The usefulness of enzymatic treatment for improving dried vegetable color was checked using carrot and pumpkin as experimental material. The color differences were expressed using the L*, a*, b* chroma and hue values. For selected samples, color attractiveness was also assessed by ranking method. The results show positive influence of enzymatic treatment on dried carrot and pumpkin color retention. The best effects of improving color of dried material were obtained for Panzym SMASH XXL (for both species) and Rohament CL (for pumpkin). The positive influence of enzymatic treatment on attractiveness of dried carrot color enlarged during storage.  相似文献

ABSTRACT

Mushrooms are extremely perishable and have a short shelf life period. To increase the post harvest lives, different methods of drying viz., sun diving, fluidized bed drying and thin layer drying with potassium metabisulphite (KMS) and blanching was done. The quality of mushroom dried in fluidized bed condition at 50°C for 80-120 minutes with 0.5 KMS was found to be superior to other drying methods. Rehydration ratio was also maximum in KMS treated mushroom and no significant difference at higher concentration. The treatment with KMS and blanching reduces the nutritive quality but improves the colour of the mushrooms when compared with sun dried samples. Storage of mushrooms after treatment with KMS at higher concentration (1.5%) reduces the microbial spoilage.  相似文献

The drying of carrot slices in a microwave-assisted fluidized-bed drying (MWFBD) system was investigated. The drying conditions such as the initial microwave power density and the inlet air temperature were optimized. The effects of different pretreatment processes such as water blanching, osmotic drying with 20% sugar solution, and 1% citric acid solution on the drying of carrot slices were investigated under the optimized drying conditions. The drying kinetics and the physical properties of the dried carrot slices were analyzed. Different mathematical models of the drying process were explored and fitted to the drying of carrot slices in MWFBD. The pretreatment of the carrot slices reduced the drying time required and improved the qualities such as color and textural strength of the dried carrot slices.  相似文献

Cultivated mushrooms (Agaricus bisporus) slices of 2·5 and 5 mm thick were dried with dehumidified air at 20°, 30° and 40°C. Rehydration ability of dried mushrooms was used as criteria for the evaluation and determination of optimum conditions. Drying mechanism of the mushroom slices was expressed by unsteady state diffusion and the results were interpreted by Fickian model. Drying temperatures lower than 40°C promoted the production of light coloured mushrooms with high rehydration ratios. Diffusivity constants were in the range of 2·6?12×l0-11 m2/s and the activation energies varied in the range of 23·5?30·3 kJ/gmol depending on the temperature and sample thickness.  相似文献

The drying characteristics and properties (color and shrinkage) of carrots (as a representative agricultural product) were experimentally examined in a fluidized bed under reduced pressure. Dry hot air and superheated steam were used as the drying gases. Rice and carrot powders (0.125–0.355 mm in diameter) were used as the fluidizing particles, in addition to glass beads (0.12 mm in diameter).

It was confirmed that the drying rate using a fluidized bed was much higher than without a fluidized bed (hot-air drying), regardless of the type of fluidizing particles used. Under reduced pressure, both with and without a fluidized bed, the drying rate was higher than that at atmospheric pressure using hot air. The drying rate was sufficiently high for fluidized-bed drying with superheated steam, though the drying rate was higher with hot air than with superheated steam. As the drying temperature increased, the volume ratio (befor/after drying) of the sample increased. At high drying temperatures (373 and 423 K in the present study), the color of the sample changed; in other words, a heat-induced change in the properties of the carrot was observed. At a low drying temperature (333 K in the present study), the drying method did not affect the color of the carrot; i.e., the color of the dried material was maintained even in a fluidized bed under reduced pressure when the drying rate was higher.  相似文献

To detect the water dynamics in abalone during drying is essential for the textural quality improvement, however, sufficiently rapid and nondestructive methods of abalone moisture monitoring are currently lacking. In this study, water changes in abalone during drying and rehydration processes were assessed using low field nuclear magnetic resonance and magnetic resonance imaging. A close correlation was observed between ATotal and the total moisture content, and a prediction model with high correlation (R2?=?0.935) was established. Furthermore, good correlations (R2?>?0.950) between hardness, chewiness, rehydration ratio, and T22 relaxation of dried abalone were observed during the rehydration process.  相似文献

Abstract

The color, texture and rehydration ratios of two-stage osmo-convective dried blueberries were evaluated. The parameters analyzed for color were the total color difference (ΔE) and the red-blue (a/b) ratio. The textural parameters of hardness and stickiness of the osmo-convective dried blueberries were evaluated. The results were compared with those of conventionally air-dried blueberries (worst case scenario) and freeze-dried blueberries (best case scenario). The results showed that osmotic dehydration for a short contact time minimized color losses during convective air-drying. The osmo-convective dried blueberries were not significantly harder (p > 0.05) than the conventional air-dried blueberries. The rehydration ratios of the osmo-convective dried blueberries were lower than the rehydration ratios of freeze-dried and air-dried blueberries. The best osmotic dehydration condition under which the osmo-convective dried blueberries had better color and texture and, a shorter drying time than the conventional air-dried blueberries was 50°C – 55°Brix for 4.5 h.  相似文献

A combination of microwave-vacuum (MWV) drying and freeze drying was investigated as potential means for drying carrot and apple chips. The sample was first dried by microwave-vacuum to dehydrate some amount of internal free water and then by freeze drying to a final moisture content of less than 7% (wet basis). Chemical properties (carotene and vitamin C retention) and physical properties (shrinkage, color, texture, and rehydration ratio) of carrot and apple slices dried by this method were evaluated and compared with those dried by freeze drying alone, MWV drying alone, and conventional hot air drying, respectively. The comparison showed that the carotene retention of carrot slices and the vitamin C retention of apple slices dried by the current method were close to those of freeze-dried carrot and apple slices and much better than those of conventional hot air–dried ones. The samples prepared by the current method exhibited very close rehydration capacity, color retention, and texture with those of the freeze-dried ones but with a little higher shrinkage. However, the samples still showed the attractive external appearance without marked warp.  相似文献

The aim of the studies was to analyze the effect of ultrasound action on osmotic pretreatment and then on drying kinetics in continuous and intermittent drying conditions, and on the final product quality. This article presents the results of intermittent-convective drying of carrot preceded by ultrasonic assisted osmotic dehydration in fructose aqueous solutions. The theoretical drying kinetics developed from the numerical solution of mathematical model is validated using the experimental data. It has been shown that combination of ultrasonic assisted osmosis with intermittent-convective drying accelerates the drying process and improves the quality of dried biomaterial. A good adherence of the numerically determined kinetic curves confirms the usefulness of the presented model and its possible application to construction of controlled and optimized drying processes.  相似文献

Abstract

Desorption isotherms for 1 mm thick garlic slices were determined at between 25 and 50°C and satisfactorily fitted with the G.A.B. equation. The kinetics of drying of slices of thickness 1.5 - 5.0 mm were determined at between 40 and 60°C using an air flow rate of 2.5 m-s?, and the conditions affording a high-quality product m the shortest time were identified. After establishing how the effective diffusion coefficient of the garlic slices varied with their moisture content during drying, a diffusional model accounting for these variations was developed and satisfactorily fitted to the experimental kinetic data.  相似文献

During drying, one important consideration is the maximisation of product quality. Hence, the variation in quality attributes of dehydrated potato samples (Solanum tuberosum) were investigated with regard to the two indices of deterioration: ascorbic acid retention and rehydration capacity. The degradation of ascorbic acid was monitored throughout the process and quantitatively evaluated using ion exclusion chromatography. The deterioration reaction followed a first-order behaviour, with the rate of reaction increasing with temperature in accordance with the Arrhenius equation. Deterioration of physical attributes was evaluated on the basis of rehydration characteristics; this was calculated in terms of the coefficient of rehydration and rehydration ratio, The rate and degree of rehydration varied according the conditions of drying, with the rehydration capacity being dependent on the extent of cellular and structural disruption, e.g. shrinkage.  相似文献

The aim of the study was to investigate the impact of pulsed electric field (PEF) treatment on the convective drying kinetics of a carrot and color and microstructure changes of the dried product. Samples were treated by PEF with the specific energy input equal to 5.63, 8 and 80 kJ · kg?1. After PEF treatment, thermal conductivity and electrical conductivity were measured. Drying time of the PEF-treated samples was reduced up to 8.2% (Ws = 8 kJ · kg?1, 5 kV · cm?1; 10 pulses) in comparison to intact tissue. Statistical analysis showed that Midilli et al.’s model was considered to describe the kinetics of the process the most precisely. Pulsed electric field treatment increased the effective water diffusion coefficient up to 16.7%. Moreover, PEF treatment and drying caused the alteration of the sample color. After drying, the lightness and chroma were higher or unchanged in comparison to the intact tissue. The dried PEF-treated samples exhibited significantly higher redness (higher value of a* parameter) in comparison to the untreated dried samples. Moreover, the visual inspection of scanning electron microscope images revealed that PEF pretreatment performed at high electric field intensity (5 kV · cm?1, regardless of pulse number) provoked the material to form greater cavities during drying in comparison to the untreated material.  相似文献

Microwave-vacuum drying, and combined microwave-vacuum with air or vacuum drying were investigated as potential methods for drying green and high-carotenoid vegetables of Chinese chive leaves and carrot slices. The samples were dried by microwave-vacuum until the moisture content reached about 20% (wet basis), and then by conventional air drying at the temperature of 45-50°C or conventional vacuum drying at the temperature of 55-60°C or by continued microwave-vacuum drying at lower power level to final moisture content about 6% (wet basis). The carotenoid retention of carrot slices and chlorophyll retention of Chinese chive leaves, dried by these methods, was evaluated and compared with those dried by freeze-drying and conventional hot-air drying. The comparison showed that the carotenoid retention of carrot slices and chlorophyll retention of chive leaves, dried by the current methods, was very close to or even as much as those dried by freeze-drying and much better than those dried by conventional hot-air. Blanching was not necessary when using microwave-vacuum drying or combined microwave-vacuum with conventional hot-air drying or vacuum drying, because the activity of enzymes which were responsible for the degradation of color was greatly reduced with extremely rapid decreasing of moisture, and because oxygen was absent in microwave-vacuum drying.  相似文献

Effects of moisture content on Liquid transport properties (Permeability and suction pressure) and mechanical properties (Young's modulus, yield stress and tensile strength) of drying shrinkage materials (Kibnshi, IIaido and mixed clay) were measured and a strong dependence was found. When glass beads are added to the Kibushi, permeability increase and Young's modulus and yield stress decrease in spite of the same suction pressure and tensile strength. Changes in local moisture content and stress during drying was calculated by using finite-element method, taking into account the stress gradient in addition to the pressure gradient due to osmotic suction.  相似文献

Abstract

Dehydration by Successive Pressure Drops (DDS) is a new unit operation, based on a repetition of compression/decompression cycles. In this work, we present the application of this drying process to baker's yeast. Drying rate, cycle efficiency, cell survival and the activities of four enzymes were evaluated. The effects of two parameters of DDS (PI and Dvp) on drying kinetics and product quality were studied, using the surface responses methodology. The results were also compared to those obtained with freeze-drying. PI had a positive effect on drying rate. Both PI and Dvp had an effect on cycle efficiency, particularly Dvp. Cell survival were much higher than that obtained with freeze-drying, with no significant impact of the parameters. The enzymatic activities were higher or close to the corresponding activities of freeze-dried sample, except the glucose-6-phosphate activity. The effects of PI and Dvp varied according to the enzyme.  相似文献

Electrohydrodynamic (EHD) drying is a novel method of nonthermal drying. A corona discharge using multiple electrodes and a high-voltage electric field of 5.2 kV · cm?1 was produced to investigate the drying enhancement of carrot slices and its effect on color and shrinkage. The EHD setup consisted of 13 stainless steel needle points connected to a DC power supply and a stainless steel plate. EHD+ drying, EHD? drying, oven drying at 55°C, and ambient air drying control at 25°C for 5 h resulted in 79.5, 77.7, 77, and 22.5% total moisture removal from the fresh carrot slices, respectively. The final shrinkage of the EHD± drying was less than that of oven drying but was higher than that of ambient air drying. It was estimated that the energy consumption of oven drying was several times greater than those of EHD± drying. The conventional drying processes changed all color parameters, whereas the color for EHD± dried samples remained almost the same. The carrot slices’ temperature during drying by EHD± was significantly less than that of those dried by oven and ambient air drying.  相似文献

This work deals with formulation and drying of a newly developed functional food. A watermelon and carrot juice mixture in the ratio 70:30 by volume was fermented at 37°C with Lactobacillus acidophilus to produce an innovative non-dairy-based food formulation with good flavor and high nutritional value. Viable count, pH, titrable acidity, protein content, and reducing sugar were measured during fermentation. The probiotic juice was spray dried at air temperature of 120 to 160°C and flow rate of 2.0 to 5.0 mL/min. Maltodextrin concentration of 10 to 15% by weight was used as an additive. Response surface methodology (RSM) was employed to optimize the drying process conditions. Physical properties (e.g., moisture content, density, porosity, and yield), biological properties (e.g., viability and lycopene and beta carotene content), and solubility data were examined as the response variables. Elevated temperatures and longer exposure times at lower feed rate reduced viability and lycopene and beta carotene content of the dried powder. Increased atomization pressure increased the cohesiveness but decreased flowability of the dried powder because the particle size was lowered. The probiotic powder was further analyzed using scanning electron microscopy (SEM) and differential scanning calorimetry (DSC).  相似文献
