Seventy gilts were used to compare the effect of including 10% tallow (T), high-oleic sunflower oil (HOSF), sunflower oil (SFO), linseed oil (LO), a fat blend (FB), or an oil blend (OB) in finishing diets vs. feeding a semi-synthetic diet with no added fat (NF) on pig performance, carcass traits and carcass fatty acid (FA) composition. Carcasses from SFO-fed gilts had greater fat and lower lean compositions than carcasses from T-fed gilts. Gilts fed NF had greater loin fat than FB-fed gilts, and greater flare fat, loin intermuscular fat and fat:lean than T-fed gilts. Bellies from NF-fed gilts had lower lean and higher intermuscular fat and fat:lean than other diets except HOSF. Fat source had minor effects on animal performance, carcass characteristics and carcass fat content and distribution, whereas feeding NF resulted in carcasses and major cuts with higher fat content. Diets rich in polyunsaturated FA (PUFA) did not reduce fat deposition in separable fat depots with respect to monounsaturated FA (MUFA) and saturated FA (SFA). Carcasses from gilts fed NF had a high degree of saturation (40.6% SFA) followed by carcasses of T- and FB-fed gilts. Feeding HOSF, SFO and LO enriched diets elevated the percentages of MUFA (56.7%), n−6 (30.0%) and n−3 (16.6%) PUFA, respectively, whereas carcasses from gilts fed OB had greater percentages of n−3 FA (14.8% n−3, 0.9% EPA, 1.0% DPA, 3.1% DHA) than gilts fed FB (6.72% n−3, 0.1% EPA, 0.4% DPA, 0.1% DHA).  相似文献

A total of twenty two Large White X Landrace castrated males were slaughtered at 30, 70, 110 or 140kg BW. Carcasses were weighed and cut into four primal cuts (belly, ham, loin, and shoulder). Each cut was weighed and dissected into bone, muscle, skin, and intermuscular and subcutaneous adipose tissues. Kidney fat was also taken and weighed. Kidney fat grew more rapidly than subcutaneous or intermuscular fat averaged over all four cuts. In the shoulder and loin, about one third of total adipose tissue was in the intermuscular fraction. In the belly, there was as much (in 30-110kg BW pigs) or more (in 140kg BW pigs) intermuscular than subcutaneous adipose tissue. In the ham, the intermuscular fraction of adipose tissue grew more slowly than the subcutaneous one, so that it represented less than one fourth of total ham adipose tissue in 140kg BW pigs. Intermuscular adipose tissue exhibited a lower lipid content than subcutaneous adipose tissue, whatever the body weight, but the differences in lipid content between the adipose tissues decreased with increasing weight. These results show that the relative development of intermuscular and subcutaneous adipose tissues differs according to anatomical location.  相似文献

A novel method for non-destructive intramuscular fat (IMF) estimation via spectral ultrasound backscatter analysis of signals obtained from pig carcasses early post mortem is described. A commercial hand-held ultrasound device (center frequency: 2.7 MHz) was modified to focus the sound beam to the longissimus muscle at the 2nd/3rd last rib. Time-resolved ultrasound backscatter signals of loin muscle were recorded 45 min p.m. on 82 pig carcass sides. Backfat width (dBF = 18.9 ± 3.8 mm) and muscle attenuation (αmuscle = .77 ± .15 dB MHz− 1 cm− 1) were assessed from the measured pulse echo data. Other propagation properties of skin, backfat and muscle tissue obtained in a previous investigation were incorporated into the signal pre-processing to minimize parameter estimation artifacts. Spectral and cepstral parameters were derived from time-gated backscattered signals measured in the central muscle region. The range of intramuscular fat (IMF) determined by ether extraction was representative for German pig populations (.7% ≤ IMFchem ≤ 3.6%, coefficient of variation CV(IMFchem) = 44.8%). Variations of IMF were associated with variations of backfat width (CV(dBF) = 20.2%), muscle attenuation (CV(αmuscle) = 19.3%), and slope of the backscattered amplitude spectrum (CV(m) = 28.8%). A full cross validated multiple linear regression model using these parameters resulted in good predictability of IMFchem (R2 = .76, RMSEP = .34%). Among all tested carcasses, 73% could be correctly classified into one of three IMF classes (LOW: < 1%, MID: 1-2%, HIGH: > 2%). Using a single threshold (2% IMF), about 92% of all carcasses were correctly classified. With respect to the inherent variability of IMF within a single muscle and the different tissue volumes used for the chemical and ultrasound based IMF estimations the remaining prediction errors are acceptable. Compared to previous ultrasound based studies, the number of acoustic parameters used for the IMF prediction could be reduced. Moreover, the used parameters are based on time-of-flight and spectral slope estimations, which are i) more robust with respect to measurement artifacts and ii) have a causal link to structural variations associated with IMF variations in pork loin.  相似文献

The potential of X-ray computed tomography (CT) as a predictor of cuts composition and meat quality traits using a multivariate calibration method (partial least square regression, PLSR) was investigated in beef cattle. Sirloins from 88 crossbred Aberdeen Angus (AAx) and 106 Limousin (LIMx) cattle were scanned using spiral CT. Subsequently, they were dissected and analyzed for technological and sensory parameters, as well as for intramuscular fat (IMF) content and fatty acid composition. CT-PLSR calibrations, tested by cross-validation, were able to predict with high accuracy the subcutaneous fat (R2, RMSECV = 0.94, 34.60 g and 0.92, 34.46 g), intermuscular fat (R2, RMSECV = 0.81, 161.54 g and 0.86, 42.16 g), total fat (R2, RMSECV = 0.89, 65.96 g and 0.93, 48.35 g) and muscle content (R2, RMSECV = 0.99, 58.55 g and 0.97, 57.45 g) in AAx and LIMx samples, respectively. Accurate CT predictions were found for fatty acid profile (R2 = 0.61–0.75) and intramuscular fat content (R2 = 0.71–0.76) in both sire breeds. However, low to very low accuracies were obtained for technological and sensory traits with R2 ranged from 0.01 to 0.26. The image analysis evaluated provides the basis for an alternative approach to deliver very accurate predictions of cuts composition, IMF content and fatty acid profile with lower costs than the reference methods (dissection, chemical analysis), without damaging or depreciating the beef cuts.  相似文献

Various post-mortem measurements (carcass weights, conformation and fatness classes, external carcass dimensions, eye muscle dimensions, subcutaneous fat depth, pH and temperature) were recorded on 197 Texel (TEX) and 200 Scottish Blackface (SBF) lamb carcasses. The potential use of these measurements to predict carcass composition and key meat quality traits was investigated, to enable categorisation of carcasses in the abattoir and/or for use in genetic improvement programmes. By combining different measurements, accurate predictions of dissected carcass muscle weight (adjusted R2 0.93 in TEX, 0.88 in SBF) and fat weight (adjusted R2 0.84 in TEX, 0.87 in SBF) were achieved, and moderate predictions of intra-muscular fat (adjusted R2 0.56 in TEX, 0.48 in SBF), whilst shear force was predicted with low to moderate accuracy (adjusted R2 < 0.33 across breeds and cuts). Sex, eye muscle dimensions and subcutaneous fat depth improved predictions of carcass composition and intra-muscular fat, whilst pH or temperature provided little additional benefit for these traits, but increased prediction accuracies for shear force. These results could contribute to the development of automated carcass grading systems or help inform breeding decisions.  相似文献

Forty beef carcasses were classified for conformation and fatness. Besides, carcass weight, fat thickness (FT), carcass dimension, marbling by computer image analysis and ultrasound readings was recorded to complement grading. For predicting intramuscular fat (IMF) content, FT, number of intramuscular flecks and conformation increased R2-value from 0.19 to 0.64 compared to conformation alone. For visual marbling, ultrasound readings and thoracic depth (TD) increased the R2-value from 0.24 to 0.57 compared to fatness score (FS). The best variables for predicting weight of fabricated subprimals were carcass weight or compactness which is a function of carcass weight (R2 between 0.94 and 0.63). Fatness score was poorer than FT for predicting yield of subprimals cuts from round (R2 = 0.16 vs. 0.50) and ultrasound readings for less valuable subprimals (R2 = 0.31 vs. 0.39). These results showed that other variables could be used in combination with carcass fatness or conformation to achieve a more accurate estimation of fat and carcass yield.  相似文献

The capability of near infrared (NIR) spectroscopy was examined for the purposes of quality control of the traditional Slovenian dry-cured ham “Kraški pršut.” Predictive models were developed for moisture, salt, protein, non-protein nitrogen, intramuscular fat and free amino acids in biceps femoris muscle (n = 135). The models' quality was assessed using statistical parameters: coefficient of determination (R2) and standard error (se) of cross-validation (CV) and external validation (EV). Residual predictive deviation (RPD) was also assessed. Best results were obtained for salt content and salt percentage in moisture/dry matter (RCV2 > 0.90, RPD > 3.0), it was satisfactory for moisture, non-protein nitrogen, intramuscular fat and total free amino acids (RCV2 = 0.75–0.90, RPD = 2.0–3.0), while not so for protein content and proteolysis index (RCV2 = 0.65–0.75, RPD < 2.0). Calibrations for individual free amino acids yielded RCV2 from 0.40 to 0.90 and RPD from 1.3 to 2.9. Additional external validation of models on independent samples yielded comparable results. Based on the results, NIR spectroscopy can replace chemical methods in quality control of dry-cured ham.  相似文献

The different fat infiltration capabilities of two alleles of IGF2 (G3072A) have been investigated in pigs of a Landrace-Large White × Duroc cross. Paternally inherited G allele carrier pigs show an increased content of adipose rich meat cuts such as the lard or the belly and 4 mm larger backfat thickness values. Paternally inherited A carrier pigs on the other hand contain larger muscle tissue rich cuts such as the loin, the ham and the tenderloin and have 0.19 units lower feed conversion index. No substantial differences have been found neither in intramuscular fat content in several muscles nor in meat quality in both pig groups. Hams of paternally inherited G carrier pigs are richer in both subcutaneous adipose tissue (23.1 vs 19.1 mm backfat thickness) and intermuscular fat content. The suitability and the economics of using any of the two of both genotypes for cured ham production are discussed.  相似文献

Compared with subcutaneous or abdominal fat depots of pig carcasses, intermuscular fat displays a number of original properties. It cannot be easily removed from fresh or processed meat delivered to consumers and has therefore an influence on consumer acceptability of pork. Particular compositional characteristics of intermuscular fat include low lipid content and small size of adipocytes. How age (or body weight), gender, castration, environmental temperature, feeding restriction, diet composition, as well as genetic factors affect intermuscular fat development and composition are surveyed in this review paper. Up to now, few studies have specifically dealt with the intermuscular compartment of body fat while very abundant information is available on the subcutaneous one. As a general rule, any factor, either genetic or non-genetic, which causes a decrease of whole carcass fat deposition generates a higher relative importance of the intermuscular fraction of total fat as well as an increased degree of unsaturation of constituent fatty acids.  相似文献

Fifty-one (Landrace∗Large White)∗Pietrain barrows and gilts were used to compare the effect of a diet rich in oleic acid (HO) by feeding a by-product of the olive industry (Greedy-Grass OLIVA®: 1.4% growing, 3.8% finishing) or a grain and soy diet (CONTROL) on carcass characteristics, meat quality and fatty acid profile of intramuscular and subcutaneous fat. Gilts had leaner (< 0.05) carcasses with lower fat percentage in major primal cuts, and less (< 0.05) saturated fat compared with barrows with no interaction (> 0.05) between dietary treatment and gender. Source of dietary fat had no effect (> 0.05) on primal cut yields, composition of major primal cuts, or carcass and meat quality characteristics. Intramuscular fat from HO fed pigs had higher (< 0.05) percentage of saturated (SFA) and monounsaturated (MUFA) fatty acids, and lower (< 0.05) polyunsaturated fatty acids (PUFA) and n-6:n-3 ratio compared with CONTROL animals (37.4% vs. 36.8%, 44.7% vs. 40.1%, 17.9% vs. 23.2%, and 18.9 vs. 21.8 ratio, respectively). Subcutaneous fat from pigs fed HO had greater (< 0.05) MUFA percentage, lower (< 0.05) SFA and PUFA percentage, and lower (< 0.05) n-6:n-3 ratio than pigs fed CONTROL diet (51.4% vs. 48.0%, 30.5% vs. 32.9%, 18.1% vs. 20.1%, and 9.83 vs. 11.3 ratio, respectively). Intramuscular fat had higher proportion of SFA and lower of MUFA showing a higher degree of tissue saturation compared with subcutaneous fat. Feeding Greedy-Grass increased MUFA and decreased PUFA proportions in fat depots reducing the risk of production of carcasses that are soft and oily which result in lower technological and processing quality.  相似文献

The influence of breed and mh-genotype on carcass conformation, meat physico-chemical characteristics and the fatty acid profile of muscle were studied. Samples from 16 yearling bulls from “Asturiana de los Valles” (AV, n = 12) and “Asturiana de la Montaña” (AM, n = 4) were collected. AV animals were classified into three groups according to the presence of the gene causing double-muscling (AV double-muscled (mh/mh), n = 4; AV heterozygous (mh/+), n = 4; AV normal (+/+), n = 4). Double-muscled animals displayed better carcass traits, lower total fat (comprised of subcutaneous (SC), intermuscular (IT) and intramuscular (IM) deposits), higher lean, moisture and drip loss, and lighter meat than AV normal animals. Heterozygous animals showed intermediate characteristics. AM animals, being a more rustic and smaller breed, showed lower conformation, higher total fat (SC, IT and IM), lower moisture and darker meat. According to the intramuscular fatty acid profile, mh/mh animals showed a lower proportion of SFA and MUFA, and a higher proportion of PUFA with an equal proportion of CLA in total fatty acid content. The P/S ratio increased with increasing number of mh alleles (or double-muscling character), while no differences between animal groups were found for the n − 6/n − 3 ratio.  相似文献

Fall-born Angus-cross steers (n = 30) from 1 of 2 sires, were randomly assigned to either an 85% corn, 7.5% cotton-seed hulls, and 7.5% vitamin/mineral/urea supplement diet (GRAIN), 100% ryegrass grazing (RG), or ryegrass grazing then the GRAIN diet for 94 d (RG/GRAIN). USDA Yield Grade of steers finished on either the GRAIN or RG/GRAIN regimens were higher (P < 0.02) compared to those finished on RG. Marbling score and USDA Quality Grade did not differ (P = 0.21 and 0.12, respectively) among the three finishing regimens. Yellowness (b) values of the subcutaneous fat from both strip loins (SL) and ribeye (RE) rolls was lowest (P < 0.05) in cuts taken from steers finished on GRAIN. Subcutaneous fat of both SL and RE had lower L and hue angle values, and higher a and b values before trimming than after the fat was trimmed to 0.3 cm. Initial and sustained tenderness scores of SL from steers finished on GRAIN were higher when compared to RG/GRAIN or RG regimens (P < 0.05). Flavor intensity and beef flavor scores were higher (P < 0.05) for SL from GRAIN- or RG/GRAIN-finished steers compared to RG-finished steers. GRAIN SL had lower (P < 0.05) WBSF values than RG, but similar (P > 0.05) to RG/GRAIN. Trained sensory tenderness and flavor scores and WBSF values for RE were not affected by finishing regimen (P > 0.05). GRAIN steaks had a higher consumer overall acceptability score, average price/kg, and rank (P < 0.05). While carcass, fat, and sensory disadvantages were present in RG cattle, the overall magnitude of the differences compared to GRAIN cattle was fairly small.  相似文献

Lipid contents and compositions were measured in 35 pigs from seven genotype-sex groups with large variations in body composition. The animals were slaughtered at 115kg live weight, and the left side was separated into four primal cuts: belly, ham, loin, and shoulder. Samples of adipose tissues were taken from flare fat and from subcutaneous and intermuscular adipose tissues in each of the four cuts. In the loin, the outer and inner layers of subcutaneous adipose tissue were sampled separately. Total lipid content was lower in intermuscular than in subcutaneous adipose tissue. It was the highest in flare fat. There was a gradient of decreasing unsaturation from the outer layer of subcutaneous adipose tissue, to the inner layer, to intermuscular adipose tissue, to flare fat. The monounsaturated fatty acid concentrations followed the same pattern. There was a statistically positive correlation between the linoleic acid concentration of the different adipose tissues and the half carcass muscle content.  相似文献

The purpose of this study was to characterize and compare the carcass characteristics, cholesterol concentration, fatty acid composition of intramuscular fat and subcutaneous fat, and meat quality of Criollo Argentino and Braford steers reared in an extensive system, without supplementation, and slaughtered at approximately 400 kg live weight. The Braford steers had greater (P < 0.05) carcass weight, yield, conformation score, marbling degree, fat thickness and fatness score than Criollo Argentino steers. The tissue composition of the 10th rib was: 68.1% vs. 63.6% muscle, 23.9% vs. 20.4% bone and 8.2% vs. 16.3% fat for the Criollo Argentino and Braford breeds, respectively. The meat of Longissimus muscle from Braford steers was lighter, redder, yellower and more tender than that from Criollo Argentino steers. The meat of Longissimus muscle from Braford steers had a higher fat content, similar protein and ash contents and a lower (P ? 0.001) cholesterol concentration than that from Criollo Argentino steers.  相似文献

Video images of ham cross-sections were recorded from 71 pork carcasses (ranging in weight from 72 to 119 kg). Three sets of prediction equations were developed to estimate pork carcass lean and fat composition from video image analysis (VIA) of ham cross-sectional area measurements, 10th rib back fat depth (TENFAT) and hot carcass weight (HCKg). Carcass data of dissected lean and fat in the four primal cuts (ham, loin, Boston button and picnic shoulder) were used as dependent variables in establishing regression equations. The first set of equations combined VIA ham measurements and total ham weight (HTKg). Regression models containing the single variable HTKg times ham percentage lean area (Vol. 1) or HTKg times ham percentage fat area (Vol. 2) accounted for 88% and 68% of the variation in total carcass lean weight (CLKg) and total carcass fat weight (CFKg) from the right side of each carcass, respectively. The second set of equations combined VIA ham measurements and TENFAT (cm). Multiple regression models involving TENFAT, Vol. 1, and Vol. 2 accounted for 91% and 90% of the variation in CLKg and CFKg. The third set of equations used VIA ham measurements, TENFAT and HCKg. Carcass lean weight was best predicted by HCKg, TENFAT, and ham lean area (HLA) (R2 = .92). Carcass fat weight was best predicted by HCKg, TENFAT, and Vol. 2 (R2 = .91). Overall correlations showed a high association between Vol. 1 and CLKg (r = .94, P < .0001) and Vol. 2 and CFKg (r = .83, P < .0001). Ham lean area was related to CLKg (r = .74, P < .0001) and ham fat area to CFKg (r = .81, P < .0001). The results of this study indicated video image analysis of ham cross-section slices combined with backfat depth at the 10th rib can be used for accurate estimation of total carcass lean or fat composition.  相似文献

In the larger Swiss abattoirs the fat score (FS) is determined by default as an indicator of fat quality. The FS refers to the iodine number and is related to the degree of unsaturation of the outer layer of backfat. In a feeding trial with Large White gilts, the FS was determined in 47 carcasses. Meat and fat tissues were prepared for the production of salami (SAL), raw-cured bacon (RCB), pork hamburger (PHB) and Vienna sausage (VIS). In the different meat products, the FS was closely related to the percentage of saturated (SFA: r = −0.49 to −0.79) and polyunsaturated fatty acids (PUFA, r = 0.36 to 0.79) for RCB, SAL and PHB (p ? 0.05), but not for VIS. For RCB, significant correlations with FS were seen for the meat:fat-ratio (r = 0.39), fat firmness (r = −0.31) and one fat oxidation marker (1-octen-3-ol: r = 0.51). The texture (r = −0.60), aw-value (r = 0.63) and one fat oxidation marker (1-octen-3-ol: r = 0.46) were significantly correlated with FS in SAL. On the whole, only a few variables correlated significantly with FS for SAL and RCB and the corresponding relationships were always linear. No significant correlation between FS and any of the technological and sensorial parameters were found for VIS or PHB.  相似文献

This study characterised the lipid classes of Longissimus dorsi (LD) muscle and the fatty acid profiles of the LD intramuscular fat and subcutaneous (SC) adipose tissue of male and female foal mixed populations. Two animal groups were studied based on slaughter ages of 16 and 24 months. The sex of the animals had no statistical significance in the lipid fractions of the LD muscle or in the intramuscular fatty acids (p ? 0.05). In contrast, there was a significant effect of sex on the fatty acid profile of the SC adipose tissue. Furthermore, the livestock production system showed difference in both lipid class and fatty acid profiles from the LD and SC adipose tissues. The LD of 24-month old foals had lower phospholipids content (p ? 0.001), displayed little difference in saturated fatty acids (SFA) (p ? 0.1), exhibited higher levels of monounsaturated fatty acids (MUFA) (p ? 0.05) and lower levels of polyunsaturated fatty acids (PUFA) (p ? 0.05) compared with that of the 16-month old foals. Furthermore, the fatty acid profile of the SC adipose tissue of the 24-month old foals had higher SFA (p ? 0.05) and PUFA (p ? 0.01) with lower amounts of MUFA (p ? 0.001) relative to the 16-month old foals.  相似文献

Effects of triticale diets on pig performance and pork quality were evaluated in summer and winter. Diets were: corn-soy, 40% triticale, or 80% triticale. Pigs (72 kg) were fed 49 d. Loins were evaluated for meat and fat quality and sensory evaluation. Average daily gain decreased as triticale inclusion increased (P < 0.01). Feed intake was similar. Pigs fed corn-soy had the greatest and those fed 80% triticale had least gain:feed ratio (P < 0.05). In summer, pigs fed corn-soy had largest and those fed 80% triticale diet had smallest loin muscle area (P < 0.05) based on ultrasound scan. During summer, ultimate pH was higher (P ? 0.001) and, loin purge and shear force were lower (P < 0.05). Diet did not affect sensory evaluation or fatty acid profile of loins. During summer, total MUFA were more and total PUFA were less (P ? 0.01). Triticale fed to pigs in hoop barns slightly decreased growth without compromising pork quality.  相似文献

This study examined the ability of near infrared reflectance spectroscopy (NIRS) to estimate the concentration of polyunsaturated fatty acids and their biohydrogenation products in the subcutaneous fat of beef cows fed flaxseed. Subcutaneous fat samples at the 12th rib of 62 cows were stored at − 80 °C, thawed, scanned over a NIR spectral range from 400 to 2498 nm at 31 °C and 2 °C, and subsequently analysed for fatty acid composition. Best NIRS calibrations were with samples at 31 °C, showing high predictability for most of the n−3 (R2: 0.81-0.86; RMSECV: 0.11-1.56 mg g− 1 fat) and linolenic acid biohydrogenation products such as conjugated linolenic acids, conjugated linoleic acids (CLA), non-CLA dienes and trans-monounsaturated fatty acids with R2 (RMSECV, mg g− 1 fat) of 0.85-0.85 (0.16-0.37), 0.84-0.90 (0.21-2.58), 0.90 (5.49) and 0.84-0.90 (4.24-8.83), respectively. NIRS could discriminate 100% of subcutaneous fat samples from beef cows fed diets with and without flaxseed.  相似文献

Fifty-seven York-crossed barrows and gilts were fed either a grain and soy diet (CONTROL with 28% C18:1) or a similar diet enriched with oleic acid (HO with 43% C18:1, Greedy-Grass OLIVA®). There were no interactions between dietary treatment and gender and there were no differences in intramuscular and subcutaneous fatty acid composition between sexes (P > 0.05). Similar primal cut yields, composition of major primal cuts, and carcass and meat quality characteristics were found for HO and CONTROL fed pigs. Apart from a few significant but small differences for some fatty acids, intramuscular fatty acid composition was similar for both dietary treatments. Subcutaneous fat from HO fed pigs had a 6.9% increase in total monounsaturated fatty acids and a 9.3% reduction in total polyunsaturated fatty acids (P < 0.05) compared with CONTROL fed animals, without adversely affecting carcass quality and producing suitable hams for processing by the meat industry.  相似文献
