspended from the Achilles tendon (AS; n=10), while the left sides were re-hanged from the pelvic bone (PS; n=10). Meat quality was evaluated by water holding capacity (WHC), cooking loss (CL), color, shear force (SF) and sarcomere length (SL). As a result, PS had no impact on WHC, CL and color parameters. PS significantly decreased SF values by 7.5% only at 2 days postmortem. At pelvic suspended sides, SL was increased by 0.13 μm, 0.14 μm and 0.12 μm at 2, 7 and 10 days postmortem, respectively (P<0.001). Electron microscopy showed that the ultrastructure of BF have longer sarcomeres and smaller fiber diameter after PS. In conclusion, PS is a useful method for improving tenderness by stretching muscles.  相似文献

Forty-eight Bonsmara steers were assigned to three treatment groups and one control group consisting of 12 animals each. The control (C) received no β-agonist, while the three treatment groups received zilpaterol (6 ppm) (Z), ractopamine (30 ppm) (R) or clenbuterol (2 ppm) (Cl) for the last thirty days on feed. Growth performance (final 30 days), USDA quality and yield grades and meat quality (shear force, chemical, histological and biochemical) were compared for the three β-agonist and control groups. Animals responded negatively to Cl treatment during initial stages of supplementation, which was evident in lower feed consumption and initial growth rates. For carcass growth and yield, Cl had greater and more efficient growth rates, higher dressed out yields (proportional), lower USDA yield grades, and reduced marbling compared with C (P < 0.05). For meat quality measurements, the M. longissimus (LL) and M. semitendinosus (ST) were sampled. Cl had the greatest effect (P < 0.05) on WBSF, especially on the LL, followed by Z. Variation in tenderness and ageing effects corresponded with variation in calpastatin activity and myofibrillar fragmentation between treatment groups. While zilpaterol and ractopamine are currently the only products registered for cattle in different countries, it seems that zilpaterol has an advantage in carcass growth efficiency and yield without showing any adaptation problems for animals such as experienced by the more aggressive β-agonist clenbuterol.  相似文献

The relationship between growth rate and meat tenderness was investigated in ≈7000 cattle from temperate and tropically adapted breeds, finished on either pasture or in a feedlot to one of three market weights. Growth rate was calculated from weaning to the beginning of finishing (backgrounding) and over the finishing period, for both contemporary groups and individuals within these groups. Shear force and compression of longissimus lumborum (striploin) and semitendinosus (eye round) were measured at two days ageing, and palatability of the striploin at 14 days ageing. Analyses assessed the importance of growth rate during backgrounding and finishing on both a within group and between group basis. Where significant in individual animals, increased growth rate resulted in more palatable or tender meat, but the results were not consistent between breed types, locations, or the two muscles sampled. The most consistent relationship was an increase in palatability of the striploin with increased growth rate during finishing. Increased growth rate of groups during backgrounding improved palatability consistently across breedtypes, finish and location, however most of this relationship was accounted for by difference in mean group age at slaughter.  相似文献

Thirty Hereford steers were finished either on pasture (n=10) or concentrate (n=20) to determine dietary and antioxidant treatment effects on carcass characteristics, fatty acid composition, and quality of Uruguayan beef. Half of the steers finished on concentrate were supplemented with 1000 I.U. vitamin E head(-1) day(-1) for 100 days. Postmortem vitamin C was added to ground beef (0.05% v/w) displayed for 8 days at 2?°C. Carcasses from steers finished on concentrate had greater (P<0.05) carcass weight, conformation, degree of finishing, fat depth, and ribeye area than pasture finished animals. Carcasses from pasture-fed steers showed darker (P<0.05) longissimus color and yellower (P<0.05) fat at 24 h postmortem than concentrate-fed. Initial longissimus Warner-Bratzler shear force (WBSF) values were similar (P>0.05) between pasture- and concentrate-fed animals. However, beef from pasture-fed cattle had lower (P<0.05) WBSF values at 7 and 14 days postmortem. Longissimus α-tocopherol concentrations were greater (P<0.01) for pasture- and concentrate-fed animals that were supplemented with vitamin E compared to concentrate-fed. Steaks from pasture-fed and vitamin E supplemented cattle had similar (P>0.05) TBARS values, which were lower (P<0.05) than steaks from concentrate-fed steers during 21 days of display. Ground beef from vitamin E supplemented steers had the lowest TBARS values; whereas samples from pasture-fed animals had the lowest lipid stability with higher TBARS levels than other treatments. Vitamin C addition to ground beef did not (P>0.05) reduce lipid oxidation. Vitamin E supplementation of concentrate-fed cattle had no effect (P>0.05) on color stability of ground beef or steaks. The a(?) (redness) and b(?) (yellowness) values were higher (P<0.05) when vitamin C was added to ground beef. Longissimus fatty acid content of concentrate-fed animals was twofold greater (P<0.01) than pasture-fed. The percentages of C14:0, C16:0, and C18:1 fatty acids were higher (P<0.01) in the intramuscular fat of concentrate-fed steers, whereas pasture-fed cattle showed greater (P<0.01) proportions of C18:0, C18:2, C18:3, C20:4, C20:5, and C22:5. Total conjugated linoleic acid (CLA) and CLA isomer c9t11 were higher (P<0.01) for pasture- than concentrate-fed cattle. Vitamin E supplementation of concentrate-fed steers increased lipid stability of ground beef and steaks, but was unable to improve color stability; whereas vitamin C addition to ground beef increased color stability without altering lipid oxidation. Finishing cattle on pasture enhanced the unsaturated fatty acid profile of intramuscular fat in beef including CLA and omega-3 fatty acids.  相似文献

The effects of Burdizzo pre-pubertal castration on performance, behaviour, carcass, and meat quality of Holstein bulls fed high-concentrate diets were evaluated. Two hundred bulls (8.0 ± 0.42 months old) were randomly assigned to control (CTR) or Burdizzo castration (BURD). After 121 d, ADG, BW, and HCW were greater in CTR animals than in BURD animals, as well as, the agonistic and sexual behaviour. However, carcass fatness and intramuscular LT (longissimus thoracis) fat percentage were greater in BURD animals than in CTR animals. Additionally, CTR animals showed lower L, a, and b than BURD. The WBSF was smaller (P < 0.01) in BURD than in CTR bulls at all ageing days, and in both treatments decreased (P < 0.01) from 0 to 7 d of ageing. Additionally, at day 0 of ageing, meat from BURD animals showed similar WBSF to meat from CTR bulls after 7 d of ageing. However, 23% of BURD animals did not have a complete testicular atrophy, suggesting that the method of castration was not completely effective.  相似文献

The studies analyse the effect of straw on lamb welfare, production and meat quality in finishing lambs. Two studies were carried out. Study 1 included two treatments and two replicates with six lambs each (17.20±0.2kg). One pen was provided with straw for forage and bedding while the other had none. Feeding with concentrate was ad libitum. Live weight and concentrate consumption were recorded and average daily gain and conversion index calculated. Stereotypes, agonistic and affiliative interactions and physiological indicators of stress were analysed. In study 2, 24 lambs were divided into two groups to analyse the effect of treatments on meat and carcass quality. No significant differences in production or meat quality traits were observed. Lambs housed without straw had higher levels of cortisol and stereotypes. Affiliative interactions were greater in lambs without straw. Results suggest that straw can be considered an effective environment-enriching tool to improve welfare.  相似文献

Samples of longissimus (LL) and triceps brachii (TB) muscles from Angus-cross heifers finished either on a high-concentrate ration in Washington, USA, (US cattle, n = 15) or on pasture in New Zealand (NZ cattle, n = 16) were assessed for composition characteristics. Half of the NZ cattle were of a similar age to the US cattle (NZAge) and half were of a similar weight (NZWt). Iron concentration was higher in TB (20.9 vs. 17.5 μg g−1; P < 0.001) and was higher for the NZWt group than the NZAge group or the US cattle. The proportion of iron as haem iron was highest for the NZWt group (87.3%; P < 0.01), but the proportion as soluble haem iron was highest for the US cattle. For a sub-group of 10 pasture-finished cattle, iron levels in cheek muscle were higher than for LL or TB, and liver levels were 66% higher than cheek muscle. The proportion of haem iron, however, was lowest in liver (55.3%) and was lower in cheek muscle (78.4%) than LL or TB. Relative to LL, TB had higher levels of taurine and coenzyme Q10, but lower levels of carnosine, creatine and creatinine, as expected for a muscle with a more aerobic metabolism. These differences were magnified for the even more aerobic cheek muscle. Differences between the two NZ groups were small, but muscles from the US cattle contained less taurine, carnosine, coenzyme Q10, and creatinine. Reasons for these differences in various meat components for similar cattle from different production systems are not clear.  相似文献
