To provide efficient antioxidant capacities, proper carriers are needed to protect antioxidants against oxidative stress. Collagen mesh structure or chitosan gel was loaded with α-tocopherol and their effects were evaluated in bulk corn oil or oil-in-water (O/W) emulsion at 60 °C. Added collagen and chitosan enhanced oxidative stability in corn oil and O/W emulsions at 60 °C compared to corn oils without carriers or with addition of α-tocopherol (p < 0.05). Stability of α-tocopherol in corn oil loaded in collagen or chitosan was significantly enhanced compared to that in oils without carriers (p < 0.05). In O/W emulsions, α-tocopherol loaded collagen showed higher antioxidant properties than α-tocopherol loaded chitosan (p < 0.05). Collagen mesh structure and chitosan gel retarded the rates of lipid oxidation efficiently in both food matrices when α-tocopherol was not loaded. Collagen mesh structure and chitosan gel can be useful carriers for α-tocopherol in bulk oil or O/W emulsion. 相似文献

Relationships between α-tocopherol concentration in the muscle and development of lipid oxidation or volatiles in raw venison were studied. Fourteen Japanese Shika Deer (Cervus nippon) were fed various amounts (0–3.0 g of α-tocopheryl acetate per animal) during the different periods (0–37 days) and then M. longissimus thoracium et lumborum (LD muscles) with a range of α-tocopherol concentrations (4.1–15.1 mg/kg tissue) were obtained. For stabilizing the lipid during storage for 11 days under air, over ca. 9 mg of α-tocopherol per kg tissue were required based on levels of 2-thiobarbituric acid reacting substances (TBARS) numbers. Nine compounds were identified in headspace volatiles, and one of the volatiles was hexanal which has been recognized as off-flavour component. For depressing the hexanal evolution, at least ca. 9 mg of α-tocopherol per kg tissue were also required for 11 days’ storage. This value was much higher than other species. The reasons for higher requirement of α-tocopherol were possibly due to the higher concentration of unsaturated fatty acid and myoglobin in venison. 相似文献

Effects of dietary α-linolenic acid on the fatty acid composition, storage stability and sensory characteristics of cooked pork were studied. Dietary α-linolenic acid (LNA) significantly (p < 0.05) increased the proportion of n−3 fatty acids and the degree of unsaturation in the neutral lipids and phospholipids. The increases in n−3 fatty acids were observed in the total lipids, triglycerides, phosphatidylethanolamine and phosphatidylcholine, and mainly consisted of C18:3n3, C20:5n3 and/or C22:5n3.The thiobarbituric acid reactive substances (TBARS) values (mg malondialdehyde per kg meat) of cooked vacuum packaged loins remained below 1.5, but in loose packaged loins TBARS values increased more than 3 times those of 0 time values during 2-day storage at 4 °C. The TBARS values of loins after LNA-enrichment were significantly higher than those of the control in both vacuum and loose packaging, and the increase of unsaturation in fatty acids had a strong prooxidant effect. The increase in dietary LNA enrichment increased oxidation (TBARS values) and had a detrimental effect on the acceptability of cooked pork loins held for 2 days in loose packaging. 相似文献

Butter oil triacylglycerols (BO-TAGs), free of antioxidants, including β-carotene, were obtained via sequential treatments with activated carbon (AC) adsorption and alumina column chromatography. α-Tocopherol, β-carotene and ascorbyl palmitate (AP) were added to BO-TAGs, individually, or in different combinations. An accelerated oven-oxidation test was carried out at 60 °C to determine the most effective dosages of the antioxidants. Among the antioxidants evaluated, α-tocopherol was found to be the most effective, at the concentration of 50 μg/g. To determine the possible synergism between the antioxidants, binary or ternary combinations of α-tocopherol, β-carotene and AP were added to BO-TAGs at concentrations of 50, 5, and 50 μg/g, respectively. Ternary combinations of these antioxidants were significantly better in retarding oxidation than were binary blends of α-tocopherol with β-carotene or AP. However, a prooxidant effect was observed, especially when β-carotene and AP were used individually or in binary combination. 相似文献

The effects of α-tocopherol on the oxidative stability and incorporation of deuterium in volatiles were evaluated in linoleic acid-water model systems treated at 60°C by analyzing headspace oxygen depletion, formation of lipid hydroperoxides, and profiles of headspace volatiles. Deuterium oxide accelerated the rates of linoleic acid oxidation compared to samples in deuterium-free water. As the concentration of α-tocopherol increased from 0 to 1500 ppm, the consumption of headspace oxygen and the formation of volatiles decreased, whereas the contents of lipid hydroperoxides did not decrease in the linoleic acid-water system. The mass to charge ratios (m/z) of volatiles in linoleic aciddeuterium oxide were significantly higher than those with deuterium oxide-free water. Generally, the presence of α-tocopherol decreased the mass to charge ratios (m/z) of volatiles including pentanal, hexanal, t-2-heptenal, and 2-octenal, implying that α-tocopherol may be involved in the aldehyde formation from lipid oxidation. 相似文献

The effect of rosemary extract, chitosan and α-tocopherol, added individually or in combination, on lipid oxidation and colour stability of frozen (−18 °C) beef burgers stored for 180 days was investigated. The burgers’ lipid oxidation and appearance were evaluated through measurement of primary (conjugated dienes and peroxide value) and secondary (malondialdehyde) oxidation products, together with visual assessment and instrumental measurement of colour. Chitosan alone and in combination with either rosemary or α-tocopherol had the best antioxidative effect (P ? 0.05) compared to individual use of rosemary or α-tocopherol, while the best results were obtained with the combination of chitosan and rosemary. The differences of antioxidative effects, however, between individual use of rosemary or α-tocopherol as compared to the controls were also significant (P ? 0.05). Chitosan added individually or in combination with either rosemary or α-tocopherol had also a noteworthy effect on the burgers’ appearance as it contributed to red colour retention for a much longer period (P ? 0.05) compared all other treatments and the controls. In conclusion, the best antioxidative effects were obtained with the combination of chitosan and rosemary extract. 相似文献

The current work evaluated the ability of pure 3,4-dihydroxyphenylglycol (DHPG) and hydroxytyrosol (HT) in combination with a commercial phenolic extract from Olea europaea rich in HT to prevent the oxidation of edible vegetable oils. The commercial phenolic extract was highly soluble in all matrices and significantly improved the oxidation stability and delayed the onset of rancidity of oils compared to a control (with no antioxidant). The combinations of DHPG with other natural antioxidants, such as HT and α-tocopherol, showed that it can be a useful supplement to increase the shelf life of sunflower oil. Synergism was observed when DHPG and HT were added in combination. The synergistic effect was directly related to the concentration ratio between both antioxidants. The mixtures containing DHPG/α-tocopherol and DHPG/HT/α-tocopherol also showed effectiveness in delaying oxidation. 相似文献

The migration of α-tocopherol (α-T) from low density polyethylene (LDPE) films, added with 20 (film A) and 40 mg g?1 (film B) to corn oil for 12 weeks at 5, 20 and 30 °C was determined. A LDPE film added with no α-T was used as control (film C). Diffusion coefficient (D) values for the film A system were 1.4 × 10?11, 7.1 × 10?11 and 30.3 × 10?11 cm2 s?1 at 5, 20 and 30 °C, respectively. Meanwhile, D values for the film B system were 1.3 × 10?11, 9.6 × 10?11 and 51.1 × 10?11 cm2 s?1 at the same temperatures. The activation energy (Ea) for the diffusion of α-T was 126.5 (film A) and 105.9 kJ mol?1 (film B). The effect of the migration of α-T on the oxidative stability of corn oil was evaluated by monitoring hexanal content by solid phase micro-extraction (SPME) and gas chromatography. The hexanal content in the oil showed that both films added with α-T resulted suitable to maintain the oxidative stability of the oil for about 16 weeks at 30 °C, compared to 12 weeks for the oil in contact with the film C. 相似文献

Information on the antioxidative potential of -tocopherol is scanty, in particular for frying conditions. This study was aimed at assessing the antioxidative effects and degradation of - and -tocopherol between 0.01 and 0.1% on the oxidation of a commercial frying fat at 160 °C. Oxidation experiments were performed by assessing every 15 or 30 min the peroxide value and conjugated dienes as primary oxidation products, p-anisidine reactive products and hexanal as secondary oxidation products, as well as the stability of tocopherols. The fatty acid composition was determined after 6 h. The fat samples enriched with -tocopherol were considerably less resistant to oxidation compared to those with -tocopherol. Both primary and secondary oxidation parameters increased their speed of formation with -tocopherol but not with -tocopherol. The latter observation is confirmed for the total amount of oxidation and also for the first stage, showing a lag phase only for -tocopherol. These antioxidative effects can be due to the higher stability of -tocopherol compared to -tocopherol, which is oxidized faster into tocopheryl radicals, which can participate in side reactions that result in an acceleration of the oxidation speed. Neither -tocopherol nor -tocopherol influenced the fatty acid pattern. The investigation showed that during mild frying conditions the tocopherol homologues displayed various antioxidant activities. The less effective homologue, -tocopherol, underwent disintegration more quickly than -tocopherol. 相似文献

β-Lactoglobulin (β-LG), the major whey protein in the milk of ruminants, has a high affinity for small hydrophobic molecules. In the present study, its interaction with lipophilic α-tocopherol, the most abundant and biologically active form of vitamin E, was investigated using circular dichroism, fluorescence, high performance liquid chromatography and turbidity analysis. The interaction did not disrupt the secondary or tertiary structures of β-LG. It was dependent on the aggregation of α-tocopherol and on β-LG/α-tocopherol ratios, with one binding site appearing to be the protein internal cavity and the other in the hydrophobic surface pocket at protein concentrations 1/10 that of the vitamin. Formation of complexes with β-LG increased the solubility of α-tocopherol. The protein also protected α-tocopherol somewhat against decomposition, which depended on the protein concentration and was most effective at a β-LG concentration of one-tenth the α-tocopherol concentration. Protein–nutrient complexes might therefore be useful in the development of functional foods. 相似文献

Squalene is prone to auto-oxidation because it has a high content of unsaturated bonds. The effects of carnosic acid (CA) and two common antioxidants (butylated hydroxytoluene and α-tocopherol) on oxidative stability in squalene at different accelerated conditions (heating and UV irradiation) were compared. The investigation focused on the increase in peroxide and thiobarbituric acid-reactive substances. The changes in functional group contents were investigated by Fourier transform infrared spectroscopy, while the changes in squalene content and impurities situation were monitored by gas chromatography–mass spectrometry. The results show that CA was more effective in restraining squalene oxidation under heating, UV-A and UV-B irradiation. The antioxidant activity of CA was stronger than that of α-tocopherol and butylated hydroxytoluene. Squalene supplemented with 0.2 mg/g CA exhibited favorable antioxidant effects and is preferable for effectively avoiding oxidation. 相似文献

The effect of oxygen level (20, 40, 60 and 80%) in modified atmospheres on the oxymyoglobin content of intact and minced beef (M. semimembranosus, SM) was evaluated. There was no significant difference in the oxymyoglobin content of minced SM stored for up to 4 days in modified atmosphere packs containing 20, 40, 60 or 80% O(2). After 7 days, oxymyoglobin in minced SM decreased significantly (P?0.05) with decreasing oxygen level but by day 10 all samples had similarly low oxymyoglobin contents. Lipid oxidation increased significantly (P?0.05) between day 7 and 10 of storage in minced SM stored in modified atmospheres containing 40, 60 or 80% O(2). Oxymyoglobin and lipid oxidation occurred in intact SM but the extent of oxidation was lower than for minced SM. Exogenous α-tocopherol, dispersed in olive oil and added to minced SM (300 and 3000 mg α-tocopherol/kg lipid), had no significant effect on Hunter 'a' values when the samples were stored in low (20%) or high (80%) oxygen atmospheres. Exogenous α-tocopherol addition led to a significant reduction in lipid oxidation (P?0.05) in minced SM stored in high but not in low oxygen atmospheres. 相似文献

The synergistic effect of dietary linolenic acid and vitamin E on the oxidative stability and nutritional and eating characteristics of fresh and stored rabbit meat was studied. One-hundred hybrid male rabbits were divided into two homogenous groups and fed ad libitum two diets differing in the amount of sunflower and flaxseed and in the level of α-tocopherol, as follows: control diet: 0.08 kg kg(-1) sunflower, 50 mg kg(-1) α-tocopheryl-acetate and LNA-VE diet: 0.08 kg kg(-1) flaxseed, 200 mg kg(-1) α-tocopheryl-acetate. At 85 days, 20 rabbits per group were slaughtered and the thiobarbituric-acid reactive substances (TBA-RS), chemical composition, fatty acid profile and sensory quality were assessed on the longissimus dorsi muscles (fresh and stored for 8 days at 4?°C). The proximate composition of the fresh muscle was not significantly affected by the dietary treatment. Rabbits fed the LNA-VE diet showed a good capability to elongate and desaturate linolenic acid and this diet enriched the n-3 PUFA content of the meat without affecting its peroxidative stability. The sensory quality of the fresh and stored muscle was slightly affected by the dietary treatment, even though final tenderness (fresh meat) and overall acceptability (stored meat) of the LNA-VE rabbits showed significantly higher scores. 相似文献

The aim of this research was to study the effect of milking frequency [once-daily milking (ODM) vs. twice-daily milking (TDM)] and antioxidant (AOX) supplementation on fatty acid (FA) profile and oxidative stability in sheep milk. Sixteen Assaf ewes were used; 8 did not receive any vitamin–mineral supplement (control), and the other 8 received an oral dose of 1,000 IU of α-tocopherol and 0.4 mg of Se daily. The experiment consisted of 2 consecutive periods; the first was 3 wk with TDM of both mammary glands. The second period was 8 wk and consisted of ODM of one mammary gland and TDM of the other gland. All ewes were fed ad libitum the same total mixed ration from lambing and throughout the experiment. There were no differences in plasma or milk Se concentrations between control and AOX ewes. However, plasma and milk α-tocopherol concentrations and AOX capacity were increased in ewes receiving the AOX supplement. Milk FA profile was practically unaffected after 21 d of AOX supplementation. However, after 77 d, AOX supplementation increased the relative percentage of C16:0 and cis-9 C18:1 and reduced the proportions of some saturated FA with less than 16 carbons and cis-9 C12:1. Antioxidant supplementation had no effect on the proportions of conjugated linoleic acid or total polyunsaturated FA (PUFA) but decreased the proportion of trans-7,cis-9 C18:2 and increased that of n-6 C20:3. Once-daily milking did not affect α-tocopherol, Se, or fat resistance to oxidation in milk. Total monounsaturated FA, cis-9 C16:1, and several cis and trans isomers of C18:1 were increased and total saturated FA were decreased in milk from ODM glands. Compared with TDM, ODM increased the proportions of cis-9,cis-12 C18:2 and several isomers of C18:2 and reduced those of cis-9,cis-12,cis-15 C18:3 and some PUFA of 20 and 22 carbons, but total proportion of PUFA was unaffected. Once-daily milking and AOX supplementation modified milk FA profile, but the effects of ODM could be considered of little biological relevance for consumer health. Supplementing ewes with α-tocopherol plus Se could be considered an effective strategy to improve plasma AOX status and reduce milk fat oxidation without substantial changes in the milk FA profile. 相似文献

Day-old turkey chicks (n = 99) were divided at random into three groups (n = 33) and fed diets containing 20 (E20), 300 (E300) and 600 (E600) mg all-rac-α-tocopheryl acetate per kg feed per day for 21 weeks prior to slaughter. After slaughter, breasts and legs were removed and examined for α-tocopherol content. Breast muscle from birds fed the three diets was oven cooked, cooled, sliced and overwrapped. The oxidative and colour stability of the slices was examined. Mean α-tocopherol levels in turkey muscle were significantly (p < 0.05) higher in the E300 and E600 groups compared to the control group fed the E20 diet. α-Tocopherol levels in the E300 and E600 groups showed that concentrations in leg muscle were significantly (p <0.05) higher than in breast muscle. α-Tocopherol levels in leg and breast muscles from birds fed E20 and E600 diets decreased significantly (p < 0.05) during 12 months of frozen (-20 °C) storage. TBARS numbers for breast slices from all three dietary groups, cooked both 24 hr after slaughter and following frozen (-20 °C × 11 months) storage, increased during refrigerated (4 °C) display for 10 days. TBARS numbers for slices produced from meat previously held in frozen storage increased more rapidly than those for meat cooked following slaughter. In both cases, E300 and E600 diets significantly (p < 0.05) suppressed lipid oxidation compared to E20 samples. In general, Hunter a values for meat slices from turkeys fed the E300 and E600 diets were higher than those for meat slices from turkeys fed the E20 diet. 相似文献

The effect of feeding supra-nutritional levels of α-tocopheryl acetate on its deposition in two porcine muscles of different metabolic rates (m. longissimus dorsi and m. psoas major) and the effect on meat quality (lipid oxidation, colour stability and drip loss) was studied. Pigs were fed a standard diet supplemented with three levels: 100, 200 and 700 mg/kg of α-tocopheryl acetate from the time of weaning to slaughter at 90kg live weight. Muscle α-tocopherol levels were linearly related to the logarithm of dietary α-tocopheryl acetate supplementation and the linear relationship was estimated for the two muscles. The levels of α-tocopherol in the two muscles differed by a parallel displacement with consistently higher α-tocopherol levels in m. psoas major compared to m. longissimus dorsi. Dietary α-tocopheryl acetate supplementation significantly reduced lipid oxidation as measured by thiobarbituric acid reactive substances (TBARS) in both raw and cooked meat during storage at 4 °C for 6 days. Drip loss and colour stability of raw muscles were not affected by dietary α-tocopheryl acetate levels, 100mg α-tocopheryl acetate/ kg feed resulted in sufficient α-tocopherol levels in muscles to ensure minimum drip loss and optimum colour stability. 相似文献

Dynamic-headspace sampling with a standard-addition method was employed to quantitatively analyze aliphatic lactones in rendered fat from marbled beef and to evaluate the effect of the matrix on volatility. Further, the effects of different levels of the antioxidant α-tocopherol on lactone formation were examined. The slopes of the linear regression curves from the standard-addition method were significantly changed (P < 0.05 or 0.01) for all lactones after storage, with the exception of γ-octalactone, indicating the volatility of the longer-chain lactones were increased after storage. The concentrations of γ-lactones were increased after 7 d of storage at 2 °C (P < 0.01), and the α-tocopherol content in the meat affected the formation of γ-octalactone (P < 0.05) and γ-nonalactone (P < 0.01). The greatest increase was observed for γ-nonalactone in the lowest α-tocopherol (2.9 ppm) group: the concentration of 51.4 ppb was 11.7-fold higher than that before storage. Meanwhile, δ-tetradecalactone in the highest α-tocopherol (28.8 ppm) group showed the highest concentration for the lactones at 415.8 ppb, which was 2.6-fold higher than the concentration before storage. The effect of α-tocopherol was unclear for the δ-lactones. The results indicate that most of the γ-lactones are produced by oxidation during storage but that the other lactones are also generated by other processes as well. 相似文献

The effects of tea catechin and α-tocopherol addition (1 mM) on the oxidative stability of oleic and linolenic acid-rich diacylglycerol (DAG) oil derived from an extra virgin olive oil and perilla oil mixture (6:4, w/w) were evaluated. Oil was oxidized at 50°C for 10 days, after which oxidation was evaluated based on headspace oxygen consumption and peroxide values (POV). The polyphenol and tocopherol contents were also monitored. Addition of catechin did not affect the oxygen consumption or POV of DAG oil, whereas α-tocopherol acted as a prooxidant. Addition of antioxidants had no significant (p>0.05) effect on the fatty acid composition of the oil. Degradation of γ-tocopherol during oil oxidation was inhibited by addition of α-tocopherol, and addition of antioxidants inhibited polyphenol degradation. The autoxidative stability of DAG oil can be improved using polar rather than non-polar antioxidants. 相似文献
